It’s definitely my favorite time of year and I’ve been so busy traveling and working lately that it went by in the blink of an eye! I guess that’s not a bad problem to have, but I feel the end-of-Summer blues coming on…

To keep that relaxed Summer feeling going, I’ve rounded up a few cocktails for you that are light and refreshing and will keep you in that beach-y state of mind!

Ingredients

  • Hornitos Tequila Zarza
  • 2 parts Hornitos Reposado Tequila
  • 1-part Simple Syrup
  • 1-part Fresh Lemon Juice
  • Blackberries
  • Float: DeKuyper Creme de Cassis Liqueur
  • ---
  • Pinnacle Light & Ripe Apricot Honeysuckle Green Tea
  • 1.5 parts Pinnacle Apricot Honeysuckle
  • 3 parts Unsweetened Green Tea
  • .25 oz (½ Tbsp) Honey
  • 2 Peach slices
  • Soda Water
  • ---
  • On The Rocks The Cosmopolitan
  • A wildly popular cocktail, the Cosmopolitan is a simple cocktail with a big history. This classic cocktail blends flavors of cranberry, triple sec, lemon zest and lime - cut through with smooth EFFEN Vodka.

Instructions

  1. Hornitos Tequila Zarza
  2. Combine all ingredients, excluding liqueur. Shake well. Strain and serve over crushed ice in a rocks glass. Float liqueur on top. Garnish with fresh blackberries.
  3. ---
  4. Pinnacle Light & Ripe Apricot Honeysuckle Green Tea
  5. In a highball cocktail glass, gently muddle peach slices and honey. Add Pinnacle Light & Ripe Apricot Honeysuckle, green tea and ice. Stir to combine. Top with soda water and garnish with additional peach or apricot slices.

  8. Simply pour over ice and enjoy!

Smirnoff Cocktails to sweeten up Valentine’s Day

 

What better way to celebrate Valentine’s Day than with a lovely cocktail or two with your sweetie or best pal?  These cocktails are made with Smirnoff vodka and are just as pretty as they are delicious, no matter who you’re spending this special day with!

Hibiscus Crush

The first cocktail is a “Hibiscus Punch”, that is bound to make any Galentine’s get-together a little less sour and a little more sweet. Made with Smirnoff No. 21, this is a quality recipe that won’t break the bank!

Hibiscus Crush

  • 16 ounces Smirnoff No. 21 Vodka (2 cups)
  • 1/2 cup dried hibiscus flowers
  • 1 cups water
  • 1/2 cup sugar
  • 1 ounce triple sec
  • 32 ounces lemon lime soda
  • 1 lemon- sliced
  • 1 lime-sliced
  • 1 orange- sliced
  • 4 cups crushed ice

Place hibiscus, water and sugar in a small pot to simmer over the stove for 5 minutes.  Once sugar is dissolved, set aside to cool. Strain. Place vodka, triple sec, soda and sliced citrus in a punch bowl or beverage container. Add hibiscus infusion. Stir. Right before quests arrive add 4 cups crushed ice.

Secret Admirer

The “Secret Admirer” is the perfect cocktail to serve up for your date night, which features Smirnoff’s most popular flavor, Smirnoff Raspberry.

Secret Admirer 

  • 4 ounces Smirnoff Raspberry
  • 1.5 ounces Chartreuse
  • 6 fresh raspberries

Place all ingredients in shaker with ice. Shake well. Strain into two vintage martini glasses. Garnish with fresh raspberries. You could sugar the rim for extra sweetness.

Spring is here, and there’s nothing better than gathering a few friends together for a casual get together with some canapés and cocktails featuring the fresh produce of the season. Fava Beans, Baby Garden Peas and Strawberries are a few of my favorites that start popping up in April and May with the first bloom of Spring.

I love to use my KitchenAid® 13-Cup Food Processor for making quick and tasty dips and spreads – I simply toss all the ingredients in the bowl of the food processor and give it a few whirls to make easy canapés and appetizers for sharing with friends.

An easy, fun idea is to serve crostini with a spread made of baby garden peas and fava beans, mixed with roasted garlic, mint, greek yogurt, feta cheese, lemon zest and olive oil. The flavors are bright, and it’s a light and healthy appetizer, perfect for spreading on toast and serving with fresh veggies for dipping. I love to serve them with some light Spring cocktails made with vodka, lemonade, fresh strawberries, mint and soda – perfect complement for the bite sized crostini! You can also make crostini with different veggies such as roasted red pepper, artichokes, avocado, olives – whatever you’re in the mood for!

This premiere, invite-only VIP event was titled THE ART OF DESIGN, with local mixologists who competed to design the most provocatively premium Effen® Vodka martini. EFFEN toasted NYC’s jet set of tastemakers, fashionistas, influencers, and more as the city’s top mixologists competed for the best EFFEN-infused cocktail.

Summer in a Bowl: Vodka Cream Sauce Pasta w/ Basil, Mozzarella & Sundried Tomatoes

Summer Pasta w/ Vodka Sauce, Fresh Basil, Mozzarella & Sundried Tomatoes

There’s a great little place in my neighborhood called Todaro Bros. – a small, locally-owned deli and grocery store that sells fresh and imported Italian food and other gourmet groceries. I usually stop in at least once a week to peruse their cheese department and sample some of their fresh house-made mozzarella, just for kicks (it’s that good!).

It’s impossible to walk in there and just buy one thing – I’m like a kid in a candy store! I found these gorgeous sun-dried tomatoes marinated in herbs and oil and picked up some fresh mozzarella, basil, oregano, chives, tomato sauce, cream and pasta to make a fresh, tasty Summer pasta dish with a Vodka Cream Sauce.

I made it with spaghetti but you could serve this tasty Vodka Sauce with virtually any pasta you wish. It’s tangy, velvety and full of flavor, and the fresh basil gives it a peppery flavor which is rounded out by the creamy fresh mozzarella and sweet sun-dried tomatoes. I also threw in a few pieces of crumbled cooked bacon into the sauce to give it an extra layer of flavor (which is totally optional but also totally worth it!)

Top off the pasta with fresh basil leaves, red pepper flakes, coarse Mediterranean sea salt and fresh ground pepper…

Summer Pasta w/ Vodka Sauce, Fresh Basil, Mozzarella & Sundried Tomatoes

Prep Time: 30 minutes

Cook Time: 30 minutes

Total Time: 1 hour

Yield: 4-6

Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 small shallot, diced
  • 3-4 slices cooked bacon, crumbled (optional)
  • 6-8 marinated sun-dried tomatoes, cut into halves or quarters
  • 1 quart tomato sauce (store bought or homemade, pureed smooth)
  • 1 cup of vodka
  • 1/2 cup of heavy cream
  • 1 teaspoon fresh oregano, minced
  • 1 teaspoon fresh chives, chopped
  • Coarse sea salt and fresh ground black pepper, to taste
  • fresh unsalted mozzarella, torn into medium pieces, for garnish
  • fresh basil leaves, whole or torn, for garnish
  • red pepper flakes (optional), for garnish
  • 1 pound package of cooked and drained pasta (spaghetti, linguine or penne)

Instructions

  1. Cook pasta in a large saucepan according to package directions (until al dente) and drain (reserving a few tablespoons of the pasta water for later); set aside. Meanwhile, cook the bacon over medium heat for about 15 minutes until crispy, drain and crumble.
  2. Heat oil over medium-high heat in a large saucepan or pot. Add garlic and shallots, saute until soft and translucent, about 2 minutes. Add crumbled bacon and sun-dried tomatoes, add salt and pepper to taste. Saute for an additional 5 minutes and turn heat down to medium-low.
  3. Stir in tomato sauce and vodka into the same saucepan and let simmer (approximately 20 minutes) until the sauce thickens and cooks down. Stir in the heavy cream, fresh oregano and chives and let simmer on low for another few minutes until sauce is heated through.
  4. Return the pasta back to the large saucepot and ladle some of the sauce into it, along with a few tablespoons of reserved pasta water and toss to coat.
  5. Ladle coated pasta into serving dishes and top with additional vodka sauce. Garnish with fresh basil leaves, mozzarella, red pepper flakes and salt and pepper to taste.
