Hey guys! Oh my gosh, it’s almost the end of the year! Can you believe it? Where does time fly? I’m so ready for a New Year though – #2019 can’t come soon enough! 🙂

I was invited to participate in the #Steviva #Holiday #Keto #Blogger #Recipe Challenge this year and made a Sweet and Spicy Meyer Lemon Shrimp Stir Fry. With all the #holidays going on and the rich, delectable #food I’ve been enjoying this month, I wanted to make a recipe a little bit lighter and healthier, and on the lower carb side…(before it all happens again this weekend for New Years!)

Sweet + Spicy Meyer Lemon Shrimp Stir Fry

Steviva + Nectevia Marinade

This dish is super easy and quick to make and has great flavors using fresh Meyer Lemon juice, soy sauce, sesame, Nectevia Agave Stevia Blend, Steviva Erythritol Blend, a dash of ginger and #Sriracha for some spiciness to make a delicious sticky marinade to go with the shrimp and fresh veggies. And it’s low carb and low cal! BONUS*** 🙂

Marinate Shrimp

Simply make your marinade for the shrimp with all the ingredients and put it in the fridge in a ziplock baggie for 1/2 an hour. Then stir fry the shrimp for a few minutes until they are no longer pink and remove the shrimp from the pan.

Saute the shrimp and veggies in marinade

Add the veggies and stir fry those for about 5-7 minutes until tender crisp and the sauce starts to thicken. Add the cooked shrimp back in and toss together for another minute or so.

Sweet + Spicy Meyer Lemon Shrimp Stir Fry

Serve immediately over brown or cauliflower rice, zucchini noodles or soba noodles and spoon the rest of the spicy and sweet sauce on top and garnish with a few more sesame seeds and even some green onions if you wish.

Sweet + Spicy Meyer Lemon Shrimp Stir Fry

Prep Time: 40 minutes

Cook Time: 10 minutes

Total Time: 1 hour

Yield: 4

A super easy and delicious stir fry made with shrimp and fresh veggies, marinated in a spicy and sweet sauce made with Meyer lemon juice, soy sauce, Sriracha, Steviva Blend and Nectevia. Great for a weeknight dinner or special occasion. Best served over brown rice, cauliflower rice, zucchini noodles or soba noodles.

Ingredients

  • 4 tablespoons Steviva Blend
  • 4 tablespoons Nectevia agave syrup
  • 1/4 cup soy sauce
  • 1 tablespoon minced garlic
  • juice of one Meyer lemon
  • 1 teaspoon sesame oil
  • 1 tablespoon sesame seeds
  • 1 tablespoon Sriracha
  • dash of red pepper flakes (optional)
  • dash of ginger (fresh minced or dried)
  • 1 pound medium shrimp, peeled and deveined
  • 2 tablespoons butter
  • 2 cups fresh sliced veggies (broccoli florets, red pepper, snap peas)
  • white pepper, to taste

Instructions

  1. Whisk together Steviva Blend, Nectevia agave nectar, soy sauce, garlic, lemon juice, sesame oil, sesame seeds, Sriracha, red pepper flakes and ginger in a small mixing bowl.
  2. Add half of the sauce to the shrimp and let marinade in the refrigerator for 30 minutes or more.
  3. Heat butter in a medium sized skillet over medium high heat. Add the shrimp, discard marinade from the bag (save the other unused half for making the sauce). Saute for about 3-5 minutes until shrimp is no longer pink.
  4. Remove shrimp from the pan and add the fresh vegetables. Saute for about 5 minutes or so until soft.
  5. Add the reserved marinade and pour over the vegetables. Cook for another few minutes until sauce thickens.
  6. Add the cooked shrimp back into the pan and toss together with the vegetables and the sauce. Season with pepper, to taste.
  7. Serve immediately, garnish with additional sesame seeds and green onions if desired over brown rice, cauliflower rice, soba noodles or zucchini noodles.

Notes

You can also use this marinade for scallops or chicken or beef, just increasing the cook time appropriate for the protein (about 10-12 mins for chicken or beef until cooked through). Vegetables can be swapped out as well whatever you prefer!

Sriracha Mango Chicken Wings + Spicy Micheladas

Summer is here and almost half way over at that! I love grilling anything and everything during the warm weather months so I’ve created a super delish recipe for Sriracha Mango Chicken Wings with a Ginger-Lime Sour Cream dipping sauce and a Spicy Michelada to pair it with.

Sriracha Mango Chicken Wings + Spicy Micheladas

Once again, I’ve used a fantastic infused balsamic vinegar from Seven Barrels, one of my favorite clients ever. The Sriracha Mango vinegar is delicious on chicken so I made a glaze with fresh mango, sriracha, vinegar, fresh lime zest and orange juice to toss the wings in after I grilled them a bit, then glazed them again for extra flavor at the end.

They’re spicy and sweet, and oh so good. And I made a lovely Ginger-Lime Sour Cream dipping sauce to cool off the heat a bit, along with a Spicy Michelada made with Mexican beer (Corona) and a dash of the Sriracha Mango vinegar, a dash of salt, and a fresh squeeze of lime juice.

Sriracha Mango Grilled Chicken Wings

Ingredients

  • Chicken Wings: 
  • 2 pounds chicken wings (24 wing pieces)
  • 1/4 cup Seven Barrels Lime Olive Oil
  • 1 teaspoon garlic salt
  • 1 teaspoon freshly ground black pepper
  • Vegetable oil or spray, for grill
  • Sriracha Mango Lime Glaze:
  • 1 cup mango, peeled and diced
  • ¼ cup orange juice
  • ¼ cup Sriracha
  • 1 tablespoon Seven Barrels Sriracha Mango Vinegar
  • 1 tablespoon Seven Barrels Lime Olive Oil
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 tablespoon garlic, finely minced (or 1 teaspoon garlic powder)
  • 1 small red chile pepper
  • ¼ cup cilantro
  • Salt and pepper, to taste
  • Ginger Lime Sour Cream Dipping Sauce:
  • ½ cup sour cream
  • 1 tablespoon Seven Barrels Lime Olive Oil
  • 1 teaspoon garlic salt
  • 1 teaspoon fresh lime zest
  • ½ teaspoon fresh ginger, grated
  • Michelada:
  • 1 (12 ounce) Corona Beer
  • Fresh lime juice from ½ a lime
  • 1 tablespoon Seven Barrels Sriracha Mango Balsamic Vinegar
  • 1 teaspoon Kosher salt
  • Dash of hot sauce
  • Lime wedges, for garnish

Instructions

  1. Heat a grill or grill pan over medium-high heat (spray or brush pan with a light coat of cooking oil). Toss the chicken wings in 1/4 cup Seven Barrels Lime Olive Oil, and season with salt and pepper. Cook wings on the grill for about 15 minutes, flipping halfway through, until no longer pink and skin starts to get charred with grill marks.
  2. To make the glaze, add the mango, orange juice, Sriracha, Seven Barrels Sriracha Mango Vinegar, Seven Barrels Lime Olive Oil, honey, soy sauce, garlic, chile pepper and cilantro into a food processor and process until smooth. Place the sauce into a saucepan over medium-low heat and let simmer until warmed through while the wings are cooking. Season with salt and pepper to taste. Remove from the heat to a large mixing bowl.
  3. Once the wings are finished cooking, toss them gently in the Sriracha Mango Lime glaze and let them marinate for about 5 minutes or so. Return wings back to the grill for an additional 5 minutes, flipping over once. Remove wings from the grill on to a large platter and let them cool to give them a nice caramelized glaze.
  4. To make the Ginger Lime Sour Cream dipping sauce, stir together the sour cream, Seven Barrels Lime Olive Oil, garlic salt, lime zest and grated ginger in a bowl and serve with the wings with celery and carrot sticks.
  5. NOTE: Alternatively, you can bake the wings for 1 hour at 375 degrees on a large baking sheet covered with foil (and toss them in the sauce at the end).
  6. Makes approximately 24 wings, 1 cup of glaze and ½ cup sour cream sauce.
  7. To make the Michelada: stir all the ingredients into the beer and garnish with a lime wedge.

Red Curry Beef w/ Zucchini Noodles

Since the holidays are coming soon, we all know what THAT means..lots of holiday parties with food and drinks, and with that in mind, I’ve decided to commit to eating healthier and lighter the next few weeks.

Zucchini Noodles Action

I absolutely love my KitchenAid® Spiralizer Attachment that goes with my KitchenAid® Stand Mixer – and I’m so excited to make some healthier low-carb meals! It comes with five different blades for peeling, coring and slicing and is perfect for fresh fruits and vegetables. I love pasta and rice, but spiralized veggies are such a great substitute when I want to lighten up my recipes and eat low carb.

Red Curry Beef Zoodles

I thought a delicious comfort food dish with a healthy twist would be perfect for the cooler months, and decided to make a Red Curry  Beef with Zucchini Noodles.

Red Curry Beef ingredients

I used lots of fresh, organic ingredients: beef, sweet potatoes, onions, garlic and green beans, and then made a lovely curry sauce with coconut milk, red curry paste, fresh lime juice, fish sauce, some beef broth and a dash of Sriracha to spice it up.

Cutlery and Veggies

I used my Professional Series 3.5″ Paring Knife that came with the 7-piece Professional Series Cutlery set, for chopping my onions and garlic, Thai chilies and basil.

Chop beef into large chunks

The larger Chef’s knife was great for cutting up the large chunks of beef and sweet potatoes with its sturdier grip and large super sharp blade.

Add veggies to curry sauce

My heavy duty KitchenAid ceramic cast iron pot is perfect for making this dish – it cooks evenly and is large enough to make a large pot of curry or stew, and is ovenproof to 500 degrees!

Saute zucchini noodles

The KitchenAid spiralizer attachment is also easy to use! All you need to do is attach it to the KitchenAid mixer, and the spirals come right out perfectly cut. Then you just briefly cook them in a saucepan with some olive or peanut oil, season them with some salt and pepper.

This is such a great Winter comfort food dish to make and it’s so easy to make with all the right tools… You’ll definitely want to make this Red Curry Beef  Zucchini Noodles for dinner – tonight!

Red Beef Curry with Zucchini Noodles

Ingredients

  • INGREDIENTS
  • 3-4 medium zucchini
  • 2 1/2 pounds lean stewing beef, (chuck or round), cut into 1 1/2 inch chunks
  • 1 teaspoon Kosher salt
  • 1 teaspoon freshly ground black pepper
  • 3 tablespoons canola oil
  • 1 sweet onion, finely chopped
  • 4 garlic cloves, minced
  • 1/4 cup red curry paste
  • 2 cans (13.5 ounce) unsweetened coconut milk
  • 2 tablespoons Thai fish sauce
  • 2 tablespoons fresh lime juice
  • 2 tablespoons dark brown sugar
  • 1/4 cup beef broth
  • 1 tablespoon Sriracha hot sauce (optional)
  • 1 large handful French green beans, trimmed
  • 3 medium sweet potatoes, peeled and cut into medium chunks
  • 1 (8 ounce) can sliced bamboo shoots, drained
  • 3 tablespoons fresh basil, chopped or torn, for garnish
  • 1-2 Thai green chilies, sliced fine, for garnish
  • 1/2 cup peanuts, for garnish

Instructions

  1. Attach the KitchenAid® Spiralizer Attachment to your KitchenAid® Stand Mixer and choose your desired spiralizing blade. Attach the vegetable skewer to the Spiralizer and secure it to the zucchini. Move the spiralizing blade to the end of the zucchini and turn on the Stand Mixer to low (level 2) to make the spiralized zucchini noodles. Make sure you place a bowl underneath to catch the zucchini noodles as they fall. Set the noodles aside or keep them in the refrigerator until ready to serve.
  2. Cut the beef into 1 1/2 inch large chunks and place in a bowl. Sprinkle with kosher salt and freshly ground black pepper.
  3. Heat the oil over medium-high heat in your KitchenAid® 6.0Qt Cast Iron Cookware and brown the beef in two batches until lightly browned on all sides. Remove the beef from the pot and transfer to a bowl, set aside.
  4. Add the onion and garlic to the same pot and sauté over medium heat for about a minute. Add the curry paste, stirring into the onions and garlic, until lightly fragrant, for about 30 seconds. Add the coconut milk, and deglaze the pan, stirring up all the crispy brown bits with a wooden spoon. Stir in the fish sauce, lime juice, brown sugar, beef broth, Sriracha (if using) and bring the liquid to a boil.
  5. Add the green beans and sweet potatoes and stir into the liquid. Next add the browned beef back in and stir together well. Cover the pot, reduce the heat to low and let simmer for about an hour and 45 minutes. Add the bamboo shoots into the curry and let simmer for another 15 minutes.
  6. Meanwhile, heat a tablespoon of olive oil in your 10? Skillet from the KitchenAid® Stainless Steel 8-Piece Set over medium heat. Add the zucchini noodles, with some salt and pepper to taste, and sauté for a few minutes until the noodles are soft.
  7. Serve the noodles in bowls topped with the Red Beef Curry, garnishing with fresh chopped basil, sliced Thai green chilies and peanuts.

Sloppy Joes have gotten a bad rap in history over the years, haven’t they? When I think of Sloppy Joes I usually revert to some bad memories of the hair-netted lunch ladies in frocks serving them up on plastic trays in the cafeteria along with a side of some mushy peas and corn with a dried up chocolate chip cookie, along with the scary smells that came out of the school kitchen back in those days.

I had some extra ground beef in the freezer and wanted to make something different. Not another burger. Or meatloaf. Or batch of spaghetti and meatballs. But something I haven’t had in a loooonnnggg time, and Sloppy Joes fit the bill. But how could I remake this old-fashioned simple sandwich a bit tastier and appealing without looking like a big plate of mush?

I was determined to take these elementary school BBQ sammies to the next level by kicking them up a notch in heat level. I added some sliced jalapeños and Sriracha and some hot pepper sauce to the mix to give it some nice spiciness, but kept the caramel sweet undertones by mixing some honey into the brown sugar, and used Cabernet vinegar and shallots which are also a bit sweeter than traditional onion and help balance out the spicy heat a bit more.

The result was a perfectly sweet and spicy sauce mixed with the ground beef and peppers and jalapeños in every bite. Served on a buttered toasted bun, with a side of pickles and chips. YUM. What would have been even better is some melted cheese on the buns, which I highly recommend. So don’t be afraid of that old school cafeteria food – if you make it yourself and give it a little twist, it’s actually quite spectacular. And devilishy delicious.

Devilishly Good: Sriracha Jalapeno Sloppy Joes

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Yield: 6

Sloppy Joes with a kick! Made with Sriracha and Jalapenos for heat, plus tangy Dijon mustard, Worcestershire, honey and brown sugar for some sweetness.

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 shallots, diced (or 1 medium onion)
  • 1/2 cup red bell pepper, diced
  • 1 tablespoon minced garlic
  • 1/4 cup diced jalapenos
  • 1 pound ground beef/sirloin
  • 1/4 cup water
  • 1 cup tomato sauce
  • 1/2 cup ketchup
  • 2 tablespoons Sriracha hot sauce (less or more to taste)
  • 1/2 tablespoon red pepper flakes
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Cabernet vinegar
  • 1 tablespoon light brown sugar
  • 1 tablespoon local honey
  • 1 teaspoon Montreal steak seasoning
  • Kosher salt and freshly ground black pepper, to taste
  • 6 large Kaiser sandwich rolls (sesame or onion or poppy)

Instructions

  1. Heat oil and butter in a large saute pan over medium heat.
  2. Add the shallots and red pepper and cook for about 5 minutes until soft.
  3. Add the garlic and jalapenos and cook for another minute or so, stirring often.
  4. Add the ground beef and cook for about 10 minutes until no longer pink.
  5. Stir in water, tomato sauce, ketchup, Sriracha, red pepper flakes, Worcestershire, mustard, vinegar, brown sugar, honey and all the seasonings and bring to a bubbling simmer.
  6. Reduce heat to low and simmer covered, for at least 30 minutes, stirring occasionally, to let all the flavors meld together.
  7. Toast or grill the sandwich rolls (buttered, if you like). You can also melt some cheese on the buns for some extra cheesy flavor.
  8. Top the bottom of the buns with the Sloppy Joe mixture and serve hot.
  9. Serve with a side of pickles and crispy chips.

Notes

Serve on buttered toasted or grilled buns with a side of pickles and chips. Can also melt cheese on the buns before topping with Sloppy Joe mixture.

These delicious Crab BLT’s are made with fresh lump Alaskan King crab meat (you can find it in your local grocery market in the seafood section or buy it fresh from a seafood market). For some extra kick, I add a dash of spicy Sriracha (hot chile pepper sauce), a little bit of mayonnaise, fresh lemon juice and capers, and a few breadcrumbs to bind them all together. Simply make the crab cakes by patting them into medium size patties, then coat them in some Japanese Panko breadcrumbs and lightly fry them to perfection in some oil and drain. Rest the crab cakes on a gorgeous bed of lettuce and juicy tomatoes, garnished with crispy bacon and a light and refreshing coleslaw for crunch. The crowning touch is a homemade Sesame-Sriracha Mayo on a beautifully toasted  (or grilled) sesame hard roll. Let the fun begin!

Spicy Thai Chicken Peanut Noodles

I don’t know about you, but Thai food is one of my favorite foods ever. I love the harmony of flavors and textures in Thai food that all play together like a perfect symphony. One of my all time favorites is Thai Peanut Noodles – similar to Pad Thai, but with a smooth peanut sauce with a hint of heat. I decided to kick it up a notch by adding some Spicy Thai Chicken that pairs perfectly with the creamy peanut-y noodles.

This dish is a gorgeous combination of spicy, savory and sweet with a marinade base for the chicken made with sesame, honey, soy sauce, garlic, and chile sauce, mixed with acidic notes of rice vinegar. It’s the perfect marriage of varying textures from the chewy noodles, crunchy peanuts and water chestnuts, all bathed in a smooth and luscious damn-good-peanut-sauce. Then to perfect it even more, it’s topped with fresh bright flavors of cilantro, lime and scallions. It’s so good, it just might be illegal. And don’t be ashamed to dig in right out of the pan. Grab some chopsticks, a pal or two and go to town. It’s rustic Asian comfort food at its best. Serve with a sweeter wine such as a Riesling, which pairs nicely with the spicy Asian flavors in this dish.

Total Time: 50 minutes

Ingredients

  • Spicy Chicken Marinade:
  • 2 tablespoons sesame oil
  • 6 tablespoons soy sauce
  • 2 tablespoons Rice Vinegar
  • 1 tablespoon Sriracha hot sauce
  • 1 tablespoon Thai Garlic-Chile Sauce
  • 1 tablespoon minced garlic
  • 2 tablespoons honey
  • 1 teaspoon sesame seeds
  • 1 teaspoon white pepper
  • 1/2 teaspoon dried ginger
  • Thai Peanut Sauce:
  • 2 teaspoons soy sauce
  • 1 cup peanut butter
  • 2 cups chicken broth
  • 2 tablespoons Thai Garlic-Chile Sauce
  • 1 teaspoon honey
  • 1 teaspoon salt
  • Squeeze of fresh lime juice
  • Chopped peanuts, for garnish
  • Fresh squeezed lime, for garnish
  • Chopped Cilantro, for garnish
  • Sliced scallions, for garnish
  • Canola oil cooking spray
  • 2 pounds chicken breast cutlets, sliced into thin strips
  • 1 can water chestnuts, diced
  • 1 package Thai Rice Noodles (flat, wide or Pad Thai)

Instructions

  1. Prepare Spicy Chicken Marinade:
  2. In a large mixing bowl, add all nine ingredients (sesame oil through dried ginger) along with sliced chicken breast and mix together thoroughly, coating chicken well. Top with plastic wrap and let chicken marinade in the refrigerator for at least 30 minutes up to 2 hours.
  3. Once chicken is done marinating, bring a large pot of salted water to a boil and cook Thai noodles according to package directions, drain and rinse in cold water to stop cooking. Set aside.
  4. Meanwhile, heat a large saute pan over medium heat, spray with cooking spray and saute chicken for approximately 8 minutes until cooked through and no longer pink. Add diced water chestnuts and saute for another minute or two until soft and heated through. Note: Make sure to drain and discard extra marinade off the chicken before sauteing to allow the chicken to brown in the pan and not steam. Reduce heat to low, cover and keep warm.
  5. Make the peanut sauce: combine soy sauce, peanut butter, broth, garlic-chile sauce, honey, salt and lime juice in a medium saucepan over medium heat, mixing and stirring well until sauce is smooth and blended. Toss noodles together with peanut sauce.
  6. Add the peanut noodles into the large pan with the cooked chicken and water chestnuts, toss together well with tongs to blend the flavors and ingredients. Squeeze fresh lime juice over the top, and garnish with chopped peanuts, cilantro, and sliced scallions. Add additional red pepper flakes or garlic-chile sauce for extra heat, as desired.

A sweet German Riesling wine would pair well with the spicy acidic flavors in this Asian dish.

Citrus Honey Soy Chicken with Toasted Almond Farro

Tuscan Fields, provider of organic, Italian farro, is offering a scholarship to this spring’s Eat Write Retreat food bloggers conference in Philadelphia. They sent some of their delicious samples to me to create a farro recipe for a chance to win a scholarship to the conference this year!

If farro is new to you, you’ll love discovering this ancient grain made of 100% organic semi-pearled farro. It has a mellow, nutty taste, a pleasing “al dente” texture when cooked, and offers loads of nutrients in each bite. Plus, it’s versatile enough to elevate side dishes, salads, soups and main courses to culinary excellence. You can use farro in place of white or brown rice, couscous or pasta and pair it with roasted vegetables, meats and poultry or make a fresh spring salad with farro as your whole grain base, layered with vegetables, fruit or fresh herbs tossed in a vinaigrette dressing.

I decided to create a recipe for Citrus Honey Soy Chicken with Toasted Almond Farro – made with stir-fried chicken marinated in honey, soy sauce, orange juice, garlic, sriracha hot sauce, ponzu sauce, white pepper, black and white sesame seeds, and water chestnuts topped with green onion, fresh orange slices and toasted almonds over a bed of cooked farro. The sauce has a sweet and tangy zing that pairs great with the nutty farro and toasted crunchy almonds. The fresh orange slices give it a fresh and healthy twist.

I am lovin’ this grain – and plan to come up with some other cool recipes to make with it!

Citrus Honey Chicken with Toasted Almond Farro

Prep Time: 30 minutes

Cook Time: 30 minutes

Ingredients

  • CITRUS HONEY CHICKEN
  • 1/4 cup organic wildflower honey
  • freshly squeezed juice from half of a large navel orange (about 1/4 cup)
  • 1 tablespoon soy sauce
  • 1 tablespoon citrus Ponzu sauce
  • 1 tablespoon Sriracha (asian hot sauce)
  • 1/2 tablespoon grated fresh ginger
  • 1 teaspoon sesame oil
  • 3 garlic cloves, minced
  • 1 tablespoon black and white sesame seeds
  • White pepper, freshly ground, to taste
  • 1 tablespoon canola oil
  • 1 can water chestnuts, diced
  • 4-5 boneless, skinless chicken thighs, cut into medium-size chunks
  • TOASTED ALMOND FARRO
  • 1 box Tuscan Fields Organic Farro Perlato
  • 1 orange, peeled and sectioned
  • 1/2 cup almonds, toasted
  • 2 green onion, sliced for garnish

Instructions

  1. CITRUS HONEY CHICKEN WITH TOASTED ALMOND FARRO
  2. To make the Citrus Honey marinade, add the first ten ingredients into a large mixing bowl and stir together well.
  3. Add the chicken pieces, stirring to coat, then cover with plastic wrap and let marinate in the refrigerator for up to one hour.
  4. Meanwhile, rinse farro in a colander under cold water and then cook in salted boiling water for approximately 20 minutes, drain and set aside.
  5. Toast almonds in a saute pan over medium heat for about 5-7 minutes until lightly browned.
  6. Peel and section oranges and slice the green onions.
  7. Once chicken is done marinating, heat 1 tablespoon of oil in a large saute pan or wok over medium-high heat.
  8. Add the water chestnuts and saute for a few minutes.
  9. Remove chicken pieces from marinade, shaking off extra sauce and set marinade aside (do not discard).
  10. Add chicken to the saute pan and cook for approximately 8-10 minutes until chicken is no longer pink and starts to brown.
  11. Pour the reserved marinade into the pan with the chicken and water chestnuts and stir thoroughly, cook for another few minutes on medium-low heat to let the sauce thicken a little bit.
  12. To serve, make a bed of farro on to each dinner plate. Top with the chicken and water chestnut sauce mixture.
  13. Garnish with toasted almonds, sliced green onions, fresh orange slices, and additional white pepper to taste.

Sweet and Spicy Chicken Bites

These yummy sweet and spicy Asian Chicken bites combine honey, soy sauce, orange and Sriracha to make a fun bite-sized appetizer with a delicious glaze.

Ingredients

  • 1/2 cup honey
  • 2 tablespoons brown sugar
  • 1 tablespoon Sriracha hot sauce
  • 2 tablespoons white vinegar
  • 2 tablespoons fresh orange juice, plus 1 tsp zest
  • 2 tablespoons soy sauce
  • 2 teaspoons Colavita Roasted Garlic EVOO
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon minced garlic
  • 1 pound skinless boneless chicken thighs, cut into bite sized pieces
  • 1 tablespoon Colavita Roasted Garlic EVOO
  • Fresh ground white pepper
  • Dash of red pepper flakes
  • 2 teaspoons cornstarch
  • 2 teaspoons water
  • 1 tablespoon black and white sesame seeds, toasted (for garnish)
  • 1 green onion, sliced thin (for garnish)

Instructions

  1. Combine all ingredients from honey through minced garlic and place inside a large plastic freezer bag.
  2. Cut up chicken into bite-sized pieces and trim visible fat, place in bag and marinate in refrigerator for at least an hour to overnight.
  3. Preheat oven to 425 degrees.
  4. Remove chicken from freezer bag, reserving marinade, and place on a greased baking sheet.
  5. Bake for 20 minutes, turning one time until chicken is browned nicely.
  6. Strain marinade and discard solids, and pour into a saucepan bringing to a boil. Reduce heat and cook for about 3 minutes.
  7. Combine water and cornstarch and slowly pour into glace in saucepan. Add fresh cracked white pepper and red pepper flakes, stirring well.
  8. Turn oven up to 500 degrees.
  9. Toss chicken bites with the glaze and broil for about 5 minutes.
  10. Meanwhile, toast sesame seeds for a few minutes in a pan over medium heat and chop green onion.
  11. Serve chicken bites garnished with sesame seeds and green onions with cocktail toothpicks on a small platter or small plates.

Caramelized Onion, Ricotta & Pancetta Tart

This is a lovely tart recipe that combines sweet and savory flavors. The caramelized onions give it a sweet flavor with a hint of fig balsamic vinegar, balanced out by creamy ricotta, nutty Gruyere cheese, fresh herbs and crispy pancetta.

Ingredients

  • 1 package pancetta (8 thin slices)
  • 3 tablespoons Colavita Fruttato EVOO
  • 2 sweet Vidalia onions, halved lengthwise and sliced thin
  • 1 tablespoon brown sugar
  • Kosher salt
  • Fresh ground black pepper
  • 1-1 1/2 tablespoons Fig balsamic vinegar (Tavern Direct brand)
  • 1 cup fresh ricotta
  • 1 egg yolk
  • 1 tablespoons dried Fines Herbes (or 2 tablespoons fresh herbs)
  • 1/2 cup shredded Gruyere cheese
  • 1 frozen pie shell, defrosted, or homemade tart dough

Instructions

  1. Preheat oven to 350 degrees.
  2. Heat a saute pan over medium heat and cook pancetta until browned but not fully cooked, about 5 minutes. Drain fat from pan and place pancetta on paper towels to drain to the side. Once cooled, chop pancetta into small pieces.
  3. Peel onions, remove top and bottom stems and cut in half lengthwise.
  4. Slice onions thin (about 1/8" thick or desired thickness).
  5. In the same saute pan, add 3 tablespoons olive oil and heat over medium high heat.
  6. Add onions and cook over medium high for about 10 minutes.
  7. Sprinkle brown sugar, salt and pepper over onions and stir well, cook another 10-20 minutes, reducing heat to medium low if onions start to brown too quickly.
  8. Continue cooking and stirring onions over medium low for another 15 minutes, add a few teaspoons of water if desired.
  9. Add the fig balsamic vinegar to the onions, turn heat down to low and let cook until they are caramelized, soft and sweet, up to an hour total.
  10. Combine the ricotta, egg yolk and Fines Herbes together in small mixing bowl.
  11. Spread the ricotta mixture over the pie shell in a 9" tart pan with removeable bottom.
  12. Sprinkle Gruyere cheese over ricotta.
  13. Top with caramelized onions and pancetta.
  14. Bake the tart in the oven for approximately 30-45 minutes until pastry and filling are golden brown, and pancetta is crispy.
  15. Let tart cool on a cooling rack for 10-15 minutes before serving.
  16. Serve tart cut into wedges.

Hot Artichoke dip is one of my all time favorite holiday dip recipes, and this one is extra special, using Colavita's California EVOO, lemon zest and minced garlic with lots of gooey cheese. Instead of using mayonnaise, I substitute a light sour cream to cut some of the fat and calories. Serve with my homemade baked pita chips or crackers.

Ingredients

  • 2 tablespoons Colavita California extra virgin olive oil
  • 1 package frozen artichokes, defrosted
  • 1 tablespoon minced garlic
  • zest and juice from 1/2 lemon
  • Garlic salt with parsley (to taste)
  • Fresh cracked black pepper (to taste)
  • 1/2 cup shredded parmesan cheese
  • 1 cup shredded light monterey jack cheese, plus 1/2 cup for topping
  • 1/2 cup light sour cream
  • dash of cayenne (optional)
  • dash of paprika (for garnish)
  • 1 green onion, sliced thin (for garnish)

Instructions

  1. Heat oil in a saute pan over medium high heat. Add artichokes and minced garlic, saute about 5-7 minutes until heated through.
  2. Add lemon juice, zest, garlic salt and pepper, mix well and cook another few minutes, set aside.
  3. Meanwhile, add shredded cheeses and sour cream together in a mixing bowl.
  4. Add sauteed artichokes, garlic and lemon to cheese and sour cream.
  5. Sprinkle with a dash of cayenne (if desired), mix well and transfer to a casserole dish.
  6. Sprinkle additional monterey jack cheese over the top and bake in the oven for about 20-30 minutes until bubbly and cheese is melted on top.
  7. Let cool a few minutes, sprinkle with paprika and green onions. Serve with homemade baked pita chips (recipe follows), crackers or crudites.

Baked Garlic Pita Chips

Making homemade pita chips is super easy and way better than buying the storebought kind for your holiday party. Mine are made with whole wheat pita bread, drizzled with EVOO, and sprinkled with garlic salt and cumin for some extra flavor. So delicious and crispy straight out of the oven and so addicting you'll never buy them again! Serve with Hot Parmesan Garlic Artichoke Dip or any of your other favorite party dips.

Ingredients

  • 6 whole wheat pita rounds
  • 2 tablespoons Colavita California EVOO
  • 1 tablespoon garlic salt
  • 1/2 tablespoon cumin

Instructions

  1. Preheat oven to 400 degrees.
  2. Cut pita rounds into triangles (6 wedges per pita).
  3. Lay out pita wedges on a baking sheet and brush each wedge with olive oil.
  4. Sprinkle garlic salt and cumin on top.
  5. Flip over pita wedges, repeat coating with oil, salt and cumin.
  6. Place baking sheet(s) in oven and cook pita wedges for about 15 minutes (checking to make sure they don't burn!)
  7. Let cool, and serve with Hot Parmesan Garlic Artichoke Dip.

Everyone loves cocktail meatballs at holiday parties! These lovelies have a hint of lemon and sage and are light and fluffy, made with ground pork or chicken. They are first browned on the stovetop and then finished in the oven until golden brown. They're delicious alone, or dipped in a hot pepper jelly (Williams-Sonoma brand is great), balsamic pear jam (there's one by Academia Barilla that is to die for) or simply dipped in balsamic vinegar glace.

Ingredients

  • 3 slices of bread, crusts removed
  • 1/4 cup milk
  • 1 pound ground pork or chicken
  • 1/4 cup fresh sage, chopped fine
  • 1 tablespoon garlic, minced
  • 1/2 cup onion, minced
  • zest and juice from half a lemon
  • 1 cup mozzarella cheese, shredded
  • 1 teaspoon red pepper flakes
  • 1 egg, beaten
  • 1 teaspoon garlic salt
  • Fresh ground black pepper, to taste
  • 1 tablespoon Colavita Argentina EVOO
  • 1 tablespoon Colavita Roasted Garlic Cooking Oil Blend
  • Red Pepper jelly, for dipping (Williams Sonoma brand)
  • Balsamic Pear jam, for dipping (Academia Barilla brand)
  • Colavita Balsamic Glace, for dipping

Instructions

  1. Preheat oven to 350 degrees F.
  2. Remove crusts from bread and tear into small pieces in a large mixing bowl, add milk and let soak for 10-15 minutes.
  3. Mix in ground pork or chicken, sage, garlic, onion, lemon juice and zest, cheese, pepper flakes, egg, salt and pepper with soaked bread crumbs with your hands in a claw-like motion to keep meatballs light and fluffy.
  4. Roll meat mixture into small to medium size meatballs (small makes approximately 36, medium makes approximately 18).
  5. Heat olive oils in a large saute pan over medium heat (if not using cooking oil blend, mix EVOO with a tablespoon of butter to avoid temperature from getting too high and splattering).
  6. Cook meatballs in batches in the oil for about 5 minutes each batch until meatballs are browned on all sides, drain on paper towels.
  7. Once all meatballs are browned, place them on a large rimmed baking sheet coated with cooking spray to avoid sticking.
  8. Bake in the oven for approximately another 15 minutes until cooked through and to keep warm.
  9. Top with additional garlic salt (if desired), fresh chopped sage, and serve with red pepper jelly and balsamic pear jam, and Colavita Balsamic Glace for dipping.

These zucchini sticks are a great appetizer for any holiday party. They have a light crunchy coating of Japanese Panko seasoned bread crumbs and are finished with a splash of lemon and sprinkling of sea salt. They go perfect with the cool and creamy yogurt dill sauce or even a ranch dressing for dipping.

Ingredients

  • CRUNCHY ZUCCHINI STICKS
  • Colavita Roasted Garlic Cooking Oil Blend
  • 4 medium zucchini, cut into half, into long strips
  • 1 cup all-purpose flour
  • 1 cups Panko Japanese-style seasoned breadcrumbs
  • Sea salt and fresh ground pepper
  • 2 large eggs
  • Sea salt, for sprinkling, to taste
  • Lemon wedges, for garnish
  • Fresh minced dill, for garnish
  • YOGURT DILL SAUCE
  • 1 cup of Greek yogurt
  • 2-3 tablespoon minced dill
  • Sea salt and pepper, to taste

Instructions

  1. CRUNCHY ZUCCHINI STICKS
  2. Heat olive oil over medium high heat in a large deep saute pan, about 2 inches high.
  3. Trim ends off zucchini, cut in half and then in half again lengthwise.
  4. Cut zucchini into large strips about 1/2 an inch thick.
  5. Pour the flour and Panko breadcrumbs into one large bowl and season with salt and pepper.
  6. Beat eggs in a separate bowl.
  7. Dip zucchini sticks in egg, shaking off excess, then dip in bowl to coat with flour and breadcrumbs.
  8. Place coated zucchini on a baking sheet.
  9. Fry in batches until golden brown, draining excess oil on another baking sheet lined with paper towels.
  10. Squeeze some fresh lemon juice on top of zucchini and sprinkle with fresh dill and additional sea salt to taste.
  11. YOGURT DILL SAUCE
  12. In a medium bowl, mix together greek yogurt, dill, salt and pepper to taste.
