Summer is in full swing and there’s nothing I love better than some fresh seafood and grilling outside with friends and family. Living in St Pete, Florida, I am spoiled with all of the fresh seafood options here – and one of my favorites is Blackened Scallops, (and any blackened seafood really!). This inspired my recipe Blackened Scallops with Grilled Basil Butter Corn + Watermelon Jicama Salsa for the Sam’s Salsa Recipe Challenge… and it’s full of fresh, bright, tropical flavors and summertime goodness.
Sam’s Fresh Salsa started in the 70’s on a family farm in New Jersey, and is still going strong making delicious homemade salsas with only the freshest fruits, vegetables and ingredients.
Their salsas have no preservatives or artificial ingredients, and are free of additives too. And they taste just like homemade; the kind you would find in an authentic Mexican restaurant or made fresh at home. They also have several other delicious salsa flavors such as Cantina Medium Salsa and Salsa Verde, and a variety of fresh salsas ranging from Mild to Extra Hot.
I made the Basil Butter by creaming the two ingredients together with a little bit of fresh lime juice and creole seasoning and let it sit for about 30 minutes to let the flavors meld together, then I mixed in the butter with the shaved grilled corn, sautéed shallots, and green onions.
I blackened the sea scallops in a hot cast iron pan in some clarified butter for a few minutes on each side to get them nice and browned.
I plated the Blackened Scallops on top of the Grilled Basil Butter Corn and topped the dish with some lovely Watermelon Jicama Salsa and more green onions, fresh basil and a few pieces of chopped watermelon for garnish.
You guys..this dish is a FLAVOR BOMB!!! The spicy scallops over the savory, buttery corn with basil and shallots mixed with a hint of sweetness from the Watermelon Jicama salsa is absolutely SPECTACULAR!!!
Summer on a plate, really. And totally delightful.
To make the Grilled Basil Butter Corn, cream the butter (room temp) with fresh basil, lime juice and cayenne pepper/creole seasoning; cover and let sit for 30 mins to let the flavors meld together.
Preheat grill over medium heat and lightly oil the grates. Place the corn on the grill and cook with the cover on for about 20-25 minutes until the corn is charred and tender. You can also grill the corn in a grill pan on the stove or buy frozen pre-grilled corn kernels.
Meanwhile, heat some oil or butter in a cast iron pan over medium heat and sauté the shallots until soft and golden brown, about 5 minutes. Set aside.
Once corn is done, slice off the corn kernels with a large knife into a large mixing bowl. Toss the corn with the basil butter and sauteed shallots; season with salt and pepper to taste, set aside. Rinse the scallops and pat dry.
To cook the blackened scallops, raise the heat on the cast iron pan to high until it begins to smoke. Brush the scallops on both sides with butter/ghee or oil and season with sea salt. Dredge each side of the scallops in the blackening seasoning in a medium shallow bowl. Place them in the hot pan spice side down. (You may want to have your windows open and fan on because you’ll get some smoke while blackening.)
Cook for 1-2 minutes to get a nice browned crust, then flip scallops over and continue to cook for another 2-3 minutes. You can also finish the scallops in the oven for 4-5 minutes at 350 degrees F.
Serve scallops over the Grilled Basil Butter Corn and top with the Watermelon Jicama Salsa, green onions, fresh basil and diced watermelon for garnish.

This would also be delicious made with blackened shrimp or fish (like grouper!)
for another layer of flavor, serve the grilled basil butter corn and scallops over some mashed cauliflower or mashed potato puree.
It wouldn’t be the holidays without catching up with friends and family and coming together for a fun holiday brunch with friends that I only get to see a couple times a year. There’s nothing better than gathering in the kitchen and around the table to eat, drink, and laugh together over some great food and drinks.
We decided to all bring a dish for our brunch (I love potlucks!) – I made a Caramelized Onion, Ham and Gouda Tart, my Sister brought a Pear, Bleu Cheese, Cranberry and Toasted Pecan Salad with Honey Vinaigrette. We also had homemade Chicken Empanadillas from my friend Julie, a Gluten-Free Spinach and Mushroom Egg Casserole by Donna (our gracious host!) and Rachel’s Brown Sugar Butter Monkey Bread was to die for! Teresa brought some gorgeous Christmas cookies and Peppermint Bark for dessert. Here’s a roundup of our recipes for the perfect holiday brunch..enjoy!
This savory tart recipe is perfect for the holidays and easy to make. You can either make it in a 9-inch tart pan or in a pie dish. It has tons of chunky ham, lots of gooey melty cheese, and caramelized onions, covered in a creamy egg custard with herbs baked in a crunchy, flaky pie dough. You could also substitute crispy bacon or prosciutto for the ham, and use any melty cheese you like. The caramelized onions and garlic give it a tangy sweet flavor that goes perfect with the cheesy creamy custard.
Ingredients
1 refrigerated pie shell dough (fresh or store-bought)
3/4 cup Gouda cheese, sliced or shredded (can also substitute Gouda, Cheddar or another soft cheese that melts well)
Instructions
Preheat oven to 450 degrees.
Roll out pie dough into a 9" pie dish, overlapping dough 1 inch over edge of pie dish. Flute edges.
Heat a large sauté pan over medium-low heat, add olive oil and butter and onions.
Saute onions for about 5 minutes until soft, add maple syrup and stir.
Saute onions for another 5-10 minutes until they become caramelized and golden brown, add garlic and cook another minute or so. Remove from heat and set aside.
Meanwhile, in a mixing bowl whisk together sour cream, egg, egg yolk, light cream, fresh thyme, parsley and salt and pepper to make the custard filling.
Scatter the caramelized onions into the pie shell, and top with diced ham and cheese.
Pour custard over the top evenly into the shell. Bake tart for 10 minutes.
Take tart out of the oven and cover the crust edges with strips of foil and bake an additional 15 minutes until bubbly and golden brown..
Let tart cool on a wire baking rack, cut into wedges and serve.
Note: if using homemade dough, pre-bake tart shell covered in foil with dried beans or pie weights at 400 degrees F for 15-17 minutes, then and add meat and veggies and custard filling and bake for additional 20 minutes or so until the tart is set.

This is one of my favorite Winter salads made with a gorgeous combination of flavors and textures. It has fresh sliced pears, toasted pecans, crumbly bleu cheese and red onions, bathed in a slightly sweet honey vinaigrette.
Ingredients
3/4 cup pecans, toasted
1/2 head iceberg lettuce, chopped
1/2 head romaine lettuce or 1/2 bag mixed greens, chopped
1/2 large red onion, sliced thin
3/4 cup crumbly bleu cheese
1/2 cup dried cranberries
1-2 pears, cored and sliced
Dressing:
3 tbsp veg oil
1 tbsp red wine vinegar
3 tablespoons honey, heated
1/2 teaspoon Dijon mustard
1 1/2 teaspoons salt (optional)
1/4 teaspoon fresh ground black pepper (optional)
Instructions
Salad:
Preheat oven to 325 degrees.
Place pecans on a baking sheet and toast for 7-10 minutes until lightly browned.
Chop lettuces and slice onion, add to large salad bowl with cranberries.
Core and cut pears into thin slices. Toss some into salad, save some for topping.
Heat honey and make dressing; toss with salad ingredients, top with crumbly bleu cheese and sliced pears.
Dressing:
Combine vinegar, warmed honey, salt and pepper in a blender or whisk together well in a mixing bowl.
Slowly stream in olive oil whisking vigorously until all oil is blended into a gorgeous vinaigrette dressing.
This is a classic recipe for Chicken Empanadillas (or empanadas). It has a flaky buttery dough surrounding a savory mixture of shredded cooked chicken, onions and spices, then lightly fried to crispy golden brown perfection. Serve with fresh tomato salsa for some extra heat and Latin flavor.
Ingredients
1 tbsp. Evoo
½ lb. cooked chicken breast & thigh
½ medium yellow onion, finely chopped (about ½ cup)
¼ cup Tomato Sauce
6 Spanish Olives Stuffed with Minced Pimientos, thinly sliced
2 tbsp. Sofrito
1 packet Sazón with Coriander and Annatto
1 tsp. Minced Garlic or 2 cloves garlic, finely chopped
½ tsp. Dried Oregano Ground Black Pepper, to taste
Heat oil in a large skillet over medium heat. Add shredded chicken and cook until browned, breaking up meat with a spoon, about 10 minutes.
Add onions and cook until soft, about 5 minutes more.
Stir in tomato sauce, olives, Sofrito, Sazón, garlic, oregano and black pepper. Lower heat to medium-low and simmer until mixture thickens, about 15 minutes.
On a lightly floured work surface, using a rolling pin, roll out discos until ½” larger in diameter. Spoon about 1 tbsp. meat mixture into middle, fold in half to form a half moon; moisten edges with water and pinch to seal closed, or seal with a fork.
Fill a deep saucepan with oil to a depth of 2½”. Heat oil over medium-high heat until hot but not smoking (350°F on deep-fry thermometer).
Cook Empanadas in batches until crisp and golden brown, flipping once, 4 – 6 minutes. Transfer to paper towels to drain.
Serve warm or at room temperature with a side of salsa.
Gluten-Free Spinach, Mushroom and Cheese Egg Casserole
Prep Time: 20 minutes
Cook Time: 40 minutes
Total Time: 1 hour

This is a healthy and delicious gluten-free egg casserole made with spinach, sautéed mushrooms, onions and cheese baked into a fluffy savory dish that will feed a crowd and leave room for the heavier fare at the brunch table.
Ingredients
1 large bag (10 oz. each) spinach
1 1/2 cups shredded Cheddar cheese (6 oz)
1 1/2 packages (8 oz. each) sliced mushrooms
1 medium onion, chopped (1/2 cup)
1/2 cup Gluten-Free Bisquick® mix
1 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs
Instructions
Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
Sprinkle spinach, 1 cup of the cheese, the mushrooms and onion in pie plate.(I personally recommend sautéing the onions and mushrooms for a few minutes first to soften them before adding to the casserole.)
In medium bowl, stir remaining ingredients with wire whisk or fork until blended. Pour into pie plate.
Bake 35 to 38 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1/2 cup cheese.
Bake 1 to 2 minutes longer or until cheese is melted. Let stand 5 minutes before serving.
This recipe for Monkey Bread is sure to be a huge hit at your next brunch gathering with friends. It's super easy to make, using Pillsbury biscuits and is topped with brown sugar, butter, walnuts and cinnamon baked into a caramelized construction of sweet buttery goodness. It won't last longer than 5 minutes - promise!
Heat oven to 350°F. Lightly grease 12-cup fluted tube pan with shortening or cooking spray. In large -storage plastic food bag, mix granulated sugar and cinnamon.
Separate dough into 16 biscuits; cut each into quarters. Shake in bag to coat. Arrange in pan, adding walnuts among the biscuit pieces.
In small bowl, mix brown sugar and butter; pour over biscuit pieces.
Bake 28 to 32 minutes or until golden brown and no longer doughy in center. Cool in pan 10 minutes. Turn upside down onto serving plate; pull apart to serve. Serve warm.
As I reflect on 2013, this has been a year filled with challenges and opportunities, adventures and growth both personally and professionally. I recently did a fun food styling TV segment for Mario Lopez and Avocados from Mexico on the Bethenny show and NBC New York Live. The segment featured Mario discussing his new cookbook Extra Lean, demonstrating how to use fresh avocados in your everyday cooking for delicious healthy meals. I made his Chicken Enchiladas with Black Bean, Corn and Avocado Salsa for the show – it turned out absolutely delicious and was a hit backstage! I also made some gorgeous Avocado, Mozzarella and Tomato SaladBites for the Bethenny Show that were super cute and delicious. Here’s the recipes and some fun behind the scenes photos from the show!
Chicken Enchiladas with Black Bean, Avocado and Corn Salsa
Serves 3
Ingredients:
6 corn tortillas
2 tsp olive oil
1/2 cup diced bell pepper
1/2 cup diced onion
1/2 tsp salt
1/2 tsp dried oregano
6 oz cooked chicken breast, shredded
2 tbsp canned green chiles
1/2 cup mild tomato salsa, divided
1/2 cup low fat shredded cheese (cheddar or Monterey Jack recommended)
Chopped scallions
Hot sauce (optional)
Nonstick cooking spray
Directions:
Preheat oven to 375°F.
Wrap tortillas in aluminum foil and place in the oven to warm.
Heat oil in large skillet over medium heat; add onions and peppers. Season with salt and oregano and sauté for 5 minutes.
Add chicken, green chiles, 1/2 cup salsa, and spinach and cook until spinach is wilted.
Remove tortillas from the oven and spray a 9 x 9 inch baking dish with non-stick cooking spray
Place 1/4 cup of chicken mixture in a tortilla, roll up and transfer to baking dish; repeat with remaining tortillas.
Top tortillas with Black Bean, Avocado and Corn Salsa and cheese and bake for 10 minutes until cheese is melted.
Garnish with chopped scallions, additional Black Bean, Avocado and Corn Salsa and serve with hot sauce, if desired.

Black Bean, Avocado and Corn Salsa
Serves 4 – 8
Ingredients:
1/4 cup vinaigrette salad dressing
1/4 cup sliced scallions
2 tbsps chopped fresh cilantro
1 tsp grated lime peel
1 can (15 ounces) black beans, drained and rinsed
1 cup corn kernels
1/2 cup diced red pepper
1 fully ripened avocado from Mexico, halved, pitted, peeled and diced
Directions:
In large bowl, whisk together salad dressing, scallions, cilantro and lime peel. Stir in beans, corn and red pepper. Add avocado; toss gently. Season with salt, if desired.

Avocado, Mozzarella and Tomato Salad
Serves: 4 – 6
Ingredients:
2 Hass Avocados from Mexico, sliced
2 ripe tomatoes
1 pound mozzarella
1 1/2 ounce bunch of fresh basil leaves
1/4 cup extra virgin olive oil
1/4 cup balsamic vinegar
salt and pepper to taste
Directions:
With a small knife or “shark”, cut the little stem end out of the tomato using a serrated knife, cut the tomatoes into 1/3 inch slices.
Slice the mozzarella 1/4 inch thick.
Alternate slices of Avocado, tomato, mozzarella and basil leaves like playing cards on individual plates.
I recently got back from an amazing trip to San Diego – one so lovely and rejuvenating that the sunsets are burned into my brain, leaving me wishing for more of the bright colorful skies, fresh air, palm trees swaying in the wind and cool sand between my toes.
This is a fun trip that started last year with an amazing group of friends and has now turned into a yearly tradition.
Seven of my friends and I rented a gorgeous beach house on Mission Beach in San Diego –
Our house had two levels, two kitchens, five bedrooms, a beach front patio, two grills, plus another two patios outside,
all with stunning views of the ocean from every angle and every room.
It all started as a birthday celebration trip for my friend Suzanne last year and now with another birthday girl, my dear friend Linda. Plus five other cool cats I’m proud to be friends with: Paula, Cris, Jackie, Janis and Andrew. What a crew.

There’s something about California that makes me feel relaxed, happy, and in a totally different world than the one I live in New York City.
No crazy traffic or cars honking, just beautiful beaches and cool, relaxed people up early for morning jogs and bike rides, swaying palm trees,
hazy blue and pink sunrises, and breathtakingbright magenta and orange sunsets that will blow you away.
The boardwalk is lined with colorful pastel houses and bungalows that look like Jordan almonds lined up in the sand.
We took daily walks down the beach, watching the surfers and volleyball players,
catching some rays down by Crystal Pier while gazing out into the turquoise blue water.
To satisfy our foodie fix, we grabbed a fish taco and a Bloody Mary (or two) at the little beach side cafes and food stands on the boardwalk while soaking in the sunshine.
We took advantage of our gorgeous views and drank plenty of tequila and margaritas out on our beach front patio playing penny can, laughing and telling stories,
and frolicking on the beach at sunset like fools.
With a large group of eight people that all love to eat and drink, we spent over $1500 on our grocery bill and stocking our bar so we could take advantage of our two kitchens and grills and had massive amounts of cooking and eating (and drinking) going on each day. I swore after this trip I would never eat again – but that didn’t last long.
Jackie made her Famous Eggs with Sausage, Mushrooms and Cheese, served with my Spicy Fried Potatoes, toasted bagels and plenty of bacon and mimosas to go around and feed the masses. Best Breakfast EVER.
Cris was our designated grill master, who made us a delicious feast at sunset with heaps of tender grilled steak, shrimp and veggies – love those baby peppers on the grill!
Paula made us a yummy Chicken dish stuffed with Prosciutto, Sage and Provolone which I gladly assisted with while multi-tasking by drinking my Sauv Blanc with a HUGE mitt (just in case that wine glass gets too hot – LOL).
She also made us a Flaky Egg Bake for Suzanne’s birthday breakfast – with layers of buttery phyllo dough filled with sausage, eggs, cheese, peppers, mushrooms, onions and baked into a yummy casserole fit for a Queen (ahem, Suzanne..)
Janice and Andrew made their delicious Italian lunch of Caprese Salad made with fresh tomatoes, garlic, basil, olive oil and balsamic vinegar with prosciutto, olives and fresh Italian bread, accompanied by a few bottles of great wine. They also made a delicious Italian meal of Chicken Marsala over pasta with fresh parmesan cheese, parsley and Sauteed Asparagus and Brussels Sprouts for our last night in town – totally delicious and gone in five seconds FLAT.
My designated meal was to make a feast for Mexican night – when i say feast, i mean FEAST – we had enough food to feed the entire Mission Beach strip and enough leftovers that we seriously thought about donating it to a homeless person so we didn’t have to throw it out if we didn’t finish it all up the next day!
My Mexican menu included fresh Pico de Gallo, fresh Guacamole with lots of cilantro and lime and some jalapeno,
Grilled Marinated Steak with Lemon and Herbs and Sauteed Lime and Tequila Shrimp to go with the tortillas for tacos and burritos,
I also made a cheesy baked Chicken Enchilada Casserole,
Red Mexican Rice, Tortillas, Sour Cream, Warm Queso Cheese Dip, Hot Sauce and PLENTY ofMargaritas to go around for at least three more days.
I think we all fell into a serious food coma by Night #3 and decided to kick it up a notch and wake ourselves up with some music and a few games of pool after dinner, and even some video games with the help of services as overwatch boost.
After all the eating and feasting, a breathtakingly spooky view appeared when the sun went down. We missed the Green Flash though – which apparently happens for a split second as soon as the sun goes over the horizon line and sinks into the abyss.
Jackie, Cris and I headed out to the bars for some debauchery and drinking activities at the local bars, involving Cinnamon Whiskey shots (ordered by Cris)..FIRE IN THE HOLE! 🙂
My favorite moment of the entire trip was basking in the glow of that big orange fireball in the sky one evening, dreaming of the day I can return to this lovely, lovely place. Until then, I’ve had my fill of tequila and Mexican feasts to last me another year. The sunsets? I never get tired of those – especially when they look like this.
2 jalapeno peppers, minced fine, stems and seeds removed
1 teaspoon cumin
Kosher Salt and fresh ground black pepper to taste
Dash of hot sauce
Instructions
Cut avocados in half and remove the pit. Scoop out the flesh into a large mixing bowl and squeeze lime juice on immediately (to prevent the avocado from oxidation and browning). Mash avocado well with a fork until slightly smooth but still a little bit chunky.
Add garlic, onion, tomatoes, jalapenos, cumin, salt and pepper, and hot sauce. Adjust seasonings to taste.
Cover with plastic wrap tightly and let sit in the refrigerator for at least 30 minutes or more to let the flavors meld.
Serve with tortillas, chips, veggies or crackers with fresh made salsa (tomatoes, onion, cilantro, jalapeno, salt and pepper) and plenty of margaritas to go around.
1/4 cup olive oil for marinade, plus 1 tablespoon for cooking
2 tablespoons butter
1 cup fresh cilantro leaves, chopped
Kosher salt and freshly ground pepper to taste
Instructions
Wash and drain shrimp, and place in a medium bowl.
Mix together 1/2 cup of tequila, lime juice, cayenne pepper, chile flakes, chili powder, jalapeno pepper, and olive oil in a separate bowl and pour over the shrimp. Cover with plastic wrap and let marinate for at least 30 minutes to 1 hour. Drain and discard marinade off shrimp in a colander or with a slotted spoon and set shrimp aside.
Heat a large saute pan over medium-high heat. Add 1 tablespoon of olive oil to the pan and heat for a minute or so. Add additional 1/2 cup of tequila to the saute pan (with pan removed off the burner to avoid flames!).
Add 1/2 of the marinated shrimp to the heated saute pan and cook for about 2 minutes. Remove shrimp from the pan and set aside. Add the rest of the shrimp to the pan and cook for another 2 minutes until pink.
Add two tablespoons of butter to the saute pan and return first batch of shrimp, adding it to the shrimp in the pan and saute while tossing the pan for another 2 minutes or so. Sprinkle salt and pepper into the shrimp to taste and mix through for another 30 seconds to 1 minute.
Serve the shrimp on a platter with the tequila-lime-butter sauce on top with a side of tortillas and all the dressings: guacamole, cilantro, hot sauce, sour cream, rice to make tacos or burritos.
1 32-ounce container of chicken stock (for poaching chicken)
2 cans of red enchilada sauce
9 flour tortillas (large burrito size)
2 cups of shredded Mexican-blend cheese
1 14-ounce can of crushed tomatoes
Fresh cilantro, chopped for garnish
Sour cream, for garnish
Instructions
Preheat oven to 350 degrees F.
In a large saute pan, heat olive oil over medium heat. Add onion, cayenne, salt and pepper and hot sauce. Saute for about 5 minutes until onion is soft and golden. Add minced garlic and saute for another 2 minutes. Remove onion-garlic mixture from heat and set aside in a large mixing bowl.
To poach chicken breasts, heat chicken stock in a large Dutch oven or high-sided saute pan and cook chicken breasts in the stock, covered, for approximately 10-15 minutes. Turn off the heat and let chicken sit in the pot (still covered) for another 10-15 minutes.
Remove chicken breasts from the stock on to a platter and let cool for a few minutes. Shred the chicken with 2 forks and add to the onion-garlic mixture in to the mixing bowl.
Spread 1/2 of the enchilada sauce from one can on the bottom of a rectangular glass casserole dish. Place three tortillas over the sauce, overlapping.
Top the layer of tortillas with 1/4 of the chicken-onion mixture, spreading evenly over the casserole dish. Top with 1/4 of the crushed tomatoes and 1/4 cup of shredded cheese.
Repeat 3 times until you have four layers and have used up all the enchilada sauce, tortillas, chicken-onion mixture, crushed tomatoes and shredded cheese. (Like making a Mexican Lasagna!)
Place casserole dish in the preheated oven and bake for 30 minutes until the cheese on top is bubbly and golden brown.
Remove from the oven and let cool for about 5-10 minutes. Cut into squares and serve with chopped cilantro and sour cream.
Notes
Can also make casserole with ground beef or steak, and it can be made in a circular or oval casserole baking dish rather than rectangular if preferred.
