Summer is in full swing, and we all know what that means…TOMATO SEASON! I’m sure you all have a bountiful crop of tomatoes lying around from your garden..and if not, a plentiful supply of them from the farmers market or grocery store. So what better recipe to make with them than a gorgeous, easy Summer pasta dish?

Now I know this may sound weird, but I am not a fan of raw tomatoes. Never have, never will. Yeah, I am THAT person. But, when they’re cooked with a plethora of fresh ingredients to sweeten them up and break them down into a gorgeous sauce or salsa? I’m a huge tomato fan once they are transformed into some sweet and savory deliciousness…so here we go. Balsamic Tomato Basil Pasta with Fresh Ricotta.

This is truly Summer in a Bowl, my friends. This pasta dish is so simple and fresh you’re gonna love it. I made a lovely chunky sauce with a batch of chopped fresh tomatoes, simmered in 7 Barrels Balsamic Vinegar and their Sweet Basil Olive Oil (omg #LOVE!), with sautéed sweet onions and garlic, red pepper flakes and chicken stock.  Then I tossed the pasta with a little bit of the pasta water, added the cooked balsamic tomato sauce, and topped it with fresh basil, some big dollops of fresh ricotta, and lots of Parmesan cheese. Juicy, sweet, tangy, savory perfection.

Made with fresh tomatoes simmered in 7 Barrels Balsamic Vinegar and Sweet Basil Olive oil, with sautéed sweet onions and garlic making a lovely chunky tomato sauce..topped with fresh basil and ricotta cheese and more Parmesan cheese! And it's so easy to make that you won't be slaving over the stove in this hot weather either. Juicy, sweet, tangy, savory perfection. 

Ingredients

  • 1 pound of pasta, reserving some of the pasta cooking water
  • 1 tablespoon Seven Barrels Sweet Basil extra virgin olive oil
  • 4-6 large tomatoes, diced
  • 1 small onion, diced (about 1/2 cup)
  • 3 cloves garlic, minced
  • 1/2 teaspoon dried red pepper flakes
  • 1/2 cup Seven Barrels Traditional Balsamic vinegar
  • 1/4 cup chicken stock
  • 2 tablespoons cornstarch
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh ricotta cheese, for garnish
  • 1/4 cup fresh basil, torn into pieces, for garnish
  • Sea salt
  • Freshly ground black pepper

Instructions

  1. Cook pasta according to package directions, drain and set aside.
  2. In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add tomatoes, onions, garlic and red pepper flakes.
  3. Reduce the heat to medium and cook 3 to 5 minutes over medium heat, until onions begin to get soft and lightly browned and tomatoes release some of their liquid.
  4. Place balsamic vinegar, chicken stock, and cornstarch in a small bowl and whisk well. Carefully add it to the skillet and continue to cook for a few minutes more until the sauce slightly thickens; remove from the heat.
  5. Add the cooked pasta to the skillet with the tomatoes, and toss together over low heat for an additional few minutes until the sauce coats the pasta. Add a small amount of the pasta cooking water if the mixture is too dry, to your desired sauce consistency.
  6. Place the pasta in large bowl and top with fresh grated Parmesan, ricotta cheese, and basil. Season with salt and pepper to taste.
  7. Serve hot, immediately with some crusty garlic bread.

Cheesy Baked Pasta w/ Sausage, Broccoli Rabe, Ricotta & Mozzarella

Spring is on the way, and there’s nothing I love to cook more than fresh greens. Broccoli rabe is one of my favorites, also known as cime di rapa (meaning “turnip tops”), rapini, broccoli di rapa and broccoletti in Italy. The young leaves of the plant are used in cooking along with the clusters of green buds that resemble small heads of broccoli. The flavor of the vegetable is slightly nutty, bitter and pungent and has tons of vitamin A, potassium, calcium and iron, with its peak season from fall to spring.

I decided to incorporate it into a cheesy baked pasta dish made with fresh sweet Italian sausage and three cheeses (ricotta, Parmigiano-Reggiano and mozzarella), along with some fun mushroom flavored pasta, tossed in truffle oil. I picked up some fresh broccoli rabe at the farmers market and sautéed it with some garlic, red pepper flakes and extra virgin olive oil until aromatic, then tossed it into a big casserole dish with the pasta, cheeses and a dash of nutmeg and lemon zest, and baked it into a big pot of golden bubbly brown goodness.

The dish is a perfect light one-pot dish, and is  superb served with a glass of crisp Italian white wine, a simple Arugula salad tossed with lemon, S&P, and shaved Parmigiano-Reggiano cheese, and crusty Italian bread with olive oil and red pepper flakes for dipping. Andiamo a mangiare!

Baked Pasta Dish

Ingredients

Kosher salt
1 bunch broccoli rabe, stems removed, chopped into large pieces
1 pound of pasta (dried ziti or penne, or chunky pasta of your choice)
2 tablespoons white truffle oil
Extra Virgin olive oil
3 cloves of garlic, minced or sliced
1 teaspoon of red pepper flakes
1 medium sweet onion, chopped
1 pound ground sweet or hot Italian sausage
1 (15 ounce) container whole milk ricotta
1 cup grated Parmigiano-Reggiano cheese
1 egg, whisked
A dash of nutmeg
1 teaspoon of fresh lemon zest
Fresh ground black pepper
2 cups shredded mozzarella cheese
2 tablespoons fresh parsley, chopped, for garnish

Directions

Preheat oven to 350 degrees. Grease a 9”x13” or 10” round casserole dish and set aside.

Bring a large pot of salted water to a boil and set up an ice bath in a large bowl to the side. Cook the broccoli rabe in the boiling water for 1 minute and immediately remove and plunge into ice bath to cool for another few minutes. Pat dry and set aside. Add the pasta to the boiling water and let cook until al dente, according to package directions. Drain and rinse pasta in cool water to stop cooking, while reserving ¼ cup of hot pasta water. Toss with white truffle oil and set aside.

Heat a large sauté pan with olive oil and bring the pan to a medium heat. Sauté the garlic and red pepper flakes for about a minute or two, until soft and aromatic. Add the broccoli rabe and toss with olive oil, add salt and heat through. Remove from pan and set aside.

In the same pan, heat more olive oil over medium high heat. Add chopped onion and sauté for about 3-5 minutes until soft and light golden brown. Add ground sausage and cook until browned, drain off any excess fat.

Return the cooked pasta and broccoli rabe into the large sauté pan with the sausage and onion mixture.

Toss the ricotta cheese with whisked egg, nutmeg, lemon zest, salt and pepper to taste. Add to the cooked pasta, broccoli rabe and sausage-onion mixture in the large sauté pan, mixing ingredients together well. Stir in ¼ cup of pasta water to make a light sauce.

Place the pasta mixture into the greased casserole dish. Top with shredded mozzarella cheese and bake for approximately 30-35 minutes until cheese is bubbly and golden brown. Let stand for 5 minutes, sprinkle with fresh chopped parsley and additional grated Parmigiano-Reggiano cheese for garnish.

Serve with a glass of crisp Italian white wine, a simple Arugula salad tossed with lemon, S&P, and shaved Parmigiano-Reggiano cheese, and crusty Italian bread with olive oil and red pepper flakes for dipping.

Whenever the holidays roll around, I love to bake and experiment with luscious pies and savory tarts. Puff pastry is such an easy way to make appetizers fit for a crowd, especially when you buy it pre-made from the grocery store. (I especially like Dufour brand which I get from Whole Foods and Fairway stores in NYC, it’s super flaky and buttery and light.) You simply roll them out on to a floured surface or a non-stick silicone baking mat (try Silpat), score the edges and prick a few holes in it and pre-bake it for about 15 minutes.  Then, you can top it with any sweet or savory topping you like and bake it into a buttery, crispy delightful tart (or cut the pastry into smaller rounds with a biscuit cutter) to feed a crowd for brunch or a holiday appetizer.

I decided to top this one with some sauteed baby asparagus and garlic with red chile flakes along with three creamy melty cheeses: ricotta, gruyere and parmesan and a hint of lemon zest. All you gotta do is create your masterpiece, pop it in the oven and cut it into squares and you’ve got a crowd-pleaser waiting to happen and a party in your mouth. If you’re not a big asparagus fan, try experimenting with some other veggies: broccoli, mushrooms, brussels sprouts, butternut squash, spinach – whatever you fancy, and play with other cheeses, as long as they are good for melting such as Monterey Jack, Brie, Gorgonzola or Mozzarella. The ricotta base I wouldn’t substitute though – it gives it a creamy layer of flavor and texture that’s just too good to give up and protects the pastry base from getting soggy from the vegetables and cheese. Throw some cooked bacon, ham or prosciutto on it too if you really want to add some savory flavor. And if you want to go the extra mile and make your own pastry dough, go for it – but it takes a lot longer and a little more elbow grease to get it perfect. Happy Holidays!

Baby Asparagus, Garlic & Three-Cheese Tart

Cook Time: 45 minutes

Total Time: 1 hour

Ingredients

  • 1 puff pastry sheet (pre-made frozen or homemade)
  • 1 bunch of baby asparagus, washed and trimmed
  • 2 tablespoons extra-virgin olive oil
  • 2 garlic cloves, minced
  • 1 small shallot, minced
  • 1/2 tablespoon red pepper flakes
  • 1 container ricotta cheese
  • 1 egg, whisked
  • 1 cup Parmesan cheese, shredded and divided
  • 1 tablespoon fresh thyme
  • 1 tablespoon lemon zest
  • Sea salt and fresh ground black pepper, to taste
  • 1 cup Gruyere cheese, shredded

Instructions

  1. Preheat oven to 400 degrees.
  2. Heat olive oil over medium heat and saute asparagus spears with the shallots for about 5-7 minutes until they get soft. Add minced garlic and red pepper flakes and saute for another 1-2 minutes. Remove pan from heat and set aside.
  3. In a large mixing bowl, add ricotta, whisked egg, half of the Parmesan cheese, thyme, lemon zest, sea salt and pepper.
  4. Roll out pastry sheet into a 16"x10" rectangle on to a Silpat (silicone baking mat) or parchment paper. Score around the edges 1 inch border and prick the base of the pastry with a fork in several places. Bake the pastry in oven for 15 minutes. Remove from oven and let cool for a few minutes before adding toppings.
  5. Spread the ricotta and cheese mixture over the base of the puff pastry evenly. Top with sauteed asparagus, shallots and garlic, laying out asparagus spears in a flat row across the pastry.
  6. Sprinkle over the top the shredded Gruyere cheese and the rest of the Parmesan cheese. Sprinkle additional fresh thyme if desired.
  7. Place the tart (on the Silpat or parchment paper base) on a rectangle baking sheet into the oven and bake for 20-25 minutes until pastry is crisp and golden brown and the cheese on top is bubbly.
  8. Remove from oven and let cool for about 5-10 minutes. Cut tart into squares and serve.

Notes

Delicious for a holiday brunch or appetizer (you can always cut tart into bite size pieces to feed a crowd). Serve with a crisp white wine such as Pinot Grigio or Chenin Blanc.

Summer is my favorite time of year – blue sunny skies, lazy days on the patio, weekend trips to the beach and lake and backyard gatherings with friends and family. Most of all, I love the fresh juicy fruits of summer – stone fruits like peaches and plums and cherries and all the fresh berries in season like blackberries, strawberries and raspberries.

Over the July 4th holiday weekend we had a fun backyard BBQ at my parents house with some of my relatives that I haven’t seen in awhile. I used to look forward to all the fun cookouts we did every summer with my family and cousins when I was a kid so it was a fun surprise to hear they were coming over for the day.

I wanted to make a special summery dessert and something different than our usual holiday traditions such as Aunt Irene’s Reception Salad and Grandma’s Lemon Meringue Pie. I decided on a Peach-Raspberry Almond Vanilla Cream Tart made with luscious juicy fresh peaches and raspberries that are bathed in a gorgeous peach glaze. They lie on a bed of sweet creamy ricotta and cream cheese blended with a hint of almond and vanilla on top of a flaky buttery puff pastry as the base.

The combination of the sweet fruit and tangy sweet almond vanilla cream over the layers of flaky buttery pastry was the perfect refreshing yet sinful treat to top off an awesome hot Summer day out on the back patio. My Aunt and Grandma may not be with us anymore to make their legendary desserts, but I’ve decided to step in their shoes and make this delicious concoction a new yearly tradition for our family summer backyard gatherings going forward.

Savoring the Fruits of Summer :: Peach-Raspberry Almond Vanilla Cream Tart

Prep Time: 40 minutes

Cook Time: 30 minutes

Total Time: 1 hour, 10 minutes

Yield: Makes 2 tarts serving 12 to 16.

Ingredients

  • 2 puff pastry sheets, defrosted
  • 2 eggs
  • 2 tablespoons water
  • 2 peaches, diced
  • 1 cup granulated sugar
  • 2 teaspoons fresh lemon juice
  • 2 lemon rind quarters
  • 1 cup ricotta cheese
  • 2 - 8 oz. packages cream cheese (one regular, one light) at room temperature
  • ½ cup confectioner’s sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 4 peaches, sliced thin
  • 1 cup raspberries

Instructions

  1. Preheat oven to 400 degrees.
  2. Tart pastry: Rollout puff pastry sheets on a floured surface and place on two lightly greased rectangular baking sheets.
  3. Score a 1-inch border around each pastry sheet. Beat eggs and water together and lightly brush the pastry sheets.
  4. Bake for about 15-20 minutes until pastry is puffed and golden brown. Remove from oven and let pastry sheets cool completely.
  5. Glaze: Meanwhile, dice two peaches and add sugar, lemon juice, lemon rinds and 2 cups of water into a small-medium pan on the stove. Simmer over medium heat until the peach is soft and the glaze is thickened about 10-15 minutes. Remove the lemon rinds and let the glaze cool to the side.
  6. Cream Filling: In a large mixing bowl, add the ricotta cheese, cream cheese, confectioner’s sugar, vanilla and almond extract. Beat together with a mixer until smooth and spread evenly on to each pastry sheet, leaving a 1-inch border on the pastry. Arrange the peach slices on top of the cream filling in layered rows and brush the peaches with all but a few tablespoons of the glaze. Toss the raspberries with the rest of the glaze and randomly place on top of the peaches. Serve right away or keep cool in the refrigerator covered for a few hours.
  7. To serve, cut the tarts into squares and garnish with toasted almonds or whipped cream if desired.

Notes

Chef’s Note: The pastry and cream filling is really delicious and super versatile for making any type of fruit tart. You can substitute the peaches and raspberries for any type of berry – blueberries, strawberries, blackberries or use fresh plums or kiwi fruit and adjust the recipe accordingly for the glaze and fruit topping. You can also substitute some toasted pistachios in place of the almonds. Get creative!

Classic Greek Moussaka

Classic Greek Moussaka, (pronounced moos-sah-KAH) is one of the most well known of all Greek dishes and a staple “comfort food” and main course meal in Greece (as is Lasagna in Italy). This tasty Greek delight is a culinary experience to those who sample it for the first time. I first tried it when I worked at a Greek diner in Buffalo, New York during college, and then once again on a trip to the Greek Islands a couple of years ago. Needless to say, the real Greek Moussaka blew the Buffalo diner version to pieces, so I decided to take a stab at making it myself for my Big Fat Greek Birthday dinner party.

One of the most delicious versions of Moussaka I tasted was in Santorini, Greece. It was served in a glazed clay pot, and had a perfect mixture of spicy meat at the bottom, layered with potatoes and tender eggplant, and tons of béchamel and gooey cheese on top. The vegetables were steaming as I dug into this gorgeous meat and vegetable pie – my mouth watered at the sight and smell of it.

Moussaka can be made in many variations, but the classic recipe uses layers of eggplant, potatoes, a spicy meat and tomato sauce with a touch of cinnamon and a rich and delicious béchamel sauce and bubbly kefalotyri cheese on top. Other variations are Moussaka with zucchini or artichokes instead of eggplant, ground lamb instead of ground beef, or vegetarian-style with zucchini, eggplant and ootatoes without the meat. Either way you make it, with its warm and rich flavors and gooey cheese you’ll be hooked.

I made this recipe with zucchini and potatoes, and combined ground lamb with ground beef together. The combination of all the spices from the meat and seasonings soak into the vegetables and once you layer some creamy béchamel and gooey cheese on top, you’ve got yourself a delicious heartwarming dish. Be careful to pat dry the vegetables though before layering in the baking dish, as you don’t want the liquids to make the Moussaka too watery as they are cooked down in the oven.

You’ll need a lot of time and kitchen space to make this dish, and if you’re cooking for a crowd, you’ll be safe to double the recipe and make two large rectangular baking dishes of it, as it won’t last long. The flavors in this dish really improve if you 
make it a day ahead. It’s also a very filling dish, so you may want to serve it as the main course, and accompany it with a Greek Salad, some Stuffed Grape Leaves and Tzaziki for a light side dish along with some Garlic Lemon Hummus and grilled pita. Serve with a red Greek wine and a shot of Ouzo as an aperitif.

Ingredients:

3 large zucchini (or eggplants)

3 large potatoes

1/2 cup vegetable oil

3 lg onions, chopped fine

1 lb ground lamb

1 lb ground beef

3 tbsp tomato paste

1/2 cup red Greek wine

1/2 cup chopped parsley

1/4 tsp ground cinnamon

Kosher salt

Fresh ground black pepper

1/4 lb butter

6 tbsp all purpose flour

1 quart of milk

4 eggs; beaten until frothy

1/4 tsp grated nutmeg

2 cups ricotta or cottage cheese

1 cup fine bread crumbs

1 cup grated parmesan cheese

Instructions:

Cut the zucchini and potatoes into slices about 1/2 inch thick.
 If using eggplant instead of zucchini, peel the eggplant first. Brown the zucchini slices quickly in 1/4 cup of the oil. Set aside.

Heat the 
remaining oil in the same skillet and cook the onions until they are
 golden brown. Add the ground meat and cook 10 minutes. Pour off excess fat.

Combine the tomato paste with the wine, parsley, cinnamon, salt and 
pepper. Stir this mixture into the meat and simmer over low heat,
stirring frequently, until all the liquid has been absorbed. Remove the
 mixture from heat and set aside.

Preheat the oven to 375 F. Make a white sauce by melting the butter
 and blending in the flour, stirring with a wire whisk. Meanwhile,
 bring the milk to a boil and add it gradually to the butter-flour mixture,
 stirring constantly. When the mixture is thickened and smooth, remove 
it from the heat. Cook slightly and stir in the beaten eggs, nutmeg and 
ricotta.

Grease an 11×16-inch pan and sprinkle the bottom lightly with
 crumbs. Arrange alternate layers of the zucchini and potatoes and meat sauce 
in the pan, sprinkling each layer with parmesan cheese and bread crumbs. Pour 
the ricotta cheese bechamel sauce over the top and bake 1 hour, or until top is golden.
 Remove from the oven and cool 20 to 30 minutes before serving. Cut 
into squares and serve.

Serves 6-8.
