Paleo Smashed Sweet Potatoes w/ Honey + Thyme

These Paleo “Smashed” Sweet Potatoes with Honey + Thyme are a fantastic alternative to regular sweet potato casseroles that are laden with calories, carbs, sugar, and all the other things that can be problematic on a #paleo, #low-carb, #whole30 or #ketogenic diet.

I created this recipe for my client #Ketologic, made with their #FBOMB Macadamia Oil which gives you the health benefits of sweet potatoes along with quality fats from premium oil and grass-fed butter. Full of vitamins, packed with minerals, and utterly delicious.

Sweet potatoes are a rich source of fiber, vitamins, minerals, and phytosterol, which promotes a healthy digestive system. They also contain beta carotene, which supports eye health along with high amounts of antioxidants that help defend the body of free radicals.

But sweet potatoes are high carb and starchy, even before adding sugar. 

Traditional sweet potato recipes send your blood sugar on a rollercoaster ride that leaves you feeling sluggish and bloated in the hours and days afterward. Neither brown sugar nor marshmallows offer much in the way of nutrition besides a hefty dose of sugar. They’re the very definition of “empty carbs.”

Just one serving of a side dish like that is enough to give you an epic sugar hangover. Don’t be surprised if you wake up from your post-Thanksgiving meal nap and start reaching for even more sweets. Luckily, sweet potatoes are sweet enough without having to add candy. They’re called “sweet” potatoes for a reason, you know.

Smashed Roasted Sweet Potatoes

This recipe swaps out the burnt marshmallows in traditional sweet potato casseroles for a topping that’s far healthier but just as delicious: Pecans.

These high-fat, low-carb nuts deliver a wonderful caramelized flavor that balances out the sweetness of the sweet potato and honey. The fats perfectly pair with the omega-7-packed macadamia oil, delivering a satisfying, satiating side that will stop you from reaching for that extra slice of pie after dinner.

Pecans are awesome for reasons beyond just being low-carb and high in quality fats. They’re also:

  • Antioxidant-rich. Pecans are full of antioxidants, which work to combat free radicals in the body, protecting and repairing your cells.
  • Promote heart health. Research shows that consuming pecans may help manage cholesterol, promoting a healthy heart.
  • Satiating. The high-fat content in nuts provides stable energy and satiety, which can assist with weight loss by reducing hunger and cravings.

These sweet potatoes are so delicious, healthy, and easy to make! First, the sweet potatoes are cut into 1½-inch thick slices and roasted in the oven with some FBOMB Macadamia Oil, cinnamon and nutmeg, pecans, sea salt and black pepper. These sweet potatoes are so delicious, healthy, and easy to make! First, the sweet potatoes are cut into 1½-inch thick slices and roasted in the oven with some FBOMB Macadamia Oil, cinnamon and nutmeg, pecans, sea salt and black pepper. Then they are “smashed” with a fork (or glass) and topped with a dab of grass-fed butter, drizzled honey, and fresh thyme. Easy, simple, and full of flavor, crunch, and healthy ingredients!

Ingredients

  • 2 large sweet potatoes (or 3 medium)
  • 3 tablespoons FBOMB Macadamia Oil
  • ½ teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Sea salt and freshly ground black pepper, to taste
  • ½ cup pecans, chopped
  • 2-3 tablespoons grass-fed organic butter
  • ¼ cup organic honey
  • 1 tablespoon thyme leaves

Instructions

  1. Preheat oven to 400 degrees F.
  2. Slice the sweet potatoes into five 1½-inch thick slices (or quarters for medium size) and place in a large mixing bowl.
  3. Drizzle the FBOMB Macadamia Oil over the potatoes and toss to coat evenly.
  4. Add the cinnamon, nutmeg, salt, and pepper to the potatoes and stir together.
  5. Place sweet potatoes in an even layer on a large baking sheet, about 1-inch apart.
  6. Bake potatoes until fork-tender, 25 to 30 minutes. Remove from oven and turn oven broiler to medium. Using a fork, potato masher, or the flat bottom of a glass, smash potato slices. Sprinkle with chopped pecans and broil for 3 to 5 minutes, until potatoes are golden brown.
  7. When potatoes are done, add a dab of butter to the center of each one, and drizzle with honey. Sprinkle the potatoes with the fresh thyme over the top.
  8. Serve hot.

Notes

Ingredients

  • 2 tablespoons Tresomega Coconut Oil
  • 6 ounces ground pork Italian sausage
  • 1 (8 ounce) package sliced baby bella mushrooms
  • 1 cup chopped mire poix (celery, carrots, onion)
  • 1 zucchini, sliced into demi lunes
  • 2 tablespoons fresh garlic, minced
  • 1 (8 ounce) package Tresomega Penne Pasta
  • 1/3 cup brandy or dry white wine
  • 1 cup organic chicken broth
  • 3 tablespoons half and half
  • Sea salt and freshly ground black pepper
  • 1 teaspoon red pepper flakes
  • 1/2 tablespoon dried Italian herb seasoning
  • 1/2 cup dry roasted pecans
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. Heat the coconut oil in a large skillet over medium-high heat. Add Italian sausage, mushrooms, mire poix, zucchini, and garlic and saute together stirring often, until sausage is crumbly and cooked through, about 8-10 minutes.
  2. Meanwhile, cook the pasta according to package directions, drain and set aside. Toss with a tablespoon of coconut oil to prevent pasta from sticking together while cooking the rest of the ingredients.
  3. Add the brandy (or wine) and let alcohol cook down until flavors are absorbed for about 2 minutes.
  4. Add the chicken broth to the mixture and bring to a boil. Reduce heat to medium and cook for another minute or so.
  5. Stir in half and half, season with salt and pepper, and red pepper flakes and italian seasoning.Cook for another few minutes on low heat.
  6. Serve the Sausage, Mushroom Zucchini sauce over the pasta and top with fresh grated Parmesan cheese.

Hey guys! I’ve been so busy working on client projects I haven’t had the time to post many new recipes lately so I wanted to share a super delicious one I created for a client that I know you’re gonna love!

Maple Balsamic Quinoa Salad

This recipe for Maple Balsamic Quinoa Salad is absolutely delicious! I made a dressing with Seven Barrels Maple Balsamic vinegar and olive oil and tossed it with quinoa, chickpeas, dried tart cherries, arugula, celery, green onions and crunchy pecans.

Not only is this super healthy and light but absolutely delicious! It has the perfect balance of tangy vinegar with a slight sweetness from the maple balsamic, agave and tart cherries, and a delightful crunch from the celery, chickpeas and green onions.

This is a perfect side dish to make ahead for a Summer picnic and it’s full of protein and veggies and fiber making it the perfect meal on it’s own.

You can also substitute dried cranberries for the tart cherries if you can’t find them, and use a variety of nuts like cashews, almonds, or walnuts instead of pecans. Throw in some edamame or black beans too if you want more protein. Or how about a little crispy bacon???? YUM.

Maple Balsamic Quinoa Salad

Prep Time: 20 minutes

Cook Time: 10 minutes

Yield: Serves 4-6

Ingredients

  • 2 cups quinoa, rinsed
  • 1 cup pecans
  • 1/3 cup extra-virgin olive oil
  • 1/3 cup Seven Barrels Maple balsamic vinegar
  • 1/3 cup agave syrup or honey
  • 1 cup dried tart cherries
  • 1/2 cup celery, sliced
  • 4 scallions, thinly sliced
  • Handful of baby arugula
  • 1 tsp sea salt, plus additional to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Cook quinoa according to package directions. Let cool completely.
  2. Toast the pecans for about 5 to 7 minutes over medium-low heat in a saute pan, let cool and chop coarsely.
  3. Make the dressing: Whisk together the olive oil, Maple Balsamic vinegar and agave syrup (or honey) in a small mixing bowl.
  4. Add 3/4 cup dressing to the cooked quinoa. Mix in the chopped toasted pecans, tart cherries, celery, scallions, and sea salt. Serve refrigerated or at room temperature; just before serving, stir in remaining 1/4 cup dressing, arugula and season with salt and pepper, to taste.

Notes

You can also substitute dried cranberries for the tart cherries and use any type of nuts (cashews, walnuts, almonds).

Now that Fall is finally here, I’m so excited to start cooking comfort food again with flavorful seasonal ingredients like wild mushrooms, truffles, sage, prosciutto, toasted nuts, hearty greens, whole grains…yum. Fall is definitely my favorite season of the year when it comes to food 🙂

Buckwheat Bucatini

In particular, I love making homemade pasta and one-pot dishes, which is so easy to do with my KitchenAid® Gourmet Pasta Press that attaches to my KitchenAid® Stand Mixer.

It makes six different types of pasta in a snap: Bucatini, Spaghetti, Rotini, small and large Macaroni, and Rigatoni simply by swapping out a different disc for each pasta cut…how cool is that?!?

Sauce Ingredients

I decided to make a homemade Buckwheat Bucatini with Truffled Wild Mushroom Sauce, Prosciutto, Spinach, Pecans and Sage. I love Buckwheat pasta because of its rustic flavor, and it’s perfect for fall pasta dishes. Similar to the traditional Italian Pizzoccheri (flat buckwheat fettuccine), buckwheat noodles have hearty depth of flavor, and pair perfectly with warm fall flavors and ingredients like wilted greens, potatoes, cabbage, cheese and garlic.

Truffled Wild Mushroom Sauce

My pasta dish is topped with a luscious savory sauce made with crispy prosciutto and sage, nutty toasted pecans, garlic, shallots and wild mushrooms (portabella, porcini, oyster, beech, cremini, and shiitake) that I sautéed in olive oil and butter, then made into a luscious sauce with chicken broth and truffle oil.

Celebrating Fall Flavors: Buckwheat Bucatini w/ Truffled Wild Mushroom Sauce

Yield: Serves 6.

This homemade pasta dish is topped with a luscious savory sauce made with crispy prosciutto and sage, nutty toasted pecans, garlic, shallots and wild mushrooms (portabella, porcini, oyster, beech, cremini, and shiitake) that I sautéed in olive oil and butter, then made into a luscious sauce with chicken broth and truffle oil.

Ingredients

  • Buckwheat Pasta Dough
  • Ingredients:
  • 1 cup buckwheat flour
  • 1 cup bread flour
  • 1 teaspoon fine sea salt
  • 1 teaspoon garlic pepper
  • ¼ cup hot water
  • 2 large eggs, room temperature
  • Method:
  • To make the fresh Bucatini pasta, measure out equal parts buckwheat and cake flour, sea salt and garlic pepper; blend together in your KitchenAid 14-cup Food Processor. Then beat the eggs into the hot water and add to the flour mixture through the tube with the food processor running, and turn it off. Give the dough about ten 3-second pulses until it gathers into a ball and clears the side of the bowl.
  • Then lightly knead the dough on a work surface for a couple of minutes until it’s smooth and supple, and wrap the disk in plastic film to rest for about 20 minutes before cutting into quarters and using the pasta press.
  • To make the buckwheat Bucatini, you need to attach your KitchenAid Gourmet Pasta Press (with the Bucatini pasta cutter inserted) to your KitchenAid Artisan Stand Mixer by unscrewing the black knob and removing the front silver cap. Pop in the attachment and secure it tightly with the knob until it stays in place.
  • Remove the dough from the plastic wrap and press it out on to a floured work surface, then cut the pasta dough into 3 or 4 portions. Turn your stand mixer on the highest setting (speed 10), and slowly feed walnut-sized balls of dough into the hopper; dough should self-feed through the auger – just wait until the auger is visible before adding the next piece. Use the combo tool to push dough only if the dough becomes caught and no longer self-feeds.
  • Once the dough starts coming through the bottom of the press, use the attached cutter to cut pasta at desired length as it exits the press (for Bucatini approx. 9.5 inches long).
  • Separate the pasta after extrusion, and place long noodles on a drying rack or in a single layer on a tea towel placed on a baking sheet or flat surface. Dry the pasta for about 30 minutes, turning them occasionally.
  • Next, bring some salted water to a boil in your KitchenAid Stainless Steel Stockpot with Strainer and cook the fresh pasta for about 3-4 minutes.
  • Drain and toss into your KitchenAid Ceramic Mixing Bowl with a little olive oil and set aside while you prepare the pasta sauce.
  • Makes about 1 pound of fresh pasta, cooked. You can also double the recipe and freeze a portion of it to use later.

  • Truffled Wild Mushroom Sauce with Prosciutto, Spinach, Pecans and Sage
  • Ingredients:
  • 3 tablespoons extra-virgin olive oil, divided
  • 3 tablespoons chilled butter, divided
  • 6 thin slices aged Prosciutto de Parma, torn into large pieces
  • 1 cup pecans, coarsely chopped
  • 12 whole fresh sage leaves
  • 2 pounds assorted fresh wild mushrooms (Portabella, Porcini, Oyster, Beech, Cremini, and Shiitake), sliced
  • 2 cloves fresh garlic, minced
  • 2 large shallots, minced
  • 1 cup fresh baby spinach leaves
  • 2 cups low-sodium chicken broth
  • 1 teaspoon black truffle oil
  • Sea salt and garlic pepper, to taste
  • ¾ cup freshly grated Parmesan cheese

Instructions

  1. To make the Truffled Wild Mushroom Sauce with Prosciutto, Spinach, Pecans and Sage, begin by prepping your fresh ingredients (shallots and garlic) on your KitchenAid Wood Cutting Board. Measure out the other ingredients (prosciutto, sage, wild mushrooms, spinach, chicken stock, olive oil, butter, truffle oil, and grated Parmesan cheese) in small bowls and set aside.
  2. Heat a tablespoon of olive oil in your KitchenAid Anodized Nonstick 12” skillet over medium-high heat, and cook the prosciutto in batches for a few minutes until crispy and browned, drain on paper towels and set aside.
  3. Add the pecans to the skillet and toast for a few minutes until lightly browned with a nutty aroma (being careful not to burn); remove nuts from pan and set aside.
  4. Add a tablespoon of butter to the skillet and sauté the sage leaves until crisp, about 1 minute per side. Transfer to paper towels.
  5. Heat remaining 2 tablespoons of olive oil and 2 tablespoons of butter in the same pot over medium-high heat. Add the mushrooms, shallots, garlic and sauté until mushrooms are brown and liquid evaporated, about 10 minutes. Add the spinach and sauté for another 2 minutes until wilted and transfer mixture to a mixing bowl.
  6. Pour in the chicken stock to the same pot and bring the liquid to a boil. Scrape up the browned bits and cook until liquid is reduced by half, about 7 minutes. Remove from the heat and add truffle oil, mushroom mixture, cooked prosciutto, pecans and sage. Mix together well, season with sea salt and garlic pepper to taste.
  7. Serve the cooked bucatini pasta tossed with the sauce and garnish with shaved Parmigiano-Reggiano cheese.
  8. Sauce can be made up to 2 hours ahead; let stand at room temperature.

Caramelized Onion, Ham & Gouda Tart

Caramelized Onion, Ham & Gouda Tart

This savory tart recipe is perfect for the holidays and easy to make. You can either make it in a 9-inch tart pan or in a pie dish. It has tons of chunky ham, lots of gooey melty cheese, and caramelized onions, covered in a creamy egg custard with herbs baked in a crunchy, flaky pie dough. You could also substitute crispy bacon or prosciutto for the ham, and use any melty cheese you like. The caramelized onions and garlic give it a tangy sweet flavor that goes perfect with the cheesy creamy custard.

Ingredients

  • 1 refrigerated pie shell dough (fresh or store-bought)
  • 1 cup cooked and cubed ham
  • 1 medium onion, halved and sliced thin
  • 1 tablespoon minced garlic
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 tablespoon maple syrup
  • 1 cup sour cream
  • 1 egg
  • 1 egg yolk
  • 1/2 cup light cream
  • 1/2 tablespoon fresh thyme, chopped (or 1 tsp dried)
  • 1/2 tablespoon fresh parsley, chopped (or 1 tsp dried)
  • Sea salt and black pepper, to taste
  • 3/4 cup Gouda cheese, sliced or shredded (can also substitute Gouda, Cheddar or another soft cheese that melts well)

Instructions

  1. Preheat oven to 450 degrees.
  2. Roll out pie dough into a 9" pie dish, overlapping dough 1 inch over edge of pie dish. Flute edges.
  3. Heat a large sauté pan over medium-low heat, add olive oil and butter and onions.
  4. Saute onions for about 5 minutes until soft, add maple syrup and stir.
  5. Saute onions for another 5-10 minutes until they become caramelized and golden brown, add garlic and cook another minute or so. Remove from heat and set aside.
  6. Meanwhile, in a mixing bowl whisk together sour cream, egg, egg yolk, light cream, fresh thyme, parsley and salt and pepper to make the custard filling.
  7. Scatter the caramelized onions into the pie shell, and top with diced ham and cheese.
  8. Pour custard over the top evenly into the shell. Bake tart for 10 minutes.
  9. Take tart out of the oven and cover the crust edges with strips of foil and bake an additional 15 minutes until bubbly and golden brown..
  10. Let tart cool on a wire baking rack, cut into wedges and serve.
  11. Note: if using homemade dough, pre-bake tart shell covered in foil with dried beans or pie weights at 400 degrees F for 15-17 minutes, then and add meat and veggies and custard filling and bake for additional 20 minutes or so until the tart is set.

Pear, Bleu Cheese, Cranberry & Toasted Pecan Salad with Honey Viniagrette

This is one of my favorite Winter salads made with a gorgeous combination of flavors and textures. It has fresh sliced pears, toasted pecans, crumbly bleu cheese and red onions, bathed in a slightly sweet honey vinaigrette.

Ingredients

  • 3/4 cup pecans, toasted
  • 1/2 head iceberg lettuce, chopped
  • 1/2 head romaine lettuce or 1/2 bag mixed greens, chopped
  • 1/2 large red onion, sliced thin
  • 3/4 cup crumbly bleu cheese
  • 1/2 cup dried cranberries
  • 1-2 pears, cored and sliced
  • Dressing:
  • 3 tbsp veg oil
  • 1 tbsp red wine vinegar
  • 3 tablespoons honey, heated
  • 1/2 teaspoon Dijon mustard
  • 1 1/2 teaspoons salt (optional)
  • 1/4 teaspoon fresh ground black pepper (optional)

Instructions

  1. Salad:
  2. Preheat oven to 325 degrees.
  3. Place pecans on a baking sheet and toast for 7-10 minutes until lightly browned.
  4. Chop lettuces and slice onion, add to large salad bowl with cranberries.
  5. Core and cut pears into thin slices. Toss some into salad, save some for topping.
  6. Heat honey and make dressing; toss with salad ingredients, top with crumbly bleu cheese and sliced pears.
  7. Dressing:
  8. Combine vinegar, warmed honey, salt and pepper in a blender or whisk together well in a mixing bowl.
  9. Slowly stream in olive oil whisking vigorously until all oil is blended into a gorgeous vinaigrette dressing.
  10. Toss with salad ingredients.

Chicken Empanadillas (Empanadas)

This is a classic recipe for Chicken Empanadillas (or empanadas). It has a flaky buttery dough surrounding a savory mixture of shredded cooked chicken, onions and spices, then lightly fried to crispy golden brown perfection. Serve with fresh tomato salsa for some extra heat and Latin flavor.

Ingredients

  • 1 tbsp. Evoo
  • ½ lb. cooked chicken breast & thigh
  • ½ medium yellow onion, finely chopped (about ½ cup)
  • ¼ cup Tomato Sauce
  • 6 Spanish Olives Stuffed with Minced Pimientos, thinly sliced
  • 2 tbsp. Sofrito
  • 1 packet Sazón with Coriander and Annatto
  • 1 tsp. Minced Garlic or 2 cloves garlic, finely chopped
  • ½ tsp. Dried Oregano Ground Black Pepper, to taste
  • 1 package (14 oz.) Discos (Yellow), thawed Corn Oil, for frying

Instructions

  1. Heat oil in a large skillet over medium heat. Add shredded chicken and cook until browned, breaking up meat with a spoon, about 10 minutes.
  2. Add onions and cook until soft, about 5 minutes more.
  3. Stir in tomato sauce, olives, Sofrito, Sazón, garlic, oregano and black pepper. Lower heat to medium-low and simmer until mixture thickens, about 15 minutes.
  4. On a lightly floured work surface, using a rolling pin, roll out discos until ½” larger in diameter. Spoon about 1 tbsp. meat mixture into middle, fold in half to form a half moon; moisten edges with water and pinch to seal closed, or seal with a fork.
  5. Fill a deep saucepan with oil to a depth of 2½”. Heat oil over medium-high heat until hot but not smoking (350°F on deep-fry thermometer).
  6. Cook Empanadas in batches until crisp and golden brown, flipping once, 4 – 6 minutes. Transfer to paper towels to drain.
  7. Serve warm or at room temperature with a side of salsa.
  8. Makes 10 to 12 empanadillas.

This is a healthy and delicious gluten-free egg casserole made with spinach, sautéed mushrooms, onions and cheese baked into a fluffy savory dish that will feed a crowd and leave room for the heavier fare at the brunch table.

Ingredients

  • 1 large bag (10 oz. each) spinach
  • 1 1/2 cups shredded Cheddar cheese (6 oz)
  • 1 1/2 packages (8 oz. each) sliced mushrooms
  • 1 medium onion, chopped (1/2 cup)
  • 1/2 cup Gluten-Free Bisquick® mix
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 eggs

Instructions

  1. Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
  2. Sprinkle spinach, 1 cup of the cheese, the mushrooms and onion in pie plate.(I personally recommend sautéing the onions and mushrooms for a few minutes first to soften them before adding to the casserole.)
  3. In medium bowl, stir remaining ingredients with wire whisk or fork until blended. Pour into pie plate.
  4. Bake 35 to 38 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1/2 cup cheese.
  5. Bake 1 to 2 minutes longer or until cheese is melted. Let stand 5 minutes before serving.

This recipe for Monkey Bread is sure to be a huge hit at your next brunch gathering with friends. It's super easy to make, using Pillsbury biscuits and is topped with brown sugar, butter, walnuts and cinnamon baked into a caramelized construction of sweet buttery goodness. It won't last longer than 5 minutes - promise!

Ingredients

  • 1/2 cup granulated sugar
  • 1 teaspoon cinnamon
  • 2 cans (16.3 oz each) Pillsbury® Grands!® Homestyle refrigerated buttermilk biscuits
  • 1/2 cup chopped walnuts, if desired
  • 1 cup firmly packed brown sugar
  • 3/4 cup butter or margarine, melted

Instructions

  1. Heat oven to 350°F. Lightly grease 12-cup fluted tube pan with shortening or cooking spray. In large -storage plastic food bag, mix granulated sugar and cinnamon.
  2. Separate dough into 16 biscuits; cut each into quarters. Shake in bag to coat. Arrange in pan, adding walnuts among the biscuit pieces.
  3. In small bowl, mix brown sugar and butter; pour over biscuit pieces.
  4. Bake 28 to 32 minutes or until golden brown and no longer doughy in center. Cool in pan 10 minutes. Turn upside down onto serving plate; pull apart to serve. Serve warm.

A Few Holiday Recipes from the Cookbook

Yield: Makes about 6 ½ dozen cookies.

Thumbprint cookies are traditionally flavored with vanilla and filled with fruit jam, but these are chocolate cookies stuffed with more chocolate! They will be a welcome treat on your holiday cookie platter, and they are a perfect hostess gift.

Ingredients

  • Cookies
  • 2 ounces unsweetened chocolate, finely chopped
  • 2 cups unbleached all-purpose flour
  • ¼ teaspoon salt
  • ½ pound (2 sticks) salted butter, at room temperature
  • ½ cup granulated sugar
  • 1/3 cup firmly packed dark brown sugar
  • 2 large eggs, separated, at room temperature
  • 1 teaspoon pure vanilla extract
  • 3 cups finely chopped pecans
  • Filling
  • 8 ounces semisweet chocolate, finely chopped
  • 2 teaspoons vegetable oil

Instructions

  1. To make the cookies: Heat the chocolate in a microwave-safe medium bowl on Medium (50% power), stirring at 30-second intervals, until fully melted and smooth. Let stand, stirring occasionally, until tepid, but still fluid.
  2. In a medium bowl, whisk together the flour and salt. In a large bowl, beat the butter, granulated sugar, and brown sugar with an electric mixer set on high speed until combined, about 1 minute. One at a time, beat in the egg yolks, followed by the tepid chocolate and the vanilla. With the mixer on low speed, mix in the flour mixture, just until combined. Divide the dough in half and shape each half into a thick disk. Wrap in plastic wrap and refrigerate until chilled, about 2 hours.
  3. Position the oven racks in the top third and center of the oven and preheat the oven to 350°F. Line 2 large rimmed baking sheets with parchment paper or silicone baking mats.
  4. Using a heaping teaspoon for each, roll the dough into 78 marble-sized balls, putting them in a baking pan or platter. (If you wish, you can cover the balls with plastic wrap and refrigerate for up to 2 days.) Beat the egg whites in a small bowl until foamy. One at a time, dip each ball in the whites, roll in the pecans, and arrange 1 ½ inches apart on the prepared baking sheets. Refrigerate the remaining balls until ready to bake. Using your thumb (or, if you have long fingernails, the end of a wooden spoon), press an indentation into the center of each cookie.
  5. Bake, rotating the positions of the sheets from top to bottom and front to back halfway through baking, until the edges of the cookies look set, about 10 minutes. Remove the baking sheets from the oven, and, using your thumb (or the end of the wooden spoon), reform the center indentation in each cookie. Return to the oven and continue baking until the cookies are crisp, about 10 minutes more. Let cool on the baking sheets for 5 minutes. Transfer to wire cooling racks and let cool completely. Repeat with the remaining balls, egg whites, and pecans, on cooled baking sheets.
  6. To make the filling: Heat the chocolate and oil together in a microwave-safe bowl on Medium (50% power), stirring at 30-second intervals, until fully melted and smooth. Let stand, stirring occasionally, until tepid but still fluid.
  7. Using a teaspoon, fill the indentations with the chocolate mixture. Let stand until the chocolate sets (you can refrigerate them to speed things up).

Hakan's Fresh Fig Cake

Yield: 12 to 16 servings.

Monday through Friday, my friend Hakan Ciling designs for the textile and fashion industries. On the weekend, he is an equally talented baker, as this moist, fruit studded cake shows. If you are serving it for an evening dessert, top it with shipped cream flavored with ground cinnamon or nutmeg.

Ingredients

  • Softened butter and all-purpose flour for the pan
  • 3 cups unbleached all-purpose flour
  • 1 teaspoon baking soda
  • 1 ¾ cups sugar
  • 1 ¼ cups vegetable or grapeseed oil
  • 3 large eggs, at room temperature
  • 1 tablespoon pure vanilla extract
  • 1 cup very coarsely chopped walnuts
  • 1 cup dried cranberries
  • 1 cup pitted dates or dried plums (prunes), cut in half
  • 1 cup golden or dark raisins
  • 12 ripe figs, tips trimmed and cut lengthwise into quarters (about 1 ½ cups)

Instructions

  1. Position an oven rack in the center of the oven and preheat the oven to 350 degrees F. Lightly butter and flour a 9-inch tube pan with a removeable bottom (such as angel food cake pan) and tap out the excess flour.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. In a large bowl, beat the sugar and oil with an electric mixer set on high speed until the mixture is very pale, about 5 minutes. One at a time, beat in the eggs, followed by vanilla, scraping down the sides of the bowl as needed. Fold in the walnuts, cranberries, dates and raisins. The batter will be very thick.
  3. Spread half of the batter in the prepared pan. Arrange half of the figs in a ring in the pan, pressing them lightly into the batter. Repeat with the remaining batter and figs.
  4. Bake until a long bamboo skewer inserted in the center of the cake comes out clean, about 1 ¼ hours. Let cool in the pan on a wire cooling rack for 15 minutes. Run a knife around the inside of the pan and the tube and lift out the insert. Invert the cake onto the rack, unmold and let cool completely.

Yield: Serves 4 to 6.

When all the local farm stands are stocked with big baskets of berries, I can't resist buying them. I love the way blackberries cook up and hold their shape, with their sweet/tart taste. And the blackberries against the yellow hue of the cornmeal in the crust make a beautiful presentation. Serve this the day it's made, with fresh whipped cream or ice cream - it's lovely on its own too!

Ingredients

  • DOUGH
  • 1 cup unbleached all-purpose flour, plus more for rolling the dough
  • 1/2 cup fine yellow cornmeal (not coarse or polenta)
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 6 tablespoons (3/4 stick) cold salted butter, cut into pieces
  • 1 large egg yolk
  • 2 tablespoons cold water
  • FILLING
  • 1 teaspoon unbleached all-purpose flour
  • 2 cups fresh blackberries
  • 3 tablespoons sugar
  • 1 tablespoon cold salted butter, cut into small pieces
  • 1 tablespoon sugar for sprinkling (optional)

Instructions

  1. To make the dough:
  2. In a medium bowl, mix together the flour, cornmeal, sugar and salt. Work in the butter with a pastry blender, 2 knives, or your fingertips until the mixture resembles coarse meal with small pea-sized pieces of butter. In a small bowl, mix together the egg yolk and water. Add to the flour mixture and stir gently with a fork until the mixture is moist enough to hold together.
  3. Gather the dough into a thick disk. Wrap in plastic wrap and refrigerate until chilled but not hard, at least 30 minutes, or up to 2 hours. (The dough can be refrigerated for up to 2 days, but let it stand for 15 minutes before rolling out. It can also be frozen for up to 1 month.)
  4. Preheat the oven to 400 degrees F. Line a large rimmed baking sheet with a silicone baking mat or parchment paper.
  5. On a ligthly floured work surface, roll out the dough into a 10-inch round about 1/8 inch thick. Fold the dough in half, and then reopen on the prepared baking sheet. The dough cracks easily, but just press it back together if it does and don't worry, as the look of the dessert is very rustic.
  6. For the filling:
  7. Sprinkle 1 teaspoon of flour over the dough leaving a 2-inch border all around. Spread the berries over the floured section of the dough. Sprinkle them with the sugar and dot with butter. Fold the uncovered dough up over fruit, pleating it as necessary. If the dough cracks, not to worry - just seal the tears. If you wish, brush the edges of the dough with a pastry brush dipped in water and sprinkle with the tablespoon of sugar.
  8. Bake until the crust starts to brown a bit and the fruit bubbles, about 40 minutes. Let the galette cool on the baking sheet. Transfer the galette to a serving platter with a wide spatula or pick up the baking mat and slide it off onto the platter.

Thanksgiving is my favorite holiday of the year – if only for the food! Of course, I am so thankful for my amazing friends and family, for doing a job that I love and am passionate about, and for living in a city full of life and new things to discover every day. It’s also a time for traditions, like pumpkin pie, turkey and stuffing and all the dressings to go with it.

This year for Thanksgiving I decided to make a Bourbon Vanilla Cream Pie with Oatmeal-Pecan Cookie Crust – to mix up tradition a little bit from the Pumpkin and Apple pies we always have on our table. Folks, hold on to your seats (or forks!)

The crust is made from an oatmeal cookie mixture crumbled with chopped pecans, butter and brown sugar. The pie filling is a luscious creamy custard filling made of sugar, brown sugar, cream, egg yolks, extra vanilla and a shot of bourbon – and just for a fun, a few more chopped pecans for some texture. It bakes into a lovely crumbly crust filled with a delicious creamy caramel-y filling like you have never tasted before. It reminds me of creme brulee inside an oatmeal cookie with a kick of bourbon to warm up your insides – not such a bad thing, and come to think of it, something to be VERY thankful for. One bite, and you’ll be hooked too. Don’t say I didn’t warn you!

  • OAT PECAN COOKIE CRUST
  • Nonstick baking spray
  • 1 stick plus 1 tablespoon unsalted butter
  • 5 1/2 tablespoons brown sugar, divided
  • 2 tablespoons sugar
  • 1 large egg
  • 3/4 cup plus 2 tablespoons old-fashioned oats
  • 1/2 cup all purpose flour
  • 1/8 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/8 cup chopped pecans
  • CREAM PIE FILLING
  • 3/4 cup sugar
  • 1/2 cup brown sugar
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, melted and cooled
  • 6 1/2 tablespoons heavy whipping cream
  • 4 large egg yolks
  • 2 teaspoons vanilla
  • 1 tablespoon bourbon whiskey
  • 1/8 cup chopped pecans
  • Powdered sugar, for dusting

Instructions

  1. OAT PECAN COOKIE CRUST
  2. Preheat oven to 350. Coat a rectangular metal baking pan (13x9x2 inch) with nonstick spray.
  3. Combine 6 tablespoons butter, 4 tablespoons brown sugar, and 2 tablespoons sugar in medium bowl. Beat mixture with electric mixture until light and fluffy, scraping down sides of bowl, about 2 minutes.
  4. Add egg; beat until fluffy. Add oats, flour, baking powder, baking soda, and salt; beat until well blended.
  5. Spread oat cookie mixture onto baking pan and press into an even layer. Bake until light golden brown, about 15 minutes. Transfer baking pan to a cooling rack and let cool completely.
  6. Once cooled, break up cookie in pan and crumble into a fine mixture.
  7. Add cookie crumbles to a large mixing bowl and add 3 tablespoons butter and 1 1/2 tablespoons brown sugar and chopped pecans, mix well and transfer cookie mixture to a 9 inch glass pie dish.
  8. Spread cookie mixture evenly into pie dish up to the sides and place on a rimmed baking sheet.
  9. CREAM PIE FILLING
  10. Whisk both sugars, salt together in a medium mixing bowl. Add melted butter and whisk until blended.
  11. Add cream, egg yolks, vanilla, bourbon and chopped pecans and whisk until well blended.
  12. Pour cream pie filing into cookie crust and bake pie for 30 minutes until filling gets bubbly.
  13. Reduce oven to 325 and bake for an additional 20 minutes.
  14. Cool pie for about 2 hours on a cooling rack.
  15. Chill uncovered or loosely tented with foil in the refrigerator overnight.
  16. Sift powdered sugar over the top of the pie. Cut pie into wedges and serve chilled.
  17. Garnish with some bourbon infused whipped cream, if desired.

Garlic Rosemary Pan-Seared Pork Chops, Parmesan Zucchini + Pecan Brown Basmati RIce

Pan-Seared Pork Chops with Garlic and Rosemary

Serves 4
Total Prep time: 30 mins
Total Cook time: 1 hr
Cooking skill: Intermediate

Ingredients

4 large boneless pork chops (about 1 ½ inches thick)
Tavern Direct Garlic with Rosemary Oil
4 Garlic cloves, sliced
Sea salt
Fresh ground pepper
Fresh or dried rosemary leaves

Preparation

Preheat the oven to 275 degrees and adjust the oven rack to middle position.

Marinade pork chops in the Garlic with Rosemary Oil in a plastic freezer bag or baking dish and place in the refrigerator for up 30 minutes to 1 hour.

Once chops are done marinating, cut 2 slits about 2 inches apart into each chop, using a sharp knife. Insert sliced garlic cloves into slits and sprinkle entire surface of each chop with 1 tsp of salt. Place them in a roasting pan or baking sheet and let stand room temperature for about 15 minutes.

Sprinkle chops with freshly ground pepper and rosemary and transfer baking sheet or roasting pan to oven. Cook until meat thermometer inserted into the center of the chops registers 120-125 degrees (approximately 30-45 mins).

Heat 1 tablespoon of the Garlic with Rosemary oil in a 12 inch heavy-bottomed skillet over high heat until smoking. Place 2 chops in skillet and sear until well browned and crusty, 1 ½-3 minutes, lifting once halfway to redistribute the fat underneath each chop. (reduce heat if browned bits in pan bottom start to burn). Using tongs, turn chops and cook until well browned on second side, another 2-3 minutes. Transfer chops to a plate and repeat with remaining 2 chops, adding extra tablespoon oil if pan is dry.

Reduce heat to medium. Use tongs to stand 2 pork chops on their sides. Holding chops together with tongs, return to skillet and sear sides of chops until browned and meat thermometer in center of chops registers 140-145 degrees, about 1 ½ minutes. Repeat with remaining 2 chops. Let chops rest, loosely tented with foil, for 10 minutes until ready to serve. Sprinkle with some extra Rosemary if desired to garnish.

Pair the Pan-seared chops with Roasted Zucchini with Garlic & Parmesan and Pecan Brown Basmati Rice (recipes follow) and a light, crisp Chardonnay to top off the meal. Delicious!

Roasted Zucchini with Garlic and Parmesan

Serves 4

Ingredients

4 medium zucchini
Tavern Direct Garlic with Rosemary Oil
Sea salt
Fresh ground pepper
½ cup shredded Parmesan cheese
Fresh or dried rosemary leaves

Preparation

Wash zucchini and cut in half length wise, chopping off ends, and cut in half again. Arrange zucchini in a glass baking pan and drizzle the Garlic with Rosemary oil over the zucchini. Sprinkle with sea salt and freshly ground pepper and top the zucchini with the shredded Parmesan cheese and fresh or dried rosemary. Bake at 350 degrees for 30-45 mins until cheese is bubbly and slightly browned.

Pecan Brown Basmati Rice with Garlic

Serves 4

Total Cook time: 1 hour
Cooking skill: Easy

Ingredients

1 cup long-grain brown rice
1-2 tablespoons Tavern Direct Garlic with Rosemary Oil
1/2 cup chopped onion
2 garlic cloves, minced
1/2 cup coarsely chopped pecans
¼ cup green onion, sliced thin (for garnish, optional)
Salt and fresh ground pepper to taste

Preparation

Prepare brown rice in medium saucepan, following package instructions.

About 15 minutes before the rice is done, heat 1-2 tbsp of Garlic with Rosemary oil in a heavy skillet over medium-low heat. Add the onion and sauté, stirring frequently, until the onion is softened and begins to yellow, about 10 minutes.

Stir in the garlic and pecans; sauté over medium heat, stirring constantly, until the garlic is tender and pecans are browned slightly, about 5 minutes.

Remove rice from heat and let stand, covered, for 5 minutes. Spoon brown rice into a bowl; spoon the onions, garlic and pecans on top and toss lightly to combine. Sprinkle with salt and pepper to taste. Garnish with some chopped green onion if desired.

A Few of My Favorite Thanksgiving Sides

#Thanksgiving is my favorite holiday, and there’s no guessing why – it’s all about visiting friends and family, being thankful for the wonderful things in our lives and of course, it’s all about the food.

Turkey and Dressing is the normal star of the table, but I love to experiment with the side dishes to mix it up and spice up the menu each year. Here’s a couple of recipes I plan on making this year (one tried and true, one a new experiment!)..would love to hear from all of you what your favorite side dishes are and what you’ll be making this year that’s a change from just mashed potatoes and green bean casserole!

Roasted Brussel Sprouts with Bacon & Shallots

I made this recipe a couple Thanksgivings ago and it was an absolute delicious hit at the table! The crispy bacon, butter and shallots, mixed with the tangy vinegar gives the brussel sprouts an amazing trio of flavors and the roasting in the oven technique cooks down the balsamic into a glaze coating the crispy oven browned sprouts. The original recipe came from Williams Sonoma and I adapted it a bit by adding the balsamic vinegar and shallots. Thought you didn’t like brussel sprouts? Wait until you try this recipe.

Ingredients:

Water to steam
1 pound large Brussels sprouts
2 ounces thin-sliced pancetta or bacon (3-4 slices)
1 shallot, finely chopped
1 tablespoon olive oil
1 tablespoon premium unsalted butter
2 teaspoons balsamic vinegar
Salt and Pepper to taste
Hot sauce to taste

Preparation:

Add water to a large pot with a steamer basket and bring to a boil.

Trim the sprouts: Slice off the base and remove the outer leaves. Cut each sprout in half lengthwise through the core, then make V-shaped cuts to remove the core. With your thumbs on the either side of the V, twist the sprout to open up the leaves a bit. Steam the sprouts for 5 minutes until bright green and tender.

Meanwhile, saute the sliced pancetta or bacon over medium heat in a small skillet until the edges have started to brown, breaking it into pieces with a spatula while it cooks. Remove the cooked bacon and reserve the bacon grease, adding a teaspoon of butter and then add the shallots and cook until soft and golden.

Drain the water from the steamer and plunge sprouts into ice water to stop the cooking, pat dry with paper towels and return the sprouts to the hot pan. Stir in with the pancetta and shallot mixture, including the fat in the skillet. Add the olive oil and balsamic vinegar and a dash of salt and pepper. Cook until the vinegar reduces and the sprouts are brown on the bottom, about 8 minutes. Season with salt and pepper and hot sauce and toss well.

Put the entire mixture in to a casserole baking dish and cook in the oven for 20 mins on 350 degrees until golden brown. Take out of the oven, drizzle a little more olive oil on top, stir well and serve.

Sweet Potato, Butternut Squash and Potato Gratin

Butternut Squash, Sweet Potato and Potato Gratin

Everyone loves mashed potatoes and gravy for Thanksgiving but this year I decided I’m going to make a Gratin, but mix it up with not just potatoes and cheese, but adding some butternut squash and sweet potatoes to give it a kick and blended flavors of 3 of my favorite veggie sides. The decadent consistency of the garlic Gruyere cream sauce with this trio of veggies is a delicious twist on this classic French potato dish.

Ingredients:

1 garlic clove
½ tsp. sweet paprika
1 cup heavy cream
Pinch of nutmeg
1/3 lb. baking potatoes, peeled and very thinly sliced
1/3 lb. butternut squash, peeled and very thinly sliced
1/3 lb. sweet potatoes, peeled and very thinly sliced
1 cup freshly grated Gruyere cheese
1 cup Parmigiano-Reggiano cheese, shredded
1 teaspoon chopped fresh thyme or parsley
Salt and Pepper to taste

Preparation:

Preheat the oven to 350 degrees F.

Thoroughly rub garlic on the bottom and sides of a shallow porcelain gratin dish or medium sized glass casserole dish. Coat with cooking spray. Sprinkle the nutmeg and paprika in the heavy cream and stir. Peel the potatoes, sweet potatoes and squash and cut them into thin slices.

Layer the potatoes in the dish. Sprinkle with 1/3 of the cheese and then 1/3 of the cream. Sprinkle with salt and pepper. Add a second layer using the squash, another 1/3 of the cheese and then 1/3 of the cream. Sprinkle again with salt and pepper. Add the top layer using the sweet potatoes, the last 1/3 of the cheese and final 1/3 of the cream. Top it off with a dash more salt and pepper. Sprinkle the entire top of the casserole with fresh Parmiagiano-Reggiano cheese and chopped parsley or thyme.

Bake uncovered, about an 50-60 minutes until the gratin is golden brown on top and serve immediately.

Wild Rice with Cranberries and Pecans

My mom always used to make a wild rice casserole over the holidays with either chicken or shrimp which is delicious as a main course or buffet dinner, but for a Thanksgiving side, this recipe is a bit lighter with tart cranberries to complement the turkey and some pecans for extra crunch.

4 cups chicken stock
2 tablespoons unsalted butter
1 tablespoon grape seed oil
3 large shallots minced
2 cups wild rice
1/2 cup dried cranberries
1 bay leaf
2 fresh thyme sprigs
1/2 teaspoon fine sea salt
1/8 teaspoon freshly ground white pepper
1/2 cup pecans toasted and coarsely chopped
1/4 cup minced fresh flat-leaf parsley

Directions:

Preheat oven to 375.

In a saucepan over medium low heat bring stock to a simmer. In a heavy 2-quart flameproof casserole over medium heat melt butter with the oil. Add shallots and sauté until translucent, add rice and stir until the grains are well coated about 3 minutes.

Stir in the simmering stock, dried cranberries, bay leaf, thyme, sea salt and white pepper. Bring to a simmer then stir and cover. Transfer casserole to the oven and bake 45 minutes. Remove from oven.

Remove and discard the bay leaf and thyme sprigs. Stir in the pecans and parsley. Serve hot or warm.

Serves 4-6.

Cheddar and Herb Biscuits

Having lived in the South in Atlanta for over a decade, I grew a love for fresh, homemade buttery biscuits. They definitely beat your standard prepackaged rolls from the grocery store and are delicious hot out of the oven with a little bit of real (yes, real!) butter. This version is made with milk, cream and fresh herbs (chives and parsley), mixed with tangy shredded cheddar andParmesan cheese with a dash of cayenne for a spicy kick.

Ingredients:

2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon cayenne pepper
2 tablespoons freshly chopped chives
1 tablespoon freshly chopped Italian parsley
1/2 cup grated sharp yellow Cheddar cheese
1/4 cup grated Parmesan cheese
1/2 cup whole milk
1/2 cup heavy cream
4 tablespoons butter, melted

Preparation:

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.

In a large bowl, mix flour, baking powder, salt, sugar, and cayenne together using a whisk. Add the herbs, cheese and buttermilk. Stir together until dough forms. Once dough has formed, using an ice cream scooper, scoop out dough onto baking tray. With a brush, lightly butter tops. Bake for 15 minutes.

Serves 4-6.
