Balsamic Cranberry Chicken Cauliflower Pizza

This Balsamic Cranberry Chicken Cauliflower Pizza is a delicious and healthy pizza made with frozen cranberries sautéed in a lovely reduced balsamic glaze, shredded rotisserie chicken, caramelized onions, ricotta, Parmesan and mozzarella cheese, topped with fresh arugula and basil on a crispy, thin cauliflower crust. You guys..this is the most delicious pizza I’ve ever made..It’s a sweet and tangy savory delight all in one bite!

Balsamic Cranberry Chicken Cauliflower Pizza

I used a pre-made frozen cauliflower pizza crust (Caulipowr brand is great) which is super thin, crunchy and saves a lot of time. You can also make a homemade crust with riced cauliflower, egg, mozzarella, parmesan cheese, with a dash of dried basil or italian seasoning which is included in the recipe.

First slice your onions and sauté them over low heat on the stove in a large sauté pan with a pinch of sugar or stevia for about 30-40 minutes until caramelized. Set aside.

Bake the crust

The cauliflower pizza crust is topped with all kinds of goodies: a creamy base of ricotta topped with flavorful shredded rotisserie chicken, mozzarella, and caramelized onions, then popped in the oven for 11-13 minutes to crisp it up and melt the cheese.

Roughly chop cranberries

While the crust is cooking, chop your cranberries and sauté the cranberries for a few minutes in a little bit of olive oil.

Balsamic Glazed Cranberries

Reduce the balsamic vinegar in a small saucepan over high heat on the stove to create a delicious glaze, then add the cranberries to the glaze and set aside.

Once the pizza is done cooking, add the balsamic glazed cranberries and top it with fresh baby arugula and torn basil leaves, with a drizzle of additional olive oil and balsamic glaze for an extra hit of flavor.

Cut it into 4-8 slices (depending on the size of your crust) and serve immediately.

Ingredients

  • For the crust:
  • 1 medium head cauliflower (or 12 ounces/3 cups frozen pre-riced cauliflower)
  • 1 egg, beaten
  • 1/2 teaspoon garlic powder
  • 1 1/2 cups mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1 teaspoon Kosher or sea salt
  • Freshly ground black pepper
  • For the pizza:
  • 3 tablespoons extra virgin olive oil, divided
  • 1 large sweet onion, halved and sliced thin
  • Sea salt and freshly ground black pepper, to taste
  • 1 cup balsamic vinegar, plus extra for drizzling
  • 1 1/2 tablespoons stevia (or 3 tablespoons honey)
  • 3/4 cup Cape Cod Select frozen cranberries, thawed and drained
  • 2 ounces ricotta cheese
  • 1 cup shredded rotisserie chicken
  • 1 cup mozzarella, shredded
  • 1 cup baby arugula
  • Fresh torn basil, for garnish

Instructions

  1. For a homemade cauliflower pizza crust:
  2. Preheat oven to 400 degrees F.
  3. Working in batches as needed, pulse cauliflower in a food processor until rice-like consistency. If using pre-riced cauliflower, microwave according to package directions (3-5 minutes) and let cool 5-10 minutes. Drain in a large colander, squeezing out extra moisture with paper towels.
  4. In a medium mixing bowl, combine cauliflower, beaten egg, garlic powder, 1 cup mozzarella and parmesan cheese, dried basil and oregano, salt and pepper. Stir and fold until mixture holds together.
  5. Press cauliflower mixture into a 10-inch circle (1/4” thick) on the parchment lined pizza stone or baking sheet.
  6. Bake cauliflower crust for 15 minutes, then flip it over and bake another 10 minutes or until edges are golden brown and crust is crispy; remove from oven and brush with a small amount of olive oil.
  7. For the pizza:
  8. While pizza crust is baking, caramelize onions in a sauté pan over low heat with 1 1/2 tablespoons of olive oil, sea salt and pepper, for about 20-25 minutes until soft and golden brown. Remove pan from stove and set aside.
  9. Reduce the balsamic vinegar on the stove by bringing vinegar and stevia (or honey) to a boil in a small pan. Reduce heat to medium-low; let simmer for 8-10 minutes.
  10. Stir the vinegar occasionally as it simmers and let reduce by half until the consistency is thick and syrupy.
  11. Roughly chop the cranberries and add to a small pan with ½ tablespoon olive oil over medium heat. Sauté for 5 minutes, then toss them in the balsamic reduction and set aside.
  12. Remove pizza crust from oven and spread ricotta cheese in an even layer, leaving 1-inch border on the outer crust. Sprinkle with caramelized onions and shredded rotisserie chicken, top with 1/2 cup shredded mozzarella cheese.
  13. Slide pizza back into the oven and bake for another 5 minutes (or broil it at 450-500 degrees for 2 minutes) on the upper rack, until cheese is bubbly and browned. Remove pizza from oven.
  14. Sprinkle the sautéed balsamic cranberries evenly over pizza, and top with arugula and fresh basil.
  15. Drizzle pizza with additional olive oil and balsamic reduction, if desired.
  16. Slice into 4-8 pieces and serve immediately.
  17. NOTE:
  18. If using pre-made or frozen cauliflower pizza crust:
  19. Place pizza stone or baking sheet on middle rack of oven and preheat to 400 degrees F. Line pizza peel or large round baking sheet with parchment paper.
  20. Spray the crust with olive oil cooking spray and top with ricotta, mozzarella, shredded chicken and caramelized onions. Bake for 10-12 minutes and remove from oven. Top with the balsamic cranberries, fresh basil, arugula and drizzle with extra balsamic glaze for garnish.

Notes

To save time and effort, use a pre-made frozen cauliflower pizza crust and top with ricotta and mozzarella cheese, onions, chicken and bake for 11-13 minutes, then top with arugula, balsamic cranberries and basil and additional olive oil and balsamic glaze to garnish and cut into slices and serve.

You can make the crusts ahead, wrap well with plastic, and refrigerate for up to 2 days or freeze for up to 2 weeks.

Hey guys! I’ve been so busy working on client projects I haven’t had the time to post many new recipes lately so I wanted to share a super delicious one I created for a client that I know you’re gonna love!

Maple Balsamic Quinoa Salad

This recipe for Maple Balsamic Quinoa Salad is absolutely delicious! I made a dressing with Seven Barrels Maple Balsamic vinegar and olive oil and tossed it with quinoa, chickpeas, dried tart cherries, arugula, celery, green onions and crunchy pecans.

Not only is this super healthy and light but absolutely delicious! It has the perfect balance of tangy vinegar with a slight sweetness from the maple balsamic, agave and tart cherries, and a delightful crunch from the celery, chickpeas and green onions.

This is a perfect side dish to make ahead for a Summer picnic and it’s full of protein and veggies and fiber making it the perfect meal on it’s own.

You can also substitute dried cranberries for the tart cherries if you can’t find them, and use a variety of nuts like cashews, almonds, or walnuts instead of pecans. Throw in some edamame or black beans too if you want more protein. Or how about a little crispy bacon???? YUM.

Maple Balsamic Quinoa Salad

Prep Time: 20 minutes

Cook Time: 10 minutes

Yield: Serves 4-6

Ingredients

  • 2 cups quinoa, rinsed
  • 1 cup pecans
  • 1/3 cup extra-virgin olive oil
  • 1/3 cup Seven Barrels Maple balsamic vinegar
  • 1/3 cup agave syrup or honey
  • 1 cup dried tart cherries
  • 1/2 cup celery, sliced
  • 4 scallions, thinly sliced
  • Handful of baby arugula
  • 1 tsp sea salt, plus additional to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Cook quinoa according to package directions. Let cool completely.
  2. Toast the pecans for about 5 to 7 minutes over medium-low heat in a saute pan, let cool and chop coarsely.
  3. Make the dressing: Whisk together the olive oil, Maple Balsamic vinegar and agave syrup (or honey) in a small mixing bowl.
  4. Add 3/4 cup dressing to the cooked quinoa. Mix in the chopped toasted pecans, tart cherries, celery, scallions, and sea salt. Serve refrigerated or at room temperature; just before serving, stir in remaining 1/4 cup dressing, arugula and season with salt and pepper, to taste.

Notes

You can also substitute dried cranberries for the tart cherries and use any type of nuts (cashews, walnuts, almonds).

I developed these recipes for my client Seven Barrels, who makes spectacular infused olive oils and vinegars. I wanted to create a refreshing recipe for their Summer promotion, so I created a marinade for the kabobs and a vinaigrette dressing for the salad using their Elderberry Balsamic Vinegar and Lime Olive Oil – a delicious combination!

Grilled Chicken & Veggie Kabobs

Prep Time: 1 hour

Cook Time: 15 minutes

Grilled chicken and summer veggie kabobs in an Elderberry Lime Marinade - perfect for Summer!

Ingredients

  • Grilled Chicken & Veggie Kabobs:
  • 2 pounds boneless chicken thighs (skinless), cut into 1-inch chunks
  • 2 bell peppers (red, yellow, orange or green), cut into 1-inch chunks
  • 1 large red onion, cut into large chunks
  • 1 large zucchini, cut into large chunks
  • 1 large yellow squash, cut into large chunks
  • 1 cup Elderberry Lime Marinade (recipe follows)
  • Sea salt and freshly ground pepper, to taste
  • Elderberry Lime Marinade:
  • ½ cup Seven Barrels Lime Olive Oil
  • ½ cup Seven Barrels Extra Virgin Olive Oil
  • ¼ cup Seven Barrels Elderberry Balsamic Vinegar
  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons honey
  • 2-3 cloves garlic, minced
  • 2 tablespoons fresh basil or parsley, minced
  • 1 teaspoon garlic salt
  • 1 teaspoon freshly ground black pepper, to taste

Instructions

  1. Grilled Chicken & Veggie Kabobs:
  2. Place chicken and vegetables in large plastic ziplock bags and pour 1/2 of the Elderberry Lime Marinade over each, letting marinade in the fridge for at least two hours up to eight hours.
  3. Pre-soak wooden skewers in water for at least 15-20 minutes, and preheat grill on medium-high heat.
  4. Thread the chicken and vegetables evenly spaced on separate skewers and discard the marinade except for a small amount to use while grilling.
  5. Lightly oil the grate and grill chicken skewers until opaque and juices run clear (about 12-15 minutes) and the vegetable skewers for about 8-12 minutes until soft and beginning to brown. Turn and brush with extra marinade frequently. Season with additional salt and pepper to taste.
  6. Transfer the skewers to a warm platter and serve immediately.
  7. Elderberry Lime Marinade:
  8. In a bowl, whisk together the olive oil, vinegar, soy sauce, honey, garlic, basil or parsley, garlic salt and black pepper. Cover and set aside until ready to marinade the chicken and vegetables.
  9. Makes 1 ¼ cups.

A gorgeous Summer salad made with heirloom tomatoes, fresh peaches, mozzarella, basil, arugula in an Elderberry Lime vinaigrette dressing topped with sunflower seeds.

Ingredients

  • Heirloom Tomato, Peach & Mozzarella Salad:
  • 2 large handfuls of baby arugula
  • 2 peaches, cut into wedges
  • 1 Heirloom tomato, cut into wedges
  • ½ cup cooked corn
  • ½ cup cucumber, cut into wedges
  • 1 cup cherry tomatoes
  • 1/3 ball of burrata or fresh mozzarella
  • 1/2 cup toasted sunflower seeds
  • Fresh basil
  • Sea Salt, to taste
  • Freshly ground black pepper, to taste
  • Elderberry Lime Vinaigrette:
  • 2 garlic cloves, finely minced
  • 1 tablespoon Dijon mustard
  • 1/4 cup Seven Barrels Elderberry balsamic vinegar
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons honey
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/3 cup Seven Barrels Lime Olive Oil

Instructions

  1. Heirloom Tomato, Peach & Mozzarella Salad:
  2. On a large plate, arrange the arugula, peaches and heirloom tomato wedges. Sprinkle corn and cucumber over the salad.
  3. Carefully rip the ball of burrata or mozzarella into pieces and scatter on top of the salad along with the cherry tomatoes. Sprinkle with toasted sunflower seeds, salt and pepper and a few basil leaves.
  4. Drizzle with a few tablespoons of the Elderberry Lime vinaigrette and serve immediately. Serve with extra dressing and additional salt and pepper, if desired.
  5. Elderberry Lime Vinaigrette:
  6. Combine all the ingredients except the olive oil in a medium bowl and whisk together well. Once combined, stream in the olive oil and continue to whisk until the vinaigrette comes together. Taste and adjust salt and pepper as needed.
  7. Note: The dressing can be stored and refrigerated for 1 week.
  8. Makes approximately 3/4 cup.

Going Low-Carb & Healthy for Spring! Grilled Parmesan Zucchini Beef Burgers & Sauteed Lemon Garlic Squash

Well, Spring is FINALLY here and the weather in NYC has been absolutely gorgeous this past week. I get so motivated when the weather warms up to go walking in the park, get moving around town, and most of all start eating healthy and maybe drop a few pounds or two to get ready for Summer. Plus, with all the gorgeous fresh fruits and veggies at the farmers markets – it’s hard to resist dreaming up some healthy, light recipes to get excited about making.

I know what you’re probably thinking – sometimes “low-carb diet” is a taboo word. And I’ve tried a few of them that have worked in the past (Atkins and South Beach Diet), but once I started eating normal again, the pounds just came back. So I’m making over my diet for the long term with foods that are good carbs – fresh green non-starchy veggies, low-glycemic fruits like berries and melon and citrus, light dairy including cheese and Greek yogurt, and healthy lean proteins across the board with omega3-enriched eggs, turkey, chicken, fish, beef, pork and seafood. My main goal is to cut out sugar and refined carbs like flour, pasta, bread, crackers, processed foods. Oh, the sugar cravings start kicking in the first few days, but once I get through the first week – it’s amazing how those cravings just go away. And my palate changes to crave all the good, healthy foods that actually keep me full and keep those cravings at bay. Yes, I will miss chocolate dearly. And crackers, and bread and pasta. But at the end of the day, once I start eating healthy low-carb, I actually FEEL better. And SLEEP better. And my allergies and body aches GO AWAY.

I’m not talking about living on cheeseburgers, bacon and eggs my whole life. Just cutting down on the bad carbs that make me cranky. And tired. And have mood swings and blood sugar swings. It’s crazy how good I feel and hey, it doesn’t hurt to lose a few pounds along the way. So here goes – Day 1 of my Get Into Shape Low-Carb, Feel Good Diet for Spring. Let’s see if I can keep this going for a few weeks – who knows. I might not miss that chocolate as much as I think I will. And if I feel like cheating? Well a square of dark chocolate here and there (or a glass of wine!) might just have to happen. And I won’t feel guilty one bit. Especially when I’m feeling amazing in my bikini on the beach this summer 🙂

I whipped up this tasty recipe today for some grilled Parmesan Zucchini Beef Burgers & Sauteed Lemon Garlic Squash. The burgers are made with lean beef (but you can substitute ground chicken or turkey if you like), finely minced zucchini, egg, grated Parmesan cheese, salt and pepper, garlic powder and red pepper flakes, then grilled to perfection, served over an arugula salad with a light vinaigrette dressing. I sauteed the zucchini and yellow squash in a lemon-infused olive oil, with some crushed garlic cloves, a pinch of dill and red pepper flakes, and that’s it! Light, healthy, filling and totally delicious. I think I could do this all the time. Enjoy! (and wish me luck!)

Going Low-Carb & Healthy for Spring! Grilled Parmesan Zucchini Beef Burgers & Sauteed Lemon Garlic Squash

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Serving Size: 4-6

Ingredients

  • Burgers:
  • 1 pound lean ground beef
  • 1/3 cup zucchini, diced fine
  • 1 egg
  • 4 tablespoons grated Parmigiano-Reggiano cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon red pepper flakes
  • Sea salt and fresh ground black pepper, to taste (about 6 grinds for me)
  • Arugula, dressed with a light vinaigrette, for serving
  • -----
  • Zucchini Squash:
  • 2 tablespoons lemon-infused olive oil
  • 2 small-medium zucchini, sliced and halved
  • 1 small-medium yellow squash, sliced and halved
  • 4 cloves garlic, peeled and smashed
  • 1 teaspoon red pepper flakes
  • 1 teaspoon dill (dried or fresh)
  • Sea salt and freshly ground black pepper (a few grinds is good, but adjust to taste)

Instructions

  1. Heat a grill over medium-high heat.
  2. Place all the burger ingredients into a large bowl and mix together well with hands, make 4-6 burger patties.
  3. Grill burgers for 4-6 minutes (depending on how well done you like them).
  4. Add a slice of melted provolone cheese on top and some hot sauce, if desired.
  5. Serve burgers over arugula salad dressed in a light vinaigrette dressing.
  6. -----
  7. Heat olive oil in a large saute pan over medium heat.
  8. Slice zucchini into small moon-shaped slices, peel and smash garlic.
  9. Saute zucchini and squash and garlic cloves for about 5-7 minutes until soft and cooked through (but not mushy).
  10. Add red pepper flakes, dill, sea salt and pepper, stir together.
  11. Serve immediately with burgers and arugula salad.

“Aphrodisiac: any of various forms of stimulation thought to arouse sexual excitement. Aphrodisiacs may be classified in two principal groups: (1) psycho-physiological (visual, tactile, olfactory, aural) and (2) internal (stemming from food, alcoholic drinks, drugs, love potions, medical preparations)”.

We’ve all heard that there are certain foods that have aphrodisiac powers, but which ones and what effect do they have on romance? There are several foods that increase passion and the mood for love – almonds, arugula, asparagus, avocado, bananas, basil, chilies, chocolate, coffee, figs, garlic, ginger, honey, nutmeg, oysters, pinenuts, raspberries, strawberries, black truffles, vanilla and wine, just to name a few.

Truffles are said to stimulate and sensitize the skin for touch. Vanilla’s scent and flavor is known to increase lust. Chilies increase blood flow and sex drive. The chemicals in chocolate trigger neurochemicals in the brain that increases passion. Red wine relaxes and stimulates the senses.

For Valentine’s Day, I rounded up a few recipes featuring some of these love-ly passion-inspiring foods, guaranteed to spice up your night and make it one to remember!

Broiled Oysters with Fresh Herbs, Garlic and Cheese

Herbed Oysters

Ingredients:

24 fresh oysters
¾ cup of breadcrumbs
2 cloves garlic, chopped
1 teaspoon of Dijon mustard
1 teaspoon of olive oil
½ teaspoon of fresh thyme, chopped
½ teaspoon of fresh basil, chopped
¼ teaspoon of fresh marjoram, chopped
Zest of one lemon
2 tablespoons of grated Parmesan cheese

Directions:

Shuck the oysters and set aside on the half shell. Discard the remaining shells.

In a bowl, mix the breadcrumbs, garlic, mustard, olive oil, thyme, basil, marjoram, lemon zest and Parmesan.

 Top each oyster with about 1 teaspoon of the breadcrumb mixture and place the oysters on a baking sheet. Cook under high broiler (grill) for about 6 minutes or until the oysters are crispy and golden brown.

 Serve hot, with a wedge of lemon and your favorite hot pepper sauce on the side. Pop open a bottle of your best bubbly and indulge with your honey.

Milk Soup with Truffles au Gratin

Truffle Gratin

Ingredients:

2 c. of chicken juice (gravy)
2 + 2/3 c. of milk cream
1 oz. of fresh truffle
2 lbs. of fresh bread
2/3 c. of truffle juice
1/3 c. of milk
2/3 c. of egg whites
Salt, white pepper

Preparation:

Reduce the chicken juice to half.

Add the milk, milk cream and reduce again.

Add the truffle juice and reduce until you get a nice texture.

Check on seasoning and put aside for the moment.

Preparation of the bread toasts:

Whisk 2/3 c. of cream, season with salt and pepper.

Cut the bread into 1 inch thick slices and cut them into circles (2 inch diameters)

Toast both sides of the bread pieces, dig one side on the piece and pour the wiped cream into it, bake it “au gratin”
under the broiler for a few minutes until lightly browned around the edges.

Chocolate Chicken

Chocolate Chicken

2 lbs. chicken, cut up — (2 to 2 1/2)
3 Tbsp. vegetable oil
2 cups chicken stock
1/2 cup unsweetened cocoa
1 Tbsp. vegetable oil — (1 to 2)
1/4 tsp. cloves
1/2 tsp. cinnamon
3/4 tsp. anise seed
1/2 cup almonds, chopped
1/2 cup peanuts, chopped
1 Tbsp. sugar
1 tsp salt
3 tomatoes, chopped
2 medium onions, chopped
1/2 tsp. fresh pepper
2 tsp. hot crushed red peppers
1/8 tsp. cayenne (or to taste)
Sesame seeds

Brown chicken in a medium skillet in hot oil. Remove to a large (13x9x2) cake pan or baking dish. Pour oil from skillet and add the stock. Simmer 5 minutes. Mix cocoa with vegetable oil to form a paste. Add cloves, cinnamon, anise seed, and blend. Stir spice mixture into simmering stock and simmer 5 minutes more, stirring occasionally. 
Pour mixture over the chicken parts. Cover and bake in preheated 350-degree oven until chicken is tender (around 1 to 1 1/2 hours). Serve sprinkled with sesame seeds over a bed of rice.

Spicy Scallops with Capellini

Scallop

Ingredients:

1 pound sea scallops, quartered if large
6 tablespoons extra-virgin olive oil
1/4 cup dry white wine
2 tablespoons coarsely chopped flat-leaf parsley
1 tablespoon minced garlic
1 small dried chipotle chile with seeds, stemmed and chopped
Fine sea salt
1/2 pound capellini

Directions:

Preheat the oven to 400°. In a large shallow glass or ceramic baking dish, toss the scallops with the oil, wine, parsley, garlic and chipotle. Season with salt and bake for about 15 minutes, or until the oil is sizzling and the scallops are firm.

Meanwhile, in a large pot of boiling salted water, cook the capellini until just al dente, about 3 minutes. Drain; transfer to a serving bowl. Add the scallops and their juices, toss well and serve immediately.

Coffee and Chocolate Braised Short Ribs

Chocolate-Coffee Braised Short Ribs

Ingredients:

Olive oil or lard
5 lbs beef short ribs
Salt and Pepper
1 large onion, chopped
1 large red bell pepper, chopped
1 jalapeno pepper, seeded and chopped
2 cloves of garlic, minced
2 Tbsp brown sugar
1 tsp chili powder
1/2 tsp oregano
1 tsp cumin
2 cups strong coffee
1.5 cups chopped tomatoes, with juice (or one 28 oz can)
1 Tbsp tomato paste
1 cup unsweetened chocolate (70% or higher cacao)
Cilantro, chopped (for garnish)

Preparation:

Rinse short ribs under cold water and pat dry, season liberally with salt and pepper. Heat the olive oil in a cast iron pan or Dutch oven over medium high heat.

Place a few of the short ribs in the pan, being careful not to crowd them. Brown the short ribs well on all sides until they have a nice seared brown color. Transfer the meat to a plate and continue to cook the rest of the ribs. When done, remove all of the meat to the plate.

Reduce the heat to medium. If you used a cast iron pan for the browning, heat more oil in a large oven safe covered casserole dish. If you’re using a Dutch oven, just keep on cooking.

Add the onions and peppers and cook until the onions are translucent, approximately 5-10 minutes. Next mix in the garlic and cook for another minute. Stir in the brown sugar and spices and cook for 5 minutes longer. Add the coffee, chopped tomatoes, and tomato paste and bring the whole mixture to a boil.

Return the short ribs to the pot and cover. Braise in the oven for 1.5 to 2 hours. Mix in the chocolate until melted. Season ribs with salt and pepper, and garnish with fresh parsley. Serve over rice, mashed potatoes, pasta or polenta. Indulge in a nice hearty red such as a Cabernet or Zinfandel or Shiraz which goes great with the chocolate and spicy flavors in this dish.

Arugula and Avocado Salad With Shaved Parmesan and Toasted Pine Nuts

Arugula Avocado Salad

Ingredients:

2 bunches arugula, washed and dried ( about 6 cups)
1 avocados, peeled and sliced
Shaved parmigiano-reggiano cheese, to taste

Lemon Dressing

2 tablespoons fresh lemon juice
1 medium garlic cloves, finely minced
4 -5 tablespoons olive oil
salt and pepper

Directions

To make the dressing, in a small bowl, combine the lemon juice and garlic. Slowly whisk in olive oil until the mixture is creamy. Season with salt and pepper.

Place arugula in a serving bowl and add dressing to taste. Mix well. Top with avocado slices, drizzle a bit more dressing over them and season with a pinch of salt. Using a vegetable peeler, shave slivers of Parmesan over the top.

Top off the salad with some toasted pine nuts for an extra crunch (and spice to your Valentine’s Day!)

Serves 4.

Ingredients

¼ cup (½ stick) butter
1 cup brown sugar
½ teaspoon cinnamon
¼ cup banana liqueur
4 bananas, cut in half 
lengthwise, then halved
¼ cup dark rum
4 scoops vanilla ice cream

Instructions

Combine the butter, sugar, and cinnamon in a flambé pan or skillet. Place the pan over low heat either on an alcohol burner or on top of the stove, and cook, stirring, until the sugar dissolves. Stir in the banana liqueur, then place the bananas in the pan. When the banana sections soften and begin to brown, carefully add the rum. Continue to cook the sauce until the rum is hot, then tip the pan slightly to ignite the rum. When the flames subside, lift the bananas out of the pan and place four pieces over each portion of ice cream. Generously spoon warm sauce over the top of the ice cream and serve immediately. Prepare to swoon almost immediately.

Chocolate Honey Mousse

Ingredients

12 oz of dark crispy chocolate
5-6 dessert spoons of pure honey
3 cups of fresh cream

Instructions

Mix together dark chocolate (should be crushed into pieces), 5 dessert spoons honey and ¾ cup of fresh cream. The ingredients
should be mixed over luke warm water. This mixture will need to be stirred constantly, till the dark chocolate stats to melt and combines itself with the honey and cream.

Once all three ingredients have blended into one another, keep it aside for it to cool.

While the chocolate mixture is kept aside to cool, start whipping the remaining cream (2 ¼ cups) but not very firm.

Once the cream is whipped and the chocolate mixture is cool, gradually and slowly fold the cream into it. Blend this mixture well.

Take a special serving dish and carefully pour the whole mixture into it and keep it to set in the refrigerator.

The chocolate honey mousse can also be poured into separate individual bowls as it does make a lavish amount.

If the mousse is poured into one whole serving dish, the chocolate honey mouse might take about 3 to 4 hours for it to set well.

Chocolate honey mousse can be served with creamy vanilla ice cream. Garnish with crushed nuts as a topping.

White Chocolate Raspberry Tart

Raspberry Tart

Ingredients:

1 ¼ cup of walnuts, finely chopped
¾ cup of unsalted butter, softened
3 tablespoons of sugar
1 ½ cup of flour
1 teaspoon of freshly-grated orange zest
1 large egg, lightly beaten
3 cups of fresh raspberries
12 oz of white chocolate, chopped
½ cup of heavy cream, warmed
½ cup of whipped cream, to garnish

Directions:

In a bowl with an electric mixer, blend walnuts, ¾ of the butter, sugar, flour, orange zest and egg until thoroughly combined, and press into an 11-inch tart pan with removable bottom.

Freeze the shell for 15 minutes.

While the shell is freezing, preheat your oven to 375°F.

 Bake the shell in middle of your oven for 25-30 minutes, or until golden brown.

 Allow the shell to cool on a rack.

Remove the side of pan and transfer the shell to a plate.

 Fill shell with 2 ½ cups of raspberries.

In a large metal bowl set over a saucepan of barely simmering water, melt the white chocolate. 

Remove the bowl from the heat and whisk in the cream and the remaining butter, whisking until smooth.

 Spread the white chocolate mixture over the raspberries, smoothing top and chill, covered, for 3 hours or overnight.

Garnish the tart with whipped cream and remaining ½ cup of raspberries.

Serve at room temperature.
