Chili is one of my go-to recipes when the Autumn leaves start turning colors and the weather starts getting cooler – especially on a crisp weekend night cuddled under some fuzzy blankets with me and my kitty cat watching some movies. Or with a group of friends watching everyone go crazy on college football game day. There’s nothing better than that. And, it’s an easy thing to make and dishes out a big dose of comfort. The best part is once I make a big pot, I can eat it for a few days and then throw the rest in the freezer for later (unless all my crazy friends dig in and there’s nothing left to show for it which actually makes me the happiest!)

I decided I wanted to make a spicier version of the chili I normally make and added a kick to it with some Cajun/Creole seasoning Tony Chacere’s (or you can try Emeril’s Southwest Essence) which adds an extra layer of spicy, savory flavor with green and red bell pepper and celery flavors.  I added some red pepper flakes, diced green chilies and a few tablespoons of hot sauce to the mix and used half ground chicken (you can also use ground turkey) / half ground beef and threw in some garlic, onions and black beans to make it a little healthier too. If you want to make it even more authentically Cajun, you could throw in some Andouille sausage or corn or green and red peppers for even more flavor and texture.

It’s perfect on its own, but you can cool the heat a little bit with some sour cream and shredded cheddar cheese on top. If you want it even spicier, just throw in a little extra hot sauce – I love Evil Ooze by Hotline Pepper Products (my friend Kerry Stressel makes it in Texas) and classic Tabasco hot sauce, or you can do a little milder sauce like Frank’s RedHot or Cholula) and top with extra diced chilies or sliced jalapenos. I usually serve my chili with plain crackers or corn chips, but you could also make some yummy cheesy garlic bread to serve with it instead. Cozy up and enjoy! 🙂

Spicy Cajun Chili with a Kick

Prep Time: 15 minutes

Cook Time: 1 hour, 15 minutes

Total Time: 1 hour, 30 minutes

Yield: 8

Ingredients

  • 3 tablespoons extra virgin olive oil
  • 1/2 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 1/2 pounds ground chicken or turkey
  • 1 1/2 pounds ground beef
  • 1 tablespoon Cajun or Creole seasoning (Tony Chacere's)
  • 2 tablespoons chili powder
  • 2 tablespoons cumin
  • 2 tablespoon paprika
  • 1 tablespoon cayenne pepper
  • 1/2 tablespoon red pepper flakes
  • 2 cups low-sodium chicken or vegetable stock
  • 1 cup water
  • 1 -28 ounce can crushed tomatoes
  • 1 -15 ounce can tomato sauce or 1/2 cup chopped fresh tomatoes
  • 2-3 tablespoons hot pepper sauce
  • 1 can black beans, drained and rinsed
  • 1 can diced green chilies, drained (or 1 fresh jalapeno, seeded and diced)
  • 1 cup of corn kernels (optional)
  • Salt and freshly ground black pepper, to taste
  • Shredded cheddar cheese and sour cream, for garnish
  • Extra hot sauce, diced chilies or jalapeno (if desired)
  • Crackers, garlic toast or corn chips, for serving (if desired)

Instructions

  1. Heat the olive oil in a large pot and saute the chopped onion until soft and translucent, for about 5-6 minutes. Add the minced garlic and saute for another 30 seconds to 1 minute.
  2. Add the ground chicken or turkey and beef to the pot and mix with the garlic and onion, stirring with a wooden spoon to brown the meat. Continue to cook until all the meat is brown and no longer pink, for about 8-10 minutes. Drain the fat off the meat into a colander and place meat and onion-garlic mixture back into the pan.
  3. Add the Cajun-Creole seasoning and all the dry chili spices and red pepper flakes, stir and cook for another minute or so.
  4. Pour in the stock, water, crushed tomatoes, tomato sauce (or chopped fresh tomatoes) and hot sauce; turn up the heat until chili starts to bubble, and lower heat to a simmer.
  5. Stir in black beans and and diced green chilies, cover and simmer for at least 45 minutes, up to 2 hours, stirring occasionally.
  6. Add salt and freshly ground black pepper to taste. (Note: You can play with the thickness of the chili by adding additional water or stock as it simmers, but be sure to taste and adjust the seasonings to your liking if you do this.)
  7. Serve with shredded cheddar cheese and sour cream for garnish. Top with some extra diced chilies or jalapenos for extra zing if desired.

You can also add some fresh or canned corn to the chili while cooking.

Serve with shredded cheddar cheese and sour cream for garnish. You can also top with some extra diced chilies or jalapenos for extra zing if desired.

Fresh cilantro or lime adds great flavors as garnish for a little bit more green.

Enjoy with a big hearty glass of red wine or a beer and some crackers, corn chips or cheesy garlic bread.

Pizza is probably one of my most favorite things on the planet. Seriously. Who can resist that crispy crunchy crust topped with melted gooey cheese and fresh, savory baked toppings? A pizza is a creative endeavor that is only limited to your imagination. The pizza dough is like a blank canvas just waiting for the artist to paint a masterpiece on.

Speaking of dough, you can certainly take a stab at making your own – here is a basic pizza dough recipe that’s easy enough to make. If you don’t want to bother making your own and want to save time, you can use pre-made refrigerated pizza dough from the grocery store (I get mine from Fairway stores, or you can try Pillsbury pizza dough which is inexpensive and easy to use. They even have Artisan, thin and gluten-free crusts now which is kinda cool.)

I made these rustic pizzas the other day in an attempt to use up some fresh veggies, pizza dough and ingredients from my kids cooking show I taped last week – we made all kinds of fun pizza on set but i couldn’t bear to waste the leftovers!

So here’s how easy these babies are to make…I divided the pizza dough and patted out the dough on to pizza pans to make four rustic pizzas – one of them topped with sauteed garlic, spinach, olive oil, savory chicken,  sun dried tomatoes and plenty of mozzarella gooey cheese. The other one I made with sauteed bell peppers in different colors, broccoli, pepperoni, ham, tomato sauce and two gooey cheeses – mozzarella and muenster, great for melting. The trick to a great pizza in my experience is to saute your veggies in some olive oil and garlic BEFORE you put them on the pizza (the chicken too!). This gives them a deeper flavor and keeps them from drying out in the oven when you bake the pizzas. Throw them in a preheated oven on 400 degrees for about 15-17 minutes, let them cool on a baking rack for about 5 minutes, and then top them with some fresh torn basil, some extra parmesan cheese and pepper flakes and you’ve got some serious deliciousness going on.

Sauteed Chicken, Garlic, Spinach & Sundried Tomato Pizza

Chicken, Spinach, Garlic and Sundried Tomato Pizza

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Yield: 2-4

This is a tasty and healthy pizza made with sauteed garlic and spinach, red pepper flakes, sauteed chicken breast, sundried tomatoes and Parmesan and Mozzarella cheese.

Ingredients

  • 1 package refrigerated pizza dough (or handmade)
  • 4 tablespoons extra virgin olive oil, divided
  • 1/2 cup shredded Parmesan cheese
  • 1 tablespoon garlic, minced
  • 1 teaspoon red pepper flakes
  • 1/2 package fresh spinach, chopped
  • 6-8 thin chicken cutlets, cut into 1" chunks
  • 1 tablespoon seasoned salt or poultry seasoning
  • Fresh ground black pepper, to taste
  • 1/4 cup sundried tomatoes, julienned (thin strips)
  • 1 cup shredded Mozzarella cheese

Instructions

  1. Preheat oven to 400 degrees.
  2. Divide pizza dough in half and shape into two oval or rectangular pizzas on a greased pizza pan.
  3. Drizzle 1 tablespoon of olive oil and 1/4 cup of Parmesan cheese on to the base of each pizza dough.
  4. Heat an additional tablespoon of olive oil over medium heat in a large saute pan and saute minced garlic and red pepper flakes for about a minute.
  5. Add chopped spinach and stir. Saute together for another 3-4 minutes until spinach starts to wilt.
  6. Remove spinach garlic mixture from pan and set aside in a mixing bowl.
  7. Heat additional 2 tablespoons olive oil in the same pan, add seasonings and saute the chicken for approximately 8 minutes until golden brown. Remove pan from heat.
  8. Top pizza crusts with spinach-pepper-garlic mixture, sundried tomatoes and sauteed chicken (divided into equal portions for both pizzas).
  9. Top both pizzas with shredded mozzarella cheese and place pizza pan in oven.
  10. Bake for 15-17 minutes until cheese starts to get bubbly and golden brown.

This is a healthy and hearty version of classic pizza made with sauteed garlic, bell peppers and broccoli with diced ham and pepperoni topped with gooey mozzarella and muenster cheese.

Ingredients

  • 1 package refrigerated pizza dough (or handmade)
  • 2 tablespoons extra virgin olive oil, divided
  • 1 tablespoon garlic, minced
  • 1/4 cup red bell pepper, diced
  • 1/4 cup orange bell pepper, diced
  • 1/4 cup yellow pepper, diced
  • 1/4 cup green bell pepper, diced
  • 1/2 cup broccoli florets, chopped
  • Sea salt and pepper to taste
  • 1 cup tomato sauce or puree
  • 2 tablespoons tomato paste
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic salt
  • 1/4 cup pepperoni, chopped
  • 1/4 cup ham, chopped
  • 1 cup shredded Mozzarella cheese
  • 1/2 cup Muenster cheese, torn into pieces
  • 1 tablespoon garlic salt

Instructions

  1. Preheat oven to 400 degrees.
  2. Divide pizza dough in half and shape into two oval or rectangular pizzas on a greased pizza pan.
  3. Heat olive oil over medium heat in a large saute pan and saute minced garlic for about a minute.

Savory Sauteed Chicken and Veggie Rice

This is a quick and healthy weeknight dish I whipped up the other day with some fresh ingredients I had on hand in the fridge. It’s got some savory and slightly spicy sauteed chicken made with olive oil, garlic and cajun seasonings (I use Tony Chacere’s Creole seasoning which is awesome). I also added a secret ingredient that I absolutely love which gives it a boost of flavor – Sazon seasoning – a type of seasoned salt found in Spanish and Latin markets (you can also find it online or in the international food section of your grocery store.) The seasoning is used on meats, fish, poultry and to add savory flavor to soups and stews. Typical ingredients include coriander, cumin, paprika, cilantro, achiote, garlic, salt. Try the Sazon by Goya Foods or you can make your own seasoning following this recipe.

Now back to my recipe. I cut up some red, yellow and green peppers and broccoli, (you could also add some corn, peas and carrots into the mix if you like), which I then sauteed with minced garlic and olive oil and tossed into the chicken and garlic mixture, served over cooked rice. For leftovers, I heated up some more garlic infused oil back in the pan and reheated the rice, then added the chicken and veggies into the pan and stirred it all together to mix all the savory flavors together into one big yummy rice bowl. It’s healthy, full of flavor and color and has a little kick to it too. Who said cooking tasty food had to be difficult? This dish absolutely ROCKS. x

Savory Sauteed Chicken & Veggie Rice

Prep Time: 30 minutes

Cook Time: 20 minutes

Total Time: 50 minutes

Yield: 4-6

This is a quick and easy and healthy weeknight dish made with sauteed chicken and veggies with Cajun seasonings served over cooked rice.

Ingredients

  • For the sauteed veggies:
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 small red pepper, diced
  • 1 small yellow pepper, diced
  • 1 small green pepper, diced
  • 1/2 cup broccoli florets, chopped
  • 1 teaspoon garlic salt
  • For the sauteed chicken:
  • 2 tablespoons garlic-infused olive oil
  • 2 lbs thin chicken cutlets, cut into strips or chunks
  • 1 tablespoon Cajun seasoning
  • 1/2 packet Sazon season
  • fresh ground black pepper, to taste
  • White or saffron/yellow cooked rice, for serving
  • extra red yellow and green diced peppers for garnish

Instructions

  1. Cook the white or yellow rice in a large pot of boiling water according to package directions and drain, set aside.
  2. Heat oil in a large saute pan over medium and add minced garlic, cook for 1 minute.
  3. Raise heat to medium high and add bell peppers, broccoli and garlic salt; saute for about 5-7 minutes until soft. Remove from heat and set aside in a mixing bowl.
  4. Add an additional 2 tablespoons of garlic-infused olive oil and heat in same saute pan for another minute.
  5. Add chicken (make sure to pat dry after rinsing to remove excess water or the chicken will steam instead of saute) to the pan, add Cajun and Sazon seasonings and saute for about 8 minutes until it starts to brown. Sprinkle with some freshly ground black pepper to taste.
  6. Return sauteed veggies to the pan and turn the heat down to medium-low and saute the ingredients together for another few minutes.
  7. Place rice into individual serving bowls and serve chicken and veggie mixture on top of the rice.
  8. Add additional cajun seasoning or salt and pepper to taste. Garnish with additional red, yellow and green diced peppers if you wish (makes it prettier and more colorful!)

Notes

Chef's Note: this tastes better the next day and is awesome if you saute the chicken and veggies in a pan with the rice. Simply add a few tablespoon of oil and start reheating the rice over medium heat and then add the leftover chicken and veggie mixture, stir together and cover with a lid. Let it reheat for about 5 minutes, stirring occasionally and serve. YUM.

There’s nothing better in the Summer than a visit to the Farmer’s Market to get some super fresh veggies that are ripe in the peak of the season. Some of my favorites are fresh cherry tomatoes, zucchini and corn that are lightly roasted or sauteed tossed with some roasted garlic, fresh herbs, extra virgin olive oil and freshly grated parmesan cheese over pasta. It’s light, healthy and refreshing for a Summer dinner with a glass of wine with some friends at a table out on the back patio served with a green salad and some crusty bread.

Summer Veggie Pasta with Roasted Garlic, Tomatoes, Zucchini & Corn

Yield: 4

A light and healthy Summer pasta dish with farm market fresh vegetables including roasted garlic, cherry tomatoes, corn and zucchini topped with fresh herbs and shaved Parmigiano-Reggiano cheese. Delicious!

Ingredients

  • 1 package fresh or dried spaghetti (can sub fettucine, penne or tagliatelle)
  • 3 tablespoons extra virgin olive oil
  • 1 small to medium garlic bulb
  • 4 cups cherry tomatoes, halved
  • 1 medium zucchini, sliced into ribbons
  • 1 or 2 ears of corn, husked
  • 1/2 teaspoon sea salt
  • 1/4 cup fresh mint or basil leaves, torn
  • Freshly ground black pepper, to taste
  • ½ cup shaved Parmigiano-Reggiano cheese

Instructions

  1. Preheat oven to 400 degrees.
  2. Shave off ¼” of the top of garlic bulb and peel away the outer layers of the garlic bulb skin. Drizzle with extra virgin olive oil and wrap in foil. Roast for 45 minutes up to one hour and let cool. Squeeze out the garlic bulbs, slice or mash, and place in a bowl to the side.
  3. Bring a pot of water to a boil (you can add a teaspoon of sugar and milk to the water if you like sweeter corn), and add the corn, bringing water back to a boil (about 5-7 minutes.) Once water is back to a boil, remove the corn ears. Let cool, shave off kernels and set aside.
  4. Cut zucchini in half lengthwise and then cut in half again into quarters. Shave zucchini into thin ribbons and set aside.
  5. In another large pot, bring salted water to a boil. Cook pasta according to package directions until al dente. Drain; place pasta in a large serving bowl.
  6. While pasta cooks, heat 1 tablespoon of olive oil in a medium saucepan over medium heat. Add zucchini to pan; and sauté for 5-7 minutes until soft and cooked through, stirring often. Add cooked corn kernels and roasted garlic and sauté together for another minute or so.
  7. Add 2 tablespoons of olive oil to the pan along with tomatoes and ½ teaspoon salt; cover and cook 4-6 minutes. Add tomato-garlic-corn mixture to the cooked pasta; toss to combine. Top with torn mint or basil leaves, shaved Parmigiano-Reggiano cheese and freshly ground black pepper.

Notes

Serve with a green salad and crusty bread and a glass of crisp white wine such as Pinot Grigio or Sauvignon Blanc.

Last week I got a really fun, unique food styling assignment for Birds Eye Vegetables for a TV segment featuring brand ambassador Jennette McCurdy (Nickelodeon I AM CARLY and Sam & Cat star) on CBS morning show The Couch. Jennette McCurdy talked about her new role in a healthy eating initiative for Birds Eye Vegetables for a multi-week challenge for families to seize the fun and ‘Rewrite the Dinnertime Rules’ leading up Nickelodeon’s 10th annual Worldwide Day of Play this fall.

I was asked to create three veggie portraits of Jennette and The Couch hosts Carolina Bermudez and John Elliot using Birds Eye Vegetables to feature on the show. I picked up a few packages of frozen carrots, peas, green beans and corn and had a fun evening drawing faces and glueing veggies on white plates to create the portraits. Not as easy at it looks! McCurdy and Birds Eye have some suggestions for getting started ‘Rewriting the Dinnertime Rules.’

Rule #1: Role Reversal. Kids pick the menu and the veggies, help shop for the groceries and are in charge (with a little help from mom and dad) in the kitchen. Plus, they get to pick the theme and dress and decorate accordingly, whether it’s hitting the “beach,” bringing out your family’s wild side in the “jungle” or cheering on your favorite sports team.

Rule #2: Play with Your Birds Eye Veggies! You can use your veggies to make smiley faces or create colorful rainbows on your plate. You can even give your broccoli a mohawk haircut (really!) – just have fun!

Rule #3: Celebrate Every Bite. It can take up to 12 times for a kid to try a new type of veggie, or any new food before he or she begins liking it (http://www.choosemyplate.gov). So, keep it up! And while you’re at it, give yourself a high five for every bite your kid takes.

Rule #4: Be a Veggie Explorer. There are all sorts of cool and surprising ways to serve veggies. Like smoothies (mixed veggies with yogurt, OJ and honey), popsicles (carrots and OJ) and salad dressings (carrot ginger). You AND your kids will be amazed at all the cool ways you can eat your veggies.

Last week I had the fantastic opportunity to cook and do food styling for a special healthy food segment on the “Joy Behar: Say Anything!” TV Show featuring Dr. Neal D. Barnard, M.D., founder and president of the Physicians Committee for Responsible Medicine (PCRM). Dr. Barnard sits down with guest host Marilu Henner to discuss how saturated fat makes you sluggish and which colored foods are good for your brain and improve memory. Barnard says, “Greens, foliage — that contributes folate, which is a B vitamin which protects the brain.” He adds, “So when you see the greens, you know that’s good for the brain.” He also goes into discussing what foods to avoid such as heavy carb and fat-laden foods that make us tired and lack energy.

I was asked to cook and style four of Dr. Barnard’s recipes from his new book “Power Foods for the Brain: An Effective 3-Step Plan to Protect Your Mind and Strengthen Your Memory” to display during the TV interview food segment. Chard’s slight bitterness is beautifully balanced by the sweetness of the corn and grapes, resulting in a surprising depth of flavor.

Ingredients

  • ½ small white onion
  • 3 cloves garlic
  • Leaves from 1 bunch chard
  • 4 Roma tomatoes, diced
  • 1 ½ cups fresh corn kernels
  • ¼ cup pecan halves
  • 1 cup seedless black grapes
  • Pinch of sea salt
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Mince the onion and garlic, then smash them together a couple times with the back of a knife or with a mortar and pestle.
  2. Wash the Swiss chard thoroughly, as it tends to be gritty, then slice it into ribbons by tightly bunching the leaves together and slicing them with a sharp, heavy knife. Place the chard in a salad bowl, add the remaining ingredients, and toss.

Marinated Grilled Veggie Kabobs

Serve these savory kebabs over a brown rice pilaf for a satisfying and easy meal.

Ingredients

  • 16 cherry tomatoes
  • 2 red onions, each cut into 8 bite-size chunks
  • 2 green or red bell peppers, cored, seeded, and cut into 8 pieces each
  • 16 button mushrooms
  • 1 small yellow summer squash, cut into 8 pieces
  • 1 small zucchini, cut into 8 pieces
  • Marinade:
  • ½ cup balsamic vinegar
  • ½ cup orange juice
  • 2 tablespoons maple syrup
  • 2 tablespoons prepared mustard
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • 8 metal skewers, or bamboo skewers soaked in water for 30 minutes

Instructions

  1. Place the cherry tomatoes, red onions, bell peppers, mushrooms, squash, and zucchini in a large bowl.
  2. In a small bowl, combine the marinade ingredients and whisk well. Pour the marinade over the vegetables and stir to coat. Marinate for 15 minutes.
  3. Heat a charcoal or gas grill or your oven’s broiler. Onto one skewer, thread the ingredients in the following manner: 1 tomato, 1 red onion chunk, 1 pepper piece, 1 mushroom, 1 yellow summer squash slice, 1 tomato, 1 zucchini slice, 1 red onion chunk, 1 pepper, and 1 mushroom. Repeat with remaining ingredients and skewers. Place the kebabs on the hot grill or a broiler pan and brush with the marinade. Grill for 7 minutes, or until desired tenderness, turning the kebabs a few times. Serve immediately.

  • 4 1-inch-square watermelon chunks
  • 1/4 cup orange juice
  • 2 teaspoons fresh lime juice
  • 2 tablespoons finely chopped fresh mint leaves
  • 1 teaspoon pure vanilla extract
  • 4 10-inch bamboo skewers

Instructions

  1. Thread 1 grape, 1 strawberry, 1 cantaloupe chunk, 1 honeydew chunk, 1 slice kiwi, 1 watermelon chunk, and 1 more grape onto a skewer. Repeat with the remaining fruit and skewers. Place the finished skewers in a shallow container.
  2. In a small bowl, whisk together the orange juice, lime juice, mint, and vanilla. Pour the marinade over the fruit kebabs, cover, and chill for at least 30 minutes (or up to 3 hours) in the refrigerator before serving.

  • 1 cup unsweetened cocoa powder

Instructions

  1. Preheat the oven to 350 degrees F and grease an 8x8-inch baking pan with the oil.
  2. Combine the black beans, dates, jam, and vanilla in a food processor and process until smooth. Add the flour, cocoa powder, and salt and process again.
  3. Pour into the prepared pan and smooth the top with a spatula. Bake for 30 minutes or until the top looks set. Remove from the oven and cool completely, then cut into 16 squares. The brownies will keep, refrigerated in a covered container, for up to 1 week.

Blue Hill New York – a well deserved James Beard Award for Outstanding Restaurant

I had the recent opportunity to have an intimate conversation with Trevor Kunk, Chef de Cuisine of Blue Hill New York about their history, philosophy, cuisine and thoughts on their recent James Beard Award for Outstanding Restaurant 2013.

We sat in the charming back patio garden room as he told me the story of the Barber Family, Blue Hill Farm, his Southern Florida upbringing and Culinary Institute of America training, and how he found his culinary calling at of one of New York’s most premiere farm-to-table restaurants. When I asked him what he thought made Blue Hill win this most distinguished and notable award, he simply stated, “we consistently produce delicious, fresh food.” After our conversation, it’s clear to see why.

Blue Hill New York is B-owned and managed by award-winning Executive Chef Dan Barber, and Co-Owners David and Laureen Barber. Dan is a long time supporter of local farmers, agricultural policy and artisanal food producers, and has created a consciousness around everyday food choices and bringing the principles of good farming directly to the table. He has preserved this philosophy and brought it to life through his restaurants, the Blue Hill Farm and the Blue Hill Stone Barns Center for Food and Agriculture.

BLUE HILL FARM

With over 138 acres in Great Barrington, Massachusetts, Blue Hill Farm has been in the Barber family for three generations and served as the inspiration behind both Blue Hill restaurants. Blue Hill Farm was originally a dairy, and was converted into a cattle farm by the Barber’s grandmother Ann Marlowe Straus, in the 1960s. She believed strongly in preserving land and connecting great farming and delicious food, which she passed on to them. Dan began farming and cooking for family and friends at the farm, and it is there that grew passionate about locally grown and seasonal produce.

In 2006 the brothers decided to redesign Blue Hill Farm back to its original form, and brought in local farmer Sean Stanton to manage the land. The farm is home to chickens, pigs, dairy cows, and laying hens, supplies the restaurants with vegetables and grass-fed meats.

BLUE HILL NEW YORK

In 2000, Blue Hill New York opened in Greenwich Village, New York City. A small intimate space, the restaurant occupies a historical “speakeasy” near Washington Square Park. It is both elegant and casual, serving seasonal American cuisine that celebrates the delicious offerings from the Hudson Valley.

Blue Hill’s menu highlights local food, cocktails, beer and wines from regional Tri-State artisanal producers. The majority of the ingredients come from nearby farms, as well as Blue Hill Farm in Great Barrington, Massachusetts, and Stone Barns Center for Food and Agriculture, located in Pocantico Hills, NY.

In addition to Blue Hill’s a la carte menu, they also offer a 5-course Farmer’s Feast and a 7-course extended Farmer’s Feast, both inspired by the week’s harvest, and have a regular seasonal menu that changes depending on what produce, poultry, meats and seafood are in season to offer the freshest foods possible. Asparagus, Rhubarb, Radishes and Fiddlehead Ferns are abundant on the current Spring menu, which will change as soon as the weather warms up to Summer months, bringing in a flux of new seasonal fruits and vegetables to feature.

They offer a variety of fresh and locally sourced Farm Snacks such as Blue Hill Farm Yogurt, Parsnips, Beets and Oats or the “Farm Bar” served with Goat Cheese and Strawberries. There are plenty of gorgeous, creative appetizers to start the meal too: Chilled Asparagus Soup with Pickled Green Garlic, Walnut Bread and Sorrel; Emu Egg Pasta; or Stone Barns Butterhead Lettuce Salad with Fiddlehead Ferns, Pickled Cauliflower and Hazelnuts.

They serve Raven and Boar’s Pig year around, but their Hudson Valley Chickens are only served from May through November when their pasture raised chickens are in their prime and able to run around and feed outside. They serve local shellfish such as Shrimp and Squid with Spring Vegetables and fresh Tarragon; Grass-Fed Lamb with Asparagus, Knotweed and Alliums; and Rotation Risotto with 12 local grains and seeds made with Brassica Puree and Chocolate Wheat. Desserts are also made with fresh fruits and ingredients from surrounding farms –Olive Oil Cake with fresh pears, brown butter and toasted almond ice cream and a Chocolate Bread Pudding made with salted caramel, pine nuts and cocoa nib ice cream are a few house specialties.

Their cocktails and bar menu mimic the culinary program and support local farms by using NY State and domestic distilleries, wineries and ingredients from Blue Hill Farm and local Hudson Valley farms. They make their own bitters and sweet vermouth in-house, and have a ‘bartender garden’ where they grow their own herbs and plants, including wormwood used to infuse vodka, which is then muddled with fennel and chartreuse to create their own absinthe.

BLUE HILL AT STONE BARNS CENTER AND BLUE HILL CAFE

Blue Hill at Stone Barns opened in Spring 2004, within the Stone Barns Center for Food and Agriculture in Pocantico Hills, New York. The Barbers created the Stone Barns Center, a farm and educational center, to help carry through their mission for local and sustainable food.

Sourcing from the surrounding fields and pasture, as well as other local farms in New York, Pennsylvania, and Massachusetts, Blue Hill at Stone Barns is an elegant restaurant that highlights the abundant resources of the Hudson Valley. There are no menus there, instead guests choose from a variety of fresh daily ingredients from the field and market.

Spinach Artichoke Ricotta Pizza with Parmesan Garlic Cauliflower Crust

Spinach Artichoke Ricotta Pizza with Parmesan Garlic Cauliflower Crust

Summer has quickly arrived and it’s that time of year again to shed a few pounds and hit the beach. I’ve decided to muster up some will power and started experimenting with a low carb diet with grand visions of lazy days on the beach in that bikini I need to fit back into. The bad news is whenever I decide to go on a diet, my brain automatically starts thinking about all the evil foods I CAN’T eat – pizza being one of the first things I start craving.

I decided to make a low-carb pizza using a parmesan garlic cauliflower crust. It sounds weird, but it’s absolutely delicious and healthy and a great substitute for traditional pizza dough when you want a healthier option to cut some carbs out of your diet (while satisfying your cravings for pizza which are absolutely NOT allowed when you’re doing low carb!) I’m absolutely in LOVE with spinach artichoke dip and thought I would make a lighter version mixed with some fresh ricotta, garlic, onion and parmesan cheese to top the pizza.

I found a gorgeous head of bright yellow Carnival cauliflower and simply shredded and chopped it into a fine crumble (you can also do this in a food processor or blender). Then I chopped up some garlic and threw them both in the microwave for about 8 minutes, then drained and let cool.

You simply need to mix in some grated parmesan cheese (or any other shredded cheese you like), an egg, garlic, dried minced onion, herbs de Provence (or dried oregano or basil), a few sesame or chia seeds (optional), some yeast, almond flour and sea salt and black pepper. Then pat the mixture on to a greased pizza sheet or Silpat mat, then bake for about 10-15 minutes until the crust is lightly golden brown.

In the meantime, to make the luscious (and healthy) spinach, artichoke and ricotta topping – simply sauté the spinach with some garlic and olive oil, mix in some chopped up artichoke hearts (precooked), fresh minced garlic, ricotta cheese and shredded parmesan cheese, then top the pizza crust spreading the mixture in an even layer. Top with some additional shredded cheese (I used sharp white cheddar but you can use mozzarella or Monterey jack or any other cheese you like that melts well), and then scoop some light and fluffy ricotta cheese on top of the mixture and bake for another 7-10 minutes until the cheeses are melted and bubbly.

In my experiment I found that you shouldn’t spread the pizza crust out on the pan too thin, as it is more fragile than a traditional dough crust and needs to be a bit thick to hold up the ingredients. So try to keep the crust about ¾” to 1 inch thick evenly all around to the edges or it will burn.

Also, let the pizza cool for about 5 minutes or so before slicing it. Top with additional salt and pepper, red pepper flakes if desired, and grated parmesan cheese.

Devour. Repeat.

Preheat the oven to 425. Prepare the cauliflower crust ingredients and pat down on a greased pizza pan.

Bake at 425 degrees for about 10-15 minutes until it starts to get golden brown around the edges.

Top pizza crust with spinach artichoke mixture, shredded cheese and ricotta. Bake for another 10 minutes.

Let pizza cool down for 5-10 minutes and cut into slices.

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Yield: 6 (or 1 large 9-10\" pie)

Ingredients

  • 1 head cauliflower (about 2 ½ cups shredded)
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 cup grated parmesan cheese
  • 1 tablespoon nutritional yeast
  • 2 tablespoons almond flour
  • 1 teaspoon sesame or chia seeds
  • ½ teaspoon herbs de provence (or dried basil or oregano)
  • ½ teaspoon dried minced onion
  • sea salt and fresh ground black pepper
  • red pepper flakes (optional)

Instructions

  1. Preheat the oven to 425.
  2. Grease a 9-10” round pizza pan or place Silpat mat on a rectangular baking sheet.
  3. Shred and chop cauliflower into fine crumbles (either by hand with a large Chef’s knife or with a food processor).
  4. Mince the garlic and add to the cauliflower in a microwave-safe large bowl.
  5. Microwave covered with plastic wrap for about 7-8 minutes.
  6. Uncover, drain and let cool for about 5-10 minutes.
  7. Add the next nine ingredients and mix together well.
  8. Bake the crust for about 10-15 minutes until golden brown. Remove the crust from oven and set aside.

Notes

Ingredients

  • 1 parbaked cauliflower crust (see attached recipe above)
  • 1 tablespoons olive oil
  • 1 shallot, minced
  • 2 garlic cloves, minced
  • 1 package frozen spinach, defrosted (or 1 bag fresh baby spinach)
  • 1 package frozen artichokes, defrosted (or 1-14 oz can, drained)
  • 1-15 oz container ricotta cheese, divided in half
  • 1 cup parmesan cheese, grated
  • sea salt and fresh ground black pepper, to taste
  • ½ cup white cheddar cheese (can sub Monterey jack or mozzarella), shredded
  • dash of red pepper flakes (optional)

Instructions

  1. Preheat a large sauté pan over medium-low heat.
  2. Place the spinach in a large microwave-safe bowl and cover with plastic wrap. Cook for about 8 minutes on HIGH.
  3. Mince the shallots and garlic cloves and drain the spinach (pressing out extra liquids).
  4. Add one tablespoon of olive oil and sauté the shallots for about 5 minutes. Add the garlic and sauté for another minute.
  5. Add the additional tablespoon of olive oil and sauté the spinach for another few minutes, mixing all ingredients together. Remove from heat and let cool for about 5 minutes.
  6. Microwave the artichokes in a large microwave-safe bowl and cover with plastic wrap. Cook for about 5-6 minutes on HIGH and drain. (if using canned artichokes, simply drain).
  7. Chop the artichokes up into small pieces and place into a large mixing bowl.
  8. Add half of the container of ricotta cheese, 1 cup parmesan cheese, salt and pepper and mix well.
  9. Stir in the spinach, shallots and garlic mixture.
  10. Drizzle or spray some olive oil lightly on to the parbaked cauliflower pizza crust.
  11. Spread the spinach, artichoke and ricotta mixture evenly over the crust.
  12. Sprinkle with shredded cheddar cheese, salt and pepper, red pepper flakes and scoop out a few large tablespoons of ricotta cheese and place on top of the pizza.
  13. Bake at 425 degrees for another 7-10 minutes until the cheeses are melted and bubbly and the crust edges are light golden brown. (Watch crust edges to make sure they don't burn).
  14. Remove pizza from oven and let cool for about 5 minutes.
  15. Slice into wedges (or squares if making rectangular pizza) and top with additional red pepper flakes and parmesan cheese.

In my experiment I found that you shouldn't spread the pizza crust out on the pan too thin, as it is more fragile than a traditional dough crust and needs to be a bit thick to hold up the ingredients. So try to keep the crust about ¾” to 1 inch thick evenly all around to the edges or it will burn.

A bright, savory Spring chicken dish to celebrate the season

Prosciutto-Sage-Provolone Chicken

I love Spring. There’s nothing better than a dose of gorgeous sunshine, cherry blossoms in bloom, and the tempting promises of Summer on the way. It’s the perfect time of year to throw open the windows, do some Spring cleaning and celebrate new beginnings. I also love the bountiful selection of fresh seasonal herbs and vegetables that come along with it.

Asparagus is in its prime now, so I wanted to create a light and savory chicken dish to complement it for an easy, healthy weeknight dinner – a twist on classic Chicken Saltimbocca with the addition of some cheesy goodness and bright lemony flavor.

I picked up some fresh lemons, thin chicken breast cutlets at the market along with some Italian Prosciutto, fresh sage and Provolone cheese to stuff them with. To start, I laid out the chicken breasts in a large baking pan and layered the ingredients on top – first a slice of Prosciutto topped with a few sage leaves and thinly sliced cheese. I then folded them over and secured them with toothpicks and seared them in a pan in olive oil to get a nice golden brown crust. Once the chicken breasts were browned, I set them back in the pan, poured the juices on top and finished in the oven for about 15 minutes.

The best part of this dish is the buttery lemon wine sauce for serving. I sliced up some garlic and sautéed it in olive oil for a minute or two, then added some chicken broth, white wine and let it come to a boil, then reduced the heat and simmered it down to reduce the sauce, stirred in some lemon juice, a nob of butter and set the sauce aside for drizzling on the chicken later.

While the chicken was roasting in the oven, I blanched the asparagus for a minute or two and then tossed it with sliced garlic, olive oil and sea salt, roasting it for about 10 minutes or so until tender. So easy and soooo good!

Once the chicken and asparagus were done roasting, I served them on a plate and finished them off with the buttery lemon wine sauce. If you want to add a starch to the meal, simply cook up some orzo, pasta or  some crusty bread to go with it. You can also use Fontina cheese for a slightly different flavor, or to make it a vegetarian dish, omit the prosciutto and substitute some sautéed mushrooms or spinach and prepare the same way. Keep it light with a side salad and a lemony vinaigrette, and serve with a glass of Pinot Grigio or Pinot Gris.

Prosciutto Sage Provolone Stuffed Chicken with Roasted Garlic Asparagus

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Yield: Serves 4 to 6

Ingredients

  • 4-6 chicken breast cutlets
  • 4-6 thin slices of Italian Prosciutto
  • 12 fresh sage leaves
  • 4-6 slices of Provolone or Fontina cheese
  • 2-3 tablespoons of olive oil
  • Sea salt and freshly ground black pepper, to taste
  • 2 cloves of garlic, sliced plus 1 clove minced (for sauce)
  • 1 bunch of asparagus
  • ½ cup chicken broth
  • ½ cup dry white wine (Pinot Grigio or Pinot Gris)
  • juice from half a lemon, plus 1 tablespoon zest for garnish
  • 1 tablespoon butter
  • lemon wedges and additional torn sage leaves for garnish

Instructions

  1. Preheat oven to 350 degrees.
  2. Spread out the chicken cutlets flat in a large baking dish, and season with sea salt and pepper, to taste.
  3. Layer on top of each chicken breast a slice of prosciutto, two sage leaves, and a slice of provolone or fontina cheese, then fold over the chicken in half and secure with a toothpick to secure.
  4. Heat 1 tablespoons of olive oil in a large sauté pan over medium-high and sauté chicken breasts approximately 1-2 minutes per side until golden brown.
  5. Remove the chicken and juices from pan and place back into the baking dish and roast in the oven for another 15 minutes until cooked through. You might want to baste the chicken in its juices once or twice to make sure the chicken doesn’t dry out in the oven.
  6. Meanwhile, slice 2 cloves of fresh garlic, mince 1 clove and set aside. Trim the ends off the asparagus and blanch in boiling salted water in a large pot for about 1 minute. Drain, place asparagus in a baking dish and drizzle with a tablespoon of olive oil, a sprinkle of sea salt and pepper and sliced garlic. Place in oven and roast for about 10-15 minutes until fork tender and slightly browned (be careful not to overcook or the asparagus will get dark and mushy – aim for tender yet crisp and green).
  7. In the same sauté pan for the chicken, heat another tablespoon of olive oil. Sauté the additional clove of minced garlic for about 1 minute until lightly golden and soft. Add the chicken broth, white wine, lemon juice and bring to a boil, then lower the heat to a simmer. . Let sauce reduce to about half, then add 1 tablespoon of butter, swirling in to finish the sauce.
  8. When chicken and asparagus are done roasting, plate them and top off with the lemon butter wine sauce.
  9. Garnish with lemon wedges, torn sage leaves, lemon zest, and salt and pepper to taste. Serve with a side of cooked orzo or pasta, crusty bread or a green salad with a lemon vinaigrette and a dry white wine, such as Pinot Grigio.

On a recent trip up to Rochester, I had the pleasure of discovering a lovely little Italian place called the Mona Lisa Café. My mother and I stopped in there on a whim one afternoon for a cappuccino, but after entering the café and seeing all the delicious pastries and gelato and enticing smells of amazing food, we decided to stay for lunch instead.

We sat at a table by a large window and enjoyed a glass of wine while perusing the menu. At first we thought we would just split an appetizer, but there were just too many tasty choices on the menu to settle for just one item. We opted for a delicious Italian Panini and their amazing Greens and Beans appetizer made with escarole and cannelloni beans sautéed with heaps of garlic, savory Italian sausage, white wine, olive oil and bread crumbs topped with Parmesan cheese. WOW. Best thing I’ve ever tasted! I loved this dish so much I was inspired to recreate it at home, and my own version of Garlicky Greens and Beans with Sausage I now present to you. Delicioso!

Garlicky Greens and Beans with Sausage

Prep Time: 20 minutes

Cook Time: 40 minutes

Total Time: 1 hour

Serving Size: 4-6

Ingredients

  • 2 cups Fingerling potatoes, peeled and cut into quarters or chunks
  • 1 1/4 pound sweet Italian sausage (may use chicken or turkey sausage if you prefer)
  • 4 tablespoons extra-virgin olive oil, divided
  • 6 garlic cloves, sliced or chopped fine
  • 1 teaspoon dried red pepper flakes
  • 1 large bunch of greens (I used collards, but you can use spinach, kale, escarole, or mustard/turnip greens)
  • 1 can white cannellini beans, drained and rinsed
  • 2 1/2 cups chicken broth
  • 1/2 cup water
  • 1 tablespoon dried minced onion
  • 2 tablespoons white wine vinegar
  • Sea salt and freshly ground pepper, to taste
  • 1/2 cup shredded Parmigiano-Reggiano cheese, plus extra for garnish
  • Crusty bread or garlic bread, for dipping

Instructions

  1. Rinse and drain potatoes, cut into quarters or chunks, depending on the size.
  2. Bring a large pot of water to a boil and cook potatoes for about 10-12 minutes until tender. Drain and set aside.
  3. At the same time, add 1/2 inch of water to a large saute pan over medium heat. Add sausages to and cover with a lid, simmering for 10 minutes (without turning). Remove the lid, turn sausages over, and cook for another 5 minutes until almost cooked through.
  4. Meanwhile, measure out your liquids and dry seasonings and set aside.
  5. Chop the garlic.
  6. Wash the greens well and drain. Remove and discard the veins and stems, cutting leafy green parts off on either side into 1-inch strips.
  7. Remove sausages from pan and cut into coin-sized chunks. Drain fat from pan and wipe down.
  8. Add 1 tablespoon of oil into the same pan and return to medium heat. Add garlic and red pepper flakes, and saute while stirring often, for about 1 minute being careful not to burn garlic.
  9. Add additional 3 tablespoons of oil and start sauteing greens by the handful until they are just starting to wilt.
  10. Add cannellini beans, sausage, potatoes, broth, water and minced onion; bring ingredients to a boil. Reduce heat, cover and let simmer on low for 10-15 minutes to let the flavors meld.
  11. Remove lid, add 2 tablespoons of white wine vinegar, and let simmer for another 5 minutes or so until the liquid reduces a little (you can simmer it down longer if you like a thicker stew or add more broth/water if you like a thinner stew).
  12. Season with salt and pepper to taste.
  13. Serve the Greens and Beans in large bowls topped with shredded Parmigiano-Reggiano cheese and crusty bread for dipping in the broth.
  14. Delicioso!

Notes

Substitute sweet Italian sausage with chicken or turkey sausage or omit all together and adjust water/broth down to 2 cups if you prefer a vegetarian dish.

Mona Lisa Cafe uses breadcrumbs and white wine in their dish which I omitted in my version because of the starch from the potatoes and adding a splash of white wine vinegar which gives it a nice tangy flavor to the broth. Feel free to experiment by topping it with toasted breadcrumbs and using some wine in place of the water in my recipe, but you'll need to adjust the amount of liquids down if you omit the potatoes from the dish so it's not too watery/brothy. The consistency should be of a nice light stew with a balance between the meat and vegetables and the broth.

Serve with a dry white Italian wine such as Pinot Grigio and crusty bread for dipping up the broth.
