Hi Everyone! So the New Year #2021 is rapidly approaching (thank God!!) and I decided to celebrate a little with theseĀ Spicy Crab Cakes w/ Creole Mayo and some bubbly! They are absolutely delicious and the perfect appetizer duo for the holidays or any special occasion!
I made them with fresh lump crabmeat, crispy applewood smoked bacon, corn, red Chile peppers, parsley, scallions, egg, panko breadcrumbs, mayonnaise, lemon juice and a dash of Tony Chacere’s Creole Seasoning and hot sauce, and served with a side of spicy Creole Mayo for dipping. Talk about a flavor bomb in your mouth…#YUM!
The recipe makes 8 small crab cakes but feel free to make four larger patties if you want to make burgers out of them. Or make 16 really small crab cakes if you want to make them bite-sized with fancy toothpicks on platter!
I brushed them with some oil and baked in the oven for about 30 minutes, but you can also pan-fry them if you prefer. For a larger crowd, I recommend doubling or tripling the recipe because these will be a huge hit and gone before you know it!
They would also be great served on top of some Confetti rice or Cajun/Creole pasta..or try them in some lettuce leaves or on top of a salad for a lighter fare if you’re watching your carbs. Ingredients
CRAB CAKES
1 lb. lump crabmeat
1/3 c. Panko bread crumbs
1/3 c. mayonnaise
1 large egg, lightly beaten
2 green onions, finely sliced
1 tbsp. lemon juice
1 teaspoon Tony Chacereās Creole seasoning
Dash of hot sauce
Freshly ground black pepper, to taste
1/4 c. corn
2 slices cooked bacon, chopped
1/2 red chile pepper, chopped (or sub bell pepper for less heat)
2 tbsp fresh parsley, minced, plus extra for garnish
1 tbsp. vegetable or olive oil
......
CREOLE MAYO
1/2 cup mayonnaise
1 tbsp lemon juice
1/2 tbsp hot sauce
1/2 teaspoon Tony Chacereās Creole seasoning
Instructions
MAKE CRAB CAKES
Preheat oven to 350 degrees. Spray a large baking sheet with cooking spray.
In a large bowl, stir together crabmeat, bread crumbs, mayonnaise, egg, green onions, and lemon juice. Add Creole Seasoning, hot sauce and black pepper. Stir in corn, Chiles, bacon and parsley. Mix well with hands or a fork until mixture is combined.
Form into 8 patties and place on nonstick greased baking sheet. Brush oil on top of the crab cakes.
Bake until golden brown about 25-30 minutes, turning halfway through cooking. Alternatively you can pan fry them for 3-5 minutes per side in a skillet over medium high heat.
Garnish with more fresh parsley or green onions; serve with side of Creole Mayo.
MAKE CREOLE MAYO
InĀ a small bowl, combine mayonnaise, lemon juice, hot sauce and Creole seasoning. Adjust amounts to your liking (less or more spicy).
Serve sauce with Crab cakes on top or on the side.
This is a super easy and delicious Low Carb Cheesy Beef Enchilada Bake made with mega layers of spicy taco seasoned beef, zucchini, garlic, onions, low-carb tortillas, enchilada sauce and gobs of gooey cheddar cheese, topped with sliced jalapeƱos and green onions. And it’s #low-carb, #sugar-free and #keto so enjoy without the guilt!
First cook your zucchini and garlic in some olive oil and set aside.
Then it’s time to build the casserole. Spread 1/4 of the enchilada sauceĀ (I LOVE Harry + David brand..it comes packaged in a glass bottle so no tinny taste! And it’s made with vine-ripened fresh tomatoes, onion, jalapeƱos, chili pepper, garlic, cumin, and New Mexico chiles) on the bottom of a large rectangular baking dish, and top with 1/3 of the tortillas.
Next add 1/2 of the cooked zucchini and garlic mixture over the top.
Top with the cooked taco beef, onions, and jalapeƱos.
Add 3/4 cup of the cheese on top of the meat, and pour 1/2 the enchilada sauce over the cheese.
Repeat the process with the 1/3 tortillas, the rest of the zucchini and garlic mixture, taco beef mixture,
3/4 cup of cheese and 1/2 cup of sauce.
Add the final 1/3 tortillas on top of the casserole and pour the rest of the sauce over the top and sprinkle with the rest of the cheese; cover with foil.
Pop this bad boy in the oven and bake for 30 minutes, then uncover and bake for another 5-10 minutes until cheese is melty and gooey.Ā Garnish with sliced jalapeƱos and sliced green onions. Let cool for about 5-10 minutes, then slice and serve immediately.
You can also add corn, black beans, pinto beans, tomatoes, cilantro, sour cream or whatever other veggies and toppings you desire.

Ingredients
8 medium low-carb tortillas, cut in half
cooking spray
2 tablespoons olive oil, divided
3 small zucchini, cut into half moons
2 garlic cloves, minced
1 pound ground beef
1/2 large onion, chopped
1 tablespoon fresh jalapeƱos, minced
1 packet of taco seasoning
1/2 cup water
salt and pepper to taste
2 cups red enchilada sauce
2 1/2 cups shredded sharp cheddar cheese
1/2 jalapeno, sliced, for garnish
1 green onion, sliced thin, for garnish
Instructions
Preheat oven to 350 degrees F. Spray a large casserole dish with cooking spray.
Heat one tablespoon of oil over medium heat in a large saute pan. Add the zucchini and garlic and cook for about 5-6 minutes until soft. Remove from the pan and set aside.
Add additional tablespoon of olive oil in the pan and add the ground beef and onions. Cook for 6-8 minutes until cooked through and no longer pink. Drain the grease and return cooked beef and onions to the pan.
Add the taco seasoning and water, and stir together, cooking on low heat for about 5-8 minutes. Remove from the heat.
Spread 1/4 cup enchilada sauce over the bottom of the greased baking dish.
Layer 1/3 tortillas over the sauce.
Add 1/2 of the zucchini and garlic mixture over the top. Add 1/2 the meat mixture, then top with 3/4 cup of shredded cheese.
Pour 1/2 cup enchilada sauce over the cheese.
Repeat the process with 1/3 of the tortillas, the rest of the zucchini, the rest of the meat mixture and 3/4 cup of cheese. Top with 1/2 cup of the enchilada sauce.
Add the final 1/3 tortillas on top of the casserole; pour the remaining sauce over the top and and sprinkle on the rest of the cheese.
Cover the casserole with foil and bake for 30 minutes. Uncover and bake for an additional 5-10 minutes or until cheese is melted and browned.
Sprinkle jalapeƱos and green onions over the top. Let casserole cool for 5-10 minutes.
Slice and serve hot.
Notes
You can also add corn, black beans, pinto beans, tomatoes, cilantro or whatever other veggies and toppings you desire!
Hey guys! Happy #Thanksgiving!Ā I hope everyone is enjoying their holiday despite the crazy #quarantine travel restrictions and COVID-19 mania – and hoping that you are able to spend time with family or friends…no matter how small the gathering might be.
This year I decided to make a super delicious mini-Thanksgiving dinner for myself since I wasn’t able to spend it with my family and friends up in New York. I actually didn’t mind having a little time alone to cook and drink wine and relax, watching some holiday movies and snuggling under a blanket with kitty and some Christmas lights!
I made a juicy Roasted Cornish hen, seasoned with a homemade spice rub, some fresh squeezed lemon juice and extra virgin olive oil, roasted on top of a bed of onions, garlic and celery. You could also use some additional herbs and veggies to stuff the hen / add to the roasting pan such as sliced lemons, rosemary, thyme, carrots or turnips for extra flavor.
I also made this sweet and spicy roasted Delicata squash, made with a delicious glaze of olive oil, brown sugar, Sriracha, apple cider vinegar, garlic powder and salt with a dab of butter to make it caramelized and luscious.
And of course I made my favorite Thanksgiving side dish of all time – Roasted Brussels sprouts with bacon and shallots and a drizzle of spicy balsamic glaze for serving..crispy, savory and sweet with a touch of heat..delicious!
I served them with some lusciousĀ mashed potatoesĀ with butter and heavy cream topped withĀ turkey gravy…two staples I couldn’t resist (even though I planned on making mashed cauliflower originally and decided to cave and make the real thing…lol)
and of course I paired my dinner with a crisp, light and fruity white wine – #MatuaĀ Sauvignon Blanc, which is one of my favorite varieties from Marlborough NZ.
I am #thankful for so many things and especially this year. Not being able to be with my friends and family up in New York is not the same, but I am blessed and grateful for them and happy we are all safe and sound, with food on the table…and #love all around, Ā no matter how far apart we are.
This is a super easy and delicious mini-Thanksgiving dinner for 1 or 2 people. A spiced juicy roasted Cornish hen along with some sweet and spicy roasted Delicata squash, Balsamic Brussels sprouts with bacon and shallots. All served together with some creamy buttery mashed potatoes and turkey gravy and of course a light and fruity white wine such as Sauvignon Blanc to go with!
Feel free to add additional herbs and veggies to stuff the Cornish hen or add to the roasting pan such as lemons, rosemary, thyme, carrots or turnips while baking for extra flavor.
Ingredients
Roasted Cornish Hen:
1 whole Cornish hen, about 1 1/2 lbs
1 onion, peeled and cut in quarters
4 celery stalks, cut in thirds
5 cloves garlic
2 tablespoons extra virgin olive oil
4 tablespoons fresh lemon juice
Dry Rub:
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 tablespoon Italian seasoning
1/2 teaspoon dried tarragon
1/2 teaspoon garlic powder
1/2 teaspoon Tony Chacere's Creole seasoning (optional, can sub paprika)
1/2 teaspoon Penzey's Bicentennial seasoning (optional, can sub poultry rub)
Sweet and Spicy Roasted Delicata Squash:
1 large Delicata squash
2 tablespoons extra virgin olive oil
1/4 cup Stevia Brown Sugar
1 tablespoon Sriracha
1/2 tablespoon apple cider vinegar
1 teaspoon garlic powder
1/2 teaspoon Sea salt
Freshly cracked black pepper, to taste
2 tablespoons unsalted butter
Balsamic Bacon Brussels Sprouts:
1 1/2 pounds brussels sprouts, trimmed and halved
1-2 tablespoons extra virgin olive oil
Sea salt and freshly cracked black pepper, to taste
1/2 teaspoon red pepper flakes
4 slices of bacon, chopped
1/2 large shallot, minced (or 2 cloves garlic, minced)
1 -2 tablespoons balsamic glaze
Instructions
Roasted Cornish Hens:
Preheat oven to 425 degrees F.
Combine all the dry ingredients together in a small mixing bowl. Pat the hen dry with paper towels and season generously with the rub all over, inside and out.
Place the onions, celery, and garlic on the bottom of a medium roasting pan. Place the hen over the vegetables and drizzle olive oil and lemon juice over the top, brushing it on to the hen evenly.
Bake in the oven for 1 hour, or until a thermometer registers 165 degrees F in the thickest part of the thigh.
Remove the hen from the oven and let rest, covered loosely with foil for about 20 minutes. Carve and serve with side dishes.
Sweet and Spicy Roasted Delicata Squash:
Wash the squash and cut off both ends. Cut in half length-wise and scoop out the seeds; discard.
Slice the squash into 1/2-inch pieces and place on to a baking sheet in a single layer.
Whisk together in a small bowl all the glaze ingredients until smooth and blended. Brush all over both sides of the squash. Dab the squash with bits of butter all over the pan.
Bake for about 30 minutes at 425 until squash is cooked through and caramelized, turning halfway through cooking time to ensure even browning.
Raise heat to a broil, and cook for an additional 2-3 minutes. Remove from oven and serve.
Balsamic Bacon Brussels Sprouts:
Preheat oven to 425 degrees.
Place the brussels sprouts on to a sheet pan and drizzle with olive oil, salt and pepper and red pepper flakes, toss together to coat evenly.
Add the bacon and shallots to the pan and stir together with the sprouts, making a single layer.
Roast the sprouts for about 12 minutes then remove from oven and toss them together to get the other side crispy. Place them back in the oven and roast for another 12-15 minutes until the sprouts and bacon are crispy and browned.
Remove from the oven and toss everything together. Place in a serving bowl and drizzle balsamic glaze over the top and garnish with some additional flaky sea salt and pepper.
Notes
You can also double the recipe for the Cornish Hens if you are having a couple more people over. The sides are plenty for two people, maybe 3 or 4, depending on how big your servings are!
#Spring is here and #Summer is on the way – so here’s to eating lighter and healthier. My goal is to start eating and cooking more low-carb and healthy recipes over the next few weeks and months. (Enough of this #quarantinecooking and eating the whole closet full of carbs stuff already!)
This Cheeseburger Salad is a mountain of deliciousness, and its #lowcarb #glutenfree, #keto, #whole30 and #atkins-friendly to boot! Made with juicy grilled Steakhouse Elite Grass-Fed Burgers (one of my clients and my favorite burgers in the world!) – they’re thick, juicy, 90% lean, grass-fed and absolutely delicious!
Simply sprinkle the burgers with a little bit of olive oil, salt and pepper Montreal Steak seasoning and turn a grill up to high heat.
Grill the burgers for about 8-10 minutes for medium-rare (less or more to your liking and temperature.) These burgers are really thick and juicy so let sit for at least 5-10 minutes to let the juices settle while making the salad so you don’t lose all that goodness and tasty flavor when slicing them.
While you are grilling the burgers, cook the bacon in the oven on a wire rack over a foil-lined sheet pan for 20 minutes at 400 degrees F until crispy and brown. (it’s less messy this way and the bacon gets really crispy and evenly cooked.) Drain on paper towels and crumble or chop coarsely.
Make the base salad with some fresh mixed greens with purple cabbage, romaine and green leaf lettuce, then add the crumbled bacon, shredded Cheddar cheese, cherry tomatoes, sliced red onions. Feel free to use any lettuce you like – spinach, arugula, romaine, iceberg, mixed greens and play with any cheese you like too – Muenster, Swiss, Monterey Jack are all great picks. Slice the grilled burgers and top the salad with a creamy Sriracha Ranch dressing.
You can also substitute mayo for the ranch dressing along with the Sriracha or ketchup and add a few diced dill pickles (like a special sauce dressing). Or try a chunky creamy blue cheese dressing or Italian vinaigrette dressing topped with blue cheese crumbles which are equally delicious and the blue cheese goes great with the bacon!
Try melting the cheese on top of the burgers while grilling instead, if you like your cheese melted on the burgers instead of shredded on the salad. Anyway you make it – this salad is the BOMB. Itās like a bacon #cheeseburger deluxe in a bowl. And so delicious, you wonāt even miss the bun!
This #Keto Cheeseburger Salad is a mountain of deliciousness, and its low-carb and keto-friendly to boot! Made with juicy grilled Steakhouse Elite Grass-Fed Burgers served over mixed greens, topped with bacon, shredded Cheddar cheese, tomatoes, sliced red onions, and a creamy Sriracha Ranch dressing. Itās like a bacon cheeseburger deluxe in a bowl - you wonāt even miss the bun!
Ingredients
8 slices center-cut bacon
2 tablespoons olive oil or canola oil
4 Steakhouse Elite Grass-Fed Beef Burgers
Kosher salt, to taste
Freshly ground black pepper, to taste
8 cups lettuce/mixed greens (romaine, iceburg, green leaf)
Preheat a grill or large grill pan to medium-high. Meanwhile, season the ground beef burger patties with salt and pepper, making an indentation in the center of each.
Brush the burgers with oil and grill for about 5 minutes, turn over and grill for another 5 minutes until burger is cooked through medium-rare (adjust time for desired temperature).
Remove from grill and let rest for 5-10 minutes, cut burgers into Ā½ inch slices.
Make the salad dressing in a small mixing bowl by adding Sriracha to the ranch dressing, mix together well.
In a large salad or mixing bowl, add lettuce and mixed greens, bacon, shredded cheese, halved tomatoes, and red onion slices, tossing salad together. Divide salad mixture between four medium bowls.
Place the burgers on top of the salad and drizzle with Sriracha ranch dressing.
Notes
You can also substitute mayo for the ranch dressing or use blue cheese dressing without the sriracha and it's equally delicious. Or an Italian vinaigrette dressing with blue cheese crumbles which goes great with the bacon! Feel free to use any lettuce you like - spinach, arugula, romaine, iceberg, mixed greens and play with any cheese you like too - Muenster and Monterey Jack or Gruyere are all great melty cheeses that go great with burgers. Feel free to add a few sliced dill pickles to the salad or the dressing too for extra zippy tangy flavor.

These grilled Mediterranean Beef Kebabs are the perfect #low-carb/#Keto/#Whole30-friendly dish made with lightly spiced Steakhouse Elite Grass-Fed Ground Beefgrilled on skewers. Now that Spring is on the way, I’m focusing on eating healthier and less carbs with whole, fresh, #organic ingredients.
Once the beef skewers are grilled, they are served with a simple, lovely salad made with fresh sun-roasted tomatoes, cucumber, red onions, parsley, mint, and crumbled feta, and a side of homemade tzatziki sauce made with garlic, cucumbers, mint and greek yogurt.
Healthy, light and delicious! You can also serve these on grilled pita bread if you wish. Pairs well with a crisp white wine or light red.
These grilled Mediterranean Beef Kebabs are the perfect low-carb/Keto/Whole30-friendly dish made with lightly spiced Steakhouse Elite Grass-Fed Ground Beef grilled on skewers. 1/2 cup finely ground almond flour + 1 tablespoon water
Kosher Salt and Freshly Ground Black Pepper
4 teaspoons Mediterranean or Greek seasoning
SIDE SALAD:
1 large tomato, sliced
1 red onion, sliced
1 cucumber, sliced
Parsley, chopped
Mint, chopped
Feta Cheese, crumbled
TZATZIKI:
3 Persian, Kirby or Ā½ English cucumbers, cut into Ā¼-inch pieces
Kosher salt
1 cup plain Greek yogurt
3 tablespoons olive oil
2 tablespoons fresh lemon juice
1 garlic clove, lightly crushed
Ā¼ cup chopped mint
Instructions
BEEF KEBABS:
Soak 10 wooden skewers in water for about 30 minutes to 1 hour, removing when ready to start making beef kebabs. Lightly oil a grill or grill pan and preheat to medium-high.
Finely mince the onion, garlic, and parsley and place in a large mixing bowl. Add the ground beef, almond flour/water mixture, salt and pepper and Mediterranean spices. Mix together with your hands until well combined. Alternatively, you can mince all the ingredients together in a food processor.
Take a handful portion of the meat mixture and mold it on a wooden skewer into a long log-shaped kebab about 1 inch wide. Repeat with the rest of the meat and skewers, laying them on a large baking sheet lined with parchment paper or foil.
Place the beef kebabs on the grill and cook for 4 minutes on one side, turn over and cook for another 3-4 minutes.
Serve the kebabs with a side salad made of sliced tomatoes, onions, cucumbers, parsley, mint and feta cheese with a side of tzatziki for dipping.
TZATZIKI:
Toss cucumbers with a few generous pinches of salt in a small bowl; firmly squeeze several times with your hands to release excess water. Drain.
Mix cucumbers, yogurt, oil, lemon juice, and garlic in a medium bowl; season with salt. Let sit at room temperature 15ā20 minutes; discard garlic. Stir in mint just before serving.
Do Ahead: Tzatziki can be made 2-3 days ahead (without mint). Cover and chill in the refrigerator, and add fresh mint just before serving.
Notes
You can also substitute the ground beef with ground lamb or chicken, and serve with a side of grilled pita bread if desired.

Ingredients
1 package pancetta (8 thin slices)
3 tablespoons Colavita Fruttato EVOO
2 sweet Vidalia onions, halved lengthwise and sliced thin
1 tablespoon brown sugar
Kosher salt
Fresh ground black pepper
1-1 1/2 tablespoons Fig balsamic vinegar (Tavern Direct brand)
1 cup fresh ricotta
1 egg yolk
1 tablespoons dried Fines Herbes (or 2 tablespoons fresh herbs)
1/2 cup shredded Gruyere cheese
1 frozen pie shell, defrosted, or homemade tart dough
Instructions
Preheat oven to 350 degrees.
Heat a saute pan over medium heat and cook pancetta until browned but not fully cooked, about 5 minutes. Drain fat from pan and place pancetta on paper towels to drain to the side. Once cooled, chop pancetta into small pieces.
Peel onions, remove top and bottom stems and cut in half lengthwise.
Slice onions thin (about 1/8" thick or desired thickness).
In the same saute pan, add 3 tablespoons olive oil and heat over medium high heat.
Add onions and cook over medium high for about 10 minutes.
Sprinkle brown sugar, salt and pepper over onions and stir well, cook another 10-20 minutes, reducing heat to medium low if onions start to brown too quickly.
Continue cooking and stirring onions over medium low for another 15 minutes, add a few teaspoons of water if desired.
Add the fig balsamic vinegar to the onions, turn heat down to low and let cook until they are caramelized, soft and sweet, up to an hour total.
Combine the ricotta, egg yolk and Fines Herbes together in small mixing bowl.
Spread the ricotta mixture over the pie shell in a 9" tart pan with removeable bottom.
Sprinkle Gruyere cheese over ricotta.
Top with caramelized onions and pancetta.
Bake the tart in the oven for approximately 30-45 minutes until pastry and filling are golden brown, and pancetta is crispy.
Let tart cool on a cooling rack for 10-15 minutes before serving.
Serve tart cut into wedges.

Hot Artichoke dip is one of my all time favorite holiday dip recipes, and this one is extra special, using Colavita's California EVOO, lemon zest and minced garlic with lots of gooey cheese. Instead of using mayonnaise, I substitute a light sour cream to cut some of the fat and calories. Serve with my homemade baked pita chips or crackers.
Ingredients
2 tablespoons Colavita California extra virgin olive oil
1 package frozen artichokes, defrosted
1 tablespoon minced garlic
zest and juice from 1/2 lemon
Garlic salt with parsley (to taste)
Fresh cracked black pepper (to taste)
1/2 cup shredded parmesan cheese
1 cup shredded light monterey jack cheese, plus 1/2 cup for topping
1/2 cup light sour cream
dash of cayenne (optional)
dash of paprika (for garnish)
1 green onion, sliced thin (for garnish)
Instructions
Heat oil in a saute pan over medium high heat. Add artichokes and minced garlic, saute about 5-7 minutes until heated through.
Add lemon juice, zest, garlic salt and pepper, mix well and cook another few minutes, set aside.
Meanwhile, add shredded cheeses and sour cream together in a mixing bowl.
Add sauteed artichokes, garlic and lemon to cheese and sour cream.
Sprinkle with a dash of cayenne (if desired), mix well and transfer to a casserole dish.
Sprinkle additional monterey jack cheese over the top and bake in the oven for about 20-30 minutes until bubbly and cheese is melted on top.
Let cool a few minutes, sprinkle with paprika and green onions. Serve with homemade baked pita chips (recipe follows), crackers or crudites.
Making homemade pita chips is super easy and way better than buying the storebought kind for your holiday party. Mine are made with whole wheat pita bread, drizzled with EVOO, and sprinkled with garlic salt and cumin for some extra flavor. So delicious and crispy straight out of the oven and so addicting you'll never buy them again! Serve with Hot Parmesan Garlic Artichoke Dip or any of your other favorite party dips.
Ingredients
6 whole wheat pita rounds
2 tablespoons Colavita California EVOO
1 tablespoon garlic salt
1/2 tablespoon cumin
Instructions
Preheat oven to 400 degrees.
Cut pita rounds into triangles (6 wedges per pita).
Lay out pita wedges on a baking sheet and brush each wedge with olive oil.
Sprinkle garlic salt and cumin on top.
Flip over pita wedges, repeat coating with oil, salt and cumin.
Place baking sheet(s) in oven and cook pita wedges for about 15 minutes (checking to make sure they don't burn!)
Let cool, and serve with Hot Parmesan Garlic Artichoke Dip.
Everyone loves cocktail meatballs at holiday parties! These lovelies have a hint of lemon and sage and are light and fluffy, made with ground pork or chicken. They are first browned on the stovetop and then finished in the oven until golden brown. They're delicious alone, or dipped in a hot pepper jelly (Williams-Sonoma brand is great), balsamic pear jam (there's one by Academia Barilla that is to die for) or simply dipped in balsamic vinegar glace.
Red Pepper jelly, for dipping (Williams Sonoma brand)
Balsamic Pear jam, for dipping (Academia Barilla brand)
Colavita Balsamic Glace, for dipping
Instructions
Preheat oven to 350 degrees F.
Remove crusts from bread and tear into small pieces in a large mixing bowl, add milk and let soak for 10-15 minutes.
Mix in ground pork or chicken, sage, garlic, onion, lemon juice and zest, cheese, pepper flakes, egg, salt and pepper with soaked bread crumbs with your hands in a claw-like motion to keep meatballs light and fluffy.
Roll meat mixture into small to medium size meatballs (small makes approximately 36, medium makes approximately 18).
Heat olive oils in a large saute pan over medium heat (if not using cooking oil blend, mix EVOO with a tablespoon of butter to avoid temperature from getting too high and splattering).
Cook meatballs in batches in the oil for about 5 minutes each batch until meatballs are browned on all sides, drain on paper towels.
Once all meatballs are browned, place them on a large rimmed baking sheet coated with cooking spray to avoid sticking.
Bake in the oven for approximately another 15 minutes until cooked through and to keep warm.
Top with additional garlic salt (if desired), fresh chopped sage, and serve with red pepper jelly and balsamic pear jam, and Colavita Balsamic Glace for dipping.
These zucchini sticks are a great appetizer for any holiday party. They have a light crunchy coating of Japanese Panko seasoned bread crumbs and are finished with a splash of lemon and sprinkling of sea salt. They go perfect with the cool and creamy yogurt dill sauce or even a ranch dressing for dipping.

CRUNCHY ZUCCHINI STICKS
Colavita Roasted Garlic Cooking Oil Blend
4 medium zucchini, cut into half, into long strips
1 cup all-purpose flour
1 cups Panko Japanese-style seasoned breadcrumbs
Sea salt and fresh ground pepper
2 large eggs
Sea salt, for sprinkling, to taste
Lemon wedges, for garnish
Fresh minced dill, for garnish
YOGURT DILL SAUCE
1 cup of Greek yogurt
2-3 tablespoon minced dill
Sea salt and pepper, to taste
Instructions
CRUNCHY ZUCCHINI STICKS
Heat olive oil over medium high heat in a large deep saute pan, about 2 inches high.
Trim ends off zucchini, cut in half and then in half again lengthwise.
Cut zucchini into large strips about 1/2 an inch thick.
Pour the flour and Panko breadcrumbs into one large bowl and season with salt and pepper.
Beat eggs in a separate bowl.
Dip zucchini sticks in egg, shaking off excess, then dip in bowl to coat with flour and breadcrumbs.
Place coated zucchini on a baking sheet.
Fry in batches until golden brown, draining excess oil on another baking sheet lined with paper towels.
Squeeze some fresh lemon juice on top of zucchini and sprinkle with fresh dill and additional sea salt to taste.
YOGURT DILL SAUCE
In a medium bowl, mix together greek yogurt, dill, salt and pepper to taste.

This is a typical Asian dish with warm, smooth and bright flavors. Soba noodles are typical Japanese noodles made of buckwheat and wheat flours (you can find soba and most of the ingredients in this recipe in any Asian store, Kaluystanās in NYC, Whole Foods or online).
In a small bowl, mix the tamarind concentrate and coconut milk.Ā Add the shrimp, lime leaves or zest, chili, mint, garlic, fennel seed, rice vinegar and crispy shallots together and let marinate for at least 1 hour up to 6 hours in the refrigerator.
Remove the shrimp from the marinade and reserve the marinade.
Pour the marinade into a 2-cup sauce pan and bring to a boil, and reduce until thickened. Return the reduced marinade to the shrimp and divide the noodles among plates (or a large serving platter for the table), and serve the shrimp with sauce over the warm noodles.
Garnish with desired toppings: cilantro, red pepper flakes, cashews, cubed mango.
Serves 6.

In the spirit of Mardi Gras, I was in the mood to make something spicy with seafood and rice and thought I would do something different than make the typicalĀ Jambalaya or Shrimp Etoufee dish. In one of my Italian Cooking classes at The Institute of Culinary Education, we made a Spicy Shrimp Risotto which is a typical Italian-style rice dish. Delicious as it is, I wanted to make it with a twist, by adding some Creole seasoning, lemon, red pepper and mussels steamedĀ in white wine to the recipe. It’s super creamy and flavorful, and takes a little bit of time and patience to make. But one taste of the savory shrimp mixed with mussels, lemon and wine with a spicy kick of Creole makes it all worth the effort.
The mussels take about 10-15 minutes to make, so you’ll want to get started on these when you have about 10-15 minutes left to cook the rice in the broth (or you can make them ahead of time and keep them on the burner on low to keep them warm so you can add the mussels to the risotto at the end). If you want to just eat the Shrimp Risotto with the Mussels in wine sauce on the side, you can do that too! Just add some crusty bread, a green salad and a glass of white wine and you’ve got yourself a big, fat, happy meal to celebrate Mardi Gras. Enjoy =)
Spicy Seafood Risotto w/ Shrimp and Steamed Mussels
Shell and devein the shrimp (reserve the shells). Cut each shrimp into thirds. In a medium saucepan, melt the butter over medium-high heat. Add the shrimp and cook until pink 1 to 2 minutes. Transfer to a small bowl and reserve.
In a medium saute pan, heat 1 tablespoon of oil over medium heat. Add half of the garlic and the shrimp shells and saute until the garlic is fragrant and the shells turn pink, about 2 minutes. Add the parsley sprigs and saute until fragrant, about 1 minute. Add 6 cups of water, lemon juice and zest and the saffron; bring to a boil, reduce to heat and simmer 15 minutes.
Strain the broth and return it to the pan. Add the pureed tomatoes and season with red pepper flakes, Creole seasoning and bring to a boil. Reduce heat to low and simmer about 15 minutes. Strain and reserve over low heat.
In a large casserole or skillet, heat the remaining oil over medium heat. Add the onion and remaining garlic and cook until it begins to get golden, about 3 minutes. Add the rice and cook until it’s slightly translucent.
Add the wine and cook until absorbed. Add a 4 ounce ladle of the shrimp stock and cook, stirring until the liquid is almost absorbed.
Continue adding broth and cooking until the rice is on the firm side of al dente, 25 to 30 minutes.
Add the shrimp and cook until heated through, 3 to 5 minutes.
To prepare the mussels for cooking, sort through them and throw out any that are open or donāt close when tapped. Be sure to rinse and swirl mussels in a basin of cold water to rinse out any dirt or debris trapped inside them, but donāt let them soak too long or youāll lose the natural sea flavor. With a brush, scrub the outsides well under running water, and pry off any barnacles with the back of a knife. Twist or cut off any beards or hair-like tufts and rinse again, keeping the mussels cold until ready to use.
Prepare and shell the steamed mussels (see recipe following) and add to the risotto. Sprinkle with minced parsley and serve immediately. Sooo delicious and great with a glass of crisp white wine and crusty bread to mop up the buttery wine sauce!

1/2 cup white wine
Steamed Mussels (see recipe following)
MUSSELS:
2 tbsp extra-virgin olive oil
1 tbsp butter
2 cloves of garlic, minced
Ā½ cup dry white wine
1 cup chicken stock
lemon juice from 1 lemon
Pinch of saffron threads
Kosher salt, to taste
Freshly ground black pepper, to taste
Pinch of red pepper flakes (optional)
2 pounds fresh mussels

In a large saucepan or pasta pot, heat the oil and butter over medium heat. Add the garlic and saute for about 2-3 minutes.
Add the wine, chicken stock and lemon juice, and season with saffron, salt and black pepper. Add the red pepper flakes to taste, depending on desired heat (if using). Add the mussels to the pot and cover with a lid; increase the heat to medium-high. Steam the mussels, until they open, about 10 minutes. Remove from heat and set aside.
Garnish with fresh chopped parsley and a squeeze of lemon. Remove mussels from the shell (or add them whole) to the shrimpĀ risotto. You can also serve them in a big bowl in the wine sauce separately as an accompaniment to the risotto.
Serve the with some crusty garlic bread and a green salad, along with a glass of crisp white wine (Pinot Grigio or Sauvignon Blanc is great!)
