Caramelized Onion, Ricotta & Pancetta Tart
Caramelized Onion, Ricotta & Pancetta Tart

Caramelized Onion, Ricotta & Pancetta Tart

Prep Time: 15 minutes

Cook Time: 1 hour, 30 minutes

Total Time: 1 hour, 45 minutes

Yield: 8

This is a lovely tart recipe that combines sweet and savory flavors. The caramelized onions give it a sweet flavor with a hint of fig balsamic vinegar, balanced out by creamy ricotta, nutty Gruyere cheese, fresh herbs and crispy pancetta.

Ingredients

  • 1 package pancetta (8 thin slices)
  • 3 tablespoons Colavita Fruttato EVOO
  • 2 sweet Vidalia onions, halved lengthwise and sliced thin
  • 1 tablespoon brown sugar
  • Kosher salt
  • Fresh ground black pepper
  • 1-1 1/2 tablespoons Fig balsamic vinegar (Tavern Direct brand)
  • 1 cup fresh ricotta
  • 1 egg yolk
  • 1 tablespoons dried Fines Herbes (or 2 tablespoons fresh herbs)
  • 1/2 cup shredded Gruyere cheese
  • 1 frozen pie shell, defrosted, or homemade tart dough

Instructions

  1. Preheat oven to 350 degrees.
  2. Heat a saute pan over medium heat and cook pancetta until browned but not fully cooked, about 5 minutes. Drain fat from pan and place pancetta on paper towels to drain to the side. Once cooled, chop pancetta into small pieces.
  3. Peel onions, remove top and bottom stems and cut in half lengthwise.
  4. Slice onions thin (about 1/8" thick or desired thickness).
  5. In the same saute pan, add 3 tablespoons olive oil and heat over medium high heat.
  6. Add onions and cook over medium high for about 10 minutes.
  7. Sprinkle brown sugar, salt and pepper over onions and stir well, cook another 10-20 minutes, reducing heat to medium low if onions start to brown too quickly.
  8. Continue cooking and stirring onions over medium low for another 15 minutes, add a few teaspoons of water if desired.
  9. Add the fig balsamic vinegar to the onions, turn heat down to low and let cook until they are caramelized, soft and sweet, up to an hour total.
  10. Combine the ricotta, egg yolk and Fines Herbes together in small mixing bowl.
  11. Spread the ricotta mixture over the pie shell in a 9" tart pan with removeable bottom.
  12. Sprinkle Gruyere cheese over ricotta.
  13. Top with caramelized onions and pancetta.
  14. Bake the tart in the oven for approximately 30-45 minutes until pastry and filling are golden brown, and pancetta is crispy.
  15. Let tart cool on a cooling rack for 10-15 minutes before serving.
  16. Serve tart cut into wedges.

Parmesan Garlic Artichoke Dip

Total Time: 45 minutes

Serving Size: 8

Hot Artichoke dip is one of my all time favorite holiday dip recipes, and this one is extra special, using Colavita's California EVOO, lemon zest and minced garlic with lots of gooey cheese. Instead of using mayonnaise, I substitute a light sour cream to cut some of the fat and calories. Serve with my homemade baked pita chips or crackers.

Ingredients

  • 2 tablespoons Colavita California extra virgin olive oil
  • 1 package frozen artichokes, defrosted
  • 1 tablespoon minced garlic
  • zest and juice from 1/2 lemon
  • Garlic salt with parsley (to taste)
  • Fresh cracked black pepper (to taste)
  • 1/2 cup shredded parmesan cheese

  • 1/2 cup light sour cream
  • dash of cayenne (optional)
  • dash of paprika (for garnish)
  • 1 green onion, sliced thin (for garnish)

Instructions

  1. Heat oil in a saute pan over medium high heat. Add artichokes and minced garlic, saute about 5-7 minutes until heated through.
  2. Add lemon juice, zest, garlic salt and pepper, mix well and cook another few minutes, set aside.
  3. Meanwhile, add shredded cheeses and sour cream together in a mixing bowl.
  4. Add sauteed artichokes, garlic and lemon to cheese and sour cream.
  5. Sprinkle with a dash of cayenne (if desired), mix well and transfer to a casserole dish.
  6. Sprinkle additional monterey jack cheese over the top and bake in the oven for about 20-30 minutes until bubbly and cheese is melted on top.
  7. Let cool a few minutes, sprinkle with paprika and green onions. Serve with homemade baked pita chips (recipe follows), crackers or crudites.

Sage, Lemon & Garlic Cocktail Meatballs
Sage, Lemon & Garlic Cocktail Meatballs

Sage, Lemon & Garlic Cocktail Meatballs

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Yield: 18 medium or 36 small meatballs

Serving Size: 2-4 per person

Everyone loves cocktail meatballs at holiday parties! These lovelies have a hint of lemon and sage and are light and fluffy, made with ground pork or chicken. They are first browned on the stovetop and then finished in the oven until golden brown. They're delicious alone, or dipped in a hot pepper jelly (Williams-Sonoma brand is great), balsamic pear jam (there's one by Academia Barilla that is to die for) or simply dipped in balsamic vinegar glace.

Ingredients

  • 3 slices of bread, crusts removed
  • 1/4 cup milk
  • 1 pound ground pork or chicken
  • 1/4 cup fresh sage, chopped fine
  • 1 tablespoon garlic, minced
  • 1/2 cup onion, minced
  • zest and juice from half a lemon
  • 1 cup mozzarella cheese, shredded
  • 1 teaspoon red pepper flakes
  • 1 egg, beaten
  • 1 teaspoon garlic salt
  • Fresh ground black pepper, to taste
  • 1 tablespoon Colavita Argentina EVOO
  • 1 tablespoon Colavita Roasted Garlic Cooking Oil Blend
  • Red Pepper jelly, for dipping (Williams Sonoma brand)
  • Balsamic Pear jam, for dipping (Academia Barilla brand)
  • Colavita Balsamic Glace, for dipping

Instructions

  1. Preheat oven to 350 degrees F.
  2. Remove crusts from bread and tear into small pieces in a large mixing bowl, add milk and let soak for 10-15 minutes.
  3. Mix in ground pork or chicken, sage, garlic, onion, lemon juice and zest, cheese, pepper flakes, egg, salt and pepper with soaked bread crumbs with your hands in a claw-like motion to keep meatballs light and fluffy.
  4. Roll meat mixture into small to medium size meatballs (small makes approximately 36, medium makes approximately 18).
  5. Heat olive oils in a large saute pan over medium heat (if not using cooking oil blend, mix EVOO with a tablespoon of butter to avoid temperature from getting too high and splattering).
  6. Cook meatballs in batches in the oil for about 5 minutes each batch until meatballs are browned on all sides, drain on paper towels.
  7. Once all meatballs are browned, place them on a large rimmed baking sheet coated with cooking spray to avoid sticking.
  8. Bake in the oven for approximately another 15 minutes until cooked through and to keep warm.
  9. Top with additional garlic salt (if desired), fresh chopped sage, and serve with red pepper jelly and balsamic pear jam, and Colavita Balsamic Glace for dipping.

My Favorite Roasted Squash Recipes

I don’t know about you, but one of my favorite Fall veggies to make is Squash. I absolutely love the buttery, savory smell of it roasting in the oven and it’s so easy to make.

There are plenty of different varieties of Squash, but one of the most popular ones to make for the holidays is Butternut Squash, which has a sweet, creamy, buttery flesh. Other popular Squash varieties include Kabocha, Acorn, Spaghetti, Long Neck and Cheddar Cheese squash. There are different ways to prepare squash but the easiest and most flavorful way is by roasting it in the oven on a sheet pan for about 30 minutes to an hour. Simply cut the squash in half (or peel and cut into medium chunks or slices), scoop out the seeds and fibrous flesh and drizzle with olive oil or butter, some fresh cracked pepper and sea salt, and sprinkle on some brown sugar or drizzle with honey or maple syrup for a luscious, buttery, sweet and savory dish.

You can also sprinkle on some fresh herbs (parsley, sage, thyme, chives, tarragon) and garlic or add a dash of cayenne or cinnamon, nutmeg and cloves for some spicy layers of flavor. Some ideas for the squash leftovers are to add the roasted squash to Macaroni and Cheese, Wild Rice or Orzo, or make a healthy salad by adding it to some spinach, chard or kale, apples, some toasted walnuts or pecans, cranberries or pomegranate seeds, tossed in a light herb vinaigrette dressing. However you make it, it’s simply delicious; and perfect as a Thanksgiving side or Fall vegetarian side dish.

Check out the different types of squash on Saveur.com website and enjoy my favorite squash recipes below!

Shrimp Scampi Pasta with Lemon Butter Sauce

Shrimp Scampi Pasta

Shrimp Scampi Pasta

The temperatures are rising and the sun is shining which means one thing – Spring is finally here. For me, that means lighter flavors, fresh herbs, fruits and veggies from the farmers market, and seafood, seafood, seafood.

Ingredients

I decided to make a lovely Shrimp Scampi Pasta in Lemon Butter Sauce that is fresh, light and fairly simple to make (not to mention absolutely scrumptious!)

Sauteed Shrimp in Lemon Butter Sauce

I found some fresh, succulent jumbo shrimp and sautéed them in butter and olive oil with garlic, making a bright, velvety lemon butter sauce by adding lemon juice, lemon zest, and some white wine. I added a little extra butter into the sauce, threw in a few scallions and fresh garlic, and topped it off with some fresh parsley and a pinch of cayenne and red pepper flakes to give it some extra flavor and kick. If you want to make the sauteed shrimp and skip the pasta for a lighter dish, go for it – it’s totally amazing on it’s own or with a salad and some crusty bread (and a glass of white wine to accompany, of course!) Enjoy.

Shrimp Scampi Pasta in Lemon Butter Sauce

Yield: 4

This is a perfect dish for Summer, featuring sauteed shrimp in a lemon butter sauce, served over fettucine with fresh parsley and garlic.

Ingredients

  • Vegetable oil
  • 1 tablespoon kosher salt plus 1 1/2 teaspoons for sauce
  • 3/4 pound fettucine (or linguine, angel hair, spaghetti)
  • 4 tablespoons butter
  • 2 1/2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 pound jumbo shrimp (about 12 jumbo or 16 large shrimp), peeled and deveined, tails intact
  • 1/4 teaspoon freshly ground black pepper
  • 1/3 cup chopped fresh parsley leaves
  • 2 large scallions, sliced
  • 1/2 lemon, zest grated for sauce plus extra for garnish
  • 1/4 cup freshly squeezed lemon juice (2 lemons)
  • 1/4 cup dry white wine
  • 1/4 lemon, thinly sliced in half-rounds
  • 1/4 teaspoon hot red pepper flakes
  • pinch of cayenne
  • Garnish: parsley, lemon zest, red pepper, salt and pepper

Instructions

  1. Drizzle the vegetable oil in a large pot of boiling salted water, add 1 tablespoon of salt and the linguine, and cook for 7 to 10 minutes, or according to the directions on the package.
  2. Prep all ingredients (chop garlic, parsley, green onions, zest and halve the lemons and squeeze juice, measure out oil, lemon juice, wine, salt and pepper and red pepper flakes).
  3. Melt butter and olive oil in another large pan over medium-low heat and add the garlic. Saute for 1 minute, being careful not to burn the garlic.
  4. Add the shrimp, salt, and pepper and saute until the shrimp have just turned pink, about 3 minutes, stirring often. Add parsley, lemon zest, wine, lemon juice, lemon slices, scallions and red pepper flakes; cook for 1-2 additional minutes. Stir and remove from heat.
  5. When the pasta is done, drain the cooked pasta and then put it back in the pot. Immediately add the shrimp and sauce, toss well, and serve with additional chopped fresh parsley, lemon zest, salt and pepper to taste, cayenne and red pepper flakes, if desired. Serve with a glass of white wine (Chardonnay or Sauvignon Blanc) and a green salad or crusty bread.

Whipping Up Some Goodness w/ KitchenAid: Mixed Olive Tapenade & Parsley Toasted Nut Pesto

Parsley Pesto and Olive Tapenade
Parsley Pesto and Olive Tapenade

There’s something exciting about getting a new, shiny toy that makes you feel like a kid again. There’s something even more exciting about making something super delicious with that new toy and sharing it with the world. In this case, it’s my new KitchenAid 13-cup Food Processor – a powerhouse culinary machine that demystifies and simplifies big, scary food processors into a joyful thing, and makes slicing, dicing and pureeing the easiest thing ever. Not to say that all my knife skills I learned in culinary school have gone to waste, but this certainly makes my life easier, especially when I have a lot of ingredients to prepare and want perfectly blended, sliced and diced food in an instant. That “something super delicious” I decided to make is some dee-lish Mediterranean-inspired recipes – a Mixed Olive Tapenade and a Parsley & Pistachio-Walnut-Cashew Pesto, which turned out pretty impressive, if I must say so myself.

KitchenAid 13-Cup
KitchenAid 13-Cup

The machine comes with two different metal chopping blades (1 multi-purpose and 1 mini-blade with a bowl insert), a dough blade and a shredding disc and a slicing disc. I used the multi-purpose blade to chop the herbs and olives, and then slowly streamed in the liquids to the dry spices and herb ingredients to whip up some delicious goodness. This machine is so awesome that you can really just throw all the ingredients in the mixing bowl all at once, and the best part about it is that you can adjust the thinness and thickness of your slices (for slicing veggies) with one slide of a button on the front so you don’t have to keep changing the blades every time you need a different-sized slice. (Which also means less cleanup time for  me – bonus!). It also has a 3-in-1 Ultra Wide mouth feed so you can fit sliced or whole ingredients through it depending on what you’re making.

I hope you’ll enjoy these delicious dip recipes I’ve created – serve them with some cut up fresh veggies, crackers, pita bread, crostini or whatever you feel like using to dip into them with. The pesto is also delicious as a pasta sauce or as a topping for grilled or baked fish and chicken, or as a garnish on minestrone or vegetable soups. ¼ c extra-virgin olive oil
Juice of ½ lemon
1/3 c flat-leaf Italian parsley leaves
1 tsp fresh ground black pepper (more or less to taste)

Pureed Olive Ingredients

Scoop out the olive tapenade into a serving bowl and garnish with additional chopped parsley. Serve with crackers, breadsticks, veggies for dipping or spread the tapenade on toasted Italian bread (1/2 inch slices) for crostini.

Makes about 2 cups.

Big Pot ‘o Goodness: Pasta Fagioli

pasta fagioli soup

pasta fagioli soup

Cooking is one of my favorite things to do in the Winter – there’s something comforting about the delightful smells that warm up my apartment on a cold, dreary day.

Pasta Fagioli is an Italian soup made with herbs, beans, pasta, tomatoes, garlic and broth, topped off with some fresh basil, a drizzle of olive oil and grated Parmigiano-Reggiano cheese. And it’s easy to make too – just throw all the ingredients in a large soup pot and cook it slow and low for an hour or so. The end result is a big pot ‘o goodness to warm up your toes.

Big Pot ‘o Goodness: Pasta Fagioli

Yield: Serves 4-6

Ingredients

  • Extra virgin olive oil
  • 1/3 pound pancetta, diced
  • 1 onion, diced
  • Kosher salt and freshly ground black pepper
  • Pinch of crushed red pepper
  • 2 cloves garlic, minced
  • 1 28-ounce can San Marzano tomatoes, crushed
  • 2 cups chicken broth, low sodium
  • 1 spring rosemary
  • 2-3 springs fresh thyme
  • cheesecloth, for rosemary and thyme herb sachet
  • 2 15-ounce cans cannellini beans, drained and rinsed
  • 2 15-ounce cans chickpeas, drained and rinsed
  • 1 pound ditalini pasta (or any short-tube pasta)
  • Basil leaves, torn for garnish
  • Freshly grated Parmigiano Reggiano, for garnish
  • Extra olive oil, for drizzling

Instructions

  1. Coat a large, wide pot with olive oil and add pancetta. Bring to a medium heat and cook the pancetta until it starts to crisp, 4-5 minutes.
  2. Toss in the onion and season with salt and red pepper; cook until the onion is soft and aromatic, 8 to 10 minutes. Add the garlic and cook for 2-3 minutes more.
  3. Add tomatoes and chicken broth, rosemary and thyme sprigs (in cheesecloth sachet), season with salt and black pepper, and bring to a boil; then reduce to simmer and cook for 15 minutes. Remove the herbs sachet and discard.
  4. Add the cannellini beans and chickpeas to the pot and cook for 20 minutes more.
  5. Bring a large pot of salted water to a boil and cook the pasta two-thirds of the way until it is still fairly hard in the center. Drain the pasta, reserving 1 cup of the cooking water.
  6. Add pasta and cooking water to the soup pot with the tomatoes and the beans and continue to cook until the pasta is done, another 3-4 minutes. Season with salt and pepper to taste.
  7. Serve with some torn basil leaves, grated Parmigiano cheese and drizzle with some extra olive oil for garnish.

Even the perfectly round shape, bright peachy red and fuzzy exterior gives it a heavenly appeal.

This summer salad recipe pairs white peaches with prosciutto and fresh mozzarella tossed in a tangy sweet vinaigrette. It’s refreshing, light, and the salty prosciutto paired with the cool, mild mozzarella and sweet peaches is a combination to die for. Fresh from the Farm Market: Herbed Potato Salad + Strawberry Watermelon Salad

Summertime always remind me of home – when the sun is shining, a warm breeze is in the air, locusts are humming and all the flowers, fresh herbs, fruits and vegetables are in full bloom. There’s a small local farmer’s market up in Webster, NY not far from where I grew up that I used to visit with my Mom as a kid. We would buy fresh apple cider and donuts, pumpkins for Halloween and fresh corn and melons for our summer picnics. This year I went home to visit for Fourth of July weekend, and my Mom and I visited once again to buy some fresh fruit and veggies for our holiday BBQ feast.

I was craving some juicy watermelon and strawberries and went on a mission. There’s nothing like that first bite of sweet, cool, bright pink flesh of melon and ruby red berries in the summertime.

Fresh Watermelons
Fresh Watermelons

This Watermelon and Strawberry Salad is a simple combination of fresh watermelon, strawberries and a few blueberries mixed in with a little bit of lemon juice, sugar and water to make a simple refreshing syrup to macerate the fruit. This is how we traditionally make the fruit salad but you can also toss the fruit in a citrus infused balsamic vinegar for a tangy contrast with the sweet fruit – a good friend of mine made this salad and used Tavern on the Green Citrus which has a blend of orange, tangerine and lime essence and is just as delicious!

Ripe Juicy Strawberries

I found a recipe for a French Potato Salad made with salt potatoes and fresh herbs, a lightened up version from the heavier mayonnaise-laden salads from our family picnics of the past.

It calls for salt (or new) potatoes (red or yellow), shallots, parsley and thyme tossed in an oil, vinegar and Dijon mustard base making it light and tangy.

Italian Parsley

Fresh parsley adds some green…and the sweet shallots mixed with thyme, dill and onions gives it nice fresh flavor. I added some dried dill (you could also use fresh) and a few chopped green onions for an extra dash of flavor – délicieux!

Salad Niçoise for a Spring Day

Salad Nicoise
Salad Nicoise

Spring is about unearthing fresh things. Lighter things. Brighter things. Turning a new leaf. Dusting off and starting new. There’s something so refreshing about a lovely, fresh, healthy salad on a Spring Day and what better time to make one of my favorites: Salad Niçoise.

Salad Nicoise is known as a compound salad made with eggs, potatoes, green beans, salad greens, fresh tuna and Niçoise olives arranged in a colorful display. The salad is made with a Tarragon Vinaigrette for the potatoes and with a Red wine vinaigrette drizzled over the entire salad platter at the end. We start by making the vinaigrette dressings, then boil the potatoes, beans, eggs in separate pots. The tomatoes are blanched for a minute and then cooled in an ice bath for peeling and quartering. The fresh tuna is seared in olive oil over a high heat until it has a crispy crust and then cut into slices. This recipe makes a large serving for 6-8 people which can be halved if you’re serving for a smaller crowd (or quartered if just making this lovely dish for yourself!)

Salad Nicoise for a Spring Day

Yield: 6-8 servings

Ingredients

  • Tarragon Vinaigrette:
  • 3 tbsp tarragon wine vinegar
  • 1 tbsp Dijon mustard
  • ¾ cup olive oil
  • 1 large shallot, finely minced
  • ¼ c or more chopped fresh tarragon
  • Salt and freshly ground black pepper
  • Red Wine Vinaigrette:
  • 3 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • ¾ cup olive oil
  • 2 cloves garlic, finely minced
  • 1 tsp chopped fresh thyme
  • 3 tbsp minced fresh green herbs (basil, parsley or tarragon)
  • Salt and freshly ground black pepper
  • Salad:
  • 3 cups (2 lbs) red-skinned potatoes
  • ¼ c. dry white wine
  • 3 c (1 lb) baby green beans (haricots verts)
  • 3-4 tomatoes
  • 1 tbsp canola or vegetable oil
  • 1 lb fresh tuna (or 2 cans imported tuna in olive oil)
  • Salt and freshly ground pepper
  • 1 head Boston lettuce leaves, washed, drained and dried
  • 3 hard-cooked eggs, peeled and quartered
  • 6 anchovy fillets, soaked in water for 20 minutes and cut lengthwise
  • ½ cup Nicoise olives

Instructions

  1. Make the tarragon vinaigrette. In a small bowl, combine the vinegar and mustard. Whisk until well blended. Slowly, in a thin stream, add the oil, whisking constantly, until it is emulsified into the vinegar and mustard. Stir in the shallot and tarragon and season with salt and pepper. Reserve.
  2. Make the red wine vinaigrette. In a small bowl, combine the vinegar and mustard. Whisk until well blended. Slowly, in a thin stream, add the oil, whisking constantly, until it is emulsified into the vinegar and mustard. Stir in the garlic and fresh herbs and season with salt and pepper. Reserve.
  3. Place the potatoes in a large pot and cover with cold water. Bring to a boil and cook until just done, about 20 mins. Drain in a colander and allow the potatoes to cool slightly. When cool enough to handle, cut the potatoes into ¼ inch slices or a medium dice. Transfer the potatoes to a bowl and pour the wine over. Toss to coat and cover the bowl with plastic wrap. When the potatoes are completely cool, drain them of any excess wine and toss them with the tarragon vinaigrette. Reserve.
  4. Bring a large pot of water to a boil. Trim the beans at the stem end leaving the tails intact. Add the beans to the boiling water and cook until just done, about 5 mins. Remove the beans with a slotted spoon, reserving the water. Drain and refresh under cold water. Drain again.
  5. Return the salted water to a boil. Core the tomatoes and make an X in the bases just deep enough to score the skin. Fill a large bowl with ice and water and have it nearby. When the water boils, add the tomatoes and blanch them for 1 minutes. With a slotted spoon, immediately transfer the tomatoes to the ice bath. When cool, remove the skins and cut the tomatoes into quarters and eighths.
  6. To prepare the fresh tuna, in a heavy skillet heat the oil over a high heat. Lightly salt and pepper the tuna and sauté until the fish has a golden crust and is rare to medium-rare in the center, 2-3 minutes per side. Cool and cut into slices or 1 inch cubes.
  7. To assemble the final presentation of the salad: drizzle the beans and tomatoes with some of the red wine vinaigrette. If using canned tuna, lightly flake and toss with the vinaigrette lightly. Place the lettuce leaves around the edge of the salad platter. Drape the eggs with the anchovies. Arrange the tomato alternately with the olives, eggs and string beans. Mound the potato salad on the platter.
  8. Arrange the tuna next to the potatoes and drizzle the remaining red wine vinaigrette over all. Serve.

On The Menu: Roasted Chicken w/ Pinot Noir Sauce and Garlic-Smashed Potatoes

chicken pinot noir

chicken pinot noir

Whenever I have a day off, I normally feel the urge to sleep the entire day and forget the world. After thoroughly cleaning my apartment, getting my laundry together and paying bills all afternoon, I worked up a healthy appetite for a really nice dinner.

However, after exhausting all my energy on mundane activities all day, I wanted to make something simple but delicious, and a dish that I could make with all of the ingredients I had on hand: chicken, wine, garlic and potatoes. The thought of actually having to leave my apartment to go to the grocery store and expending more of my precious energy walking up four flights of stairs bewildered me.

I found a recipe for Roasted Chicken Breast with Pinot Noir sauce and Garlic Smashed Potatoes and decided to give it try because it sounded interesting (red wine sauce on chicken?) yet elegant. The chicken came out absolutely perfect; crispy on the outside and juicy on the inside – flavored with rosemary and thyme, and sauteed in a light, seasoned searing flour before roasting in the oven giving it a nice browned flavor. The wine sauce is the trickiest part – you want to cook down the wine in the sauce until it turns into a thick glaze and watch it so it doesn’t burn, stirring often.

The potatoes were pretty amazing – buttery, garlicky, crispy on top but creamy underneath the browned crust. The recipe suggests topping the potatoes with sour cream and chives when serving which I omitted, but instead I added a drizzle of Wegman’s basting oil, flavored with garlic, thyme and parsley on top before I put them in the broiler to give them a little extra flavor and crispier crunch.

I highly recommend a glass of red wine to accompany – and a side of crisp sauteed green beans or sugar snap peas for some extra veg. All in all, it turned out to be the perfect meal for a perfectly exhausting day off.

Roasted Chicken Breast with Pinot Noir Sauce

Ingredients

2  teaspoons chopped fresh thyme
1/2  teaspoon salt, divided
1/2  teaspoon freshly ground black pepper, divided
1/2  teaspoon chopped fresh rosemary
8  (6-ounce) skinless, boneless chicken breast halves
1/4  cup searing flour
1  tablespoon olive oil, divided
Cooking spray
3  tablespoons finely chopped shallots
2  cups pinot noir
1 1/2  cups fat-free, lower-sodium chicken broth
3/4  teaspoon sugar
3  tablespoons chilled butter, cut into small pieces

Preparation

1. Preheat oven to 425°.

2. Sprinkle thyme, 1/4 teaspoon salt, 1/4 teaspoon pepper, and rosemary evenly over chicken. Dredge chicken in flour; shake off excess flour. Heat 1 1/2 teaspoons oil in a large skillet over medium-high heat. Add 4 chicken breast halves to pan; cook 2 minutes or until browned. Turn chicken over; cook 1 minute. Remove chicken from pan. Repeat procedure with remaining 1 1/2 teaspoons oil and remaining chicken. Arrange chicken in a single layer on the rack of a roasting pan coated with cooking spray; place rack in pan. Bake at 425° for 12 minutes or until a thermometer inserted into thickest part of chicken registers 160°. Remove from oven. Cover and let stand 10 minutes.

3. Heat a medium saucepan over medium-high heat. Coat pan with cooking spray. Add shallots to saucepan; sauté 30 seconds, stirring frequently. Stir in wine, scraping pan to loosen browned bits. Increase heat to high; bring to a boil. Cook 10 minutes or until wine is reduced to 1 cup. Add broth; cook 16 minutes or until broth mixture is reduced to 1/3 cup. Remove from heat; stir in remaining 1/4 teaspoon salt, remaining 1/4 teaspoon pepper, and sugar. Gradually add butter, stirring constantly with a whisk until smooth. Serve sauce with chicken.
