Peach Raspberry Melba No-Bake Cheesecake

Summertime is finally here, and it’s my favorite time of year. I love cooking for parties and potlucks, but in the summertime it’s definitely no fun to be stuck in a hot kitchen! Therefore, I’ve decided to make a Peach Raspberry Melba No-Bake Cheesecake. It’s super delicious, easy to make, and requires no hot oven whatsoever, especially with the help of all my amazing KitchenAid® appliances.

I prepared my graham cracker crust in my KitchenAid 14-Cup Food Processor which crushes and mixes them into crumbs in seconds!

Next I made my cheesecake filling in my amazing Artisan Stand Mixer which is the best way to beat cream cheese and sugar together into a light and fluffy and delicious no-bake filling!

and I got a super cool electric kettle that I used to poach the peaches with.

You’re going to love this chilled creamy cheesecake with vanilla poached peaches and a homemade raspberry sauce. It’s so refreshing and is simply the perfect dessert for the summertime months! This is such an easy dessert recipe that requires no hot oven, and I’m so excited for you to try this recipe for yourself. Get as creative as you want with the no-bake cheesecake base and toppings, and just have fun with it!

Raspberry Sauce

You could substitute blackberries or blueberries for the sauce, switch up your cream cheese flavors (I used half regular and half peach flavored cream cheese for the filling), add some spices or chocolate powder to your graham cracker crust (or try Oreos, vanilla wafers or chocolate grahams!) or try poaching some other stone fruit such as nectarines or plums..the possibilities are endless!

The New Year has arrived, and it’s time to start anew. I like to kick bad habits and start new resolutions, such as exercising more, dropping a few pounds, cleaning house, and of course eating healthier and lighter. I recommend to read some Vacuum Sealer Reviews, I got a vacuum thanks to them so now I’ll be pretty entertained.

I recently got the new KitchenAid® Spiralizer Attachment to go along with my KitchenAid® Stand Mixer and am so excited to experiment with it to make some healthier low-carb meals! It comes with five different blades for peeling, coring and slicing and is perfect for fresh fruits and vegetables. I love pasta and rice, but spiralized veggies are such a great substitute when I want to lighten up my recipes.

Prepped Ingredients

Because we are in the middle of winter, I thought a delicious comfort food dish with a healthy twist would be perfect. I made an amazing Red Beef Curry with Zucchini Noodles, with stewed beef, sweet potatoes, onions, garlic and green beans in a lovely curry sauce made with coconut milk, red curry paste, fresh lime juice, fish sauce, a little beef broth and a dash of Sriracha.

I also got an amazing new Professional Series 3.5″ Paring Knife that came with my larger set, perfect for chopping my onions and garlic. and Thai chilies and basil, which I used for garnish. The larger Chef’s knife was great for cutting up the large chunks of beef, and sweet potatoes with it’s sturdier grip and large super sharp blade.

A Non-Traditional Thanksgiving Side: Fall Harvest Galette w/ Maple Sweet Potatoes, Caramelized Onions, Bacon & Gruyere

Thanksgiving is one of my favorite holidays of the year, simply because it’s a time to spend with friends and family and a great excuse to gather around the table and celebrate our blessings with some delicious bountiful food!

Whenever I go home to cook with my family, my mom takes care of the turkey and dressing, my sister makes a dessert, and I am in charge of making all the delicious side dishes. We normally make the usual green bean or broccoli casserole, squash, Brussels sprouts and mashed potatoes, and have enough food to feed the entire neighborhood!

I recently got a gorgeous new KitchenAid® Artisan® Series Stand Mixer and decided I wanted to use it to make a non-traditional Thanksgiving side dish this year. The Stand Mixer comes in 30 vibrant colors (I got Grape – my favorite) and makes cooking for the holidays so much easier, especially when it comes to making pie, tart dough and sauces. It comes fitted with a ceramic flat beater, dough hook and a wire whisk, has 10 speeds, and also has a plastic one-piece pouring shield to help keep ingredients in place when you’re mixing. And I also got the new KitchenAid® Ceramic Bowl in white to replace the metal one, which is a great accompaniment. The KitchenAid® Stand Mixer also has plenty of cool attachments that are available including food grinders, ice cream and pasta makers, juicers and more!

Fall_Galette

Using my new KitchenAid® Stand Mixer, I decided to make a beautiful Fall Harvest Galette, with roasted maple sweet potatoes, caramelized onions, crispy bacon, sage and Gruyere cheese. The pastry dough was made in my Stand Mixer in less than 10 minutes and came out perfectly. The galette has the delicious warm flavors of fall and it’s a lovely addition to the Thanksgiving table as a colorful, healthy side dish that will blow that green bean casserole away.
