Hi Everyone! So the New Year #2021 is rapidly approaching (thank God!!) and I decided to celebrate a little with theseĀ Spicy Crab Cakes w/ Creole Mayo and some bubbly! They are absolutely delicious and the perfect appetizer duo for the holidays or any special occasion!

I made them with fresh lump crabmeat, crispy applewood smoked bacon, corn, red Chile peppers, parsley, scallions, egg, panko breadcrumbs, mayonnaise, lemon juice and a dash of Tony Chacere’s Creole Seasoning and hot sauce, and served with a side of spicy Creole Mayo for dipping. Talk about a flavor bomb in your mouth…#YUM!

Spicy Crab Cakes

The recipe makes 8 small crab cakes but feel free to make four larger patties if you want to make burgers out of them. Or make 16 really small crab cakes if you want to make them bite-sized with fancy toothpicks on platter!

I brushed them with some oil and baked in the oven for about 30 minutes, but you can also pan-fry them if you prefer. For a larger crowd, I recommend doubling or tripling the recipe because these will be a huge hit and gone before you know it!

They would also be great served on top of some Confetti rice or Cajun/Creole pasta..or try them in some lettuce leaves or on top of a salad for a lighter fare if you’re watching your carbs. These delicious crab cakes are the perfect appetizer for the holidays or any special occasion! Made with fresh lump crab, crispy applewood smoked bacon, corn, red chile peppers, parsley and a hit of Creole seasoning and hot sauce served with a Creole Mayo for dipping. For a larger crowd, double or triple the recipe because these will be a huge hit and gone before you know it!

Ingredients

  • CRAB CAKES
  • 1 lb. lump crabmeat
  • 1/3 c. Panko bread crumbs
  • 1/3 c. mayonnaise
  • 1 large egg, lightly beaten
  • 2 green onions, finely sliced
  • 1 tbsp. lemon juice
  • 1 teaspoon Tony Chacereā€™s Creole seasoning
  • Dash of hot sauce
  • Freshly ground black pepper, to taste
  • 1/4 c. corn
  • 2 slices cooked bacon, chopped
  • 1/2 red chile pepper, chopped (or sub bell pepper for less heat)
  • 2 tbsp fresh parsley, minced, plus extra for garnish
  • 1 tbsp. vegetable or olive oil
  • ......
  • CREOLE MAYO
  • 1/2 cup mayonnaise
  • 1 tbsp lemon juice
  • 1/2 tbsp hot sauce
  • 1/2 teaspoon Tony Chacereā€™s Creole seasoning

Instructions

  1. MAKE CRAB CAKES
  2. Preheat oven to 350 degrees. Spray a large baking sheet with cooking spray.
  3. In a large bowl, stir together crabmeat, bread crumbs, mayonnaise, egg, green onions, and lemon juice. Add Creole Seasoning, hot sauce and black pepper. Stir in corn, Chiles, bacon and parsley. Mix well with hands or a fork until mixture is combined.
  4. Form into 8 patties and place on nonstick greased baking sheet. Brush oil on top of the crab cakes.
  5. Bake until golden brown about 25-30 minutes, turning halfway through cooking. Alternatively you can pan fry them for 3-5 minutes per side in a skillet over medium high heat.
  6. Garnish with more fresh parsley or green onions; serve with side of Creole Mayo.
  7. MAKE CREOLE MAYO
  8. InĀ a small bowl, combine mayonnaise, lemon juice, hot sauce and Creole seasoning. Adjust amounts to your liking (less or more spicy).
  9. Serve sauce with Crab cakes on top or on the side.

As the New Year begins, so do New Years resolutions. Some of them we keep, some of them we donā€™t, but one of them we universally all decide is to eat healthier and shed a few pounds from all the holiday gatherings and fat-laden food. So, back to reality it is. Starting today. Holiday over. Back to work. Back to the gym. A pledge to living healthier, eating healthier and cooking healthier. A fresh start for the New Year. For my last hoorah, my Mom and IĀ decided to make one last supper before the regimen begins: Gutschā€™s Linguine and Clams. Who is Gutsch you might ask? He was a newscaster up in Rochester, New York and his amazingĀ recipe became famous once it wasĀ published it in the newspaper about 25 years ago. Since then, it’s been a family favorite and a dish we make every year when I come home to visit the family.

Bacon. Butter. Garlic. Black Olives. Parsley. Clams. Pasta. Delicious melt-in-your-mouth flavor and OMG –Ā soĀ not a diet friendly dish. But you know what? You might as well enjoy your Last Supper and go all out, so that I did.Ā And I enjoyed every last bite of it. Now, back to the New Year’s resolutions.

Gutschā€™s Linguine and Clams

Yield: 2-4 servings,

Ingredients

  • 4-5 slices of bacon, cut Ā¼ā€ strips
  • 1/8 cup sliced green onions
  • 1 clove garlic, minced
  • 3 tablespoons butter
  • 1 - 6.5 ounce can chopped clams (or baby whole clams)
  • Ā¼ c. sliced black olives
  • 1/8 c. snipped parsley
  • 1/16 teaspoons black pepper
  • 6 ounces linguine pasta

Instructions

  1. Cook bacon in a large skillet until crisp and drain, reserving 1/8 c. drippings in the skillet. Set bacon aside.
  2. Cook onion and garlic in drippings until tender, not brown. Stir in butter until melted**. Drain clams, reserving liquid.
  3. Add clams, bacon, olives, parsley and black pepper and stir together.
  4. Add half of the reserved clam liquid, heat through and keep hot over low heat**. Meanwhile, cook linguine and drain. Mix together with the clam mixture in the pan and place in a warm serving bowl. Top the pasta additional parsley and freshly cracked black pepper for garnish.
  5. Serve this dish with a green salad, crisp white wine and some crusty Italian bread. Delish!!
  6. **You can also throw a little white wine in with the clam liquid and let it simmer down and substitute olive oil for the butter if desired.

Refreshingly Light Get-In-My-Bikini Crab Salad

OK folks – listen up. It’s that time of year again where Summer is coming, the sun is shining and we need to fit into that teeny bikini again… With Memorial Day approaching and sunny days on the boat, beach and lake ahead, I whipped up this recipe for a refreshingly light crab salad to get myself ready for the weekend. Chock full of fresh crab, lemon, veggies and tasty herbs and seasonings, you’ll love this healthy salad made with a low-fat dressing of grapeseed oil, white wine vinegar, lemon and a hint of low-fat/low-calorie mayonnaise. It’s full of flavor, vitamins, and protein, and so light it won’t touch your waistline.

If you aren’t into crab meat then switch it up and make this with tuna,Ā shrimp or shredded chicken. Serve the salad over large lettuce leaves with some slices of fresh avocado and lemon wedges on salad greens and hit the beach while rockin’ that bikini!Ā If you want to make a sandwich try it on a whole wheat pita or low carb tortilla wrap to keep light!Ā Enjoy!

Refreshingly Light Get-In-My-Bikini Crab Salad

Prep Time: 10 minutes

Total Time: 10 minutes

Ingredients

  • 1 pound cooked lump crab meat (can also sub tuna, shrimp or chicken)
  • 1 tablespoon grapeseed oil
  • 2 tablespoons white wine vinegar
  • lemon juice from 1/2 fresh lemon
  • 1/2 cup celery, diced
  • 1/2 orange or red bell pepper, diced
  • 1/4 cup red onion, diced fine
  • 1/2 cup cucumber, diced
  • 2 tablespoons fresh cilantro, chopped fine
  • 1/2 teaspoon kosher salt, or to taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon fresh cracked white pepper
  • 1/2 teaspoon Jane's Krazy Salt (or any seasoned salt you have)
  • 1 teaspoon red chili flakes (optional)
  • 1 small red or green chile, diced fine (optional)
  • 3 tablespoons light/low cal mayonnaise
  • Garnish: salad greens, sliced avocado, lemon wedges, cilantro

Instructions

  1. Mix cooked crab meat with oil and vinegar and lemon juice, stir well and break up crab meat into flaky pieces.
  2. Add diced celery, orange or red pepper, onion, cucumber, cilantro, salt, pepper, crazy salt, chile flakes, green chiles and mayonnaise.
  3. Cover well and place salad in the refrigerator for an hour to chill and let the flavors meld.
  4. Serve over mixed greens with slices of avocado, additional cilantro and fresh lemon wedges.

Notes

You can also substitute cooked chicken or shrimp or tuna for this recipe.
