Parisian Pasta with Ham + Caramelized Onions

I was invited to participate in the Frick’s Quality Meats Blogger Recipe Challenge this year and decided to make this delicious Parisian Pasta with Ham, Gruyere and Caramelized Onions. 

Parisian Pasta with Ham + Caramelized Onions

This is a heavenly Parisian-style baked pasta dish made with a cheesy creamy Mornay sauce (a béchamel made with melted Gruyere and Parmesan cheeses), sweet caramelized onions, and delicious Frick’s Hickory Smoked Sliced Gourmet Ham, all baked into a pot of melty goodness, then topped with crunchy browned croissants and fresh chives and parsley.

Cook Pasta

First cook your pasta according to package directions (about 1-2 mins less than recommended cooking time, al dente). Drain and toss with a little olive oil to prevent sticking, and set aside.

Saute onions

Next, caramelize your onions by sautéing them in butter until golden,

then add a pinch of salt and pepper and let them cook on low heat for about 30 minutes until caramelized, sweet and golden brown.

Cut the ham into medium size lardons.

Shred cheeses

Shred the Gruyere and Parmesan cheeses.

Make your mornay sauce by first cooking some flour in butter and add milk, whisking in to make your roux.

Add cheeses

Add the Gruyere and Parmesan cheeses, some French grey sea salt and freshly cracked black pepper, and whisk together until you get a luscious creamy cheese sauce.

Spray a casserole dish with some cooking spray and start layering the pasta with caramelized onions and ham. Pour the cheese sauce over the casserole and mix together so sauce coats the pasta evenly, top with additional Gruyere and Parmesan cheese. Bake in a 375 degree oven for about 15 minutes until cheese is melted and bubbly.

Top with croissants and broil

Top with torn croissants, turn the oven up to a high broil and cook for about 2 minutes until the croissants are crunchy and browned (being careful not to burn!)

Top with minced chives and parsley, serve immediately. Pair this luscious baked dish with a light white crisp wine (Sauvignon or Sancerre) and a mixed greens salad with a Champagne-Dijon vinaigrette dressing. Perfect for brunch or a cozy Fall dinner!

Parisian Pasta Bake w/ Ham, Gruyere + Caramelized Onions

Prep Time: 15 minutes

Cook Time: 30 minutes

Yield: 4-6

Serving Size: 1 cup

This is a heavenly Parisian-style baked pasta dish made with a cheesy creamy mornay sauce, sweet caramelized onions, and delicious Frick's cooked ham, baked into a pot of melty goodness, then topped with crunchy browned croissants and fresh chives and parsley. Perfectly paired with a light white crisp wine (Sauvignon or Sancerre) and a mixed greens salad with a champagne-dijon vinaigrette dressing.

Ingredients

  • 8 ounces dried pasta (Trivelle, Rotini, Campanelle, or Cavatappi)
  • MORNAY SAUCE:
  • 2 tablespoons unsalted premium butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • 1 cup shredded Gruyere cheese (or Fontina, Comte, Emmental)
  • 1 garlic clove, peeled and smashed
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • Pinch of nutmeg
  • 1/4 teaspoon French grey sea salt
  • Freshly cracked black pepper, to taste
  • CARAMELIZED ONIONS:
  • 2 tablespoons butter
  • 1 large onion, sliced thin
  • Pinch of French grey sea salt
  • Freshly cracked black pepper, to taste
  • ---
  • 1 cup Frick's Cooked Ham, chopped into small lardons
  • 1 large croissant, torn
  • 1/4 cup fresh parsley and chives, minced

Instructions

  1. Preheat oven to 375 degrees F.
  2. Cook pasta in a large pot of salted water for 8 minutes (cook 1-2 minutes less than recommended package directions, al dente), drain, toss with 1-2 tablespoons olive oil and set aside).
  3. Make the Mornay Sauce:
  4. Melt 2 tablespoons of butter in a large saucepan over medium heat. Add flour and whisk for about 1 minute to make a roux, being careful not to burn or brown.
  5. Slowly add the milk, whisking occasionally, until you get a smooth sauce consistency.
  6. Add the garlic and simmer for about 5 minutes, remove smashed garlic clove.
  7. Stir in both of the cheeses, whisk until melted and you get a thick, creamy cheese sauce. Add more milk, 1 tablespoon at a time, to get a thinner sauce until thickness and consistency is to liking. You can also add more butter and flour (equal parts) to make the sauce thicker. Season with grey sea salt, pepper, and nutmeg, and reduce heat to low.
  8. Make the caramelized onions:
  9. Melt butter in a small saute pan over medium heat.
  10. Add the onions and cook until lightly browned, then turn the heat down to low, add salt and pepper, and slowly cook onions for about 30 minutes, until sweet and caramelized.
  11. Make the casserole:
  12. Grease a medium casserole dish with oil spray or butter.
  13. Add cooked pasta, top with cooked Frick's ham, caramelized onions and Mornay sauce. Stir together until sauce is coating all the pasta.
  14. Top with additional shredded Gruyere and Parmesan cheese and bake for 15-17 minutes until cheese is melted and bubbly.
  15. Turn oven up to a broil, add the torn croissants on top of the casserole, and broil on high for about 2 minutes until the croissants are browned and crunchy (be careful not to burn!)
  16. Remove casserole from the oven and let cool for about 5 minutes on a trivet. Add the fresh chives and parsley, serve immediately.

Notes

I used Gruyere and Parmigaino-Reggiano cheese in this pasta dish but you can also substitute any good melty cheeses such as Comte, Fontina, Emmental or Edam, or White Cheddar. Serve with a mixed greens salad with a Champagne-Dijon vinaigrette dressing and a crisp French white wine like Sauvignon or Sancerre.

These delicious Crab BLT’s are made with fresh lump Alaskan King crab meat (you can find it in your local grocery market in the seafood section or buy it fresh from a seafood market). They have tons of flavor from all the fresh veggies and herbs inside: minced red bell peppers, jalapenos, fresh cilantro, scallions and chives. For some extra kick, I add a dash of spicy Sriracha (hot chile pepper sauce), a little bit of mayonnaise, fresh lemon juice and capers, and a few breadcrumbs to bind them all together. Simply make the crab cakes by patting them into medium size patties, then coat them in some Japanese Panko breadcrumbs and lightly fry them to perfection in some oil and drain. Cooking with Stoli Vodka for Memorial Day Weekend

There’s no better time than Memorial Day weekend to break out the grill and cook up some tasty BBQ to celebrate the beginning of Summer! I had the opportunity to create some recipes with Stoli Vodka for the holiday and decided to make Grilled Honey Orange Chicken Skewers with a Cucumber Orange Cilantro Salsa – a savory and light dish with tons of flavor and a hit of refreshment from the oranges and cucumbers. I used Stoli Ohranj (Orange flavor) and Stoli Sticki (Honey flavor) in both the chicken marinade and my delicious Honey Orange Blossom Cocktails.

The cocktails are made with a shot of each Stoli vodka flavor, honey, orange blossom water, vanilla extract, and organic lemon infused sparkling spring water, garnished with fresh orange slices and edible flowers. It’s light and refreshing with just a dash of honey and orange to cool your palette. It reminds me of a Creamsicle (remember those??) – the perfect treat for a hot Summer day.

Grilled Chicken Skewers with Orange Cucumber Cilantro Salsa

Grilled Honey Orange Chicken Skewers w/ Cucumber-Orange-Cilantro Salsa

Prep Time: 30 minutes

Cook Time: 15 minutes

Total Time: 45 minutes

Yield: 4-6

Ingredients

  • Honey Orange Chicken:
  • 1 ½ pounds boneless, skinless chicken breasts or thighs
  • ¼ cup fresh squeezed orange juice
  • ¼ cup olive oil
  • 1 tablespoon Stoli Ohranj vodka
  • 1 tablespoon Stoli Sticki vodka
  • 2 tablespoons honey
  • 2 tablespoons chopped fresh cilantro
  • 2 cloves garlic, minced fine
  • 6 chives, minced fine
  • ½ teaspoon grated orange zest
  • 1/8 teaspoon cayenne pepper
  • Sea salt and freshly ground black pepper, to taste
  • ½ red onion, cut into large chunks
  • 1 red, yellow or orange bell pepper, cut into large chunks
  • Cucumber-Orange-Cilantro Salsa:
  • ½ large orange, chopped fine
  • ½ cucumber, diced fine
  • 1 tablespoon chopped fresh cilantro
  • 6 chives, minced fine
  • 1/2 jalapeno, minced fine
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon white wine vinegar
  • Sea salt and freshly ground black pepper, to taste

Instructions

  1. Honey Orange Chicken:
  2. Cut chicken into large chunks and set aside.
  3. Soak wooden skewers in water for at least an hour before using (or simply use metal skewers to make your life easier).
  4. Combine next 11 ingredients (orange juice through S&P) in a large mixing bowl, add chicken and let marinade in the refrigerator for at least 30 minutes up to 2 hours.
  5. Remove chicken from fridge and let stand at room temperature for at least 15 minutes.
  6. Preheat a grill or grill pan over medium-high heat.
  7. Thread marinated chicken, red onion and bell peppers onto skewers (should make at least 4 large or 5 medium skewers).
  8. Grill chicken skewers about 10-12 minutes until cooked through (internal temperature should read 165 degrees), turning once.
  9. Serve with Cucumber-Orange-Cilantro and grilled pita or flatbread and Stoli Honey Orange Blossom Cocktails.
  10. Cucumber-Orange-Cilantro Salsa:
  11. In a medium mixing bowl, add diced cucumber, orange pieces, fresh cilantro, chives and diced jalapeno.
  12. Add olive oil and vinegar, and S&P to taste, mixing thoroughly.
  13. Serve on top of grilled chicken skewers or on the side.

Ingredients

  • 1 shot Stoli Ohranj vodka
  • 1 shot Stoli Sticki vodka
  • 2 tablespoons honey
  • 1 tablespoon Orange blossom water
  • 1 teaspoon vanilla extract
  • 10.5 fl oz Sparkling lemon spring water
  • Orange slices, for garnish
  • Edible flowers, for garnish

Instructions

  1. Add vodka, honey, orange blossom water and vanilla into a cocktail shaker and mix together with a tall spoon.
  2. Add ice and sparkling lemon spring water and close lid securely.
  3. Shake gently until mixed together.
  4. Serve in cocktail glasses over ice, garnish with orange wedges and edible flowers.

Summer in a Bowl: Vodka Cream Sauce Pasta w/ Basil, Mozzarella & Sundried Tomatoes

There’s a great little place in my neighborhood called Todaro Bros. – a small, locally-owned deli and grocery store that sells fresh and imported Italian food and other gourmet groceries. I usually stop in at least once a week to peruse their cheese department and sample some of their fresh house-made mozzarella, just for kicks (it’s that good!).

It’s impossible to walk in there and just buy one thing – I’m like a kid in a candy store! I found these gorgeous sun-dried tomatoes marinated in herbs and oil and picked up some fresh mozzarella, basil, oregano, chives, tomato sauce, cream and pasta to make a fresh, tasty Summer pasta dish with a Vodka Cream Sauce.

I made it with spaghetti but you could serve this tasty Vodka Sauce with virtually any pasta you wish. It’s tangy, velvety and full of flavor, and the fresh basil gives it a peppery flavor which is rounded out by the creamy fresh mozzarella and sweet sun-dried tomatoes. I also threw in a few pieces of crumbled cooked bacon into the sauce to give it an extra layer of flavor (which is totally optional but also totally worth it!)

Top off the pasta with fresh basil leaves, red pepper flakes, coarse Mediterranean sea salt and fresh ground pepper…

Summer Pasta w/ Vodka Sauce, Fresh Basil, Mozzarella & Sundried Tomatoes

Prep Time: 30 minutes

Cook Time: 30 minutes

Total Time: 1 hour

Yield: 4-6

Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 small shallot, diced
  • 3-4 slices cooked bacon, crumbled (optional)
  • 6-8 marinated sun-dried tomatoes, cut into halves or quarters
  • 1 quart tomato sauce (store bought or homemade, pureed smooth)
  • 1 cup of vodka
  • 1/2 cup of heavy cream
  • 1 teaspoon fresh oregano, minced
  • 1 teaspoon fresh chives, chopped
  • Coarse sea salt and fresh ground black pepper, to taste
  • fresh unsalted mozzarella, torn into medium pieces, for garnish
  • fresh basil leaves, whole or torn, for garnish
  • red pepper flakes (optional), for garnish
  • 1 pound package of cooked and drained pasta (spaghetti, linguine or penne)

Instructions

  1. Cook pasta in a large saucepan according to package directions (until al dente) and drain (reserving a few tablespoons of the pasta water for later); set aside. Meanwhile, cook the bacon over medium heat for about 15 minutes until crispy, drain and crumble.
  2. Heat oil over medium-high heat in a large saucepan or pot. Add garlic and shallots, saute until soft and translucent, about 2 minutes. Add crumbled bacon and sun-dried tomatoes, add salt and pepper to taste. Saute for an additional 5 minutes and turn heat down to medium-low.
  3. Stir in tomato sauce and vodka into the same saucepan and let simmer (approximately 20 minutes) until the sauce thickens and cooks down. Stir in the heavy cream, fresh oregano and chives and let simmer on low for another few minutes until sauce is heated through.
  4. Return the pasta back to the large saucepot and ladle some of the sauce into it, along with a few tablespoons of reserved pasta water and toss to coat.
  5. Ladle coated pasta into serving dishes and top with additional vodka sauce. Garnish with fresh basil leaves, mozzarella, red pepper flakes and salt and pepper to taste.
