Hey guys! Happy #Thanksgiving! I hope everyone is enjoying their holiday despite the crazy #quarantine travel restrictions and COVID-19 mania – and hoping that you are able to spend time with family or friends…no matter how small the gathering might be.

This year I decided to make a super delicious mini-Thanksgiving dinner for myself since I wasn’t able to spend it with my family and friends up in New York. I actually didn’t mind having a little time alone to cook and drink wine and relax, watching some holiday movies and snuggling under a blanket with kitty and some Christmas lights!

Cornish Hen

 

I made a juicy Roasted Cornish hen, seasoned with a homemade spice rub, some fresh squeezed lemon juice and extra virgin olive oil, roasted on top of a bed of onions, garlic and celery. You could also use some additional herbs and veggies to stuff the hen / add to the roasting pan such as sliced lemons, rosemary, thyme, carrots or turnips for extra flavor.

I also made this sweet and spicy roasted Delicata squash, made with a delicious glaze of olive oil, brown sugar, Sriracha, apple cider vinegar, garlic powder and salt with a dab of butter to make it caramelized and luscious.

And of course I made my favorite Thanksgiving side dish of all time – Roasted Brussels sprouts with bacon and shallots and a drizzle of spicy balsamic glaze for serving..crispy, savory and sweet with a touch of heat..delicious!

I served them with some luscious mashed potatoes with butter and heavy cream topped with turkey gravy…two staples I couldn’t resist (even though I planned on making mashed cauliflower originally and decided to cave and make the real thing…lol)

and of course I paired my dinner with a crisp, light and fruity white wine – #Matua Sauvignon Blanc, which is one of my favorite varieties from Marlborough NZ.

 

I am #thankful for so many things and especially this year. Not being able to be with my friends and family up in New York is not the same, but I am blessed and grateful for them and happy we are all safe and sound, with food on the table…and #love all around,  no matter how far apart we are.

A Mini-Thanksgiving Dinner

This is a super easy and delicious mini-Thanksgiving dinner for 1 or 2 people. A spiced juicy roasted Cornish hen along with some sweet and spicy roasted Delicata squash, Balsamic Brussels sprouts with bacon and shallots. All served together with some creamy buttery mashed potatoes and turkey gravy and of course a light and fruity white wine such as Sauvignon Blanc to go with!

Feel free to add additional herbs and veggies to stuff the Cornish hen or add to the roasting pan such as lemons, rosemary, thyme, carrots or turnips while baking for extra flavor.

Ingredients

  • Roasted Cornish Hen:
  • 1 whole Cornish hen, about 1 1/2 lbs
  • 1 onion, peeled and cut in quarters
  • 4 celery stalks, cut in thirds
  • 5 cloves garlic
  • 2 tablespoons extra virgin olive oil
  • 4 tablespoons fresh lemon juice
  • Dry Rub:
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 tablespoon Italian seasoning
  • 1/2 teaspoon dried tarragon
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Tony Chacere's Creole seasoning (optional, can sub paprika)
  • 1/2 teaspoon Penzey's Bicentennial seasoning (optional, can sub poultry rub)
  • Sweet and Spicy Roasted Delicata Squash:
  • 1 large Delicata squash
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup Stevia Brown Sugar
  • 1 tablespoon Sriracha
  • 1/2 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Sea salt
  • Freshly cracked black pepper, to taste
  • 2 tablespoons unsalted butter
  • Balsamic Bacon Brussels Sprouts:
  • 1 1/2 pounds brussels sprouts, trimmed and halved
  • 1-2 tablespoons extra virgin olive oil
  • Sea salt and freshly cracked black pepper, to taste
  • 1/2 teaspoon red pepper flakes
  • 4 slices of bacon, chopped
  • 1/2 large shallot, minced (or 2 cloves garlic, minced)
  • 1 -2 tablespoons balsamic glaze

Instructions

  1. Roasted Cornish Hens:
  2. Preheat oven to 425 degrees F.
  3. Combine all the dry ingredients together in a small mixing bowl. Pat the hen dry with paper towels and season generously with the rub all over, inside and out.
  4. Place the onions, celery, and garlic on the bottom of a medium roasting pan. Place the hen over the vegetables and drizzle olive oil and lemon juice over the top, brushing it on to the hen evenly.
  5. Bake in the oven for 1 hour, or until a thermometer registers 165 degrees F in the thickest part of the thigh.
  6. Remove the hen from the oven and let rest, covered loosely with foil for about 20 minutes. Carve and serve with side dishes.
  7. Sweet and Spicy Roasted Delicata Squash:
  8. Wash the squash and cut off both ends. Cut in half length-wise and scoop out the seeds; discard.
  9. Slice the squash into 1/2-inch pieces and place on to a baking sheet in a single layer.
  10. Whisk together in a small bowl all the glaze ingredients until smooth and blended. Brush all over both sides of the squash. Dab the squash with bits of butter all over the pan.
  11. Bake for about 30 minutes at 425 until squash is cooked through and caramelized, turning halfway through cooking time to ensure even browning.
  12. Raise heat to a broil, and cook for an additional 2-3 minutes. Remove from oven and serve.
  13. Balsamic Bacon Brussels Sprouts:
  14. Preheat oven to 425 degrees.
  15. Place the brussels sprouts on to a sheet pan and drizzle with olive oil, salt and pepper and red pepper flakes, toss together to coat evenly.
  16. Add the bacon and shallots to the pan and stir together with the sprouts, making a single layer.
  17. Roast the sprouts for about 12 minutes then remove from oven and toss them together to get the other side crispy. Place them back in the oven and roast for another 12-15 minutes until the sprouts and bacon are crispy and browned.
  18. Remove from the oven and toss everything together. Place in a serving bowl and drizzle balsamic glaze over the top and garnish with some additional flaky sea salt and pepper.

Notes

You can also double the recipe for the Cornish Hens if you are having a couple more people over. The sides are plenty for two people, maybe 3 or 4, depending on how big your servings are!

Keto Chicken Tikka Masala Flatbread

I was recently invited to participate in a recipe challenge for Kevin’s Natural Foods and I am so excited to try these delicious #organic sauces! They are all sugar/dairy/soy/gluten-free as well as paleo and keto-friendly, made with non-GMO/clean ingredients, super tasty and easy to cook with. And since I am currently doing a #keto and #low-carb lifestyle, I thought this would be the perfect opportunity to experiment with some fun recipes for the contest.

Keto Chicken Tikka Masala Flatbread

Chicken Tikka Masala is one of my favorite Indian dishes EVER – so I jumped at the opportunity to create a Keto Chicken Tikka Masala Flatbread – an absolute flavor explosion which is also guilt-free and MAJORLY delicious!

KNF Tikka Masala Sauce

 

I used Kevin’s Natural Foods Tikka Masala Sauce – a delicious blend of bright tomato curry made with coconut milk, ginger, and Indian spices, with some roasted cauliflower, sweet caramelized onions, and juicy savory chicken thighs over homemade Keto Garlic “Naan” Flatbread.

I started first by making the keto garlic naan flatbreads using mozzarella cheese, almond flour, cream cheese, garlic powder, baking powder and a pinch of Himalayan Pink sea salt and microwaving it for about a minute until cheeses are melted.

Then I stirred in the egg and kneaded it gently into a dough and shaped them into ovals on to the baking sheets, and brushed them with olive oil, fresh garlic, paprika and some chopped cilantro. I baked them for 15-17 minutes until browned and let them cool on parchment paper while making the Chicken Tikka Masala topping.

Roasted Cauliflower

 

Next, I chopped up a head of cauliflower into small florets and drizzled them with olive oil, garlic salt and freshly cracked black pepper, and roasted them in a 400 degree oven for about 20-25 minutes until crispy and browned (but made sure not to overcook because it will simmer in the sauce later with the other ingredients).

I sliced up some sweet onion and sautéed them in a large pan with some more olive oil, sea salt and paprika for about 25-30 minutes over low heat until they were soft, golden and caramelized. YUM!!

In the same saute pan, I sautéed the chicken thighs over medium-high heat until cooked through and no longer pink. Then I added the chicken back in the pan along with the cauliflower and onions, a pinch of red pepper flakes for additional heat, and poured the Chicken Tikka Masala sauce over the top.

I let this big pot of curry goodness simmer over medium-low heat for about 10 minutes to let all the delicious flavors meld together with the sauce.

Once done, I topped the Keto flatbreads with some of the mixture..LOOK AT THIS GORGEOUS COLOR.

…then sliced the flatbread into wedges and topped it off with some fresh cilantro and black pepper.

OMG – you guys. This is the most delicious thing ever – and it’s so easy! The garlic flatbreads are literally super low carb and the chicken, cauliflower and sweet onions go so good with the Tikka Masala curry sauce – it literally melts in your mouth!

These Keto Chicken Tikka Masala Flatbreads are a flavor explosion! Made with Kevin's Natural Foods Tikka Masala Sauce (organic, gluten free), roasted cauliflower, caramelized onions, and juicy chicken thighs over Keto Garlic Naan Flatbread. Guilt-free and absolutely delicious!

Ingredients

  • Chicken Tikka Masala:
  • 1 pound boneless chicken thighs, cut into 1-inch chunks
  • 2 cups cauliflower florets
  • 4 tablespoons ghee or olive oil, divided
  • Kosher salt and pepper
  • 1 large onion, julienned
  • 1 tablespoon paprika
  • 1 teaspoon red pepper flakes, optional
  • 1 pouch Kevin’s Chicken Tikka Masala Sauce
  • Fresh torn cilantro, for garnish
  • ------------------------------
  • Garlic Naan Flatbread:
  • 2 cups shredded mozzarella
  • 1 cup almond flour
  • 4 tablespoons cream cheese
  • 2 tablespoons garlic powder
  • 2 teaspoons baking powder
  • Kosher salt
  • 2 large eggs
  • 2 tablespoons ghee or olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons fresh cilantro, minced

Instructions

  1. Garlic Naan Flatbread:
  2. Preheat oven to 400 degrees and line two large baking sheets with parchment paper or silicone baking mats.
  3. In a medium microwave-safe bowl, add mozzarella, almond flour, cream cheese, garlic powder, baking powder and a large pinch of salt. Microwave on high until cheeses are melted for about 1 minute; stir in eggs.
  4. Shape the dough into two 1/2-inch thick ovals and place on two large baking sheets.
  5. Mix ghee or oil with garlic and cilantro, brush over top of the bread.
  6. Bake each flatbread for 15-17 minutes. Set aside while making Chicken Tikka Masala.
  7. Chicken Tikka Masala:
  8. Drizzle 2 tablespoons of ghee or olive oil over cauliflower and season with garlic salt and pepper on a large baking sheet.
  9. Roast cauliflower for 20-25 minutes, until browned and crispy. Remove tray from oven and set aside.
  10. Heat an additional tablespoon of ghee or oil in a large sauté pan over medium-high heat, sprinkle paprika over the onions and sauté for about 3-5 minutes. Reduce heat to low and let cook for about 20-25 minutes until caramelized and brown. Set aside into a small bowl while cooking the chicken.
  11. Bump up the heat to medium-high and add the chicken to the same sauté pan with one tablespoon ghee or olive oil. Saute for about 6-8 minutes until cooked through and no longer pink.
  12. Pour in the pouch of Jason’s Chicken Tikka Masala Sauce to the pan along with the cooked onions and cauliflower. Toss in a few red pepper flakes if desired. Bring sauce to a boil and reduce heat to a simmer and let cook over low heat for 5-8 minutes. If the sauce is too thick, add a little water or chicken broth until desired consistency.
  13. Remove from heat to cool and let flavors meld together.
  14. Top each keto naan flatbread with 1/2 the Chicken Tikka Masala mixture and garnish generously with fresh cilantro and freshly cracked black pepper.
  15. Slice flatbreads into wedges and serve immediately.

Notes

You can also substitute chicken breast instead of chicken thighs if you prefer. Try adding other veggies in if you like - peas, green beans, carrots...if you want to spice up the heat, garnish with a few jalapeños or sliced red chilies.

Balsamic Cranberry Chicken Cauliflower Pizza

This Balsamic Cranberry Chicken Cauliflower Pizza is a delicious and healthy pizza made with frozen cranberries sautéed in a lovely reduced balsamic glaze, shredded rotisserie chicken, caramelized onions, ricotta, Parmesan and mozzarella cheese, topped with fresh arugula and basil on a crispy, thin cauliflower crust. You guys..this is the most delicious pizza I’ve ever made..It’s a sweet and tangy savory delight all in one bite!

Balsamic Cranberry Chicken Cauliflower Pizza

I used a pre-made frozen cauliflower pizza crust (Caulipowr brand is great) which is super thin, crunchy and saves a lot of time. You can also make a homemade crust with riced cauliflower, egg, mozzarella, parmesan cheese, with a dash of dried basil or italian seasoning which is included in the recipe.

First slice your onions and sauté them over low heat on the stove in a large sauté pan with a pinch of sugar or stevia for about 30-40 minutes until caramelized. Set aside.

Bake the crust

The cauliflower pizza crust is topped with all kinds of goodies: a creamy base of ricotta topped with flavorful shredded rotisserie chicken, mozzarella, and caramelized onions, then popped in the oven for 11-13 minutes to crisp it up and melt the cheese.

Roughly chop cranberries

While the crust is cooking, chop your cranberries and sauté the cranberries for a few minutes in a little bit of olive oil.

Balsamic Glazed Cranberries

Reduce the balsamic vinegar in a small saucepan over high heat on the stove to create a delicious glaze, then add the cranberries to the glaze and set aside.

Once the pizza is done cooking, add the balsamic glazed cranberries and top it with fresh baby arugula and torn basil leaves, with a drizzle of additional olive oil and balsamic glaze for an extra hit of flavor.

Cut it into 4-8 slices (depending on the size of your crust) and serve immediately.

This Balsamic Cranberry Chicken Cauliflower Pizza is a delicious and healthy pizza made with frozen cranberries sautéed in a lovely reduced balsamic glaze, shredded rotisserie chicken, ricotta, Parmesan and mozzarella cheese, caramelized onions and fresh arugula on a crispy, cheesy cauliflower crust. Ingredients

  • For the crust:
  • 1 medium head cauliflower (or 12 ounces/3 cups frozen pre-riced cauliflower)
  • 1 egg, beaten
  • 1/2 teaspoon garlic powder
  • 1 1/2 cups mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1 teaspoon Kosher or sea salt
  • Freshly ground black pepper
  • For the pizza:
  • 3 tablespoons extra virgin olive oil, divided
  • 1 large sweet onion, halved and sliced thin
  • Sea salt and freshly ground black pepper, to taste
  • 1 cup balsamic vinegar, plus extra for drizzling
  • 1 1/2 tablespoons stevia (or 3 tablespoons honey)
  • 3/4 cup Cape Cod Select frozen cranberries, thawed and drained
  • 2 ounces ricotta cheese
  • 1 cup shredded rotisserie chicken
  • 1 cup mozzarella, shredded
  • 1 cup baby arugula
  • Fresh torn basil, for garnish

Instructions

  1. For a homemade cauliflower pizza crust:
  2. Preheat oven to 400 degrees F.
  3. Working in batches as needed, pulse cauliflower in a food processor until rice-like consistency. If using pre-riced cauliflower, microwave according to package directions (3-5 minutes) and let cool 5-10 minutes. Drain in a large colander, squeezing out extra moisture with paper towels.
  4. In a medium mixing bowl, combine cauliflower, beaten egg, garlic powder, 1 cup mozzarella and parmesan cheese, dried basil and oregano, salt and pepper. Stir and fold until mixture holds together.
  5. Press cauliflower mixture into a 10-inch circle (1/4” thick) on the parchment lined pizza stone or baking sheet.
  6. Bake cauliflower crust for 15 minutes, then flip it over and bake another 10 minutes or until edges are golden brown and crust is crispy; remove from oven and brush with a small amount of olive oil.
  7. For the pizza:
  8. While pizza crust is baking, caramelize onions in a sauté pan over low heat with 1 1/2 tablespoons of olive oil, sea salt and pepper, for about 20-25 minutes until soft and golden brown. Remove pan from stove and set aside.
  9. Reduce the balsamic vinegar on the stove by bringing vinegar and stevia (or honey) to a boil in a small pan. Reduce heat to medium-low; let simmer for 8-10 minutes.
  10. Stir the vinegar occasionally as it simmers and let reduce by half until the consistency is thick and syrupy.
  11. Roughly chop the cranberries and add to a small pan with ½ tablespoon olive oil over medium heat. Sauté for 5 minutes, then toss them in the balsamic reduction and set aside.
  12. Remove pizza crust from oven and spread ricotta cheese in an even layer, leaving 1-inch border on the outer crust. Sprinkle with caramelized onions and shredded rotisserie chicken, top with 1/2 cup shredded mozzarella cheese.
  13. Slide pizza back into the oven and bake for another 5 minutes (or broil it at 450-500 degrees for 2 minutes) on the upper rack, until cheese is bubbly and browned. Remove pizza from oven.
  14. Sprinkle the sautéed balsamic cranberries evenly over pizza, and top with arugula and fresh basil.
  15. Drizzle pizza with additional olive oil and balsamic reduction, if desired.
  16. Slice into 4-8 pieces and serve immediately.
  17. NOTE:
  18. If using pre-made or frozen cauliflower pizza crust:
  19. Place pizza stone or baking sheet on middle rack of oven and preheat to 400 degrees F. Line pizza peel or large round baking sheet with parchment paper.
  20. Spray the crust with olive oil cooking spray and top with ricotta, mozzarella, shredded chicken and caramelized onions. Bake for 10-12 minutes and remove from oven. Top with the balsamic cranberries, fresh basil, arugula and drizzle with extra balsamic glaze for garnish.

Notes

To save time and effort, use a pre-made frozen cauliflower pizza crust and top with ricotta and mozzarella cheese, onions, chicken and bake for 11-13 minutes, then top with arugula, balsamic cranberries and basil and additional olive oil and balsamic glaze to garnish and cut into slices and serve.

You can make the crusts ahead, wrap well with plastic, and refrigerate for up to 2 days or freeze for up to 2 weeks.

Sweet + Spicy Chicken Thighs w/ Roasted Broccolini

Sweet and Spicy Chicken + Roasted Broccolini

Sometimes you need to spice things up in life a little. Especially to brighten up those late Winter/early Spring dreary days when you’re craving #BBQ, until the gorgeous grilling weather is back in full swing!

These Sweet and Spicy Chicken Thighs are the perfect remedy – bathed in a gorgeous sticky, spicy and sweet glaze, made with Penzey’s Northwoods Fire Rub and Woodstock Everything Sauce and a little honey and white balsamic vinegar for a great BBQ flavor with the convenience of the broiler.

Sweet and Spicy Chicken + Roasted Broccolini

I made some fresh and easy Roasted Broccolini with Garlic to go with the chicken, but you could also serve them with the typical BBQ fixings: corn on the cob, baked beans, cole slaw, mac and cheese or fries. Black beans and rice would also be a great option for a Caribbean flair. Or shred the chicken and make some Spicy Sweet Chicken Tacos or BBQ Chicken Wraps or Pizza with the roasted broccolini…YUM!

Penzey's + Woodstead

Chef’s Notes: Penzey’s Northwoods Fire Rub is a lovely spicy mixture of salt, chipotle, black pepper, Hungarian paprika, garlic, rosemary, thyme, black pepper, and cayenne. If you aren’t able to find it or buy some,  you can make your own by using the following: 2 teaspoons garlic powder, 2 teaspoons chipotle or chili powder, 1 teaspoon paprika, 3/4 teaspoon salt, 1/2 teaspoon cayenne, 1/2 teaspoon black pepper, 1/2 teaspoon dried rosemary and 1/2 teaspoon dried  thyme. Woodstead Hot Anything & Everything Sauce is a sweet and spicy glaze I found in Upstate New York in Naples in the Finger Lakes (it’s made there locally and sold at the farmer’s markets and you can also get it at Arbor Hill winery). It’s key ingredients are ketchup, vinegar, sugar, mustard, salt, turmeric and paprika, orange juice, cayenne pepper, crushed red pepper and brown sugar. It’s super delicious on everything as a bbq glaze or a dip for chips or fries. If you can’t find the sauce or aren’t able to get it to make my recipe then I suggest finding a Carolina-style BBQ sauce (mustard and vinegar based) and mixing it with the honey and white balsamic vinegar per my recipe instructions and it would be just as delicious! Kinda like a Honey BBQ mixed with the spicy rub for an extra kick!

Sweet + Spicy Chicken Thighs w/ Roasted Broccolini

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Yield: Serves 4.

Serving Size: 1-2 chicken thighs and 3-4 broccolini stalks

These Sweet and Spicy Chicken Thighs are bathed in a gorgeous sticky, spicy and sweet glaze, made with Penzey's Northwoods Fire Rub and Woodstock Everything Sauce and a little honey and white balsamic vinegar for a great BBQ flavor with the convenience of the broiler. Served with an easy, healthy and delicious Roasted Broccolini with garlic on the side.

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon Penzey's Northwoods Fire Seasoning
  • 3/4 teaspoon salt
  • freshly ground black pepper, to taste
  • 8 skinless, boneless chicken thighs
  • 1/2 cup Woodstead Hot Anything & Everything Sauce
  • 2 tablespoons honey
  • 2 teaspoons white balsamic vinegar
  • Roasted Broccolini:
  • 2 tablespoons extra virgin olive oil
  • 2 bunches broccolini
  • 2 garlic cloves, chopped fine
  • 2-3 tablespoons extra virgin olive oil
  • Sea salt + fresh ground black pepper, to taste
  • Dash of red pepper flakes

Instructions

  1. Make the Sweet + Spicy Chicken:
  2. Preheat the broiler.
  3. Drizzle the olive oil and sprinkle the Penzey's Northwoods Fire Seasoning over the chicken thighs in a large mixing bowl and toss to coat evenly.
  4. Place the chicken on a broiler pan coated with cooking spray and broil for 5 minutes on each side.
  5. Combine the Woodstead Hot Anything + Everything sauce with the honey and white balsamic vinegar in a small bowl, stirring together well.
  6. Remove the chicken from the oven and brush half of the sauce over the chicken. Broil for 1 minute.
  7. Remove from the oven and turn the chicken over. Brush the chicken with the remaining sauce and broil for an additional minute or until the chicken is cooked through and has crispy edges.
  8. Drizzle or brush any additional sauce over the chicken if desired.
  9. Make the Roasted Broccolini:
  10. Preheat the oven to 375 degrees F.
  11. Trim 2 inches off the ends of the broccolini stems and place the broccolini in a single layer on a large sheet pan.
  12. Drizzle the broccolini with 2 tablespoons olive oil, sprinkle with minced garlic, sea salt and black pepper, a dash of red pepper flakes, and toss together to coat evenly.
  13. Roast broccolini for 15 minutes, until it is crisp-tender, and browned.
  14. Serve hot, immediately.

Notes

Chef's Notes: Penzey's Northwoods Fire Rub is a lovely spicy mixture of salt, chipotle, black pepper, Hungarian paprika, garlic, rosemary, thyme, black pepper, and cayenne. Chicken Zucchini Wild Mushroom Farro

 

Fall is here and all of a sudden the craving sets in – Comfort. Food. I love chicken casseroles with veggies and pasta and all that naughty creamy goodness. But I’ve been trying to cut down on sugar and white carbs lately so I thought I would make a healthier version of a chicken casserole to keep it light but satisfy my craving for a baked pot of goodness.

Chicken Zucchini Wild Mushroom Farro

I used an Italian Farro that I had on hand with Porcini mushrooms, and mixed in some sautéed zucchini, garlic and minced onions with a lovely Basil olive oil I have from 7Barrels.com that gives a fresh, herby flavor to go with the nuttiness of the farro. Farro is an organic semi-pearled whole grain that cooks easily and is great in place of white rice or pasta in casseroles. The good news is it’s high in protein and fiber and also low gluten and has a low glycemic index too (plus it’s super tasty too!).

Toasted Farro

First I sautéed some garlic and dried onion in the olive oil and then added the farro to toast it slightly to bring out the nutty warm flavors before adding the water and Sazon seasoning to cook the farro until plump and slightly chewy.

Then I sautéed the zucchini with more Basil olive oil and garlic until it was lightly browned.

Seasoned Chicken Breast

Next I sautéed some seasoned chicken breast in brown butter, and mixed the farro and zucchini mixture together with some grated Parmesan cheese.

Prepare the Casserole

After the chicken was lightly browned, I topped the farro and zucchini with the chicken breasts and drizzled a little bit of the brown butter on top and popped it in the oven for about 20-25 minutes until the casserole was baked through.

For finishing touches, I sprinkled some dried thyme, Wild Mushroom crystal sea salt, and some red pepper flakes on top.

The flavors are absolutely spectacular and it’s a healthy alternative to fat-laden creamy casseroles we’re use to. All it needs is a lovely dry white Italian wine (like a Pinot Grigio) to go with it and you’ve got a happy, Fall day. Enjoy.

Ingredients

  • Porcini Mushroom Farro:
  • 1 tablespoon Basil Olive Oil (7 Barrels)
  • ½ tablespoon minced garlic
  • 1 teaspoon minced dried onion
  • 1 9.1 oz package Tuscan Fields® Farro Ai Funghi
  • 1 small packet of Sazon seasoning
  • 3 cups water
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon Italian herb seasoning
  • Sautéed Zucchini:
  • 2 large zucchini, sliced in half lengthwise and cut into half moons
  • 2 tablespoons Basil Olive Oil (7Barrels)
  • 1 tablespoon minced garlic
  • Sautéed chicken:
  • 3 large chicken breasts (approx. 1.75-2 pounds)
  • 1 tablespoon seasoned salt or poultry seasoning (Instant Gourmet Original)
  • 2 tablespoons unsalted butter
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon Wild Mushroom crystal sea salt flakes (FalkSalt), for garnish
  • ½ tablespoon dried thyme, for garnish
  • 1 teaspoon dried red pepper flakes, for garnish

Instructions

  1. Prepare the Mushroom Farro:
  2. Preheat oven to 350 degrees.
  3. Heat the olive oil in a large Dutch oven and sauté the minced garlic for 1-2 minutes over medium heat. Add the minced dried onion and farro, and sauté for another 3-5 minutes to toast the farro.
  4. Add water and seasonings and bring to a boil. Reduce heat to a simmer and cook farro for about 18-20 minutes until farro is plump and slightly chewy.
  5. Remove from heat and set aside.
  6. Prepare the Zucchini:
  7. Heat olive oil in a large sauté pan over medium high heat and sauté garlic for one minute (be careful not to burn). Add zucchini and sauté for another 5-7 minutes until soft and lightly browned. Remove from heat and set aside.
  8. Saute the Chicken:
  9. Thoroughly wash and pat dry chicken breasts, rub seasoning well on both sides of the chicken.
  10. Reheat the large sauté pan over medium high heat, add butter and let melt and get slightly brown.
  11. Add chicken breasts and cook for approximately 4-5 minutes total, turning once, until chicken is lightly browned. Remove from heat and set aside.
  12. Prepare the casserole:
  13. Place the cooked farro and zucchini in a ceramic casserole. Sprinkle Parmesan cheese into the mixture and stir together well.
  14. Arrange the chicken breasts on top of the farro-zucchini-Parmesan mixture and drizzle some of the browned butter on top.
  15. Bake the casserole at 350 degrees uncovered, for about 20-25 minutes until chicken is no longer pink and cooked through.
  16. Garnish with Wild Mushroom crystal sea salt, dried thyme and red pepper flakes, and additional grated Parmesan cheese, if desired. Serve hot, with a green salad and a light, dry white wine such as Pinot Grigio.

Sunday Supper: Pan-Roasted Chicken w/ Rosemary & Caramelized Garlic | Roasted Lemon Asparagus Almondine

 

Rosemary Chicken AsparagusLast Sunday on a cold rainy night last week, I started craving some homey pan-roasted chicken. And since I had some fresh asparagus from the farmer’s market I wanted to make some roasted asparagus to go with.

I found a recipe on Food.com‘s website by Rachael Ray for Garlic Roasted Chicken with Rosemary and Lemon that looked pretty delicious and decided to make my own version by tweaking the recipe and the cooking method a little bit.

Pan-Roasted Rosemary Chicken

Rachael’s recipe uses boneless chicken breasts and lemon along with the rosemary and garlic, and is roasted in the oven for about 25 minutes. It’s a simple recipe but I wanted to change it up a bit by using boneless chicken thighs for a richer, meatier flavor, and I added some paprika and cayenne pepper for some extra zing and savory flavor. I started out by pan-searing the chicken and garlic cloves in a Rosemary-Garlic infused olive oil for 20 minutes until they got caramelized and browned, then added the rosemary and finished the dish in the oven for another 20 minutes or so until cooked through and a lovely, golden brown. Then I made a savory pan sauce made with chicken broth, wine, lemon juice and butter to top the chicken, giving it a silky luscious sauce to bathe in.

I also made some lovely roasted asparagus to go with it simply made with olive oil, salt and pepper, some fresh lemon juice, sliced toasted almonds and a dash of dill seasoning and lemon zest to give it some bright flavor at the end.

The result? Crispy, savory chicken with tons of roasted caramel-y flavor and a fresh, lemony side dish of spring green asparagus topped with crunchy almonds and a hint of dill. Perfect for a Spring Sunday Supper!

Ingredients

  • Pan-Roasted Chicken with Rosemary and Caramelized Garlic:
  • 2 tablespoons Rosemary Garlic infused olive oil
  • 4-5 boneless chicken thighs
  • 6-8 cloves of garlic, unpeeled
  • 2-3 sprigs of fresh rosemary
  • Sea salt and fresh ground black pepper, to taste
  • Pinch of cayenne pepper
  • Pinch of sweet paprika
  • 1/4 cup white wine
  • 1/2 cup chicken broth
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons butter
  • Roasted Lemon Asparagus Almondine:
  • 1 bunch of fresh asparagus, thick woody stems trimmed
  • 2 tablespoons olive oil
  • Sea salt
  • White pepper
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon fresh or dried dill seasoning
  • 1/2 cup unsalted almonds, thin sliced
  • 1 tablespoon lemon zest

Instructions

  1. Pan-Roasted Chicken w/ Rosemary & Caramelized Garlic:
  2. Preheat oven to 475 degrees and heat olive oil in a cast iron or large skillet.
  3. Season chicken thighs with salt and pepper, cayenne and paprika, and sear over high heat skin side down for about 2-3 minutes. Lower heat to medium-high, add the garlic cloves and rosemary sprigs; cook for another 10 minutes until golden brown.
  4. Turn off the heat, turn chicken over in the skillet, baste with some of the pan juices, and broil in the oven for another 10-12 minutes until chicken is crispy and cooked through.
  5. Turn chicken over once more (skin side up) and continue cooking for another 5 minutes or so.
  6. Remove chicken, garlic and rosemary sprigs from the skillet, reserving the drippings in the pan. Add chicken broth, white wine, lemon juice and bring to a boil, then reduce to a simmer until sauce has reduced by half. Swirl in the butter at the end to make a silky sauce. Serve sauce over the chicken and caramelized garlic.
  7. Roasted Asparagus Almondine:
  8. Preheat oven to 425 degrees.
  9. Wash and trim asparagus and place on a roasting sheet or in a baking dish.
  10. Drizzle with olive oil, sprinkle with salt and pepper, add lemon juice and dill. Add sliced almonds over the asparagus
  11. Roast in the oven for 7-10 minutes until asparagus and almonds are a toasty, golden brown. Sprinkle some additional lemon zest for garnish, if desired, and serve immediately with the Pan-Roasted Rosemary Chicken and Caramelized Garlic.

A bright, savory Spring chicken dish to celebrate the season

Prosciutto-Sage-Provolone Chicken

I love Spring. There’s nothing better than a dose of gorgeous sunshine, cherry blossoms in bloom, and the tempting promises of Summer on the way. It’s the perfect time of year to throw open the windows, do some Spring cleaning and celebrate new beginnings. I also love the bountiful selection of fresh seasonal herbs and vegetables that come along with it.

Asparagus is in its prime now, so I wanted to create a light and savory chicken dish to complement it for an easy, healthy weeknight dinner – a twist on classic Chicken Saltimbocca with the addition of some cheesy goodness and bright lemony flavor.

I picked up some fresh lemons, thin chicken breast cutlets at the market along with some Italian Prosciutto, fresh sage and Provolone cheese to stuff them with. To start, I laid out the chicken breasts in a large baking pan and layered the ingredients on top – first a slice of Prosciutto topped with a few sage leaves and thinly sliced cheese. I then folded them over and secured them with toothpicks and seared them in a pan in olive oil to get a nice golden brown crust. Once the chicken breasts were browned, I set them back in the pan, poured the juices on top and finished in the oven for about 15 minutes.

The best part of this dish is the buttery lemon wine sauce for serving. I sliced up some garlic and sautéed it in olive oil for a minute or two, then added some chicken broth, white wine and let it come to a boil, then reduced the heat and simmered it down to reduce the sauce, stirred in some lemon juice, a nob of butter and set the sauce aside for drizzling on the chicken later.

While the chicken was roasting in the oven, I blanched the asparagus for a minute or two and then tossed it with sliced garlic, olive oil and sea salt, roasting it for about 10 minutes or so until tender. So easy and soooo good!

Once the chicken and asparagus were done roasting, I served them on a plate and finished them off with the buttery lemon wine sauce. If you want to add a starch to the meal, simply cook up some orzo, pasta or  some crusty bread to go with it. You can also use Fontina cheese for a slightly different flavor, or to make it a vegetarian dish, omit the prosciutto and substitute some sautéed mushrooms or spinach and prepare the same way. Keep it light with a side salad and a lemony vinaigrette, and serve with a glass of Pinot Grigio or Pinot Gris.

Prosciutto Sage Provolone Stuffed Chicken with Roasted Garlic Asparagus

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Yield: Serves 4 to 6

Ingredients

  • 4-6 chicken breast cutlets
  • 4-6 thin slices of Italian Prosciutto
  • 12 fresh sage leaves
  • 4-6 slices of Provolone or Fontina cheese
  • 2-3 tablespoons of olive oil
  • Sea salt and freshly ground black pepper, to taste
  • 2 cloves of garlic, sliced plus 1 clove minced (for sauce)
  • 1 bunch of asparagus
  • ½ cup chicken broth
  • ½ cup dry white wine (Pinot Grigio or Pinot Gris)
  • juice from half a lemon, plus 1 tablespoon zest for garnish
  • 1 tablespoon butter
  • lemon wedges and additional torn sage leaves for garnish

Instructions

  1. Preheat oven to 350 degrees.
  2. Spread out the chicken cutlets flat in a large baking dish, and season with sea salt and pepper, to taste.
  3. Layer on top of each chicken breast a slice of prosciutto, two sage leaves, and a slice of provolone or fontina cheese, then fold over the chicken in half and secure with a toothpick to secure.
  4. Heat 1 tablespoons of olive oil in a large sauté pan over medium-high and sauté chicken breasts approximately 1-2 minutes per side until golden brown.
  5. Remove the chicken and juices from pan and place back into the baking dish and roast in the oven for another 15 minutes until cooked through. You might want to baste the chicken in its juices once or twice to make sure the chicken doesn’t dry out in the oven.
  6. Meanwhile, slice 2 cloves of fresh garlic, mince 1 clove and set aside. Trim the ends off the asparagus and blanch in boiling salted water in a large pot for about 1 minute. Drain, place asparagus in a baking dish and drizzle with a tablespoon of olive oil, a sprinkle of sea salt and pepper and sliced garlic. Place in oven and roast for about 10-15 minutes until fork tender and slightly browned (be careful not to overcook or the asparagus will get dark and mushy – aim for tender yet crisp and green).
  7. In the same sauté pan for the chicken, heat another tablespoon of olive oil. Sauté the additional clove of minced garlic for about 1 minute until lightly golden and soft. Add the chicken broth, white wine, lemon juice and bring to a boil, then lower the heat to a simmer. . Let sauce reduce to about half, then add 1 tablespoon of butter, swirling in to finish the sauce.
  8. When chicken and asparagus are done roasting, plate them and top off with the lemon butter wine sauce.
  9. Garnish with lemon wedges, torn sage leaves, lemon zest, and salt and pepper to taste. Serve with a side of cooked orzo or pasta, crusty bread or a green salad with a lemon vinaigrette and a dry white wine, such as Pinot Grigio.

Chicken French is an amazing dish that is popular in my hometown in Rochester, NY and on almost every menu. The Italian-American immigrants first introduced this dish in NYC and then migrated Upstate. The recipe also known as Chicken Francaise, uses lightly-floured chicken cutlets, which are then coated with a parmesan cheese and egg batter, then sauteed until golden brown. The luscious sauce is made with garlic, butter, lemon, white wine or sherry, and parsley which is served over the top of the golden brown chicken. You can serve the dish over pasta (my favorite is a linguine) or rice or a green veggie, and I decided to serve this with broccolini, a Chinese broccoli that is similar to Broccoli Rabe, and topped it with the lemon butter sauce and an extra splash of fresh lemon juice for a light and healthy dinner.

This dish has a lovely tangy, buttery flavor with the lemon, wine and garlic, and the flour coating is super light as I made it with an ultra-fine flour (Wegman’s Pan-Searing Flour, or you could use Wondra flour), and I seasoned it with salt and pepper and a hint of cayenne. If you want to use sherry instead of a white wine, this will give you a sweeter flavor to the sauce. I made my sauce with a Marlborough New Zealand Sauvignon Blanc which is light and fruity and gives it a nice semi-sweet tangy flavor.

Serve the chicken and broccolini with some crusty french bread or some fresh pasta (i love linguine with more lemon-butter sauce, parmesan cheese and parsley over the top!) and a glass of dry white wine like Sauvignon Blanc or Pinto Grigio. Enjoy!

Mince the parsley for the egg, cheese and parsley mix.

Prep the wet and dry ingredients

Prep the wet and dry ingredients to dip the chicken in (flour first, egg-cheese-parsley mixture second).

Saute the chicken in olive oil for approx. 6 minutes on each side until golden brown.

Saute the chicken in olive oil in a large saute pan over medium heat for approx. 4 minutes on one side.

Flip chicken over and saute another 6 minutes until golden brown.

Flip chicken over and saute another 4 minutes until golden brown. Remove from pan and set aside, covered in a foil tent. Discard the cooking oil except for 1 tablespoon.

Remove chicken and set aside. Saute minced garlic for 1-2 minutes.

Saute the minced garlic on medium low for about a minute until lightly browned, being careful not to burn.

Add wine, and bring to a boil.

Add the wine, scraping up brown bits from the bottom of the pan, and bring to a boil.

Add broth and lemon juice and turn heat to high, bringing to a boil.

Add the chicken broth and lemon juice and let cook for approx. 5-7 minutes to reduce liquid by half. Stir in the cold butter and red pepper flakes (if using).

Return chicken to the pan and bring to a boil, cooking for another 5 minutes to let liquid reduce and infuse flavors in the chicken.

Return chicken to the pan and bring to a boil, reduce heat to a simmer and cook for another 4-5 minutes to let liquid reduce further and infuse flavors in the chicken. Throw in some extra chopped parsley. Remove from heat.

Meanwhile, bring a large pot of water to a boil. Insert steamer basket with broccolini and steam covered for about 5 minutes.

Lemon Broccolini

Remove cover and let cook over boiling water for another 5 minutes or so, until broccolini is fork tender but still bright green.

Plate the chicken and broccolini and spoon the lemon-wine-garlic butter sauce over the top of both. Season with additional salt and pepper to taste.

Rochester-Style Chicken French & Lemon Broccolini

Prep Time: 15 minutes

Cook Time: 30 minutes

This is an amazing dish that is popular in my hometown in Upstate Rochester, NY. The Italian-American immigrants first introduced this dish in NYC and then migrated Upstate. The recipe stems from the French Veal Francaise or Chicken Francaise dish, which uses lightly-floured thin veal or chicken cutlets, which are then coated with a parsley-parmesan cheese-egg mixture and sauteed until golden brown.

The luscious sauce is made with garlic, butter, lemon, white wine or sherry, and parsley which is served over the top of the golden brown chicken. I decided to serve this with steamed broccolini, a Chinese broccoli that is similar to Broccoli Rabe, and then topped it with the lemon butter sauce for a fresh and healthy Sunday dinner. It has a lovely tangy and buttery flavor with the lemon, wine and garlic, and the coating is super light as I made it with an ultra-fine flour (Wegman's Pan-Searing Flour) or you could use Wondra, or a regular flour then season it with salt and pepper and a hint of cayenne.

If you want to use sherry instead of a white wine, this will also give you a sweeter flavor to the sauce. I made this with a Marlborough New Zealand Sauvignon Blanc which is light and fruity and gives it a nice semi-sweet tangy flavor.

Ingredients

  • CHICKEN FRENCH:
  • 1/4 cup olive oil/canola oil blend for sauteing (I used Colavita Garlic Oil Blend)
  • 1 1/2 pounds boneless, skinless chicken breast cutlets
  • 2-3 eggs
  • 1/4 cup shredded Parmigiano Reggiano cheese
  • Kosher salt and fresh ground black pepper
  • Dash of cayenne pepper (optional)
  • 1 tablespoon fresh parsley, finely chopped
  • 1/2 cup of superfine flour (Wegmans Pan Searing flour or Wondra)
  • LEMON BUTTER WINE SAUCE:
  • 1-2 garlic cloves, finely minced
  • 1/2 cup white wine (or sherry for a sweeter flavor)
  • 1 cup chicken broth
  • Juice from 1 1/2 lemons (about 1/4 cup)
  • 1 teaspoon red pepper flakes (optional)
  • 2 tablespoons cold butter, cut into pieces
  • Lemon wedges, for garnish
  • 1-2 tablespoons fresh chopped parsley, for garnish
  • BROCCOLINI:
  • 1 bunch broccolini, trimmed
  • Lemon Butter Wine sauce (see above)
  • Fresh lemon juice and salt and pepper, for garnish

Instructions

  1. CHICKEN FRENCH:
  2. Heat oil in a large non-stick saute pan over medium heat.
  3. Meanwhile, whisk together eggs, cheese, salt and pepper, cayenne (if using) and fresh parsley in a large mixing bowl.
  4. Place flour in another flat bowl and season with salt and pepper to taste.
  5. Rinse and pat dry chicken breasts, then dredge each one in flour first (left hand), then egg mixture (right hand).
  6. Place chicken into the heated saute pan and cook for 4 minutes on one side. Flip chicken over and saute for another 4 minutes until golden brown.
  7. Remove from pan and set aside, covered with a foil tent.
  8. LEMON BUTTER SAUCE:
  9. In the same skillet, saute the minced garlic for 1 minute, being careful not to burn.
  10. Add the wine and bring liquid to a boil over high heat, scraping up the brown bits in the pan.
  11. Pour in the chicken broth and lemon juice and red pepper flakes (if using) and let reduce by half, another 5-7 minutes.
  12. Stir in the cold butter and whisk until it melts and creates a velvety sauce and consistency.
  13. Reduce the heat, and add the cooked chicken back into the pan with the sauce, let simmer another 4-5 minutes.
  14. Place chicken on serving plate with the steamed broccolini (and/or cooked pasta) and spoon the lemon butter sauce over the top of the dish.
  15. Garnish with lemon wedges and additional chopped parsley if desired.
  16. BROCCOLINI:
  17. Steam broccolini for about 5 minutes, covered. Remove lid and steam for another 5 minutes until fork tender but still bright green.
  18. Top broccolini with Lemon Butter sauce, additional lemon, salt and pepper to taste.

I recently picked up a cookbook at a conference called Recipes Worth Sharing by Favorite Recipes Press. It’s a collection of the most prized, tried-and-true tested home cook recipes from some of the most popular regional community cookbooks and charitable organizations in America. I remember my Mom and Grandmother would occasionally cook from these spiral-bound community cookbooks and they usually made some type of yummy salad or casserole dish for a Sunday family brunch or neighborhood potluck supper. Usually these cookbooks go unappreciated or overlooked, but this one deserves to be noticed.

The reason I picked up this book was mainly because of the recipes themselves, not the beautiful photos which normally are what grab my attention when I pick up or buy a cookbook. The recipes are a collection of delicious comfort food, down-home favorites and are not particularly complicated to make but delicious all the same. A lot of these recipes remind of the Southern cooking I experienced and learned to make when I lived in Atlanta and made trips to Savannah, Charleston and New Orleans – lots of seafood, fresh veggies and salads, grilled and roasted meats, pasta dishes, homemade breads, pies and desserts, and of course the delicious creamy casseroles made out of basically EVERYTHING under the sun. The foods and recipes in this book are the ones that your Grandmother and Mother probably made too, and passed along to their friends at church, bridge club or the local junior league. Fussy and stuffy recipes they are not, but simple, delicious and comforting – they are indeed.

The recipes in the book are organized in typical categories: Appetizers and Beverages, Breads and Brunch, Soups, Salads and Sandwiches, Entrees, Fish and Seafood, Vegetables and Sides, Cakes, Pies and Cookies, Desserts, and Kid’s Recipes. I’ve gone through the book and picked out a sampling of my favorite recipes below (a few from each category) to share with you. Beach Bites

8 ounces cream cheese, softened
2 tablespoons milk
1/2 teaspoon horseradish
1 tablespoon melted butter
1 tablespoon white wine
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup cooked crab meat, drained
2 scallions, chopped
1 cup cooked shrimp, cut into small pieces
40 frozen phyllo cups, thawed
Grated parmesan cheese
Sliced almonds

Blend the cream cheese, milk, horseradish, butter, wine, salt and pepper in a mixing bowl. Fold in the crab meat, scallions and shrimp. Fill the phyllo cups with the seafood mixture. Place on a baking sheet. Sprinkle with the cheese and almonds. Bake at 400 degrees for 10 to 12 minutes or until heated through.

Makes 40.

Savannah Sin

2 cups shredded Cheddar cheese
8 ounces cream cheese, softened
1 1/2 cups sour cream
1/2 cup chopped cooked ham
1/3 cup chopped green onions
1/3 cup chopped green chilies
1/8 teaspoon Worcestershire sauce
1 (1-pound) round loaf French or Sourdough bread

Combine the cheddar cheese, cream cheese, sour cream, ham, green onions, green chilies and Worcestershire sauce in a bowl and mix well. Cut a thin slice from the top of the bread loaf; reserve. Remove the center carefully, leaving a shell. Cut the bread from the center into 1-inch cubes. Fill the bread shell with the dip; top with the reserved top. Wrap in foil. Bake at 350 degrees for 1 hour. Serve with the bread cubes, crackers or chips.

Serves 20.

Pirate’s Milk Punch

1 cup sugar
1 cup bourbon (not sour mash)
1 cup French brandy (Cognac)
1 cup vodka
2 ounces pure vanilla extract
1 teaspoon freshly grated nutmeg
Whole milk

Combine the sugar, bourbon, brandy and vodka in a gallon container with a lid. An empty gallon milk jug will work. Secure the lid and shake vigorously until the sugar is dissolved. Add the vanilla and nutmeg; shake well. Add the milk, 2 cups at a time, until the jug is full; shaking well after each addition. Chill for 8 to 24 hours before serving. Serve very cold or over ice in old-fashioned glasses. Sprinkle freshly grated nutmeg over the top before serving.

Makes 1 gallon (16 servings).

Eggs “Bama”-dict

Eggs:
6 English muffins, split into halves
Butter to taste
12 slices Canadian bacon
15 eggs
1 cup (4 ounces) shredded sharp Cheddar cheese
Salt and pepper to taste

Hollandaise sauce:
4 egg yolks
1 tablespoon lemon juice
1/2 teaspoon salt
Dash of Tabasco sauce
1/2 cup (1 stick) butter

To prepare the eggs, toast the English muffin halves and spread with butter. Brown the Canadian bacon in a skillet; drain. Whisk the eggs in a bowl until light and frothy. Add the cheese, salt and pepper and mix well. Arrange the muffin halves in the bottom of a baking dish, split side up. Top each muffin half with a slice of Canadian bacon. Pour the egg mixture evenly over the Canadian bacon. Bake at 350 degrees for 20 to 25 minutes or until eggs are set. Let stand for 5 minutes before serving. Slice into squares around the muffin halves.

To prepare the sauce, combine the egg yolks, lemon juice, salt and Tabasco sauce in a blender and process until smooth. Bring the butter to a simmer in a saucepan. Remove from the heat and immediately add to the egg yolk mixture in a find stream, processing constantly at high speed until combined.

To serve, top each serving with a spoonful of Hollandaise sauce. Note: The sauce can be kept warm in a baking dish placed in a pan of hot water.

White Spanish Gazpacho

3 cucumbers, peeled and cubed
1 small garlic clove
3 (14 ounce) cans chicken broth
3 cups sour cream
3 tablespoons white vinegar
2 teaspoons salt, or to taste
4 tomatoes, chopped
1/2 cup chopped fresh parsley
1/2 cup sliced green onions
3/4 cup sliced almonds, toasted and salted
Croutons

Puree the cucumbers and garlic in a blender. Pour into a bowl. Whisk in a small amount of chicken broth until smooth. Whisk in remaining chicken broth gradually. Whisk the cucumber mixture gradually inot the sour cream in a bowl. Stir in the vinegar and salt. Chill, covered, until cold. Ladle into 6 chilled soup bowls. Top each with equal portions of the tomatoes, parsley, green onions, almonds and croutons.

Serves 6.

Sweet Tart Salad

Poppy Seed Dressing:
1/2 cup sugar
1/2 cup vegetable oil
1/4 cup apple cider vinegar
1 tablespoon poppy seeds
1/4 teaspoon paprika
1/4 teaspoon Worcestershire sauce

Salad:
10 ounces salad greens or 16 cups torn lettuce
4 cups chopped Granny Smith apples
2 cups garlic bagel chips, crushed
4 ounces blue cheese, crumbled
1/4 cup chopped pecans
1 tablespoon pepper

For the dressing, combine the sugar, oil, vinegar, poppy seeds, paprika and Worcestershire sauce in a jar with a tight-fitting lid and seal tightly. Shake to mix. Chill, covered, in the refrigerator until serving time. The flavor is enhanced if made in advance and chilled.

For the salad, mix the salad greens, apples, bagel chips, cheese, pecans, and pepper in a salad bowl. Add the dressing and toss to coat. Serve immediately.

Toasted Brie Chicken Tea Sandwiches

2 pounds boneless skinless chicken breasts, cubed
2 cups chicken broth
1 cup mayonnaise
1 cup red grapes, sliced
3 ribs celery, finely chopped
2 teaspoons Italian herbs
2 teaspoons pepper
1 teaspoon onion powder
6 to 12 croissants
2 (8 ounce) wheels Brie cheese, rind removed and cheese sliced

Preheat oven to 375 degrees. Combine the chicken and broth in a roasting pan. Roast for 12 to 18 minutes or until cooked through. Do not allow the chicken to brown. Drain and discard the broth. Place the chicken in a large bowl and let stand until cool. Mix the mayonnaise, grapes, celery, Italian herbs, pepper and onion powder in a bowl. Stir in the chicken. Cut each croissant into halves crosswise and cut each half into halves horizontally. Toast the croissants. Place a slice of Brie on half of the croissant pieces. Top with the chicken mixture and the remaining croissant pieces.

Makes 12 to 14 sandwiches.

Seurat Salad

1 (14 ounce) can artichoke hearts, drained and sliced
1 (14 ounce) can hearts of palm, drained and sliced
1/4 cup chopped green onions
1 tablespoons finely chopped fresh parsley
6 tablespoons salad oil
2 tablespoons fresh lemon juice
Juice of 2 garlic cloves
4 ounces bleu cheese, crumbled
Salt and pepper to taste
Romaine leaves
2 large tomatoes, cut into 12 slices
1/4 cup crumbled crisp-cooked bacon

Combine the artichokes, hearts of palm, green onions and parsley in a bowl and mix gently. Add a mixture of the salad oil, lemon juice and garlic juice and bleu cheese; toss to mix. Season with salt and pepper. Chill, covered, in the refrigerator until serving time. The salad may be prepared to this point one day in advance. Line 6 chilled salad plates with romaine. Arrange 2 tomato slices on each salad plate. Top with the artichoke mixture. Sprinkle with the bacon just before serving.

Serves 8.

Father Art’s Pozole

1 tablespoon vegetable oil
1 (2-pound) pork shoulder, trimmed and cut into 1 1/2-inch cubes
1 large onion, minced
4 garlic cloves, minced
3 cups chicken broth
10 tomatillos, husked, cored and cut into quarters
1 bunch cilantro, stems removed
1 (15-ounce) can hominy, drained and rinsed
2 whole dried red chiles, stems removed
Salt and pepper to taste

Heat the oil in a large heavy skillet over high heat. Add the pork and saute until brown on all sides. Reduce the heat to medium and add the onion. Cook for 10 minutes or until the onion is tender, stirring occasionally. Add the garlic and cook for 1 minute. Combine the pork mixture with 3 cups of chicken broth in a large saucepan. Simmer for 1 1/2 hours or until the pork is very tender. Combine the remaining 2 cups chicken broth with the tomatillos and cilantro in a blender and process until pureed. Add the puree, hominy and red chiles to the pork mixture and simmer for 15 minutes. Remove and discard the chiles and season with salt and pepper. Ladle into bowls and serve with chopped onion, shredded lettuce, thinly sliced radishes, cheese, cilantro and lime wedges.

Note: Pozole can be prepared a day or two in advance and chilled, covered, until needed. Reheat over low heat to serve.

Oven-Fried Chicken

6 whole chicken breasts, split and skinned
3 1/2 cups ice water
1 cup nonfat plain yogurt
1 cup Italian-seasoned breadcrumbs
1 cup flour
1 tablespoon Old Bay seasoning
1/4 teaspoon garlic powder
1/2 teaspoon Creole or Cajun seasoning
1/2 teaspoon thyme
1/2 teaspoon basil
1/2 teaspoon oregano
1/8 teaspoon freshly ground black pepper
Cayenne to taste

Spray a baking sheet 3 times with a nonstick cooking spray. Rinse the chicken. Place the chicken in the ice water in a bowl. Spoon the yogurt into a medium bowl. Combine the bread crumbs, flour, Old Bay seasoning, garlic powder, Creole seasoning, thyme, basil, oregano, black pepper and cayenne in a sealable plastic bag, shaking to mix. Remove 2 pieces of chicken from the water; coat with yogurt. Place the chicken in the plastic bag with seasonings, shaking to coat. Arrange on the prepared baking sheet. Repeat the process with the remaining chicken. Spray the chicken lightly with nonstick cooking spray. Place the baking sheet on the bottom oven rack. Bake at 400 degrees for 1 hour, turning every 20 minutes to assure even browning.

Crabmeat Mornay

1 stick butter
1 small bunch green onions, chopped
1/2 cup finely chopped parsley
2 tablespoons flour
1 pint heavy cream
1/2 pound grated Swiss cheese
1 tablespoon sherry wine
Red pepper to taste
Salt to taste
1 pound white crabmeat

Melt butter in heavy pot and saute onions and parsley. Blend in flour, cream and cheese, until cheese is melted. Add other ingredients and gently fold in crab meat. This may be served in a chafing dish with Melba toast or in puff pastry shells.

Baked Heirloom Beets with Balsamic Vinegar

1 pound of beets various colors, leaves and stems trimmed (golf ball size)
10 garlic cloves, pressed
1/4 cup fresh marjoram or oregano
Salt and pepper to taste
1/4 cup balsamic vinegar
1/3 cup olive oil

Preheat the oven to 400 degrees. Arrange the beets, garlic, and marjoram on a sheet of foil large enough to enclose. Season generously with salt and pepper and bring the sides of the foil up. Pour a mixture of the vinegar and olive oil over the beet mixture and seal the foil.

Bake for 1 hour or until the beets are tender. Let stand until cool enough to handle. Peel and slice or chop the beets, reserving the juices. Serve the beets with the reserved juices over watercress or mixed salad greens or as a side to grilled meats. Serve at room temperature if desired.

Church Street Squash

2 pounds yellow or zucchini squash (or medley of both)
1 medium onion, chopped
4 tablespoons butter, divided
3/4 cup sharp Cheddar cheese, grated
1 cup sour cream
1 teaspoon salt
1/2 teaspoon pepper
1 egg, whisked
1/2 cup Pepperidge Farm stuffing mix, plain
1 tablespoon paprika

Cook squash until tender. Mash with fork after draining. Let stand until cool. Saute onion in 2 tablespoons butter until yellow, not brown. Mix squash, onion, cheese, sour cream, salt, pepper and egg. Gently pour into greased casserole. Sprinkle stuffing mix on top and dot with 2 tablespoons butter. Sprinkle paprika on top. Cook, uncovered 30 minutes at 350 degrees or until bubbly. It does freeze well after cooking and covered.

Serves 6.

Fresh Peach Crisp

1 cup flour
1/2 cup sugar
1/2 cup light brown sugar, firmly packed
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup margarine or butter
4 cups fresh peaches, sliced
1 tablespoon lemon juice
2 tablespoons water

Combine flour, sugar, brown sugar, salt and cinnamon; cut in margarine or butter with 2 knives or pastry blender until mixture resembles coarse cornmeal. Combine peaches, lemon juice and water; spoon into a greased 9x9x1 3/4 inch baking dish. Sprinkle flour mixture over peaches. Bake, covered, at 350 degrees for 15 minutes. Remove cover and bake 35 to 45 minutes longer.

Serves 6.

Lochness Bars

1/2 cup margarine
1 (6 ounce) package chocolate chips
1 cup peanut butter
1 (10 1/2 ounce) package mini marshmallows
4 1/2 cups crispy rice cereal
1 cup peanuts, optional

Frosting:
1 (6 ounce) package chocolate chips
1 (6 ounce) package butterscotch chips

Combine margarine, chocolate chips, and peanut butter in a saucepan. Cook over low heat until melted, stirring until smooth. Add marshmallows and stir until melted. Blend in cereal and peanuts. Spread in 13x9x2 inch baking pan. Chill until firm. Prepare frosting by melting chocolate chips and butterscotch chips together, blending until smooth. Spread on chilled bars. Cut into 2×1-inch bars.

Makes 60 bars.
