{Things I Love} :: July 2020

Well it’s already mid-Summer and it’s time again for my Things I Love list for July! What a strange year it has been so far – I can’t even believe it’s halfway over (thank goodness!) – BUT at least it’s sunny and my fav time of year so that’s a positive.

I’m always on the lookout for BOMB recipes, cool products, great reading, lively entertainment, some positive motivation and all-around fun, unique and amazing things to keep me happy.

Here’s a shortlist of goodies for you to try, taste, see, read, cook and do this month – I hope you’re all enjoying your Summer so far with lots of great food and wine, BBQ parties and cocktails, outdoor adventures, beaches, campfires, road trips, and some great reads and Netflix obsessions along the way.

Hedge’s Nine Mile Point restaurant

I absolutely love this place! Located right on Lake Ontario in Upstate NY (Webster) – this is the perfect spot to go in the Summer for fine dining, spirits and entertainment! I highly recommend the Lobster bisque, their signature Chicken French and the Sesame-Crusted Ahi Tuna seared to perfection and served with a teriyaki dipping sauce, garlic mashed potatoes and sautéed french green beans. The atmosphere is beautiful and elegant with a nautically-inspired interior design (with two levels and event spaces as well), an outdoor seated patio for dining, and a huge lawn with a gazebo and Adirondack chairs and picnic tables to simply sit and gaze at the gorgeous lake and watch the sunset while sipping on a cocktail or glass of wine. Must try!

Having lived in South Florida for awhile I have to say I’m a sucker for palm trees, sunshine and the beach. What is a Florida Room you may ask? According to Southern Living, they are sun-filled sanctuaries that were popularized in the 50s and 60s as a place homeowners could escape to the outdoors without really going outdoors. It’s basically a covered sunroom or conservatory with lots of light, plants, flowers and trees and all-weather or wicker furniture to lay back, cozy up with a good book, a cup of coffee or an iced tea or a frozen margarita and CHILLAX. Now that’s right up my alley!

Welcome to my June 2020 edition of Things I Love! A collection of my current obsessions and things I’m crushing on right now that are downright awesome and amazing and worth a shoutout. June is one of my favorite months and for good reason! Grilling season, fresh produce from the farmer’s markets, trips to the lake, beaches and parks, picnics, long walks, al fresco dining, seafood, fresh salads, outdoor concerts, sunsets and sunrises, and all around relaxation mode on the rise!

Based on the books mentioned above, this hit series on Starz is my new obsession! A gorgeous love story set in the Scottish Highlands between Jamie and Claire Fraser when she travels in time back to 1743 and they fall in love while fighting their way through Scotland against the British, then on to France, the Caribbean and finally the American colonies for a new life together.  What an adventure! Beautiful scenery, music, visuals, action, romance and drama all bundled into the best show I’ve ever seen in my life. I have to admit I kinda have a slight *girlcrush* on Caitriona Balfe who plays Claire…and Sam Heughan!?? Need I say more? GORGEOUSNESS all around.

The Last Kingdom, Netflix

Set in the Middle Ages circa 900s, the great (and GORGEOUS HUNKY Alexander Dreymon starring as the lead warrior Uhtred (living and fighting the Vikings as both a Saxon and a Dane) trying to regain his born right title as King of Bebbanburg, England while under oath King Alfred. Full of action, history, amazing costumes, and drama.

I Know This Much Is True, HBO

Based on the bestselling novel by Wally Lamb, written and directed by Derek Cianfrance, and starring Mark Ruffalo, this limited series follows Dominick Birdsey as he struggles to care for his twin brother, Thomas, while discovering the truth about his own family history. Sad, touching and tense drama.

Run, HBO

Written and produced by Vicky Jones, half-hour comedy series RUN follows a woman whose humdrum life is thrown upside down when she receives a text from her college sweetheart inviting her to drop everything and meet him in New York to fulfill the pact they made 17 years previously. Quirky, witty and fun.

Versailles, Netflix

A thrilling historical drama about King Louis XIV of France when he commissions his lavish palace of Versailles that becomes a fierce battleground for love and politics — and a gilded prison for nobility. Plenty of plot twists and drama, romance and scenery to keep you occupied through the quarantine wishing for a charmed and privileged court life lived during this opulent Renaissance period.

Mansfield Park, Amazon Prime

A lovely 1800s period drama set in England based on Jane Austen’s novel about a humble, poor Fanny Price who is shipped off to stay at her rich Aunt’s estate, Mansfield Park where she finds love and the secrets of the upper class.

A beautiful park set south of Syracuse in Upstate NY Green Lakes is where I spent Memorial Day Weekend with my family and friends. The lake has stunning bright green aqua blue water surrounded by a 3 mile nature trail and a beach and park for chillin’ and grillin’. Amazing! Highland Park Lilac Festival

Every year Rochester holds their famous Lilac Festival in Highland Park. The flowers are absolutely gorgeous and smell divine! Unfortunately they didn’t have the full on festival with arts, crafts, music and food due to COVID-19 but we definitely took the time to stop and smell the lilacs.

I discovered this lovely little beach and park last weekend while taking a drive along Lake Ontario with my niece. The park had super pretty blue water and crashing waves along the beach and it was the perfect way to spend a Sunday afternoon. Peaceful vibes all around.

Located in the heart of the Finger Lakes in Geneva NY lies this stunning and romantic castle surrounded by its wine vineyards. They have three hotels to stay for a short or long visit, a spa, two restaurants, wine, cider and craft beer tastings. I have not been to visit yet but this place is definitely on my bucket list of places to go and see this Summer! REDD Restaurant, Rochester NY – This stunning Wine Country based restaurant is the brainchild of Richard Reddington, a Rochester native and James Beard award winning Chef. They have a great wine list, signature cocktails and delicious farm to table food such as pizzas, salads, pastas, house-made baked goods and more.

New York Beer Project, Victor NY – Designed to recreate the most famous Beer Hall in NYC circa 1870 known as The Atlantic Garden, this glorious space celebrates American craftsmanship at its finest. They have a gastropub, craft cocktails, brunch, a rooftop terrace and loft, a beer garden and taproom all under one roof. Their menu is a celebration of food and drink from all over NY state from Buffalo, to Albany to Long Island to NYC..and they have special beer and food pairing menus created by their culinary team and master brewer Jason Crosset to sample the best flavors together while dining and drinking.

Cheeseburger Salad w/ Sriracha Ranch Dressing

#Spring is here and #Summer is on the way – so here’s to eating lighter and healthier. My goal is to start eating and cooking more low-carb and healthy recipes over the next few weeks and months. (Enough of this #quarantinecooking and eating the whole closet full of carbs stuff already!)

Steakhouse Elite Grassfed Burgers

This Cheeseburger Salad is a mountain of deliciousness, and its #lowcarb #glutenfree, #keto, #whole30 and #atkins-friendly to boot! Made with juicy grilled Steakhouse Elite Grass-Fed Burgers (one of my clients and my favorite burgers in the world!) – they’re thick, juicy, 90% lean, grass-fed and absolutely delicious! 

Steakhouse Elite Grass Fed Burgers

Simply sprinkle the burgers with a little bit of olive oil, salt and pepper Montreal Steak seasoning and turn a grill up to high heat. 

Grill burgers

Grill the burgers for about 8-10 minutes for medium-rare (less or more to your liking and temperature.) These burgers are really thick and juicy so let sit for at least 5-10 minutes to let the juices settle while making the salad so you don’t lose all that goodness and tasty flavor when slicing them. 

Cooked Bacon

While you are grilling the burgers, cook the bacon in the oven on a wire rack over a foil-lined sheet pan for 20 minutes at 400 degrees F until crispy and brown. (it’s less messy this way and the bacon gets really crispy and evenly cooked.) Drain on paper towels and crumble or chop coarsely.

Make the base salad with some fresh mixed greens with purple cabbage, romaine and green leaf lettuce, then add the crumbled bacon, shredded Cheddar cheese, cherry tomatoes, sliced red onions. Feel free to use any lettuce you like – spinach, arugula, romaine, iceberg, mixed greens and play with any cheese you like too – Muenster, Swiss, Monterey Jack are all great picks. Slice the grilled burgers and top the salad with a creamy Sriracha Ranch dressing. 

You can also substitute mayo for the ranch dressing along with the Sriracha or ketchup and add a few diced dill pickles (like a special sauce dressing). Or try a chunky creamy blue cheese dressing or Italian vinaigrette dressing topped with blue cheese crumbles which are equally delicious and the blue cheese goes great with the bacon! 

Cheeseburgers

Try melting the cheese on top of the burgers while grilling instead, if you like your cheese melted on the burgers instead of shredded on the salad. Anyway you make it – this salad is the BOMB. It’s like a bacon #cheeseburger deluxe in a bowl. And so delicious, you won’t even miss the bun!

Keto Cheeseburger Salad

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Yield: 4

Serving Size: 1 burger with 2 cups of salad

This #Keto Cheeseburger Salad is a mountain of deliciousness, and its low-carb and keto-friendly to boot! Made with juicy grilled Steakhouse Elite Grass-Fed Burgers served over mixed greens, topped with bacon, shredded Cheddar cheese, tomatoes, sliced red onions, and a creamy Sriracha Ranch dressing. It’s like a bacon cheeseburger deluxe in a bowl - you won’t even miss the bun!

Ingredients

  • 8 slices center-cut bacon
  • 2 tablespoons olive oil or canola oil
  • 4 Steakhouse Elite Grass-Fed Beef Burgers
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 8 cups lettuce/mixed greens (romaine, iceburg, green leaf)
  • 1 cup shredded Cheddar
  • 1 cup baby tomatoes, halved
  • 1 small red onion, sliced thin
  • ½ cup ranch dressing
  • 4 tablespoons Sriracha sauce

Instructions

  1. Preheat oven to 400 degrees F.
  2. Place bacon on a wire rack over a baking sheet (or use foil on a sheet pan) and cook for 18-23 minutes until bacon is crispy, turning bacon over halfway through cooking time. (You can also cook the bacon over medium heat on the stovetop in a large sauté pan until crispy and done). Drain the bacon on paper towels, chop/crumble and set aside.
  3. Preheat a grill or large grill pan to medium-high. Meanwhile, season the ground beef burger patties with salt and pepper, making an indentation in the center of each.
  4. Brush the burgers with oil and grill for about 5 minutes, turn over and grill for another 5 minutes until burger is cooked through medium-rare (adjust time for desired temperature).
  5. Remove from grill and let rest for 5-10 minutes, cut burgers into ½ inch slices.
  6. Make the salad dressing in a small mixing bowl by adding Sriracha to the ranch dressing, mix together well.
  7. In a large salad or mixing bowl, add lettuce and mixed greens, bacon, shredded cheese, halved tomatoes, and red onion slices, tossing salad together. Divide salad mixture between four medium bowls.
  8. Place the burgers on top of the salad and drizzle with Sriracha ranch dressing.

Notes

You can also substitute mayo for the ranch dressing or use blue cheese dressing without the sriracha and it's equally delicious. Or an Italian vinaigrette dressing with blue cheese crumbles which goes great with the bacon! Feel free to use any lettuce you like - spinach, arugula, romaine, iceberg, mixed greens and play with any cheese you like too - Muenster and Monterey Jack or Gruyere are all great melty cheeses that go great with burgers. Feel free to add a few sliced dill pickles to the salad or the dressing too for extra zippy tangy flavor.

Indian Burgers with Curry Cilantro Slaw & Peanut Satay Yogurt Sauce

I recently did a food styling project for Morningstar Farms to promote some of their new products to local food editors in NYC, and one of them I got to sample and loved was their Spicy Indian Veggie Burger. I’m not normally a fan of frozen food products and I’m definitely not a Vegan, but I was really impressed with the flavor and texture of these, and decided to make a delicious Curry Cilantro Slaw to go with it along with a Peanut Satay Yogurt Sauce for topping served with some Grilled Pita.

The Indian Veggie burgers have organic red lentils, chickpeas, carrots, potatoes, peas, bell peppers, coconut cream and curry seasonings in them, and are 100% vegan. They are super easy to cook too – I just cooked them for about 10 minutes in a sauté pan, but they could also be grilled or microwaved. The best part is they are only 130 calories and have lots of protein in them so they’re healthy and a great vegan/vegetarian option when you’re seeking lighter fare.

My Curry Cilantro Slaw is super delicious as a topping and side salad with grilled pita bread (or you could stuff it all into the pita, or Naan bread if you wish). The slaw has purple and white cabbage, carrots, celery, honey, olive oil, cilantro, golden balsamic vinegar, and some indian spices such as black sesame seed, cumin seed, curry powder, and indian red pepper to give it a little kick, then topped with toasted crushed peanuts for some extra crunch.

The best part? My Peanut Satay Yogurt Sauce – made with Greek yogurt, satay seasoning, and some peanut butter with a little dash of Indian red pepper. The creamy sauce goes perfect on the burgers and cools the heat and has a delicious peanut-y savory taste. You can find satay seasoning online at Penzey’s (the brand I use) or on Amazon – it has a gorgeous blend of spices such as salt, brown sugar, garlic, onion, coriander, shallots, ginger, turmeric, paprika, galangal, cayenne and lemongrass..so good! And of course you could substitute any nut butter you wish for the sauce – cashew, sunflower, or almond butter would be great too.

And of course if you are feeling adventurous and have the time to make your own Indian burgers from scratch, I found a great recipe from Whole Foods which would be great with the Curry Slaw and Satay Yogurt Sauce as well. You could also serve this with some curry chicken, spiced beef or lamb burgers, or even spicy grilled fish and it would be equally delicious!

Also, just a heads up – this recipe feeds a crowd (about 6-8 people). If you’re only serving a few, just cut the recipe in half (or quarter it if you’re dining solo!) Enjoy.

Indian Burgers with Curry Cilantro Slaw & Peanut Satay Yogurt Sauce

Prep Time: 30 minutes

Cook Time: 15 minutes

Total Time: 45 minutes

Yield: 6-8

Serving Size: 1-2 burgers with 1 piece of pita, 1/2 cup of slaw,

Spicy Indian veggie burgers, served with a Curry Cilantro Slaw and Peanut Satay Yogurt sauce served on grilled pita bread.

Ingredients

  • Curry Cilantro Slaw:
  • 2 tablespoons golden balsamic vinegar
  • Juice from 1/2 fresh lime (about 2 tablespoons)
  • 4 tablespoons honey or agave nectar
  • 2 tablespoons olive oil
  • 1 teaspoon curry powder
  • 1 teaspoon Indian black sesame seeds
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon indian red pepper
  • 1 tablespoon sea salt
  • 1/2 tablespoon freshly cracked black pepper
  • 8 cups shredded coleslaw (cabbage and carrots)
  • 1 cup diced celery
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup peanuts, toasted and crushed
  • Peanut Satay Yogurt Sauce:
  • 1-17.6 ounce container Greek yogurt
  • 4-5 tablespoons Peanut Butter (or Almond, Cashew or Sunflower butter)
  • 2 tablespoons Satay seasoning
  • 1/4 teaspoon Indian red pepper
  • Spicy Indian Burgers:
  • 8 frozen Spicy Indian Burgers (2 packages) (Morningstar farms)
  • 8 slices pita bread or naan bread

Instructions

  1. Curry Cilantro Slaw:
  2. In a large bowl, mix together the vinegar, lime juice, honey, olive oil and seasonings.
  3. Add coleslaw mix, celery and cilantro and mix together well.
  4. Heat a small saute pan over medium heat and toast the peanuts until lightly browned.
  5. Remove from heat and let cool, crush into small pieces and add to the coleslaw, reserving a small amount for topping the burgers.
  6. Cover and place in the refrigerator for about 15 minutes to let flavors meld.
  7. Peanut Satay Yogurt Sauce:
  8. Place all the ingredients in a small mixing bowl and stir together.
  9. Cover and set aside in the refrigerator while preparing Indian burgers and grilled pita.
  10. Spicy Indian Burgers:
  11. Heat a large saute pan over medium heat.
  12. Spray cooking oil on each side of the burgers and cook for about 10 minutes, turning half way through until golden brown.
  13. Cook burgers in batches and set aside.
  14. Spray a little more oil on the pita or naan bread and cook until lightly browned, for about 2-3 minutes, turning to cook both sides.
  15. Serve the burgers hot with grilled pita bread topped with Peanut Satay sauce, and Curry Cilantro slaw on top or on the side as a salad (or stuff it all inside the pita or naan bread).
  16. Serves 6-8.

Notes

- You can also substitute any nut butter (cashew, almond, sunflower seed) for the Satay Yogurt sauce. - The slaw and yogurt sauce would also be equally delicious on grilled spicy chicken, beef or lamb burgers or spicy grilled fish. - If you're serving only 2-4 people, cut the recipe in half.

Top Ten {Things I Love} :: Spring 2014

Here are a few of my favorite things I am crushing on – some new and notable, and others just downright awesome and worthy of a shout out – people, places, things that are just absolutely THE BOMB.

Chez Josephine

If you’re looking for a magical place to wine and dine near NYC’s Theatre District, this is the place you must see and experience before or after a night on Broadway. Chez Josephine, owned by Jean-Claude Baker and Jarry Baker, is located on 42nd Street and 9th Avenue. This beautiful restaurant is in tribute to Jean-Claude’s mother (adopted) Josephine Baker, and a vivid return to 1920s and 1930s Paris – the city she loved and thrived in during her career as a premiere entertainer and stage and screen star. It’s a great place to relax with a cocktail and live music – the jazz piano and singers located in the center of the dining room will entertain you as you dine in this enchanting place. The decor is elegant and charming, with its ornate blue tin ceilings,  red velvet walls,  black glass chandeliers and life-sized vintage portraits of Ms. Baker throughout the restaurant. The French Bistro-style cuisine is delightful in every way with elegant cocktails, salads, entrees and desserts. On a recent visit I experienced a truly delicious and enchanting dinner here with a friend. We started out our meal with some lovely French Sauvignon/Semillon wine and an appetizer of Sauteed Jumbo Sea Scallops wrapped in crispy flavorful Prosciutto with a gorgeous sauce over the top. For our entrees, we ordered the Amish Roasted Chicken, over a bed of crushed zucchin, garlic and fresh goat cheese and their spectacular Lobster Salad. For dessert, we sampled the elegant Peach Raspberry Melba Ice Cream, Creme Brulee and Cappuccino before another cocktail to finish off the evening as we listened to the beautiful jazz music in the buzzing dining room. They also have a weekly Prix Fixe Sunday Brunch for $20 including a Soup or Salad for starters, a main Brunch item such as French Toast or Spaghetti Bolognese, and coffee or tea and a dessert. You don’t want to miss this place the next time you visit NYC. It will take you back in time and space to a beautiful early century Paris and envelop you with all the glitter and drama and beauty of Ms. Josephine Baker herself.

Tio Pepe

I recently visited this awesome Spanish restaurant in the West Village called Tio Pepe – and had an amazing meal there. We started out with some lovely Rioja wine and Stuffed Piquillo Peppers and Gambas al Ajillo — sauteed shrimp with garlic, olive oil, and Albarino wine for an appetizer, then had the Entrecote a la Parilla — grilled choice sirloin steak with garlic, olive oil and sea salt served with sauteed julienned vegetables and a potato cake; and Paella Valenciana — Saffron laced Bomba rice with clams, mussels, shrimp, chicken, and chorizo for our entree. For dessert, we had the luscious Flan al Caramelo — a traditional Spanish custard topped in caramel sauce to finish off our meal. ABSOLUTELY DELICIOUS!

It’s in a gorgeous elegant space, with a back sun-lit patio area with a wood burning oven where they make their own pizzas and other main dishes on the menu, including the Paella. Tio Pepe is the only restaurant in New York – and one of the only in the US – to use this type of wood burning oven when preparing traditional Spanish fare. The oven was installed this year as a new addition to Tio Pepe, a cornerstone of the West Village for 44 years. Chef Jose Zamora joined Tio Pepe as part of the restaurants commitment to authentic Spanish cuisine.

The owners of Tio Pepe are Jimmy Sanz and his family. Originally from Spain, the Sanz and has been serving NY locals and tourists traditional Spanish and Mexican cuisine for over four decades at their stable of NY restaurants including: Tio Pepe, Casa Pepe, Las Ramblas, Burrito Loco, The Taco Shop and Da Rosina. Chef Jose Zamora is a native of Tarragona, Spain. He began his career working at a family friend’s restaurant. He received two culinary degrees, one from Le Cordon Bleu in the U.S. and one from the Institution Culinario de Cambrils in Spain. His cooking is inspired by both Spanish and French cuisine. He is devoted to using the best ingredients and implementing a simplistic stylist technique with dynamic presentation. As the new executive chef at Tio Pepe, his goal is to provide memorable dining experiences through passionately created culinary dishes.

There’s tons of cool hotels in New York City – but I recently discovered one that is not only super cool but gorgeous inside with its modern design and rooftop patio deck outside.

YOTEL New York collaborated with NYC-based custom bike company Mott Street Cycles Customs (formerly STRADA Customs) in honor of Bike Month in May.  I got to preview these cool cruisers at the YOTEL X MSC: The YOTEL Cruiser Launch Event earlier this month for cocktails & light bites from China Grill Management’s brand new menus for this season at The Terrace at YOTEL New York. They had a live DJ and raffles to to win an MSC Customs bike while we sipped cocktails on the roofdeck.

The YOTEL x MSC Customs partnership provides a fun and eco-friendly experience that is integral to the New York City lifestyle and offers hotel guests specially designed bikes to use as a complimentary amenity throughout their stay.  The 2014 fleet of bikes feature three color variations – purple, green and white –along with the YOTEL logo, hand-painted wood grain fenders, leather grips and leather saddles, creating a distinct look exclusive to YOTEL and brand new for this year.  Guests can book their bike reservation through the concierge desk who will direct them to Bike and Roll at Pier 84, along 12th Avenue to pick up their custom cruisers.

If you haven’t tried a SmashBurger yet, well, you need to. They just opened a new location in NYC near the Empire State Building, and I was able to attend their Grand Opening not too long ago where they gave out free burgers all day long to New Yorkers to sample their goods. Their handcrafted burgers are smashed, seared and seasoned to order, using our fresh, never frozen 100% Certified Angus Beef. They have tons of amazing sides to go with of course, I tried the Signature Smashfries which are hand-tossed with garlic, rosemary and olive oil – and absolutely DELICIOUS. They also have fun menu items like hand-breaded haystack onions and fried pickles, hand-spun shakes, grilled or crispy chicken sandwiches, split and grilled hot dogs, crisp entrée salads and black bean veggie burgers with tons of fresh toppings including Truffle Mushroom, Avocado, and Spicy Jalapeno. This is no ordinary burger joint – it’s outta control super good.

The Wonut – Waffle Cafe, Chicago

First we had donuts, then we had croissants, then we had cronuts. Well here;s the coolest new food fad by a place in Chicago called Waffles Cafe  who’s created the WONUT. A cross between a waffle and a donut – these babies are made with a thick waffle batter in either chocolate, vanilla or red velvet. Then they are poured into an iron press and then deep-fried until they are crunchy on the outside and fluffy on the inside. Then the fun begins – they are glazed and topped with all kinds of gorgeous toppings – chocolate, sugar, maple, sprinkles, pistachios, cocoa, granola, dried fruits, marshmallow, chopped nuts, you name it. These sweet treats are selling for $2.35 a piece and yes, they’ve been selling like hotcakes since they invented these gorgeous things. I’m sure it won’t be long before they hit the streets of NYC. At least I’m hoping. Otherwise, it’s a great excuse to take a roadtrip to Chicago for one for these delightful creations.

This is a groovy little place I stumbled upon in the East Village one night when I was looking for a quick bite and a cocktail. It’s cozy, busy (in a good way), and the moody lighting and delicious wafts of the food will draw you in – just grab a seat at the bar and be prepared to swoon over their awesome menu of Southern comfort food and cocktails. Must try the fresh baked homemade pretzels with beer cheese, the redhead buttermilk fried chicken over creamy grits, with a soy-molasses jus, sesame, ham, b&b pickles. Other favorites are the cheeseburger with homemade waffle chips, the homemade bacon peanut brittle, stout braised short ribs, and the brussels sprouts seared in duck fat, wine and apples are to DIE FOR. And you can’t leave this place without trying their signature cocktail –the redhead fizz made with orange vodka, elderflower cordial, fresh lemon juice. This has to be one of my favorite finds yet.

Bocca di Bacco

Bocca Di Bacco is an Italian restaurant with six locations in NYC, their newest one opening on the Upper West Side on W 85th Street. It’s a favorite spot for celebrities, tourist and native New Yorkers and they are famous for their Sunday Brunch. Their top-notch Italian cuisine is designed by Food Network Judge Chef Kristin Sollenne, and they also have an excellent wine selection with 500 of the best wines from renowned Italian wineries. I recently went to the 7th Ave & 21st street location for dinner and sampled the Eggplant Involtini, made with fresh buffalo ricotta, fresh eggplant and mint served in a gorgeous red sauce. For dinner my friend and I had the Braised Short Ribs over Stewed Cabbage and the Roasted Pork Chops with Rosemary Potatoes. We finished off our lovely meal with a boozy dessert made with Prosecco, Mango Puree and Whipped Egg Whites topped with a sprinkling of ground espresso. Delicioso!

Going Low-Carb & Healthy for Spring! Grilled Parmesan Zucchini Beef Burgers & Sauteed Lemon Garlic Squash

Well, Spring is FINALLY here and the weather in NYC has been absolutely gorgeous this past week. I get so motivated when the weather warms up to go walking in the park, get moving around town, and most of all start eating healthy and maybe drop a few pounds or two to get ready for Summer. Plus, with all the gorgeous fresh fruits and veggies at the farmers markets – it’s hard to resist dreaming up some healthy, light recipes to get excited about making.

I know what you’re probably thinking – sometimes “low-carb diet” is a taboo word. And I’ve tried a few of them that have worked in the past (Atkins and South Beach Diet), but once I started eating normal again, the pounds just came back. So I’m making over my diet for the long term with foods that are good carbs – fresh green non-starchy veggies, low-glycemic fruits like berries and melon and citrus, light dairy including cheese and Greek yogurt, and healthy lean proteins across the board with omega3-enriched eggs, turkey, chicken, fish, beef, pork and seafood. My main goal is to cut out sugar and refined carbs like flour, pasta, bread, crackers, processed foods. Oh, the sugar cravings start kicking in the first few days, but once I get through the first week – it’s amazing how those cravings just go away. And my palate changes to crave all the good, healthy foods that actually keep me full and keep those cravings at bay. Yes, I will miss chocolate dearly. And crackers, and bread and pasta. But at the end of the day, once I start eating healthy low-carb, I actually FEEL better. And SLEEP better. And my allergies and body aches GO AWAY.

I’m not talking about living on cheeseburgers, bacon and eggs my whole life. Just cutting down on the bad carbs that make me cranky. And tired. And have mood swings and blood sugar swings. It’s crazy how good I feel and hey, it doesn’t hurt to lose a few pounds along the way. So here goes – Day 1 of my Get Into Shape Low-Carb, Feel Good Diet for Spring. Let’s see if I can keep this going for a few weeks – who knows. I might not miss that chocolate as much as I think I will. And if I feel like cheating? Well a square of dark chocolate here and there (or a glass of wine!) might just have to happen. And I won’t feel guilty one bit. Especially when I’m feeling amazing in my bikini on the beach this summer 🙂

Parmesan Zucchini Burgers & Sauteed Lemon Garlic Zucchini

I whipped up this tasty recipe today for some grilled Parmesan Zucchini Beef Burgers & Sauteed Lemon Garlic Squash. The burgers are made with lean beef (but you can substitute ground chicken or turkey if you like), finely minced zucchini, egg, grated Parmesan cheese, salt and pepper, garlic powder and red pepper flakes, then grilled to perfection, served over an arugula salad with a light vinaigrette dressing. I sauteed the zucchini and yellow squash in a lemon-infused olive oil, with some crushed garlic cloves, a pinch of dill and red pepper flakes, and that’s it! Light, healthy, filling and totally delicious. I think I could do this all the time. Enjoy! (and wish me luck!)

Cook Time: 20 minutes

Serving Size: 4-6

Ingredients

  • Burgers:
  • 1 pound lean ground beef
  • 1/3 cup zucchini, diced fine
  • 1 egg
  • 4 tablespoons grated Parmigiano-Reggiano cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon red pepper flakes
  • Sea salt and fresh ground black pepper, to taste (about 6 grinds for me)
  • Arugula, dressed with a light vinaigrette, for serving
  • -----
  • Zucchini Squash:
  • 2 tablespoons lemon-infused olive oil
  • 2 small-medium zucchini, sliced and halved
  • 1 small-medium yellow squash, sliced and halved
  • 4 cloves garlic, peeled and smashed
  • 1 teaspoon red pepper flakes
  • 1 teaspoon dill (dried or fresh)
  • Sea salt and freshly ground black pepper (a few grinds is good, but adjust to taste)

Instructions

  1. Heat a grill over medium-high heat.
  2. Place all the burger ingredients into a large bowl and mix together well with hands, make 4-6 burger patties.
  3. Grill burgers for 4-6 minutes (depending on how well done you like them).
  4. Add a slice of melted provolone cheese on top and some hot sauce, if desired.
  5. Serve burgers over arugula salad dressed in a light vinaigrette dressing.
  6. -----
  7. Heat olive oil in a large saute pan over medium heat.
  8. Slice zucchini into small moon-shaped slices, peel and smash garlic.
  9. Saute zucchini and squash and garlic cloves for about 5-7 minutes until soft and cooked through (but not mushy).
  10. Add red pepper flakes, dill, sea salt and pepper, stir together.
  11. Serve immediately with burgers and arugula salad.
