Hey guys! Happy #Thanksgiving! I hope everyone is enjoying their holiday despite the crazy #quarantine travel restrictions and COVID-19 mania – and hoping that you are able to spend time with family or friends…no matter how small the gathering might be.

Thanksgiving Dinner

 

This year I decided to make a super delicious mini-Thanksgiving dinner for myself since I wasn’t able to spend it with my family and friends up in New York. I actually didn’t mind having a little time alone to cook and drink wine and relax, watching some holiday movies and snuggling under a blanket with kitty and some Christmas lights!

Cornish Hen

 

I made a juicy Roasted Cornish hen, seasoned with a homemade spice rub, some fresh squeezed lemon juice and extra virgin olive oil, roasted on top of a bed of onions, garlic and celery. You could also use some additional herbs and veggies to stuff the hen / add to the roasting pan such as sliced lemons, rosemary, thyme, carrots or turnips for extra flavor.

I also made this sweet and spicy roasted Delicata squash, made with a delicious glaze of olive oil, brown sugar, Sriracha, apple cider vinegar, garlic powder and salt with a dab of butter to make it caramelized and luscious.

Balsamic Brussels with Bacon

 

And of course I made my favorite Thanksgiving side dish of all time – Roasted Brussels sprouts with bacon and shallots and a drizzle of spicy balsamic glaze for serving..crispy, savory and sweet with a touch of heat..delicious!

Mashed Potatoes and Gravy

 

I served them with some luscious mashed potatoes with butter and heavy cream topped with turkey gravy…two staples I couldn’t resist (even though I planned on making mashed cauliflower originally and decided to cave and make the real thing…lol)

and of course I paired my dinner with a crisp, light and fruity white wine – #Matua Sauvignon Blanc, which is one of my favorite varieties from Marlborough NZ.

 

I am #thankful for so many things and especially this year. Not being able to be with my friends and family up in New York is not the same, but I am blessed and grateful for them and happy we are all safe and sound, with food on the table…and #love all around,  no matter how far apart we are.

A Mini-Thanksgiving Dinner

This is a super easy and delicious mini-Thanksgiving dinner for 1 or 2 people. A spiced juicy roasted Cornish hen along with some sweet and spicy roasted Delicata squash, Balsamic Brussels sprouts with bacon and shallots. All served together with some creamy buttery mashed potatoes and turkey gravy and of course a light and fruity white wine such as Sauvignon Blanc to go with!

Feel free to add additional herbs and veggies to stuff the Cornish hen or add to the roasting pan such as lemons, rosemary, thyme, carrots or turnips while baking for extra flavor.

Ingredients

  • Roasted Cornish Hen:
  • 1 whole Cornish hen, about 1 1/2 lbs
  • 1 onion, peeled and cut in quarters
  • 4 celery stalks, cut in thirds
  • 5 cloves garlic
  • 2 tablespoons extra virgin olive oil
  • 4 tablespoons fresh lemon juice
  • Dry Rub:
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 tablespoon Italian seasoning
  • 1/2 teaspoon dried tarragon
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Tony Chacere's Creole seasoning (optional, can sub paprika)
  • 1/2 teaspoon Penzey's Bicentennial seasoning (optional, can sub poultry rub)
  • Sweet and Spicy Roasted Delicata Squash:
  • 1 large Delicata squash
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup Stevia Brown Sugar
  • 1 tablespoon Sriracha
  • 1/2 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Sea salt
  • Freshly cracked black pepper, to taste
  • 2 tablespoons unsalted butter
  • Balsamic Bacon Brussels Sprouts:
  • 1 1/2 pounds brussels sprouts, trimmed and halved
  • 1-2 tablespoons extra virgin olive oil
  • Sea salt and freshly cracked black pepper, to taste
  • 1/2 teaspoon red pepper flakes
  • 4 slices of bacon, chopped
  • 1/2 large shallot, minced (or 2 cloves garlic, minced)
  • 1 -2 tablespoons balsamic glaze

Instructions

  1. Roasted Cornish Hens:
  2. Preheat oven to 425 degrees F.
  3. Combine all the dry ingredients together in a small mixing bowl. Pat the hen dry with paper towels and season generously with the rub all over, inside and out.
  4. Place the onions, celery, and garlic on the bottom of a medium roasting pan. Place the hen over the vegetables and drizzle olive oil and lemon juice over the top, brushing it on to the hen evenly.
  5. Bake in the oven for 1 hour, or until a thermometer registers 165 degrees F in the thickest part of the thigh.
  6. Remove the hen from the oven and let rest, covered loosely with foil for about 20 minutes. Carve and serve with side dishes.
  7. Sweet and Spicy Roasted Delicata Squash:
  8. Wash the squash and cut off both ends. Cut in half length-wise and scoop out the seeds; discard.
  9. Slice the squash into 1/2-inch pieces and place on to a baking sheet in a single layer.
  10. Whisk together in a small bowl all the glaze ingredients until smooth and blended. Brush all over both sides of the squash. Dab the squash with bits of butter all over the pan.
  11. Bake for about 30 minutes at 425 until squash is cooked through and caramelized, turning halfway through cooking time to ensure even browning.
  12. Raise heat to a broil, and cook for an additional 2-3 minutes. Remove from oven and serve.
  13. Balsamic Bacon Brussels Sprouts:
  14. Preheat oven to 425 degrees.
  15. Place the brussels sprouts on to a sheet pan and drizzle with olive oil, salt and pepper and red pepper flakes, toss together to coat evenly.
  16. Add the bacon and shallots to the pan and stir together with the sprouts, making a single layer.
  17. Roast the sprouts for about 12 minutes then remove from oven and toss them together to get the other side crispy. Place them back in the oven and roast for another 12-15 minutes until the sprouts and bacon are crispy and browned.
  18. Remove from the oven and toss everything together. Place in a serving bowl and drizzle balsamic glaze over the top and garnish with some additional flaky sea salt and pepper.

Notes

You can also double the recipe for the Cornish Hens if you are having a couple more people over. The sides are plenty for two people, maybe 3 or 4, depending on how big your servings are!

Keto Chicken Tikka Masala Flatbread

I was recently invited to participate in a recipe challenge for Kevin’s Natural Foods and I am so excited to try these delicious #organic sauces! They are all sugar/dairy/soy/gluten-free as well as paleo and keto-friendly, made with non-GMO/clean ingredients, super tasty and easy to cook with. And since I am currently doing a #keto and #low-carb lifestyle, I thought this would be the perfect opportunity to experiment with some fun recipes for the contest.

Keto Chicken Tikka Masala Flatbread

Chicken Tikka Masala is one of my favorite Indian dishes EVER – so I jumped at the opportunity to create a Keto Chicken Tikka Masala Flatbread – an absolute flavor explosion which is also guilt-free and MAJORLY delicious!

KNF Tikka Masala Sauce

 

I used Kevin’s Natural Foods Tikka Masala Sauce – a delicious blend of bright tomato curry made with coconut milk, ginger, and Indian spices, with some roasted cauliflower, sweet caramelized onions, and juicy savory chicken thighs over homemade Keto Garlic “Naan” Flatbread.

I started first by making the keto garlic naan flatbreads using mozzarella cheese, almond flour, cream cheese, garlic powder, baking powder and a pinch of Himalayan Pink sea salt and microwaving it for about a minute until cheeses are melted.

Then I stirred in the egg and kneaded it gently into a dough and shaped them into ovals on to the baking sheets, and brushed them with olive oil, fresh garlic, paprika and some chopped cilantro. I baked them for 15-17 minutes until browned and let them cool on parchment paper while making the Chicken Tikka Masala topping.

Roasted Cauliflower

 

Next, I chopped up a head of cauliflower into small florets and drizzled them with olive oil, garlic salt and freshly cracked black pepper, and roasted them in a 400 degree oven for about 20-25 minutes until crispy and browned (but made sure not to overcook because it will simmer in the sauce later with the other ingredients).

I sliced up some sweet onion and sautéed them in a large pan with some more olive oil, sea salt and paprika for about 25-30 minutes over low heat until they were soft, golden and caramelized. YUM!!

In the same saute pan, I sautéed the chicken thighs over medium-high heat until cooked through and no longer pink. Then I added the chicken back in the pan along with the cauliflower and onions, a pinch of red pepper flakes for additional heat, and poured the Chicken Tikka Masala sauce over the top.

I let this big pot of curry goodness simmer over medium-low heat for about 10 minutes to let all the delicious flavors meld together with the sauce.

Once done, I topped the Keto flatbreads with some of the mixture..LOOK AT THIS GORGEOUS COLOR.

…then sliced the flatbread into wedges and topped it off with some fresh cilantro and black pepper.

OMG – you guys. This is the most delicious thing ever – and it’s so easy! The garlic flatbreads are literally super low carb and the chicken, cauliflower and sweet onions go so good with the Tikka Masala curry sauce – it literally melts in your mouth!

Keto Chicken Tikka Masala Flatbread

Serving Size: 1/2 to 1 flatbread

These Keto Chicken Tikka Masala Flatbreads are a flavor explosion! Made with Kevin's Natural Foods Tikka Masala Sauce (organic, gluten free), roasted cauliflower, caramelized onions, and juicy chicken thighs over Keto Garlic Naan Flatbread. Guilt-free and absolutely delicious!

Ingredients

  • Chicken Tikka Masala:
  • 1 pound boneless chicken thighs, cut into 1-inch chunks
  • 2 cups cauliflower florets
  • 4 tablespoons ghee or olive oil, divided
  • Kosher salt and pepper
  • 1 large onion, julienned
  • 1 tablespoon paprika
  • 1 teaspoon red pepper flakes, optional
  • 1 pouch Kevin’s Chicken Tikka Masala Sauce
  • Fresh torn cilantro, for garnish
  • ------------------------------
  • Garlic Naan Flatbread:
  • 2 cups shredded mozzarella
  • 1 cup almond flour
  • 4 tablespoons cream cheese
  • 2 tablespoons garlic powder
  • 2 teaspoons baking powder
  • Kosher salt
  • 2 large eggs
  • 2 tablespoons ghee or olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons fresh cilantro, minced

Instructions

  1. Garlic Naan Flatbread:
  2. Preheat oven to 400 degrees and line two large baking sheets with parchment paper or silicone baking mats.
  3. In a medium microwave-safe bowl, add mozzarella, almond flour, cream cheese, garlic powder, baking powder and a large pinch of salt. Microwave on high until cheeses are melted for about 1 minute; stir in eggs.
  4. Shape the dough into two 1/2-inch thick ovals and place on two large baking sheets.
  5. Mix ghee or oil with garlic and cilantro, brush over top of the bread.
  6. Bake each flatbread for 15-17 minutes. Set aside while making Chicken Tikka Masala.
  7. Chicken Tikka Masala:
  8. Drizzle 2 tablespoons of ghee or olive oil over cauliflower and season with garlic salt and pepper on a large baking sheet.
  9. Roast cauliflower for 20-25 minutes, until browned and crispy. Remove tray from oven and set aside.
  10. Heat an additional tablespoon of ghee or oil in a large sauté pan over medium-high heat, sprinkle paprika over the onions and sauté for about 3-5 minutes. Reduce heat to low and let cook for about 20-25 minutes until caramelized and brown. Set aside into a small bowl while cooking the chicken.
  11. Bump up the heat to medium-high and add the chicken to the same sauté pan with one tablespoon ghee or olive oil. Saute for about 6-8 minutes until cooked through and no longer pink.
  12. Pour in the pouch of Jason’s Chicken Tikka Masala Sauce to the pan along with the cooked onions and cauliflower. Toss in a few red pepper flakes if desired. Bring sauce to a boil and reduce heat to a simmer and let cook over low heat for 5-8 minutes. If the sauce is too thick, add a little water or chicken broth until desired consistency.
  13. Remove from heat to cool and let flavors meld together.
  14. Top each keto naan flatbread with 1/2 the Chicken Tikka Masala mixture and garnish generously with fresh cilantro and freshly cracked black pepper.
  15. Slice flatbreads into wedges and serve immediately.

Notes

You can also substitute chicken breast instead of chicken thighs if you prefer. Try adding other veggies in if you like - peas, green beans, carrots...if you want to spice up the heat, garnish with a few jalapeños or sliced red chilies.

Well it’s already mid-Summer and it’s time again for my Things I Love list for July! What a strange year it has been so far – I can’t even believe it’s halfway over (thank goodness!) – BUT at least it’s sunny and my fav time of year so that’s a positive.

Hedge’s Nine Mile Point restaurant

I absolutely love this place! Located right on Lake Ontario in Upstate NY (Webster) – this is the perfect spot to go in the Summer for fine dining, spirits and entertainment! I highly recommend the Lobster bisque, their signature Chicken French and the Sesame-Crusted Ahi Tuna seared to perfection and served with a teriyaki dipping sauce, garlic mashed potatoes and sautéed french green beans. The atmosphere is beautiful and elegant with a nautically-inspired interior design (with two levels and event spaces as well), an outdoor seated patio for dining, and a huge lawn with a gazebo and Adirondack chairs and picnic tables to simply sit and gaze at the gorgeous lake and watch the sunset while sipping on a cocktail or glass of wine. Must try!

Having lived in South Florida for awhile I have to say I’m a sucker for palm trees, sunshine and the beach. What is a Florida Room you may ask? According to Southern Living, they are sun-filled sanctuaries that were popularized in the 50s and 60s as a place homeowners could escape to the outdoors without really going outdoors. It’s basically a covered sunroom or conservatory with lots of light, plants, flowers and trees and all-weather or wicker furniture to lay back, cozy up with a good book, a cup of coffee or an iced tea or a frozen margarita and CHILLAX. Now that’s right up my alley!

Ingredients

  • BEEF KEBABS:
  • 1 medium onion, minced
  • 2 garlic cloves, minced
  • 1 cup fresh parsley, minced
  • 1 1/2 pounds Steakhouse Elite Grass-Fed Ground Beef
  • 1/2 cup finely ground almond flour + 1 tablespoon water
  • Kosher Salt and Freshly Ground Black Pepper
  • 4 teaspoons Mediterranean or Greek seasoning
  • SIDE SALAD:
  • 1 large tomato, sliced
  • 1 red onion, sliced
  • 1 cucumber, sliced
  • Parsley, chopped
  • Mint, chopped
  • Feta Cheese, crumbled
  • TZATZIKI:
  • 3 Persian, Kirby or ½ English cucumbers, cut into ¼-inch pieces
  • Kosher salt
  • 1 cup plain Greek yogurt
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 garlic clove, lightly crushed
  • ¼ cup chopped mint

Instructions

  1. BEEF KEBABS:
  2. Soak 10 wooden skewers in water for about 30 minutes to 1 hour, removing when ready to start making beef kebabs. Lightly oil a grill or grill pan and preheat to medium-high.
  3. Finely mince the onion, garlic, and parsley and place in a large mixing bowl. Add the ground beef, almond flour/water mixture, salt and pepper and Mediterranean spices. Mix together with your hands until well combined. Alternatively, you can mince all the ingredients together in a food processor.
  4. Take a handful portion of the meat mixture and mold it on a wooden skewer into a long log-shaped kebab about 1 inch wide. Repeat with the rest of the meat and skewers, laying them on a large baking sheet lined with parchment paper or foil.
  5. Place the beef kebabs on the grill and cook for 4 minutes on one side, turn over and cook for another 3-4 minutes.
  6. Serve the kebabs with a side salad made of sliced tomatoes, onions, cucumbers, parsley, mint and feta cheese with a side of tzatziki for dipping.
  7. TZATZIKI:
  8. Toss cucumbers with a few generous pinches of salt in a small bowl; firmly squeeze several times with your hands to release excess water. Drain.
  9. Mix cucumbers, yogurt, oil, lemon juice, and garlic in a medium bowl; season with salt. Let sit at room temperature 15–20 minutes; discard garlic. Stir in mint just before serving.
  10. Do Ahead: Tzatziki can be made 2-3 days ahead (without mint). Cover and chill in the refrigerator, and add fresh mint just before serving.

Notes

You can also substitute the ground beef with ground lamb or chicken, and serve with a side of grilled pita bread if desired.

JSL Foods recently invited me to participate in their 2nd Blogger Recipe Challenge, and guess what? I won the GRAND PRIZE and $1500 for my Black Pepper Caramel Chicken Udon recipe! And I am so thrilled to share it with you!

Fortune Noodle Udon

I decided to use their delicious Fortune Chicken Udon Noodles as the base for this amazing dish. 

Fresh Ingredients

Black Pepper Caramel Chicken is a traditional Vietnamese dish made with chicken thighs, shallots and red chili peppers,  jalapeños, and cilantro..

tossed in a luscious caramel sauce made with brown sugar, fish sauce, vinegar,  red chili garlic sauce, fresh garlic, ginger and freshly ground black pepper,

all mixed together and reduced in a pan into a gorgeous sticky spicy sweet glaze to coat the chicken.

Cooked Udon Noodles

The noodles are cooked separately, then drained and sprinkled with the packaged chicken-flavored seasoning,

then tossed back into the pan with the cooked chicken and sweet savory Black Pepper Caramel sauce.

For serving I topped the dish with a dash of Everything Bagel seasoning (you could also just use white or black sesame seeds if you like), a few sliced jalapeños and fresh cilantro for an extra kick of heat and bright flavor.

You guys, this noodle dish is to die for!  These Udon noodles are precooked so they only need to be reheated for a few minutes before serving. And they’re perfectly durable for holding this gorgeous thick glaze on the chicken, and full of ALA Omega-3’s, are non-GMO, zero trans fats, with only .5g of fat and 5g of protein in each serving!

Fortune Udon Noodles

You can also try this recipe using their Mushroom or Original Shoyu Udon Noodles for another layer of flavor to mix it up. Try pairing it with an oaky Napa Chardonnay or grassy Marlborough NZ Sauvignon Blanc to balance out the spiciness and sweetness of the dish. Superb!

Black Pepper Caramel Chicken Udon Noodles

This is a traditional Vietnamese Chicken dish made with a sticky spicy and sweet caramelized sauce with shallots, garlic, chilies, fish sauce, rice vinegar, brown sugar, ginger and coarse ground black pepper. The chicken thighs are cooked right in the sauce then tossed with Fortune Chicken Udon Noodles and garnished with fresh cilantro and sliced jalapeños for extra heat and bright flavor.

Ingredients

  • 1 package JSL Foods Chicken Udon Noodles
  • 1 1/3 cups water
  • 1/2 cup dark brown sugar
  • 1/4 cup Asian fish sauce
  • 1/4 cup water
  • 1 tablespoon sesame oil
  • 3 tablespoons rice vinegar
  • 1/2 tablespoon garlic, minced
  • 1 teaspoon fresh ginger, grated (or 1/2 teaspoon dried ginger)
  • 2 teaspoons ground black pepper
  • 1 tablespoon Asian chili garlic sauce
  • 1 tablespoon soy sauce
  • 2 tablespoons peanut or canola oil
  • 1 large shallot, thinly sliced
  • 1 fresh red chili pepper, cut into thin strips
  • 1 1/2 pounds skinless, boneless chicken thighs, cut into 1-inch pieces
  • Everything bagel seasoning, garnish Cilantro sprigs, for garnish
  • Sliced jalapeños, for garnish (optional)

Instructions

  1. In a large pot, bring water to a boil and add JSL Foods Chicken Udon Noodles. Cook for 5-6 minutes, and sprinkle with the packet of Chicken seasoning, mixing throughout cooked noodles. Keep warm, and set aside.
  2. In a small mixing bowl, combine brown sugar, fish sauce, water, sesame oil, rice vinegar, garlic, ginger, black pepper, chili garlic sauce, soy sauce; stir together to make black pepper caramel sauce. Set aside.
  3. Heat the oil in a large skillet or wok pan. Add the shallot and red chili pepper and sauté over medium heat until soft, about 4 minutes. Remove from pan; set aside to add back in with chicken and sauce at the end.
  4. Add the black pepper caramel sauce mixture and the chicken to the pan; simmer over high heat until the chicken is cooked through and sauce is caramelized for about 8-10 minutes. Reduce heat to low and stir in the shallots and hot chiles and cooked Chicken Udon Noodles coating them with the sauce and mixing in the chicken evenly throughout.
  5. Transfer Black Pepper Caramel Chicken Udon Noodles to serving bowls, garnish with everything bagel seasoning, fresh cilantro and sliced jalapenos (if using).

Notes

Pairs well with an oaky Napa Valley Chardonnay or grassy, fresh New Zealand Sauvignon Blanc wine to balance out the spicy-sweet flavors of the dish.

It’s that time of year again where all i really want to do is stay in and cook some hearty comfort food and watch Netflix with my kitty under a big fluffy blanket. Chili is one of my fav recipes to make because it’s super easy, all in one pot, and a little spicy and savory and oh-so-good.

It’s a simple mix of ground beef, onions and garlic, chili seasoning, beans, stewed tomatoes, whole tomatoes, crushed tomatoes, tomato paste, kidney beans, chili beans, beef broth and a dash of hot sauce all simmered into a lovely big pot of chili goodness. Simply top it with all your favorite toppings like a dab of sour cream, some shredded cheddar or mexican blend cheese, jalapeños, cilantro and then serve some corn chips or tortilla chips along side for the perfect cozy dish, game-day ready!

To make homemade chili seasoning (rather than premixed) use this recipe:

Ingredients

  • 5 tablespoons chili powder
  • 1 tablespoons cumin
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  • Place all of the ingredients in a bowl and mix well. Adjust seasonings to taste.

Feel free to play with this base chili recipe and make it your own! You can add a 12-ounce bottle of beer along with the tomatoes and broth in the beginning of cooking for a more complex flavor. If you want to amp up the heat factor, add some chopped jalapeños and a few tablespoons of the jalapeño juice into the chili towards the end, adjusting to heat level desired. A few chopped up chipotle peppers and dash of sauce will also give a smoky flavor to the chili without the heat. Swap smoked paprika for regular paprika in the chili seasoning for some smoky flavor as well.

The chili can also be prepared a few days ahead. Let the chili cool then cover with foil and keep in the refrigerator. Rewarm over low heat before serving.

This is a super easy and super delish rock star chili recipe - you can adjust the heat by adding additional jalapeños, diced green chilies and/or hot sauce. Perfect cozy one-pot dish for a gloomy Winter day!

Ingredients

  • 2 tablespoons olive oil or vegetable oil
  • 3 pounds ground beef (80/20) - ground chuck***
  • 2 large onions, chopped
  • 6 garlic cloves, minced
  • One packet Chili-O seasoning mix or homemade chili seasoning (see post for recipe)
  • Sea salt and freshly ground black pepper, to taste
  • 3 cups low-sodium beef or chicken broth
  • One 8-ounce can stewed tomatoes
  • One 8-ounce can whole tomatoes, chopped
  • One 8-ounce can Ro-tel diced tomatoes with chilies
  • One 6-ounce can tomato paste
  • 2 tablespoons hot sauce (optional, add to taste)
  • One 8-ounce can red kidney beans
  • One 8-ounce can prepared chili beans
  • Garnishes: sour cream, shredded cheese, cilantro, jalapeño, corn chips or tortilla chips

Instructions

  1. Heat the oil in a large heavy pot and add ground beef until browned. Drain excess grease from pot. Stir in the chili seasoning, salt and pepper.
  2. Add onions and cook over medium heat until translucent, stirring often, about 8-10 minutes. Add garlic and sauté for another minute or so.
  3. Pour in the broth, all the tomatoes, tomato paste and hot sauce and simmer the chili over low heat until thickened to desired consistency, stirring occasionally to prevent sticking, for at least an hour to 1 hour 15 minutes.
  4. Mix in beans. Simmer 5 minutes. Season to taste with salt and pepper, stir together. Reduce heat to low until ready to serve.
  5. To serve ladel into bowls and garnish with sour cream, shredded cheese, cilantro, jalapeños and corn or tortilla chips, if desired.

Notes

Sweet + Spicy Chicken Thighs w/ Roasted Broccolini

Sweet and Spicy Chicken + Roasted Broccolini

Sometimes you need to spice things up in life a little. Especially to brighten up those late Winter/early Spring dreary days when you’re craving #BBQ, until the gorgeous grilling weather is back in full swing!

These Sweet and Spicy Chicken Thighs are the perfect remedy – bathed in a gorgeous sticky, spicy and sweet glaze, made with Penzey’s Northwoods Fire Rub and Woodstock Everything Sauce and a little honey and white balsamic vinegar for a great BBQ flavor with the convenience of the broiler.

Sweet and Spicy Chicken + Roasted Broccolini

I made some fresh and easy Roasted Broccolini with Garlic to go with the chicken, but you could also serve them with the typical BBQ fixings: corn on the cob, baked beans, cole slaw, mac and cheese or fries. Black beans and rice would also be a great option for a Caribbean flair. Or shred the chicken and make some Spicy Sweet Chicken Tacos or BBQ Chicken Wraps or Pizza with the roasted broccolini…YUM!

Penzey's + Woodstead

Chef’s Notes: Penzey’s Northwoods Fire Rub is a lovely spicy mixture of salt, chipotle, black pepper, Hungarian paprika, garlic, rosemary, thyme, black pepper, and cayenne. If you aren’t able to find it or buy some,  you can make your own by using the following: 2 teaspoons garlic powder, 2 teaspoons chipotle or chili powder, 1 teaspoon paprika, 3/4 teaspoon salt, 1/2 teaspoon cayenne, 1/2 teaspoon black pepper, 1/2 teaspoon dried rosemary and 1/2 teaspoon dried  thyme. Get it online here.

Woodstead Hot Anything & Everything Sauce is a sweet and spicy glaze I found in Upstate New York in Naples in the Finger Lakes (it’s made there locally and sold at the farmer’s markets and you can also get it at Arbor Hill winery). It’s key ingredients are ketchup, vinegar, sugar, mustard, salt, turmeric and paprika, orange juice, cayenne pepper, crushed red pepper and brown sugar. It’s super delicious on everything as a bbq glaze or a dip for chips or fries. If you can’t find the sauce or aren’t able to get it to make my recipe then I suggest finding a Carolina-style BBQ sauce (mustard and vinegar based) and mixing it with the honey and white balsamic vinegar per my recipe instructions and it would be just as delicious! Kinda like a Honey BBQ mixed with the spicy rub for an extra kick!

Sweet + Spicy Chicken Thighs w/ Roasted Broccolini

Yield: Serves 4.

Serving Size: 1-2 chicken thighs and 3-4 broccolini stalks

These Sweet and Spicy Chicken Thighs are bathed in a gorgeous sticky, spicy and sweet glaze, made with Penzey's Northwoods Fire Rub and Woodstock Everything Sauce and a little honey and white balsamic vinegar for a great BBQ flavor with the convenience of the broiler. Served with an easy, healthy and delicious Roasted Broccolini with garlic on the side.

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon Penzey's Northwoods Fire Seasoning
  • 3/4 teaspoon salt
  • freshly ground black pepper, to taste
  • 8 skinless, boneless chicken thighs
  • 1/2 cup Woodstead Hot Anything & Everything Sauce
  • 2 tablespoons honey
  • 2 teaspoons white balsamic vinegar
  • Roasted Broccolini:
  • 2 tablespoons extra virgin olive oil
  • 2 bunches broccolini
  • 2 garlic cloves, chopped fine
  • 2-3 tablespoons extra virgin olive oil
  • Sea salt + fresh ground black pepper, to taste
  • Dash of red pepper flakes

Instructions

  1. Make the Sweet + Spicy Chicken:
  2. Preheat the broiler.
  3. Drizzle the olive oil and sprinkle the Penzey's Northwoods Fire Seasoning over the chicken thighs in a large mixing bowl and toss to coat evenly.
  4. Place the chicken on a broiler pan coated with cooking spray and broil for 5 minutes on each side.
  5. Combine the Woodstead Hot Anything + Everything sauce with the honey and white balsamic vinegar in a small bowl, stirring together well.
  6. Remove the chicken from the oven and brush half of the sauce over the chicken. Broil for 1 minute.
  7. Remove from the oven and turn the chicken over. Brush the chicken with the remaining sauce and broil for an additional minute or until the chicken is cooked through and has crispy edges.
  8. Drizzle or brush any additional sauce over the chicken if desired.
  9. Make the Roasted Broccolini:
  10. Preheat the oven to 375 degrees F.
  11. Trim 2 inches off the ends of the broccolini stems and place the broccolini in a single layer on a large sheet pan.
  12. Drizzle the broccolini with 2 tablespoons olive oil, sprinkle with minced garlic, sea salt and black pepper, a dash of red pepper flakes, and toss together to coat evenly.
  13. Roast broccolini for 15 minutes, until it is crisp-tender, and browned.
  14. Serve hot, immediately.

Chef's Notes: Penzey's Northwoods Fire Rub is a lovely spicy mixture of salt, chipotle, black pepper, Hungarian paprika, garlic, rosemary, thyme, black pepper, and cayenne. If you aren't able to get the Penzey's spice rub you can make your own by using the following: 2 teaspoons garlic powder, 2 teaspoons chipotle or chili powder, 1 teaspoon paprika, 3/4 teaspoon salt, 1/2 teaspoon cayenne, 1/2 teaspoon black pepper, 1/2 teaspoon dried rosemary and 1/2 teaspoon dried  thyme.  Woodstead Hot Anything & Everything Sauce is a sweet and spicy glaze I found in Upstate New York in Naples in the Finger Lakes (it's made there locally and sold at the farmer's markets). It's key ingredients are ketchup, vinegar, sugar, mustard, salt, turmeric and paprika, orange juice, cayenne pepper, crushed red pepper and brown sugar. It's super delicious on everything as a bbq glaze or a dip for chips or fries. If you can't find the sauce or aren't able to get it to make my recipe then I suggest finding a Carolina-style BBQ sauce (mustard and vinegar based) and mixing it with the honey and white balsamic vinegar per my recipe instructions and it would be just as delicious! Kinda like a Honey BBQ mixed with the spicy rub for an extra kick!

Sweet + Spicy Meyer Lemon Shrimp Stir Fry

Hey guys! Oh my gosh, it’s almost the end of the year! Can you believe it? Where does time fly? I’m so ready for a New Year though – #2019 can’t come soon enough! 🙂

I was invited to participate in the #Steviva #Holiday #Keto #Blogger #Recipe Challenge this year and made a Sweet and Spicy Meyer Lemon Shrimp Stir Fry. With all the #holidays going on and the rich, delectable #food I’ve been enjoying this month, I wanted to make a recipe a little bit lighter and healthier, and on the lower carb side…(before it all happens again this weekend for New Years!)

Sweet + Spicy Meyer Lemon Shrimp Stir Fry

Steviva + Nectevia Marinade

This dish is super easy and quick to make and has great flavors using fresh Meyer Lemon juice, soy sauce, sesame, Nectevia Agave Stevia Blend, Steviva Erythritol Blend, a dash of ginger and #Sriracha for some spiciness to make a delicious sticky marinade to go with the shrimp and fresh veggies. And it’s low carb and low cal! BONUS*** 🙂

Marinate Shrimp

Simply make your marinade for the shrimp with all the ingredients and put it in the fridge in a ziplock baggie for 1/2 an hour. Then stir fry the shrimp for a few minutes until they are no longer pink and remove the shrimp from the pan.

Saute the shrimp and veggies in marinade

Add the veggies and stir fry those for about 5-7 minutes until tender crisp and the sauce starts to thicken. Add the cooked shrimp back in and toss together for another minute or so.

Serve immediately over brown or cauliflower rice, zucchini noodles or soba noodles and spoon the rest of the spicy and sweet sauce on top and garnish with a few more sesame seeds and even some green onions if you wish.

Sweet + Spicy Meyer Lemon Shrimp Stir Fry

Prep Time: 40 minutes

Cook Time: 10 minutes

Total Time: 1 hour

Yield: 4

A super easy and delicious stir fry made with shrimp and fresh veggies, marinated in a spicy and sweet sauce made with Meyer lemon juice, soy sauce, Sriracha, Steviva Blend and Nectevia. Great for a weeknight dinner or special occasion. Best served over brown rice, cauliflower rice, zucchini noodles or soba noodles.

Ingredients

  • 4 tablespoons Steviva Blend
  • 4 tablespoons Nectevia agave syrup
  • 1/4 cup soy sauce
  • 1 tablespoon minced garlic
  • juice of one Meyer lemon
  • 1 teaspoon sesame oil
  • 1 tablespoon sesame seeds
  • 1 tablespoon Sriracha
  • dash of red pepper flakes (optional)
  • dash of ginger (fresh minced or dried)
  • 1 pound medium shrimp, peeled and deveined
  • 2 tablespoons butter
  • 2 cups fresh sliced veggies (broccoli florets, red pepper, snap peas)
  • white pepper, to taste

Instructions

  1. Whisk together Steviva Blend, Nectevia agave nectar, soy sauce, garlic, lemon juice, sesame oil, sesame seeds, Sriracha, red pepper flakes and ginger in a small mixing bowl.
  2. Add half of the sauce to the shrimp and let marinade in the refrigerator for 30 minutes or more.
  3. Heat butter in a medium sized skillet over medium high heat. Add the shrimp, discard marinade from the bag (save the other unused half for making the sauce). Saute for about 3-5 minutes until shrimp is no longer pink.
  4. Remove shrimp from the pan and add the fresh vegetables. Saute for about 5 minutes or so until soft.
  5. Add the reserved marinade and pour over the vegetables. Cook for another few minutes until sauce thickens.
  6. Add the cooked shrimp back into the pan and toss together with the vegetables and the sauce. Season with pepper, to taste.
  7. Serve immediately, garnish with additional sesame seeds and green onions if desired over brown rice, cauliflower rice, soba noodles or zucchini noodles.

Notes

You can also use this marinade for scallops or chicken or beef, just increasing the cook time appropriate for the protein (about 10-12 mins for chicken or beef until cooked through).
Vegetables can be swapped out as well whatever you prefer!

Spicy Pork + Kale Mushroom Udon Noodle Soup

I love soup in the winter time because it’s a great way to warm up in the freezing weather, and a delicious, healthy thing to eat after all the heavy food from the holidays. And I especially love noodle soup with lots of veggies, meat and seasonings.

JSL Foods Fortune Udon Noodles

I recently was invited to join the blogger recipe challenge for JSL Foods to create a unique soup recipe using their Fortune Udon Noodles.

Mushroom Udon Noodles

I created a soup recipe using their Mushroom Udon noodles – they are so good and easy to make! They are fresh and pre-cooked, perfect for a soup or stir fry and fortified with Omega-3 and have no MSG.

Cooked Udon Noodles

You simply add the noodles to some water and add the flavor packet provided, then cook for a few minutes after the water comes to a boil. Alternatively you can microwave the noodles in just 3 minutes and then add it to your soup base.

Spicy Pork Mixture

After the noodles were done, I set them aside and made the Spicy Pork mixture to go in the soup. First I added all the seasonings and spices, sriracha, fish sauce, soy sauce and togarashi seasoning (a Japanese spicy pepper seasoning you can find online) to the ground pork and sautéed over medium-high heat until cooked through.

Add kale corn and pork to udon

Then I returned the pot of cooked noodles to the burner, added some chicken broth, fresh chopped kale, yellow sweet corn and a little more garlic salt and pepper and let that cook until the kale wilted and the corn was heated through. I added the cooked spicy pork mixture back into the pot with the noodles, kale and corn and let it simmer for another 5-10 minutes on low heat to let all the flavors meld together.

And voila! A super delicious and healthy soup for the winter with a great combination of flavors from the mushroom Udon noodles, the spicy pork, the fresh kale and corn, all topped with more sliced green onions, togarashi seasoning and a pat of butter to give it another layer of silky flavor and dash of sweetness to cool the heat from the spicy broth.

Cook Time: 15 minutes

Total Time: 30 minutes

Yield: 4-6

Serving Size: 1 cup

This is spicy and delicious mushroom Udon noodle soup - topped with a spicy pork mixture, kale, corn, garlic and green onions to make a savory soup perfect for winter.

Ingredients

  • 1 package Fortune Udon noodles, mushroom flavor
  • 1 tablespoon vegetable or peanut oil
  • 1 tablespoon sesame oil
  • 1 pound ground pork
  • 1 1/2 tablespoons garlic, minced
  • 1 tablespoon ginger paste
  • 1 teaspoon lemongrass, minced
  • 1 teaspoon fish sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons Sriracha
  • 1 tablespoon Togarashi seasoning
  • Black pepper, to taste
  • 4 cups chicken broth
  • 1 teaspoon garlic salt
  • 1 (11 ounce) can sweet yellow corn
  • 3-4 large handfuls kale, chopped
  • 2 green onions, sliced
  • Butter, for garnish (optional)

Instructions

  1. Cook the Fortune Udon noodles in a large pot according to package directions (add 1 1/4 cups of boiling water and seasoning packet to the noodles and simmer for 3 minutes). Set aside.
  2. Heat the oil in a medium saute pan over medium high heat, add the ground pork, garlic, ginger, lemongrass, fish sauce, soy sauce, Sriracha, Togarashi seasoning and black pepper and cook for about 5 minutes or so until the pork is cooked all the way through.
  3. Return the pot of cooked Udon noodles back to the burner, add the chicken broth, garlic salt, kale, corn and green onions, and let simmer over medium heat until kale is wilted and the corn is cooked through.
  4. Add the cooked spicy pork mixture and stir together, simmering for a few more minutes until the flavors are blended through the soup.
  5. Serve the Udon noodle soup immediately and garnish with additional sliced green onions and a pat of butter until melted, for garnish.
