Summer is my favorite time of year – blue sunny skies, lazy days on the patio, weekend trips to the beach and lake and backyard gatherings with friends and family. Most of all, I love the fresh juicy fruits of summer – stone fruits like peaches and plums and cherries and all the fresh berries in season like blackberries, strawberries and raspberries.

Over the July 4th holiday weekend we had a fun backyard BBQ at my parents house with some of my relatives that I haven’t seen in awhile. I used to look forward to all the fun cookouts we did every summer with my family and cousins when I was a kid so it was a fun surprise to hear they were coming over for the day.

I wanted to make a special summery dessert and something different than our usual holiday traditions such as Aunt Irene’s Reception Salad and Grandma’s Lemon Meringue Pie. I decided on a Peach-Raspberry Almond Vanilla Cream Tart made with luscious juicy fresh peaches and raspberries that are bathed in a gorgeous peach glaze. They lie on a bed of sweet creamy ricotta and cream cheese blended with a hint of almond and vanilla on top of a flaky buttery puff pastry as the base.

The combination of the sweet fruit and tangy sweet almond vanilla cream over the layers of flaky buttery pastry was the perfect refreshing yet sinful treat to top off an awesome hot Summer day out on the back patio. My Aunt and Grandma may not be with us anymore to make their legendary desserts, but I’ve decided to step in their shoes and make this delicious concoction a new yearly tradition for our family summer backyard gatherings going forward.

Savoring the Fruits of Summer :: Peach-Raspberry Almond Vanilla Cream Tart

Prep Time: 40 minutes

Cook Time: 30 minutes

Total Time: 1 hour, 10 minutes

Yield: Makes 2 tarts serving 12 to 16.

Ingredients

  • 2 puff pastry sheets, defrosted
  • 2 eggs
  • 2 tablespoons water
  • 2 peaches, diced
  • 1 cup granulated sugar
  • 2 teaspoons fresh lemon juice
  • 2 lemon rind quarters
  • 1 cup ricotta cheese
  • 2 - 8 oz. packages cream cheese (one regular, one light) at room temperature
  • ½ cup confectioner’s sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 4 peaches, sliced thin
  • 1 cup raspberries

Instructions

  1. Preheat oven to 400 degrees.
  2. Tart pastry: Rollout puff pastry sheets on a floured surface and place on two lightly greased rectangular baking sheets.
  3. Score a 1-inch border around each pastry sheet. Beat eggs and water together and lightly brush the pastry sheets.
  4. Bake for about 15-20 minutes until pastry is puffed and golden brown. Remove from oven and let pastry sheets cool completely.
  5. Glaze: Meanwhile, dice two peaches and add sugar, lemon juice, lemon rinds and 2 cups of water into a small-medium pan on the stove. Simmer over medium heat until the peach is soft and the glaze is thickened about 10-15 minutes. Remove the lemon rinds and let the glaze cool to the side.
  6. Cream Filling: In a large mixing bowl, add the ricotta cheese, cream cheese, confectioner’s sugar, vanilla and almond extract. Beat together with a mixer until smooth and spread evenly on to each pastry sheet, leaving a 1-inch border on the pastry. Arrange the peach slices on top of the cream filling in layered rows and brush the peaches with all but a few tablespoons of the glaze. Toss the raspberries with the rest of the glaze and randomly place on top of the peaches. Serve right away or keep cool in the refrigerator covered for a few hours.
  7. To serve, cut the tarts into squares and garnish with toasted almonds or whipped cream if desired.

Notes

Chef’s Note: The pastry and cream filling is really delicious and super versatile for making any type of fruit tart. You can substitute the peaches and raspberries for any type of berry – blueberries, strawberries, blackberries or use fresh plums or kiwi fruit and adjust the recipe accordingly for the glaze and fruit topping. You can also substitute some toasted pistachios in place of the almonds. Get creative!

Cool off w/ a Stoli Cucumber-Melon Martini & Prosciutto-Melon-Feta Bites

Summer is in the air and it’s that time of year to cool down with some refreshing Stoli cocktails and light small bites for the patio or beach. I love melon in the Summer time, especially paired with cucumbers with their light flavors that make a great refreshing cocktail.

I created a Cucumber-Melon Martini that’s made with Stoli vodka, cucumber liqueur, agave cayenne lemonade (or regular lemonade or limeade),  garnished with cucumbers, mint and cubes of honeydew melon. It has a hint of sweetness from the lemonade and a lovely refreshing flavor from the melons and cucumbers and a spike of minty freshness and kick of  heat from the cayenne lemonade.

A great small bite pairing to go with the martinis are Prosciutto, Melon and Feta Bites. They’re super easy to make and just as light and refreshing as the cocktails that go with them.

A little bit sweet, a little bit tangy and a whole lot delicious. Here’s to the lazy days of Summer! ENJOY 🙂

Stoli Cucumber-Melon Martini

1 part Stoli vodka

1 part cucumber liqueur

2 parts lemonade or limeade

Garnish with Cucumber slices, honeydew melon cubes and fresh mint sprigs

Pour vodka and lemon or limeade into a drink shaker over ice. Shake well and strain into martini glasses. Drop cubes of melon into the martini. Garnish with cucumber slices and fresh mint sprigs.

Makes 1 cocktail.

Prosciutto-Feta-Melon-Bites

Prosciutto-Melon-Feta Bites

1 package of prosciutto, sliced thin and cut in half (about 20 slices)

1 package of feta cheese, sliced into ¼ inch sliced cubes

8 ounces honeydew melon, cubed

8 ounces cantaloupe melon, cubed

Prep all ingredients by cutting the feta cheese and melons into similar size chunks. First layer the melon with the feta, then top with a slice of prosciutto folded into small squares and secure with toothpicks. Serve on a platter along with the Cucumber-Melon Martinis.

Makes approximately 20 small bites.

Note: You can also include watermelon in the mix for some extra flavor or serve the bites over arugula with a cucumber melon vinaigrette. Simply throw the melon and cucumber slices in a blender with some olive oil and vinegar, a dash of salt and pepper; then drizzle over the bites.

Cooking with Stoli Vodka for Memorial Day Weekend

There’s no better time than Memorial Day weekend to break out the grill and cook up some tasty BBQ to celebrate the beginning of Summer! I had the opportunity to create some recipes with Stoli Vodka for the holiday and decided to make Grilled Honey Orange Chicken Skewers with a Cucumber Orange Cilantro Salsa – a savory and light dish with tons of flavor and a hit of refreshment from the oranges and cucumbers. I used Stoli Ohranj (Orange flavor) and Stoli Sticki (Honey flavor) in both the chicken marinade and my delicious Honey Orange Blossom Cocktails.

The cocktails are made with a shot of each Stoli vodka flavor, honey, orange blossom water, vanilla extract, and organic lemon infused sparkling spring water, garnished with fresh orange slices and edible flowers. It’s light and refreshing with just a dash of honey and orange to cool your palette. It reminds me of a Creamsicle (remember those??) – the perfect treat for a hot Summer day.

Grilled Chicken Skewers with Orange Cucumber Cilantro Salsa

Grilled Honey Orange Chicken Skewers w/ Cucumber-Orange-Cilantro Salsa

Prep Time: 30 minutes

Total Time: 45 minutes

Yield: 4-6

Ingredients

  • Honey Orange Chicken:
  • 1 ½ pounds boneless, skinless chicken breasts or thighs
  • ¼ cup fresh squeezed orange juice
  • ¼ cup olive oil
  • 1 tablespoon Stoli Ohranj vodka
  • 1 tablespoon Stoli Sticki vodka
  • 2 tablespoons honey
  • 2 tablespoons chopped fresh cilantro
  • 2 cloves garlic, minced fine
  • 6 chives, minced fine
  • ½ teaspoon grated orange zest
  • 1/8 teaspoon cayenne pepper
  • Sea salt and freshly ground black pepper, to taste
  • ½ red onion, cut into large chunks
  • 1 red, yellow or orange bell pepper, cut into large chunks
  • Cucumber-Orange-Cilantro Salsa:
  • ½ large orange, chopped fine
  • ½ cucumber, diced fine
  • 1 tablespoon chopped fresh cilantro
  • 6 chives, minced fine
  • 1/2 jalapeno, minced fine
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon white wine vinegar
  • Sea salt and freshly ground black pepper, to taste

Instructions

  1. Honey Orange Chicken:
  2. Cut chicken into large chunks and set aside.
  3. Soak wooden skewers in water for at least an hour before using (or simply use metal skewers to make your life easier).
  4. Combine next 11 ingredients (orange juice through S&P) in a large mixing bowl, add chicken and let marinade in the refrigerator for at least 30 minutes up to 2 hours.
  5. Remove chicken from fridge and let stand at room temperature for at least 15 minutes.
  6. Preheat a grill or grill pan over medium-high heat.
  7. Thread marinated chicken, red onion and bell peppers onto skewers (should make at least 4 large or 5 medium skewers).
  8. Grill chicken skewers about 10-12 minutes until cooked through (internal temperature should read 165 degrees), turning once.
  9. Serve with Cucumber-Orange-Cilantro and grilled pita or flatbread and Stoli Honey Orange Blossom Cocktails.
  10. Cucumber-Orange-Cilantro Salsa:
  11. In a medium mixing bowl, add diced cucumber, orange pieces, fresh cilantro, chives and diced jalapeno.
  12. Add olive oil and vinegar, and S&P to taste, mixing thoroughly.
  13. Serve on top of grilled chicken skewers or on the side.

Ingredients

  • 1 shot Stoli Ohranj vodka
  • 1 shot Stoli Sticki vodka
  • 2 tablespoons honey
  • 1 tablespoon Orange blossom water
  • 1 teaspoon vanilla extract
  • 10.5 fl oz Sparkling lemon spring water
  • Orange slices, for garnish
  • Edible flowers, for garnish

Instructions

  1. Add vodka, honey, orange blossom water and vanilla into a cocktail shaker and mix together with a tall spoon.
  2. Add ice and sparkling lemon spring water and close lid securely.
  3. Shake gently until mixed together.
  4. Serve in cocktail glasses over ice, garnish with orange wedges and edible flowers.

A bright, savory Spring chicken dish to celebrate the season

I love Spring. There’s nothing better than a dose of gorgeous sunshine, cherry blossoms in bloom, and the tempting promises of Summer on the way. It’s the perfect time of year to throw open the windows, do some Spring cleaning and celebrate new beginnings. I also love the bountiful selection of fresh seasonal herbs and vegetables that come along with it.

Asparagus is in its prime now, so I wanted to create a light and savory chicken dish to complement it for an easy, healthy weeknight dinner – a twist on classic Chicken Saltimbocca with the addition of some cheesy goodness and bright lemony flavor.

I picked up some fresh lemons, thin chicken breast cutlets at the market along with some Italian Prosciutto, fresh sage and Provolone cheese to stuff them with. To start, I laid out the chicken breasts in a large baking pan and layered the ingredients on top – first a slice of Prosciutto topped with a few sage leaves and thinly sliced cheese. I then folded them over and secured them with toothpicks and seared them in a pan in olive oil to get a nice golden brown crust. Once the chicken breasts were browned, I set them back in the pan, poured the juices on top and finished in the oven for about 15 minutes.

The best part of this dish is the buttery lemon wine sauce for serving. I sliced up some garlic and sautéed it in olive oil for a minute or two, then added some chicken broth, white wine and let it come to a boil, then reduced the heat and simmered it down to reduce the sauce, stirred in some lemon juice, a nob of butter and set the sauce aside for drizzling on the chicken later.

While the chicken was roasting in the oven, I blanched the asparagus for a minute or two and then tossed it with sliced garlic, olive oil and sea salt, roasting it for about 10 minutes or so until tender. So easy and soooo good!

Once the chicken and asparagus were done roasting, I served them on a plate and finished them off with the buttery lemon wine sauce. If you want to add a starch to the meal, simply cook up some orzo, pasta or  some crusty bread to go with it. You can also use Fontina cheese for a slightly different flavor, or to make it a vegetarian dish, omit the prosciutto and substitute some sautéed mushrooms or spinach and prepare the same way. Keep it light with a side salad and a lemony vinaigrette, and serve with a glass of Pinot Grigio or Pinot Gris.

Prosciutto Sage Provolone Stuffed Chicken with Roasted Garlic Asparagus

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Yield: Serves 4 to 6

Ingredients

  • 4-6 chicken breast cutlets
  • 4-6 thin slices of Italian Prosciutto
  • 12 fresh sage leaves
  • 4-6 slices of Provolone or Fontina cheese
  • 2-3 tablespoons of olive oil
  • Sea salt and freshly ground black pepper, to taste
  • 2 cloves of garlic, sliced plus 1 clove minced (for sauce)
  • 1 bunch of asparagus
  • ½ cup chicken broth
  • ½ cup dry white wine (Pinot Grigio or Pinot Gris)
  • juice from half a lemon, plus 1 tablespoon zest for garnish
  • 1 tablespoon butter
  • lemon wedges and additional torn sage leaves for garnish

Instructions

  1. Preheat oven to 350 degrees.
  2. Spread out the chicken cutlets flat in a large baking dish, and season with sea salt and pepper, to taste.
  3. Layer on top of each chicken breast a slice of prosciutto, two sage leaves, and a slice of provolone or fontina cheese, then fold over the chicken in half and secure with a toothpick to secure.
  4. Heat 1 tablespoons of olive oil in a large sauté pan over medium-high and sauté chicken breasts approximately 1-2 minutes per side until golden brown.
  5. Remove the chicken and juices from pan and place back into the baking dish and roast in the oven for another 15 minutes until cooked through. You might want to baste the chicken in its juices once or twice to make sure the chicken doesn’t dry out in the oven.
  6. Meanwhile, slice 2 cloves of fresh garlic, mince 1 clove and set aside. Trim the ends off the asparagus and blanch in boiling salted water in a large pot for about 1 minute. Drain, place asparagus in a baking dish and drizzle with a tablespoon of olive oil, a sprinkle of sea salt and pepper and sliced garlic. Place in oven and roast for about 10-15 minutes until fork tender and slightly browned (be careful not to overcook or the asparagus will get dark and mushy – aim for tender yet crisp and green).
  7. In the same sauté pan for the chicken, heat another tablespoon of olive oil. Sauté the additional clove of minced garlic for about 1 minute until lightly golden and soft. Add the chicken broth, white wine, lemon juice and bring to a boil, then lower the heat to a simmer. . Let sauce reduce to about half, then add 1 tablespoon of butter, swirling in to finish the sauce.
  8. When chicken and asparagus are done roasting, plate them and top off with the lemon butter wine sauce.
  9. Garnish with lemon wedges, torn sage leaves, lemon zest, and salt and pepper to taste. Serve with a side of cooked orzo or pasta, crusty bread or a green salad with a lemon vinaigrette and a dry white wine, such as Pinot Grigio.

Rochester-Style Chicken French & Lemon Broccolini

Hey guys! I was just featured in the NY Times Food Section yesterday (online and print versions) talking about Chicken French from my hometown Rochester NY!

Chicken French is an amazing dish that is popular in my hometown in Rochester, NY and on almost every menu. The Italian-American immigrants first introduced this dish in NYC and then migrated Upstate. The recipe also known as Chicken Francaise, uses lightly-floured chicken cutlets, which are then coated with a parmesan cheese and egg batter, then sauteed until golden brown. The luscious sauce is made with garlic, butter, lemon, white wine or sherry, and parsley which is served over the top of the golden brown chicken. You can serve the dish over pasta (my favorite is a linguine) or rice or a green veggie, and I decided to serve this with broccolini, a Chinese broccoli that is similar to Broccoli Rabe, and topped it with the lemon butter sauce and an extra splash of fresh lemon juice for a light and healthy dinner.

This dish has a lovely tangy, buttery flavor with the lemon, wine and garlic, and the flour coating is super light as I made it with an ultra-fine flour (Wegman’s Pan-Searing Flour, or you could use Wondra flour), and I seasoned it with salt and pepper and a hint of cayenne. If you want to use sherry instead of a white wine, this will give you a sweeter flavor to the sauce. I made my sauce with a Marlborough New Zealand Sauvignon Blanc which is light and fruity and gives it a nice semi-sweet tangy flavor.

Serve the chicken and broccolini with some crusty french bread or some fresh pasta (i love linguine with more lemon-butter sauce, parmesan cheese and parsley over the top!) and a glass of dry white wine like Sauvignon Blanc or Pinto Grigio. Enjoy!

Chop the parsley

Mince the parsley for the egg, cheese and parsley mix.

Prep the wet and dry ingredients

Prep the wet and dry ingredients to dip the chicken in (flour first, egg-cheese-parsley mixture second).

Saute the chicken in olive oil for approx. 6 minutes on each side until golden brown.

Saute the chicken in olive oil in a large saute pan over medium heat for approx. 4 minutes on one side.

Flip chicken over and saute another 6 minutes until golden brown.

Flip chicken over and saute another 4 minutes until golden brown. Remove from pan and set aside, covered in a foil tent. Discard the cooking oil except for 1 tablespoon.

Remove chicken and set aside. Saute minced garlic for 1-2 minutes.

Saute the minced garlic on medium low for about a minute until lightly browned, being careful not to burn.

Add wine, and bring to a boil.

Add the wine, scraping up brown bits from the bottom of the pan, and bring to a boil.

Add broth and lemon juice and turn heat to high, bringing to a boil.

Add the chicken broth and lemon juice and let cook for approx. 5-7 minutes to reduce liquid by half. Stir in the cold butter and red pepper flakes (if using).

Return chicken to the pan and bring to a boil, cooking for another 5 minutes to let liquid reduce and infuse flavors in the chicken.

Return chicken to the pan and bring to a boil, reduce heat to a simmer and cook for another 4-5 minutes to let liquid reduce further and infuse flavors in the chicken. Throw in some extra chopped parsley. Remove from heat.

Meanwhile, bring a large pot of water to a boil. Insert steamer basket with broccolini and steam covered for about 5 minutes.

Lemon Broccolini

Remove cover and let cook over boiling water for another 5 minutes or so, until broccolini is fork tender but still bright green.

Plate the chicken and broccolini and spoon the lemon-wine-garlic butter sauce over the top of both. Season with additional salt and pepper to taste.

Rochester-Style Chicken French & Lemon Broccolini

This is an amazing dish that is popular in my hometown in Upstate Rochester, NY. The Italian-American immigrants first introduced this dish in NYC and then migrated Upstate. The recipe stems from the French Veal Francaise or Chicken Francaise dish, which uses lightly-floured thin veal or chicken cutlets, which are then coated with a parsley-parmesan cheese-egg mixture and sauteed until golden brown.

  • LEMON BUTTER WINE SAUCE:
  • 1-2 garlic cloves, finely minced
  • 1/2 cup white wine (or sherry for a sweeter flavor)
  • 1 cup chicken broth
  • Juice from 1 1/2 lemons (about 1/4 cup)
  • 1 teaspoon red pepper flakes (optional)
  • 2 tablespoons cold butter, cut into pieces
  • Lemon wedges, for garnish
  • 1-2 tablespoons fresh chopped parsley, for garnish
  • BROCCOLINI:
  • 1 bunch broccolini, trimmed
  • Lemon Butter Wine sauce (see above)
  • Fresh lemon juice and salt and pepper, for garnish

Instructions

  1. CHICKEN FRENCH:
  2. Heat oil in a large non-stick saute pan over medium heat.
  3. Meanwhile, whisk together eggs, cheese, salt and pepper, cayenne (if using) and fresh parsley in a large mixing bowl.
  4. Place flour in another flat bowl and season with salt and pepper to taste.
  5. Rinse and pat dry chicken breasts, then dredge each one in flour first (left hand), then egg mixture (right hand).
  6. Place chicken into the heated saute pan and cook for 4 minutes on one side. Flip chicken over and saute for another 4 minutes until golden brown.
  7. Remove from pan and set aside, covered with a foil tent.
  8. LEMON BUTTER SAUCE:
  9. In the same skillet, saute the minced garlic for 1 minute, being careful not to burn.
  10. Add the wine and bring liquid to a boil over high heat, scraping up the brown bits in the pan.
  11. Pour in the chicken broth and lemon juice and red pepper flakes (if using) and let reduce by half, another 5-7 minutes.
  12. Stir in the cold butter and whisk until it melts and creates a velvety sauce and consistency.
  13. Reduce the heat, and add the cooked chicken back into the pan with the sauce, let simmer another 4-5 minutes.
  14. Place chicken on serving plate with the steamed broccolini (and/or cooked pasta) and spoon the lemon butter sauce over the top of the dish.
  15. Garnish with lemon wedges and additional chopped parsley if desired.
  16. BROCCOLINI:
  17. Steam broccolini for about 5 minutes, covered. Remove lid and steam for another 5 minutes until fork tender but still bright green.
  18. Top broccolini with Lemon Butter sauce, additional lemon, salt and pepper to taste.

Salmon Fishcakes

Ingredients:

2 shallots finely chopped
1 lb Salmon Filleted and skinned
Kerrygold Butter 1 Tablespoon
Dry White Wine 5 fl oz
Chopped Parsley 1 Tablespoon
Mashed Potatoes – no cream no butter

For the Coating:

2 Tablespoons Plain Floor
2 Eggs
2 oz soft white Breadcrumbs

Instructions:

Pre-heat oven to 200c/400f gas 6

Butter and season a tray.  Sprinkle with the shallots and sit the salmon on top.  Drizzle with white wine and season with salt and pepper.  Cover with foil and bake in the oven for 8-10 minutes – the salmon should be firm to touch but still pink in the middle.

Sit the salmon in a colander over a pan to collect all the juices.

When all the juices have drained, place in a small pot and reduce on a stove to a nice syrup consistency.

Break up the salmon into flakes, add the syrup and chopped parsley, then fold in the potato until you have a binding texture. Check for seasoning and roll into 12 to 18 ball shaped cakes.

To Breadcrumb – Lightly pass through the flour, beaten eggs and breadcrumbs, repeat the process again.

To Cook – Deep fry at 180c/ 350f for 4-5 minutes drain well.

Serving suggestion

Serve 3 per portion on a bed of steamed baby spinach and lemon butter sauce.

Traditional Recipe Cooked with Water or Milk

Ingredients:

Porridge Oats   2 oz
Milk                  7 fl oz

Instructions:

Heat the milk, add porridge oats and cook for 1 min serve with honey or salt

Bircher Muesli made with Irish Porridge Oats

Ingredients:

Porridge Oats               5oz
Irish Honey                   1oz
Milk                              20 fl oz
Natural Yogurt             14oz
Sultanas                      4oz
Banana                        1 whole chopped
Apple                           1 Grated
Blueberries                  4oz

Instructions:

Combine ingredients and devour!

Lasagna is one of my favorite comfort foods to indulge in during the Winter time, but as soon as Spring is approaching, I like to lighten up this classic recipe by substituting lots of fresh vegetables like mushrooms, carrots, zucchini and spinach in place of the ground beef or sausage that is used in the heavier, more fat-laden traditional Lasagna recipes. It still incorporates a traditional red marinara sauce and uses lightened up cheeses to give it great flavor, but somehow I feel a little less guilty taking a big bite of this yummy dish made with fresh sautéed vegetables to satisfy my comfort food fix. Goes great paired with a green salad tossed in a light Italian dressing with a glass of light red or white wine, such as a Pinot Noir or Pinot Grigio.

Ingredients

  • 12 lasagna noodles
  • 1 1/2 tablespoon olive oil, divided
  • 1/2 cup onion, diced
  • 2 garlic cloves, minced
  • 1 cup mushrooms, chopped fine
  • 1 cup zucchini, chopped fine
  • 1 cup fresh spinach, chopped fine
  • 1 cup carrots, chopped fine
  • 3 cups marinara sauce (homemade or prepared)
  • 1 cup Ricotta cheese
  • 1 cup low-fat Parmesan cheese, shredded
  • 1 cup low-fat or 2% Mozzarella cheese, shredded
  • Salt and pepper, to taste
  • Fresh basil leaves or parsley, torn for garnish

Instructions

  1. Preheat oven to 350 degrees.
  2. Boil salted water in a large pot. Add lasagna noodles and cook according to package directions, drain, separate and set aside.
  3. Heat ½ tablespoon of olive oil on low heat in a large skillet. Cook onion and garlic for three or four minutes and place into a separate bowl. Add another tablespoon of oil to skillet and cook mushrooms, zucchini, spinach and carrots about 5-10 minutes until tender and add to onion and garlic mixture. Add one cup of the marinara sauce to the vegetables and heat through.
  4. Spread one cup of the remaining marinara sauce into the bottom of a 13x9 glass greased baking dish and layer with half of the noodles, vegetables and ricotta cheese. Sprinkle with half of the Parmesan and Mozzarella cheese and salt and pepper to taste. Repeat with another layer of marinara sauce, noodles, vegetables and ricotta cheese, sprinkling with remaining cheeses, salt and pepper. Cover and bake at 350 degrees for 45 minutes. Uncover and bake an additional 15-20 minutes until cheese is golden and bubbly.
  5. Let cool for 10-15 minutes, cut lasagna into squares and top with fresh basil or parsley. Serve with a green salad and glass of light red wine.

Notes

Recipe can be made ahead and kept covered in the refrigerator before baking. Can also be kept in the freezer tightly wrapped and reheated in the microwave for leftovers. For a Vegan version of the recipe: omit ricotta cheese and use Vegan soy-based cheese in place of the Parmesan and Mozzarella cheese.

I love waking up in the morning to the smell of fresh brewed coffee and breakfast cooking in the kitchen. This is a delicious brunch casserole that’s perfect for the holidays and feeding a crowd. It’s filled with delicious sauteed ham, onions, baby bella mushrooms, garlic and dill, over a thin layer of torn whole grain bread (I use low carb bread and only 4-5 slices instead of a whole loaf of bread, and you can actually skip the bread all together if you want it to be more of a frittata), then topped with lots of gooey cheddar cheese. Bake the casserole until its light and puffy, let cool and then serve cut into squares with a green salad or fruit salad and whole grain toast. If you want to switch up the herbs, try Herbs de Provence or Fines Herbes instead. Experiment with different cheeses or meats if you like too (Brie, Monterey Jack, Bacon or Sausage), or spice it up with some red pepper flakes or a dash of Tabasco.What’s great is you can reheat it easily and have some yummy brunch/breakfast for a couple of days if you’re only cooking for a few people. Delish!

Mushroom, Ham and Cheese Strata: Best Brunch Casserole. EVER.

This is a super easy and quick brunch casserole that’s perfect for the holidays. It’s filled with delicious sauteed ham, onions, baby bellas, garlic and dill topped with lots of gooey cheddar cheese. Make it a meal with a green salad or fruit salad and whole grain toast.
Ingredients
  • 8 eggs
  • 1 cup + 2 tablespoons of milk
  • 1 can cream of mushroom soup
  • 4-5 slices of whole grain bread
  • 1/2 onion, diced
  • 1 teaspoon garlic, chopped (or 1/2 teaspoon powder)
  • Kosher salt and fresh ground black pepper
  • 2 cups of cubed ham
  • 2 cups of baby bella mushrooms, chopped
  • 1 teaspoon dill
  • 2 cups of shredded sharp cheddar cheese
Instructions
  1. Preheat a medium saute pan over medium heat.
  2. Tear bread into medium size pieces and layer in the bottom of a 9″ x 13″ greased casserole dish.
  3. Whisk together eggs, milk and cream of mushroom soup in a large mixing bowl.
  4. Saute onions, garlic, ham, mushrooms and dill until soft and tender about 5-7 minutes. Sprinkle with salt and pepper to taste.
  5. Layer the ham, mushroom and onion mixture over the bread in casserole dish.
  6. Top with egg mixture evenly.
  7. Sprinkle shredded cheese over the top in an even layer.
  8. Bake at 350 degrees for 45 minutes until strata is puffy and cooked through.
  9. Let cool for 5 minutes, cut into squares for serving.

Mom’s Holiday Cutout Cookies

This is a recipe for my Mom’s Holiday Cutout cookies – a recipe that she got from my Grandmother that we still use today every year for the holidays. The cookies are crisp and thin with a delicious vanilla almond flavor in the cookie and the icing. They are the most popular and addicting cookies on our holiday table every year. Enjoy!
Ingredients
  • COOKIES:
  • 1 cup butter
  • 1 cup sugar
  • 1 1/2 teaspoon vanilla extract
  • 1 egg
  • 1 teaspoon water
  • 3 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • BUTTERCREAM FROSTING:
  • 1/3 c. soft butter or margarine
  • 1/8 teaspoon salt
  • 3 cups sifted confectioner’s sugar
  • 1/8 to 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
Instructions
  1. COOKIES:
  2. In a large mixing bowl, thoroughly cream the butter, sugar, and vanilla extract.
  3. Add 1 egg and water, and beat until light and fluffy.
  4. Combine flour, baking powder and salt; blend into creamed mixture.
  5. Divide dough in half; chill 1 hour.
  6. On lightly floured surface, roll dough to 1/8″ thickness.
  7. Cut into desired shapes with cookie cutters.
  8. Bake on greased cookie sheet at 375 degrees about 6-8 minutes.
  9. Cool slightly; remove from pan and glaze with buttercream frosting and top with sprinkles and decorative toppings.
  10. Let cookies chill and cool overnight, store in a container in layers of wax paper to prevent cookies from sticking.
  11. BUTTERCREAM FROSTING:
  12. Mix together all ingredients in a large mixing bowl.
  13. Divide frosting into separate medium bowls, add food coloring of your choice.

And what better thing to do than start thinking about planning a Holiday Cocktail Party with some fun recipes for cocktails and appetizers?

Whiskey Sour

1 small lemon wedge
Turbinado sugar, for rimming glass
1/4 cup bourbon, preferably Maker’s Mark
1/4 cup freshly squeezed orange juice
3 tablespoons freshly squeezed lemon juice
1 teaspoon granulated sugar, preferably organic
1 cup ice cubes

Rub the lemon wedge around the rim of a 12-ounce rocks glass. Place turbinado sugar in a shallow dish. Dip the rim of the glass in the sugar to coat; set aside.

In a large cocktail shaker, combine bourbon, orange juice, lemon juice, granulated sugar, and ice. Cover, and shake vigorously until all ingredients are well combined and cold. Pour into prepared glass, and garnish with orange slice.

Stuffed Mushrooms

1/4 cup Italian-seasoned bread crumbs
1/4 cup grated or shredded Parmesan cheese
1 tablespoon minced garlic
1 tablespoon fresh parsley, chopped fine
1 teaspoon red chile pepper flakes
Garlic salt
Fresh ground black pepper
3-4 tablespoons EVOO
16 large white mushrooms, stemmed
White Truffle Oil (a few sprays or 1-2 tablespoons for brushing)
2 tablespoons fresh mint, chopped fine

Preheat oven to 400 degrees.

Stem the mushrooms and chop the stems into fine pieces, set aside. In a mixing bowl, blend together bread crumbs, cheese, chopped mushroom stems, garlic, parsley, chile flakes, garlic salt and pepper with EVOO. Adjust olive oil amount to your liking until filling is soft and blended well.

Stuff mushroom caps (cavity side up) with the filling (generously) on a greased baking sheet. Spray or brush truffle oil on outer mushroom caps.

Bake for 20-25 minutes until mushrooms are golden brown. Garnish with fresh mint.

Makes 16 servings.

Classic Dry Martini

1 2/3 oz Gin
1/3 oz Dry Vermouth

Stir with ice and strain into a chilled martini glass. Garnish with twist of lemon peel or olives.

Sweet and Spicy Mixed Nuts

1/2 teaspoon sea salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1/4 teaspoon chili powder
1/8 teaspoon ground nutmeg
3 tablespoons unsalted butter
3/4 cup cashews
3/4 cup pecan halves
1/2 cup almonds
1/4 cup packed brown sugar
1 tablespoon water
1-1/2 teaspoons Worcestershire sauce
Dash Louisiana-style hot sauce

Preheat oven to 350 degrees F.

In a small bowl, combine the salt and spices; set aside. In a large heavy skillet, melt butter. Add cashews, pecans and cashews; cook over medium heat until nuts are lightly toasted, about 4 minutes. Sprinkle with spice mixture. Add the brown sugar, water, Worcestershire and hot sauce. Cook and stir for 1-2 minutes or until sugar is melted.

Place nuts on a large baking sheet lined with foil and bake for an additional 10 minutes until nuts are golden brown. Remove from oven and let nuts cool before serving. Store in an airtight container.

Mulled Red Wine with Brown Sugar

Two bottles of fruity red wine (Zinfandel or Merlot)
Zest strips from one orange
1 1/2 cups dark brown sugar
2 teaspoons black peppercorns, lightly crushed
1 3-inch cinnamon stick, broken into pieces
3 bay leaves
1 teaspoon fennel seeds, lightly crushed

Put the peppercorns, fennel seeds and cinnamon in a large tea ball or wrap them in cheesecloth and secure them with kitchen string. In a large saucepan, combine aromatics with the wine, bay leaves and orange zest.

Cover and simmer over low heat for 10 minutes. Remove from the heat and let stand, covered for 30 minutes. Remove the aromatics and orange zest strips. Stir in the sugar until dissolved.

Serve warm in glasses or mugs with a variety of cheeses and crackers and spiced nuts.

2 oz Pisco
1 oz Lemon or Lime Juice
1-2 dashes Angostura Bitters
1/4 oz Sugar
1/2 Egg White

Shake all ingredients except bitters with ice. Strain into champagne flutes.

Dash with bitters and drag with a toothpick to make design.

2 oz Vodka
1 oz Kahlua
Half and Half Cream

Pour coffee liqueur and vodka into ice-filled old fashioned glass and fill with milk or cream.
Alternatively you can shake it all up in a cocktail mixer and strain over ice.
Garnish with coffee beans or cocoa powder.
