It’s that time of year again to start planning menus and recipes for the holidays. But instead of just serving traditional turkey or ham,  mashed potatoes and green bean casserole, why not mix it up a little bit and serve your holiday meal with an international flair? I had the opportunity to go behind the scenes and interview several Top Chefs and restaurants in NYC to get some creative ideas for non-traditional holiday menus for the holidays. Whether it have a Spanish, French, Asian, Jewish or Italian twist; here are some great international menu ideas and recipes for a fabulous holiday meal with family and friends that break the norm.

Spanish Holiday Menu – Alex Raij, Executive Chef at Txikito NYC     

Executive Chef Alex Raij from the Spanish restaurant Txikito in NYC always makes a classic, festive dish for the holidays. This Canelones de Bakalao Recipe (Salted Cod Fish Canneloni with Crème Fraiche) feeds a crowd and references Basque, Catalan and Argentine family holiday traditions that Chef Raij grew up with in Spain. Serve with other traditional Spanish hot and cold tapas such as: Pikillos: roasted Navarran sweet peppers with ajoarriero; Kroketas: crispy creamy croquettes; Boquerón: marinated white anchovy with eggplant and piquillo; Cogollos: butter lettuce, Basque anchovy, and Bonito del Norte and Tutera: gratin of artichoke, Roncal, Jamón.

Canelones de Bakalao Recipe (Salted Cod Fish Canneloni with Crème Fraiche)

Executive Chef Alex Raij, Txikito

Serves 6

1 9×9 inch baking dish, preferably earthenware
12 – 4 inch square pieces fresh pasta sheets boiled and shocked in ice water (The Chef recommends cooking longer sheets and then cutting them after they are cooled in ice bath so they are more uniform)

Filling and topping

2.5 pounds cod
2 tablespoons Kosher salt, plus more for seasoning
2 cups olive oil
1.5 cup tomato pulp pref. pomi brand
2 cups Creme fraiche
2 tablespoons  finely chopped chives
50 grams hackleback or other high quality caviar

Preheat oven to 375 degrees.
Salt the cod with the 2 T. kosher salt and let stand 10 minutes.
Rinse and pat dry.
Place the cod in a small pot and cover with olive oil.
Place on medium low heat and poach the cod in the oil until it flakes when prodded
Remove the fish to a mixing bowl to cool.
Pour 1/2 cup of the poaching oil over the cooling cod to cool with it.
Heat remaining oil add the tomato fry the tomato until cooked and a little sweet, season with salt.
Pour the tomato oil mix I the bottom of the baking dish.
Break up the cooled cod and flake it with clean hands.
Whip it up with the oil with a spatula or wooden spoon.
Place 6 pasta sheets side by side and place 1/12 of the filling at the end of each sheet.
Roll away from you and place on the tomato.
Repeat with the rest of the filling and next 6 sheets.
Season the crème fraiche with salt and pour over the caneloni.
Bake at 375 until bubbly.
Sprinkle with chives and top with caviar just before serving.

Serve 2 pieces per person.

French Holiday Menu – Olivier Quignon, Executive Chef at Bar Boulud

Even as Chef Olivier Quignon of Bar Boulud prepares to celebrate his seventh Christmas in NYC, he hasn’t lost touch with the French holiday traditions of his hometown, the Northern French town of Beauvais. Christmas in the Quignon household, and in the restaurant he helms on behalf of renowned French Chef Daniel Boulud, Bar Boulud, is traditional to a tee, lasting up to six hours and spanning just as many courses. What does a typical French holiday meal entail?

Oysters “Always oysters. We shuck them at lunch and the eating begins.”

Cured or Smoked Fish

Foie Gras “This can be hot, seared, or served as a terrine.”

Hot Fish or Pasta

Poultry

Beef or Game

Cheese “ALWAYS cheese. French people eat cheese at practically every meal. We may sometimes skip dessert, but we never skip cheese.”

Pastry “At Christmas this is often a Bûche de Noel. But my wife is a pastry chef, so there are usually many desserts.”

Traditionally, Tournedos Rossini is a French steak dish, purportedly created for the composer Gioachino Rossini by French master chef Marie-Antoine Carême. The dish comprises a tournedos (beef tenderloin) pan-fried in butter, served on a crouton, and topped with a hot slice of fresh whole foie gras briefly pan-fried at the last minute. A few slices of black truffle and Madeira demi-glace sauce garnish the dish.

At Bar Boulud New York, ‘Rossini’ is a dish that makes an appearance on the menu every holiday season, and on the tables at many French holiday meals. It is rich in ingredients and flavors, hearty, and the perfect celebration dish. There are several way to prepare Rossini, but Bar Boulud sticks to the traditional preparation—seared beef tenderloin atop a brioche toast, topped with seared foie gras and Madeira-beef jus, served with Pommes Macaire dotted with a celery root puree.

Executive Chef Olivier Quignon, Bar Boulud

Serves 4

Pommes Macaire

Kosher salt, as needed
4 yellow gold potatoes
Salt and freshly ground white pepper
Black truffle butter or oil
2 egg yolks
Canola oil for frying
½ cup flour

Celery Root Puree

1 small (about 3/4 pound) celery root, peeled
Salt
1 tablespoon butter
1 cup milk
Freshly ground white pepper

To Finish

1 ½ lbs angus beef tenderloin, tied with butchers twine
12 ounces fresh grade A foie gras
6 tablespoons beef jus or demi glace
2 ounces Madeira
1 Tablespoon chopped shallot
4 ¼ thin slices of brioche, cut into 3 ½-inch circles, toasted
8 small light green celery leaves
1 small black winter truffle

For the Pomme Macaire

Preheat the oven to 350°F. Make a bed of salt on an aluminum foil-lined baking sheet and place potatoes on top. Bake potatoes for 45 minutes, or until tender.

Remove from the oven, and when cool enough to handle, cut potatoes in half and scoop the flesh into a bowl. Mash the potato with a fork, season to taste with salt, pepper, and truffle butter (or oil). Stir in the egg yolk to combine.  Press mixture into a bread loaf pan and chill overnight.

Turn the potatoes onto a cutting board and cut into (at least 8) 3 x ½-inch batons. Lightly coat the batons in the flour and shake off excess.

Fill 1/3 of a saucepan with canola oil and heat to 350°F. When ready to serve, fry the potatoes  in batches until golden brown. Strain onto a paper towel-lined tray, sprinkle with salt.

For the Celery Root Puree

Cut the celery root into medium dice. Place the butter in a medium saucepan over medium heat and cook until browned. Add the celery root, milk, and water to cover; bring to a simmer. Cook until tender, about 12 minutes. With a slotted spoon, transfer the celery root to a blender and puree with enough of the cooking liquid to make a smooth puree. Pass through a fine-meshed sieve into a bowl.

When ready to serve, transfer to a small saucepan and stir over medium heat to heat through.

To Finish

Slice the tenderloin into four portions and season on all sides with salt and pepper.

Cut the foie gras into four slices and season on all sides with salt and pepper.

Place a large sauté pan over high heat. Once very hot, sear the foie gras on both sides to brown, about 2 minutes on each side.  Transfer to a platter, cover with foil and set aside.

Reduce the heat to medium and return the pan with the foie gras fat to the heat.  Sear the beef on all sides, about 3-4 minutes each, basting the meat constantly with the fat. Brown the beef on all sides while basting the constantly with the fat in the pan, about 10 minutes, or until the internal temperature reaches 120°F for medium rare.  Transfer the beef to the platter with the foie gras, cover, and rest in a warm place.

Add the shallots to the same pan over medium low heat, and cook, stirring until translucent. Add the Madeira and simmer to reduce by 2/3. Stir in the beef jus and adjust seasoning with salt and pepper if needed.

For each serving, place a brioche toast on a plate and top with a portion of beef. Top the beef with a piece of roasted foie gras, and shavings of black truffle. Place two pommes macaire next to the beef and top each with a spoonful of celery puree. Garnish puree with two celery leaves.  Spoon the sauce from the pan around and serve.

Asian Holiday Menu – Hung Huynh, Executive Chef at Catch Restaurant NYC       

Whole Roasted Branzino is a favorite recipe of Chef Hung Huynh of Catch NYC for the holidays. It’s simple, delicious and easy to make and great for feeding a crowd. Chef Hung also recommends adding some miso, ginger, soy and lemongrass to the seasonings to amp up the Asian flavors in this beautiful seafood holiday dish. His Asian inspired holiday menu includes:

Roasted Whole Branzino

Sautéed Green beans with EVOO and Soy Sauce

White or Brown Steamed Rice

Miso Soup

Fresh fruit

Roasted Whole Branzino

Executive Chef Hung Huynh

Serves 2-4 people

Ingredients:

1.5 to 2 pound Branzino
1 tablespoon of Aged Balsamic

Seasoning Rub:

1 tablespoon of salt
1 teaspoon of ground black pepper
1 teaspoon of picked chopped thyme
3 cloves of minced garlic
3 tablespoons of olive oil
Zest of one lemon
Zest of one lime

Directions:

Before cooking, the Branzino must be scaled, gutted and scored.
Combine all the seasoning rub ingredients.
Rub entire fish with seasoning including the cavity, distributing evenly.
Make sure that the entire fish is covered in the rub.
Take a half sheet pan and roast at 450 degrees for about 15 minutes.
Reserve the remaining olive oil in the sheet pan.
Place the fish on a platter and drizzle with the reserved olive oil and aged balsamic vinegar.

Jewish Holiday Menu – Zach Kutsher, Proprietor, Kutsher’s Tribeca

Zach Kutsher, Chef and Owner of Kutsher’s Tribeca, always serves Latkes for the Hanukkah holiday. These crispy potato latkes are a traditional Jewish dish made of grated potatoes, onion, eggs and matzo meal, shaped into round potato pancakes and fried to a crispy golden brown. The traditional way to serve them is with a spoonful of sour cream, but Zach likes to also add ½ ounce of caviar (salmon roe, paddlefish caviar and wasabi flying fish roe) to the latkes to give them a special holiday touch. Some other fun ideas that Chef Zach does to dress up the latkes are to use some non-traditional savory toppings such as:

Peking Duck with Cucumber, Scallions and Sesame Hoisin

Wild Hen of the Woods Mushrooms and Herbed Ricotta

Gravlax and Dilled Creme Fraiche

Pastrami Reuben (pastrami, sauerkraut, emmentaler and thousand island dressing)

VLT – Veal Bacon, Lettuce and Tomato

To make it a complete Jewish holiday menu, serve the latkes with: Chopped Duck and Chicken Liver, Seasonal Pickles, Golden and Red Beet Salad with Lemon Ricotta, Arugula and Pecans, Turkey or Brisket with Challah Chestnut Stuffing, Cheesy Spaetzle Kugel, Brussels Sprouts and Pumpkin Shlishkas with Amaretto Matzo and Sage Brown Butter and Babka Sticky Buns for dessert.

Potato Latkes Recipe

Zach Kutsher, Kutsher’s Tribeca

Ingredients:

1 pound potatoes
1 egg
1 egg yolk
6 ounces onion
3/4 ounces matzo meal
1/2 teaspoons salt
1/2 teaspoons lemon juice

Preparation:

Grate onion on the fine side of a cheese grater and then line a strainer with some paper towels and let drain in sink as dry as possible.

Mix egg, yolk, matzo meal, salt, lemon juice, and drained onion together, set aside.

Julienne the potatoes (cut into thin small matchsticks) or grate on the large side of cheese grater, and periodically put the potato in the egg mix to prevent browning. Do not wash potato after it is cut.

Mix all together, fry in schmaltz (rendered/clarified chicken or goose fat – or you can substitute canola oil)

Take one handful of mix, twisted in the palm of your hand like you would spaghetti on a fork, till golden brown and crispy, then flip.

Finish in oven if necessary.

Season with salt and pepper to taste.

Italian Holiday Menu – Gabe Thompson, Executive Chef of Epicurean Group (dell’anima, L’Artusi, L’Apicio, and Anfora)

Roasted Acorn Squash Salad– radicchio, agrodolce raisins, pecans, fiore sardo (aged Sheeps milk cheese)

Orecchiette — turkey sausage, sage, sweet potato

Grilled Pork Chop — roasted vegetable and chestnut panzanella, pork sugo

Roasted Acorn Squash Salad Recipe

Executive Chef Gabe Thompson, Epicurean Group

Serves 4-6

2 acorn squash (1 ½ pounds)
¼ cup extra virgin olive oil
Kosher salt
2 tablespoons butter
8 sage leaves
2 tablespoons maple syrup

Preheat oven to 350 degrees. Cut each squash into 8-9 wedges, each wedge about 1 inch thick. Remove and discard seeds. In a large bowl, toss the squash wedges together with 2 tablespoons olive oil and season generously with salt.

Meanwhile, heat a large sauté pan over medium-high heat. Add 1 tablespoon of olive oil, and 1 teaspoon of butter. As soon as the butter melts, add half of the squash to the pan, arranging the pieces so that they are cut-side down. Sprinkle half of the sage over the squash. Cook undisturbed until it is golden brown on one side, about 2-3 minutes. Turn each squash piece over and cook for another 2-3 minutes until golden brown on the other side. Remove squash from the pan and place on a half sheet tray or cookie sheet. Repeat this process with remaining olive oil, butter, squash and sage leaves.

Drizzle maple syrup over the squash segments. Place in the oven and bake until each piece of squash is easily pierced with a fork, about 25-30 minutes. Remove and set aside.

Healthy Homestyle Meatloaf w/ Ancho Chile-Red Pepper Glaze :: Wild Mushroom Risotto

OK, so I know Meatloaf is one of those dishes we’re all a little bored of by now. Not so glamorous or gourmet, and usually a quick go-to dish when we have nothing else in the fridge and want to make an easy dinner with a few ingredients on hand. Well that was the case last weekend, so I thought – how can I jazz this meatloaf up a bit and make it a little healthier to boot?

I have some samples of Kickin’ Ketchup in my pantry that I’ve been meaning to try – it’s a spicy ketchup made out in California with a touch of heat and smooth sweetness.  I thought I would experiment making a spicy concoction made with the ketchup and some ancho chile powder and red pepper jelly (try this one or make your own) – perfect for a Meatloaf glaze or dipping sauce for homemade cocktail meatballs. The balance of the smoky chile powder mixed with the spicy heat of the ketchup and sweet heat of the red pepper jelly is a harmonious combination and I’m lovin’ it. For the meatloaf, I used a combination of ground beef, ground pork and ground veal – the holy grail for a savory juicy meatloaf. I added onions and garlic, some minced zucchini,  a dollop of Kickin’ Ketchup and a dash of ancho chile powder along with oatmeal substituted for regular breadcrumbs. I made some Wild Mushroom Risotto on the side, but this would be perfect with some roasted carrots, sauteed zucchini or mashed potatoes to accompany. Dig in!

Healthy Homestyle Meatloaf w/ Ancho Chile-Red Pepper Glaze

Prep Time: 30 minutes

Cook Time: 1 hour

Total Time: 1 hour, 30 minutes

Yield: 4-6

Ingredients

  • HEALTHY HOMESTYLE MEATLOAF
  • 1 1/2 tablespoons unsalted butter
  • 1 small yellow onion, finely chopped
  • 1/2 medium zucchini, finely chopped
  • 1/2 tablespoon minced garlic
  • 1 large egg
  • 1 1/2 pounds meatloaf mix (ground beef, veal and pork)
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon ancho chile powder
  • 1 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper
  • 2 tablespoons Kickin' Ketchup (or use regular ketchup and add some cayenne)
  • 1/4 cup instant or steel-cut oats
  • ANCHO CHILE-RED PEPPER GLAZE
  • 1/4 cup Kickin' Ketchup
  • 4 tablespoons Red Pepper Jelly
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon ancho chile powder
  • 1/2 teaspoon black pepper

Instructions

  1. HEALTHY HOMESTYLE MEATLOAF
  2. Melt butter in a large saute pan over medium high heat. Add onions and zucchini and cook for about 8 minutes, until tender. Add minced garlic and saute for another minute or two. Remove cooked vegetables from the pan into a small bowl, let cool completely and set aside.
  3. Preheat oven to 350 degrees. Spray a ceramic or glass rectangular baking dish with no-stick cooking oil spray.
  4. Whisk eggs together in a large mixing bowl, add the cooled cooked veggies, meat, spices, ketchup and oats and mix together thoroughly and gently with your hands.
  5. Take the meatloaf mixture and press together into one large or two small loaves into the baking dish.
  6. Make the Ancho Chile-Red Pepper Glaze per instructions below, and brush over entire meatloaf, saving some extra glaze for serving.
  7. Bake for 1 hour up to 1 1/4 hours until a thermometer inserted in center reads 155 degrees F.
  8. Remove baked meatloaf from oven and let cool for about 10 minutes.
  9. Slice and serve with additional glaze and a side of roasted veggies, mashed potatoes or mushroom risotto.
  10. ANCHO CHILE-RED PEPPER GLAZE
  11. Mix together ketchup, red pepper jelly, garlic salt and ancho chile powder and black pepper. Brush glaze on to meatloaf and save additional glaze for serving.

Wild Mushroom Risotto

Prep Time: 45 minutes

Cook Time: 30 minutes

Total Time: 1 hour, 15 minutes

Yield: 6

Ingredients

  • Mushroom stock:
  • ½ lb. cremini mushrooms
  • ½ lb. white button mushrooms
  • ½ lb. shitake mushrooms
  • 2 quarts chicken stock
  • ½ c. dried porcini mushrooms
  • 4 tablespoons butter
  • 3 oz. Madeira wine
  • Risotto:
  • 3 tbsp butter
  • 2 shallots, finely minced
  • 4 c. Arborio rice
  • ¾ c. white wine
  • Mushroom stock (reserved)
  • 1 tbsp. minced chives
  • 1 tbsp. Italian parsley
  • ¼ c. grated Pecorino Romano
  • Salt and freshly ground black pepper

Instructions

  1. To make the mushroom stock, wash and trim the stems of the fresh mushrooms. Reserve the stems and slice the mushroom caps for use later in the recipe. (Make sure to dust of the dirt first and don’t soak the mushrooms).
  2. Combine the chicken stock, stems, dried porcini mushrooms in a medium saucepan. Bring to a boil, turn down to a simmer, and cook for 30 minutes over low heat. Strain through a cheesecloth and reserve the liquid for the risotto.
  3. Heat a large sauté pan and add 4 tbsp of butter. Add the sliced mushrooms and sauté until browned. Deglaze the Madeira and reduce until almost all the liquid has evaporated. Reserve the mushrooms. (Try to let the Madeira glaze sit, don’t stir).
  4. For the risotto, heat a wide pot or rondeau (flat bottom pot with tall sides) over medium-high heat and add 2 tbsp butter. Add the shallots and sauté until translucent, about 3 minutes. Add the rice and stir the mixture together to coat the rice with the shallots and butter.
  5. Add the white wine, lower the heat and cook, stirring constantly, until the wine has evaporated. Begin adding the mushroom stock, a large ladleful at a time. Continue to add the mushroom stock (slowly and continuously), stirring constantly until the rice is just cooked through and all the stock has been absorbed, about 20 mins. The rice should be slightly al dente but have a creamy consistency and not dry.
  6. Stir in the reserved mushrooms, the remaining tablespoon of butter, chives, and parsley. Top off the risotto with Pecorino Romano and season with salt and pepper to taste.

For this dish, we decided to let Red Hawk’s heartiness take center stage, accompanied by only a bit of salty prosciutto and a touch of tart jam. You’ll be surprised how these two ingredients accentuate what makes Red Hawk so beloved—an understated intensity that puts it at the top of many cheese lovers’ top 10 lists.

Serves 4

8 ounces uncooked elbow macaroni
1 full wheel Red Hawk, rind intact, chopped into chunks
4 thin slices prosciutto, chopped
1 teaspoon sea salt
Freshly ground black pepper
2 cups heavy cream
4 tablespoons raspberry jam (plus more per your indulgence)

1. Preheat oven to 350°F.

2. Cook pasta in a large pot of salted boiling water until al dente. Drain through a colander and set aside.

3. In a large bowl, mix pasta, cheese, and prosciutto. Sprinkle with salt and a few good turns of the pepper grinder. Toss until well combined.

4. Lightly oil four 8-ounce ramekins and fill them with equal amounts of the pasta, cheese, and prosciutto mixture. Add a scant ½ cup of cream to each ramekin.

5. Line a rimmed baking sheet with foil and place your ramekins onto the sheet.

Slide into oven and bake for 35 minutes, or until the cream has thickened into a nice gratin. Remove from oven and allow to sit for 10 minutes. The cheese is supposed to bubble over the edges of the ramekins—that’s part of the charm of this dish. And it’s why you lined the baking sheet with foil.

6. Top each ramekin with 1 tablespoon raspberry jam before serving. Add more spoonfuls of jammy goodness if you see fit.

Penne with Garrotxa, Serrano Ham, and Sun-Dried Tomatoes

Native to Catalonia, Spain, Garrotxa is a throaty, goaty cheese that imparts an almost Cheddar-like tanginess. A gray mold blankets this pasteurized flavor titan, which gets its smooth earthiness from the lush coastal grasses that feed the goats raised to make it. Cutting away the rind on this firm cheese is easy, and a sharp knife run down the sides will shave off the moldy exterior without sacrificing much of the Garrotxa beneath.

Here, Garrotxa coalesces with two other signature Spanish ingredients, sun-dried tomatoes and Serrano ham, to create an ethereal cheese gratin polished with just a touch of butter, milk, and crème fraîche. This recipe isn’t your typical melty, creamy macaroni and cheese; rather, it’s a drier dish that allows the ingredients to mingle coyly while remaining somewhat independent.

Serves 2 to 4

8 ounces penne
1 pound Garrotxa, shredded
¼ cup milk
½ cup crème fraîche
1 tablespoon butter
½ teaspoon freshly ground white pepper
½ cup chopped sun-dried tomatoes
6 ounces Serrano ham slices, torn coarsely by hand into chunks

1. Preheat oven to 375°F.

2. Cook the pasta in salted boiling water until al dente. Drain through a colander. Set aside.

3. In a saucepan, combine cheese, milk, crème fraîche, and butter. Cook over medium-low heat until cheese is mostly melted and you have a creamy sauce. To keep the cheese sauce from breaking, remove the sauce from the heat before the cheese is entirely melted. Season with pepper, adding more to taste if you like.

4. In a shallow buttered casserole dish, toss pasta with sun-dried tomatoes and Serrano ham. Pour the sauce over the pasta, then stir together until combined. Bake for 15 to 20 minutes, until the top is golden brown and bubbling around the edges. Serve immediately.

Today is one of those dreary Fall days where it’s cold and rainy and I’m in need of a little pick me up from some classic comfort food. One that involves BACON. And CHEESE. And PASTA. And all those yummy yums that aren’t that good for you. I was looking through some of my family recipes and this one came up that looked perfect for the mood I’m in today. It’s a sinfully good baked Pierogi casserole that my family used to make around the holidays – I remember sitting around the table with my family devouring this tasty dish with absolutely no shame. It’s not fancy. It’s easy to make. Has layers of flavor from the crispy bacon, earthy mushrooms, creamy sauce and tangy sauerkraut. And it’s so darn GOOD.

Traditional Pierogies are like Polish or Ukrainian Ravioli, made with fresh made dough that is filled with potatoes and cheese, meat or sauerkraut, and usually boiled or sauteed in butter with golden brown fried onions. This recipe takes the main ingredients of Pierogi (butter, mushrooms, sauerkraut, bacon, fried onions, pasta and cheese) and blends them together into a bubbling baked one-pot dish of goodness you’re gonna die for. It’s the ultimate comfort food perfect for a chilly dreary day that will keep you coming back for more…trust me.

Sinfully Good: Pierogi Casserole

Yield: 8

Ingredients

  • 1 lb. spiral pasta or Girelle (little spiral tops)
  • 6-8 strips bacon, fried and crumbled
  • 1 large sweet onion (Vidalia), chopped
  • 1 stick (8 ounces) butter, divided
  • 4 oz. fresh mushrooms, chopped
  • 1-14 ounce package sauerkraut, rinsed well
  • 2 cans Cream of Mushroom soup
  • 1 cup 2% milk
  • 1 cup shredded Cheddar cheese
  • Fresh ground pepper, to taste

Instructions

  1. Preheat oven to 375 degrees.
  2. Boil pasta 7-9 minutes and drain, set aside.
  3. In a large saute pan, fry bacon over medium heat about 6-8 minutes until crispy, drain and crumble, set aside.
  4. Sauté onions in same saute pan with 1/2 stick of butter for another 7-8 minutes until soft and translucent. Remove from pan and set aside.
  5. Add the other 1/2 stick of butter and and sauté mushrooms about 8 minutes until tender.
  6. Stir all ingredients together in large mixing bowl, adding soup and 2% milk, sauerkraut, sautéed onions and mushrooms, shredded cheese, and fresh ground pepper to taste.
  7. Pour mixture over cooked pasta into a greased rectangle casserole dish, mix thoroughly and cover with foil.
  8. Bake at 375 degrees for 45 mins.
  9. Remove foil and turn up oven to 500 degrees, bake for another 5-10 minutes until top gets golden brown.
  10. Let cool before serving.

Bacon

Fry the bacon until crispy.

Saute Mushrooms

Saute the mushrooms in some butter until soft and golden.

Mix together crumbled bacon, sauteed mushrooms, sauerkraut, mushroom soup, milk and black pepper, stir.

Add the shredded cheese and mix together well. Pour over cooked noodles in the casserole dish and stir it all together.

Pierogie Casserole

Cover with foil and bake for 45 minutes at 375. Uncover and bake another 10 minutes on 500 until it gets crispy and golden on top. Let cool.

Devour.

There’s nothing better in the Summer than a visit to the Farmer’s Market to get some super fresh veggies that are ripe in the peak of the season. Some of my favorites are fresh cherry tomatoes, zucchini and corn that are lightly roasted or sauteed tossed with some roasted garlic, fresh herbs, extra virgin olive oil and freshly grated parmesan cheese over pasta. It’s light, healthy and refreshing for a Summer dinner with a glass of wine with some friends at a table out on the back patio served with a green salad and some crusty bread.

Summer Veggie Pasta with Roasted Garlic, Tomatoes, Zucchini & Corn

Yield: 4

A light and healthy Summer pasta dish with farm market fresh vegetables including roasted garlic, cherry tomatoes, corn and zucchini topped with fresh herbs and shaved Parmigiano-Reggiano cheese. Delicious!

Ingredients

  • 1 package fresh or dried spaghetti (can sub fettucine, penne or tagliatelle)
  • 3 tablespoons extra virgin olive oil
  • 1 small to medium garlic bulb
  • 4 cups cherry tomatoes, halved
  • 1 medium zucchini, sliced into ribbons
  • 1 or 2 ears of corn, husked
  • 1/2 teaspoon sea salt
  • 1/4 cup fresh mint or basil leaves, torn
  • Freshly ground black pepper, to taste
  • ½ cup shaved Parmigiano-Reggiano cheese

Instructions

  1. Preheat oven to 400 degrees.
  2. Shave off ¼” of the top of garlic bulb and peel away the outer layers of the garlic bulb skin. Drizzle with extra virgin olive oil and wrap in foil. Roast for 45 minutes up to one hour and let cool. Squeeze out the garlic bulbs, slice or mash, and place in a bowl to the side.
  3. Bring a pot of water to a boil (you can add a teaspoon of sugar and milk to the water if you like sweeter corn), and add the corn, bringing water back to a boil (about 5-7 minutes.) Once water is back to a boil, remove the corn ears. Let cool, shave off kernels and set aside.
  4. Cut zucchini in half lengthwise and then cut in half again into quarters. Shave zucchini into thin ribbons and set aside.
  5. In another large pot, bring salted water to a boil. Cook pasta according to package directions until al dente. Drain; place pasta in a large serving bowl.
  6. While pasta cooks, heat 1 tablespoon of olive oil in a medium saucepan over medium heat. Add zucchini to pan; and sauté for 5-7 minutes until soft and cooked through, stirring often. Add cooked corn kernels and roasted garlic and sauté together for another minute or so.
  7. Add 2 tablespoons of olive oil to the pan along with tomatoes and ½ teaspoon salt; cover and cook 4-6 minutes. Add tomato-garlic-corn mixture to the cooked pasta; toss to combine. Top with torn mint or basil leaves, shaved Parmigiano-Reggiano cheese and freshly ground black pepper.

Notes

Serve with a green salad and crusty bread and a glass of crisp white wine such as Pinot Grigio or Sauvignon Blanc.

On a recent trip up to Rochester, I had the pleasure of discovering a lovely little Italian place called the Mona Lisa Café. My mother and I stopped in there on a whim one afternoon for a cappuccino, but after entering the café and seeing all the delicious pastries and gelato and enticing smells of amazing food, we decided to stay for lunch instead.

We sat at a table by a large window and enjoyed a glass of wine while perusing the menu. At first we thought we would just split an appetizer, but there were just too many tasty choices on the menu to settle for just one item. We opted for a delicious Italian Panini and their amazing Greens and Beans appetizer made with escarole and cannelloni beans sautéed with heaps of garlic, savory Italian sausage, white wine, olive oil and bread crumbs topped with Parmesan cheese. WOW. Best thing I’ve ever tasted! I loved this dish so much I was inspired to recreate it at home, and my own version of Garlicky Greens and Beans with Sausage I now present to you. Delicioso!

Garlicky Greens and Beans with Sausage

Prep Time: 20 minutes

Cook Time: 40 minutes

Total Time: 1 hour

Serving Size: 4-6

Ingredients

  • 2 cups Fingerling potatoes, peeled and cut into quarters or chunks
  • 1 1/4 pound sweet Italian sausage (may use chicken or turkey sausage if you prefer)
  • 4 tablespoons extra-virgin olive oil, divided
  • 6 garlic cloves, sliced or chopped fine
  • 1 teaspoon dried red pepper flakes
  • 1 large bunch of greens (I used collards, but you can use spinach, kale, escarole, or mustard/turnip greens)
  • 1 can white cannellini beans, drained and rinsed
  • 2 1/2 cups chicken broth
  • 1/2 cup water
  • 1 tablespoon dried minced onion
  • 2 tablespoons white wine vinegar
  • Sea salt and freshly ground pepper, to taste
  • 1/2 cup shredded Parmigiano-Reggiano cheese, plus extra for garnish
  • Crusty bread or garlic bread, for dipping

Instructions

  1. Rinse and drain potatoes, cut into quarters or chunks, depending on the size.
  2. Bring a large pot of water to a boil and cook potatoes for about 10-12 minutes until tender. Drain and set aside.
  3. At the same time, add 1/2 inch of water to a large saute pan over medium heat. Add sausages to and cover with a lid, simmering for 10 minutes (without turning). Remove the lid, turn sausages over, and cook for another 5 minutes until almost cooked through.
  4. Meanwhile, measure out your liquids and dry seasonings and set aside.
  5. Chop the garlic.
  6. Wash the greens well and drain. Remove and discard the veins and stems, cutting leafy green parts off on either side into 1-inch strips.
  7. Remove sausages from pan and cut into coin-sized chunks. Drain fat from pan and wipe down.
  8. Add 1 tablespoon of oil into the same pan and return to medium heat. Add garlic and red pepper flakes, and saute while stirring often, for about 1 minute being careful not to burn garlic.
  9. Add additional 3 tablespoons of oil and start sauteing greens by the handful until they are just starting to wilt.
  10. Add cannellini beans, sausage, potatoes, broth, water and minced onion; bring ingredients to a boil. Reduce heat, cover and let simmer on low for 10-15 minutes to let the flavors meld.
  11. Remove lid, add 2 tablespoons of white wine vinegar, and let simmer for another 5 minutes or so until the liquid reduces a little (you can simmer it down longer if you like a thicker stew or add more broth/water if you like a thinner stew).
  12. Season with salt and pepper to taste.
  13. Serve the Greens and Beans in large bowls topped with shredded Parmigiano-Reggiano cheese and crusty bread for dipping in the broth.
  14. Delicioso!

Notes

Substitute sweet Italian sausage with chicken or turkey sausage or omit all together and adjust water/broth down to 2 cups if you prefer a vegetarian dish.

Mona Lisa Cafe uses breadcrumbs and white wine in their dish which I omitted in my version because of the starch from the potatoes and adding a splash of white wine vinegar which gives it a nice tangy flavor to the broth. Feel free to experiment by topping it with toasted breadcrumbs and using some wine in place of the water in my recipe, but you'll need to adjust the amount of liquids down if you omit the potatoes from the dish so it's not too watery/brothy. The consistency should be of a nice light stew with a balance between the meat and vegetables and the broth.

Serve with a dry white Italian wine such as Pinot Grigio and crusty bread for dipping up the broth.

Citrus Honey Soy Chicken with Toasted Almond Farro

Tuscan Fields, provider of organic, Italian farro, is offering a scholarship to this spring’s Eat Write Retreat food bloggers conference in Philadelphia. They sent some of their delicious samples to me to create a farro recipe for a chance to win a scholarship to the conference this year!

If farro is new to you, you’ll love discovering this ancient grain made of 100% organic semi-pearled farro. It has a mellow, nutty taste, a pleasing “al dente” texture when cooked, and offers loads of nutrients in each bite. Plus, it’s versatile enough to elevate side dishes, salads, soups and main courses to culinary excellence. You can use farro in place of white or brown rice, couscous or pasta and pair it with roasted vegetables, meats and poultry or make a fresh spring salad with farro as your whole grain base, layered with vegetables, fruit or fresh herbs tossed in a vinaigrette dressing.

I decided to create a recipe for Citrus Honey Soy Chicken with Toasted Almond Farro – made with stir-fried chicken marinated in honey, soy sauce, orange juice, garlic, sriracha hot sauce, ponzu sauce, white pepper, black and white sesame seeds, and water chestnuts topped with green onion, fresh orange slices and toasted almonds over a bed of cooked farro. The sauce has a sweet and tangy zing that pairs great with the nutty farro and toasted crunchy almonds. The fresh orange slices give it a fresh and healthy twist.

I am lovin’ this grain – and plan to come up with some other cool recipes to make with it!

Citrus Honey Chicken with Toasted Almond Farro

Cook Time: 30 minutes

Total Time: 1 hour

Yield: 4

Ingredients

  • CITRUS HONEY CHICKEN
  • 1/4 cup organic wildflower honey
  • freshly squeezed juice from half of a large navel orange (about 1/4 cup)
  • 1 tablespoon soy sauce
  • 1 tablespoon citrus Ponzu sauce
  • 1 tablespoon Sriracha (asian hot sauce)
  • 1/2 tablespoon grated fresh ginger
  • 1 teaspoon sesame oil
  • 3 garlic cloves, minced
  • 1 tablespoon black and white sesame seeds
  • White pepper, freshly ground, to taste
  • 1 tablespoon canola oil
  • 1 can water chestnuts, diced
  • 4-5 boneless, skinless chicken thighs, cut into medium-size chunks
  • TOASTED ALMOND FARRO
  • 1 box Tuscan Fields Organic Farro Perlato
  • 1 orange, peeled and sectioned
  • 1/2 cup almonds, toasted
  • 2 green onion, sliced for garnish

Instructions

  1. CITRUS HONEY CHICKEN WITH TOASTED ALMOND FARRO
  2. To make the Citrus Honey marinade, add the first ten ingredients into a large mixing bowl and stir together well.
  3. Add the chicken pieces, stirring to coat, then cover with plastic wrap and let marinate in the refrigerator for up to one hour.
  4. Meanwhile, rinse farro in a colander under cold water and then cook in salted boiling water for approximately 20 minutes, drain and set aside.
  5. Toast almonds in a saute pan over medium heat for about 5-7 minutes until lightly browned.
  6. Peel and section oranges and slice the green onions.
  7. Once chicken is done marinating, heat 1 tablespoon of oil in a large saute pan or wok over medium-high heat.
  8. Add the water chestnuts and saute for a few minutes.
  9. Remove chicken pieces from marinade, shaking off extra sauce and set marinade aside (do not discard).
  10. Add chicken to the saute pan and cook for approximately 8-10 minutes until chicken is no longer pink and starts to brown.
  11. Pour the reserved marinade into the pan with the chicken and water chestnuts and stir thoroughly, cook for another few minutes on medium-low heat to let the sauce thicken a little bit.
  12. To serve, make a bed of farro on to each dinner plate. Top with the chicken and water chestnut sauce mixture.
  13. Garnish with toasted almonds, sliced green onions, fresh orange slices, and additional white pepper to taste.

Rochester-Style Chicken French & Lemon Broccolini

Hey guys! I was just featured in the NY Times Food Section yesterday (online and print versions) talking about Chicken French from my hometown Rochester NY!

Chicken French is an amazing dish that is popular in my hometown in Rochester, NY and on almost every menu. The Italian-American immigrants first introduced this dish in NYC and then migrated Upstate. The recipe also known as Chicken Francaise, uses lightly-floured chicken cutlets, which are then coated with a parmesan cheese and egg batter, then sauteed until golden brown. The luscious sauce is made with garlic, butter, lemon, white wine or sherry, and parsley which is served over the top of the golden brown chicken. You can serve the dish over pasta (my favorite is a linguine) or rice or a green veggie, and I decided to serve this with broccolini, a Chinese broccoli that is similar to Broccoli Rabe, and topped it with the lemon butter sauce and an extra splash of fresh lemon juice for a light and healthy dinner.

This dish has a lovely tangy, buttery flavor with the lemon, wine and garlic, and the flour coating is super light as I made it with an ultra-fine flour (Wegman’s Pan-Searing Flour, or you could use Wondra flour), and I seasoned it with salt and pepper and a hint of cayenne. If you want to use sherry instead of a white wine, this will give you a sweeter flavor to the sauce. I made my sauce with a Marlborough New Zealand Sauvignon Blanc which is light and fruity and gives it a nice semi-sweet tangy flavor.

Serve the chicken and broccolini with some crusty french bread or some fresh pasta (i love linguine with more lemon-butter sauce, parmesan cheese and parsley over the top!) and a glass of dry white wine like Sauvignon Blanc or Pinto Grigio. Enjoy!

Chop the parsley

Mince the parsley for the egg, cheese and parsley mix.

Prep the wet and dry ingredients

Prep the wet and dry ingredients to dip the chicken in (flour first, egg-cheese-parsley mixture second).

Saute the chicken in olive oil for approx. 6 minutes on each side until golden brown.

Saute the chicken in olive oil in a large saute pan over medium heat for approx. 4 minutes on one side.

Flip chicken over and saute another 6 minutes until golden brown.

Flip chicken over and saute another 4 minutes until golden brown. Remove from pan and set aside, covered in a foil tent. Discard the cooking oil except for 1 tablespoon.

Remove chicken and set aside. Saute minced garlic for 1-2 minutes.

Saute the minced garlic on medium low for about a minute until lightly browned, being careful not to burn.

Add wine, and bring to a boil.

Add the wine, scraping up brown bits from the bottom of the pan, and bring to a boil.

Add broth and lemon juice and turn heat to high, bringing to a boil.

Add the chicken broth and lemon juice and let cook for approx. 5-7 minutes to reduce liquid by half. Stir in the cold butter and red pepper flakes (if using).

Return chicken to the pan and bring to a boil, cooking for another 5 minutes to let liquid reduce and infuse flavors in the chicken.

Return chicken to the pan and bring to a boil, reduce heat to a simmer and cook for another 4-5 minutes to let liquid reduce further and infuse flavors in the chicken. Throw in some extra chopped parsley. Remove from heat.

Meanwhile, bring a large pot of water to a boil. Insert steamer basket with broccolini and steam covered for about 5 minutes.

Lemon Broccolini

Remove cover and let cook over boiling water for another 5 minutes or so, until broccolini is fork tender but still bright green.

Rochester-Style Chicken French & Lemon Broccolini

Prep Time: 15 minutes

Cook Time: 30 minutes

This is an amazing dish that is popular in my hometown in Upstate Rochester, NY. The Italian-American immigrants first introduced this dish in NYC and then migrated Upstate. The recipe stems from the French Veal Francaise or Chicken Francaise dish, which uses lightly-floured thin veal or chicken cutlets, which are then coated with a parsley-parmesan cheese-egg mixture and sauteed until golden brown.

The luscious sauce is made with garlic, butter, lemon, white wine or sherry, and parsley which is served over the top of the golden brown chicken. I decided to serve this with steamed broccolini, a Chinese broccoli that is similar to Broccoli Rabe, and then topped it with the lemon butter sauce for a fresh and healthy Sunday dinner. It has a lovely tangy and buttery flavor with the lemon, wine and garlic, and the coating is super light as I made it with an ultra-fine flour (Wegman's Pan-Searing Flour) or you could use Wondra, or a regular flour then season it with salt and pepper and a hint of cayenne.

If you want to use sherry instead of a white wine, this will also give you a sweeter flavor to the sauce. I made this with a Marlborough New Zealand Sauvignon Blanc which is light and fruity and gives it a nice semi-sweet tangy flavor.

Ingredients

  • CHICKEN FRENCH:
  • 1/4 cup olive oil/canola oil blend for sauteing (I used Colavita Garlic Oil Blend)
  • 1 1/2 pounds boneless, skinless chicken breast cutlets
  • 2-3 eggs
  • 1/4 cup shredded Parmigiano Reggiano cheese
  • Kosher salt and fresh ground black pepper
  • Dash of cayenne pepper (optional)
  • 1 tablespoon fresh parsley, finely chopped
  • 1/2 cup of superfine flour (Wegmans Pan Searing flour or Wondra)
  • LEMON BUTTER WINE SAUCE:
  • 1-2 garlic cloves, finely minced
  • 1/2 cup white wine (or sherry for a sweeter flavor)
  • 1 cup chicken broth
  • Juice from 1 1/2 lemons (about 1/4 cup)
  • 1 teaspoon red pepper flakes (optional)
  • 2 tablespoons cold butter, cut into pieces
  • Lemon wedges, for garnish
  • 1-2 tablespoons fresh chopped parsley, for garnish
  • BROCCOLINI:
  • 1 bunch broccolini, trimmed
  • Lemon Butter Wine sauce (see above)
  • Fresh lemon juice and salt and pepper, for garnish

Instructions

  1. CHICKEN FRENCH:
  2. Heat oil in a large non-stick saute pan over medium heat.
  3. Meanwhile, whisk together eggs, cheese, salt and pepper, cayenne (if using) and fresh parsley in a large mixing bowl.
  4. Place flour in another flat bowl and season with salt and pepper to taste.
  5. Rinse and pat dry chicken breasts, then dredge each one in flour first (left hand), then egg mixture (right hand).
  6. Place chicken into the heated saute pan and cook for 4 minutes on one side. Flip chicken over and saute for another 4 minutes until golden brown.
  7. Remove from pan and set aside, covered with a foil tent.
  8. LEMON BUTTER SAUCE:
  9. In the same skillet, saute the minced garlic for 1 minute, being careful not to burn.
  10. Add the wine and bring liquid to a boil over high heat, scraping up the brown bits in the pan.
  11. Pour in the chicken broth and lemon juice and red pepper flakes (if using) and let reduce by half, another 5-7 minutes.
  12. Stir in the cold butter and whisk until it melts and creates a velvety sauce and consistency.
  13. Reduce the heat, and add the cooked chicken back into the pan with the sauce, let simmer another 4-5 minutes.
  14. Place chicken on serving plate with the steamed broccolini (and/or cooked pasta) and spoon the lemon butter sauce over the top of the dish.
  15. Garnish with lemon wedges and additional chopped parsley if desired.
  16. BROCCOLINI:
  17. Steam broccolini for about 5 minutes, covered. Remove lid and steam for another 5 minutes until fork tender but still bright green.
  18. Top broccolini with Lemon Butter sauce, additional lemon, salt and pepper to taste.

This is a super easy and tasty dish that I whipped up one night with some of the ingredients I had on hand. It’s a light and savory pasta dish made with large shell pasta, sauteed spinach, zucchini and ham with garlic and a creamy parmesan alfredo sauce, with a few sprinkles of red pepper flakes, sea salt and fresh ground pepper. Perfect dish for a weeknight dinner, with some crusty French or Italian bread, a green salad and glass of wine. You can also substitute whole wheat pasta in any shape or size you please. Cooked diced bacon or prosciutto are also delicious in place of the cooked ham. If you want to experiment with the veggies, try broccoli or peas or yellow squash, what ever your heart desires!

Parmesan Garlic Shells with Spinach, Zucchini and Ham

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Ingredients

  • 1 bag of medium-large shell pasta (fresh or dried)
  • 2 tablespoons olive oil
  • 2 cloves of garlic, minced
  • 1 large zucchini, sliced 1/4 inch thin and halved
  • 1 bag of fresh spinach (leaves), chopped
  • 1-2 teaspoons red pepper flakes
  • 1 cup of cooked Virginia ham, diced (can sub cooked prosciutto or bacon)
  • Kosher salt and fresh ground pepper, to taste
  • PARMESAN GARLIC SAUCE:
  • 1 tablespoon butter
  • 1 clove garlic, minced
  • 2 teaspoons flour
  • Sea salt, to taste
  • 1 cup low-fat milk
  • 2 tablespoons neufchatel or cream cheese
  • 1 cup parmesan cheese
  • Fresh parsley, chopped for garnish
  • 1 green onion, sliced for garnish

Instructions

  1. Bring a large pot of salted water to a boil, add pasta shells and cook according to package directions until al dente (about 8 minutes dried, 3 minutes fresh). Drain pasta, reserving 1/2 cup of cooking water and set aside.
  2. Add 1 tablespoon of olive oil to a medium-large saute pan and add zucchini. Sprinkle with salt and fresh ground pepper to taste and cook for about 8-10 minutes until zucchini is soft. Add 1 tablespoon of garlic and saute for another minute or so until garlic starts to brown. Remove zucchini-garlic mixture from saute pan and set aside in a medium-large mixing bowl.
  3. Add another tablespoon of olive oil to the saute pan and heat for a minute or so. Add the fresh chopped spinach, salt and pepper to taste, and red pepper flakes, stirring through. Saute spinach about 3-5 minutes until wilted. Add the cooked diced ham and saute another few minutes until browned. Remove spinach and ham from saute pan and add to cooked zucchini in mixing bowl.
  4. To make the Parmesan Garlic Sauce:
  5. Melt the butter in a large skillet over medium heat.
  6. Add the garlic and cook until soft and lightly browned, about 1 minute.
  7. Add in the flour and cook, stirring with a wooden spoon, another minute.
  8. Whisk in the milk, a sprinkle of sea salt and cook, whisking constantly, until just thickened, about 3 minutes.
  9. Add the Neufchatel and parmesan cheese; whisk until melted, about 1 minute.
  10. Combine the cooked pasta shells, 1/2 cup cooking water from pasta, sauteed zucchini, spinach and ham to the alfredo garlic sauce, stir thoroughly to mix ingredients for another minute or so.
  11. Sprinkle additional salt, pepper and red pepper flakes to taste into the pasta mixture. Remove from saute pan and place in a large serving bowl. Top pasta with chopped fresh parsley and green onions, and top with more parmesan cheese to taste.
  12. Serve the pasta with some crusty bread, a green salad and glass of wine.

Notes

I recently got back from an amazing trip to San Diego – one so lovely and rejuvenating that the sunsets are burned into my brain, leaving me wishing for more of the bright colorful skies, fresh air, palm trees swaying in the wind and cool sand between my toes.

With a large group of eight people that all love to eat and drink, we spent over $1500 on our grocery bill and stocking our bar so we could take advantage of our two kitchens and grills and had massive amounts of cooking and eating (and drinking) going on each day. I swore after this trip I would never eat again – but that didn’t last long.

Paula made us a yummy Chicken dish stuffed with Prosciutto, Sage and Provolone which I gladly assisted with while multi-tasking by drinking my Sauv Blanc with a HUGE mitt (just in case that wine glass gets too hot – LOL).

She also made us a Flaky Egg Bake for Suzanne’s birthday breakfast – with layers of buttery phyllo dough filled with sausage, eggs, cheese, peppers, mushrooms, onions and baked into a yummy casserole fit for a Queen (ahem, Suzanne..)

Janice and Andrew made their delicious Italian lunch of Caprese Salad made with fresh tomatoes, garlic, basil, olive oil and balsamic vinegar with prosciutto, olives and fresh Italian bread, accompanied by a few bottles of great wine. They also made a delicious Italian meal of Chicken Marsala over pasta with fresh parmesan cheese, parsley and Sauteed Asparagus and Brussels Sprouts for our last night in town – totally delicious and gone in five seconds FLAT.

My designated meal was to make a feast for Mexican night – when i say feast, i mean FEAST – we had enough food to feed the entire Mission Beach strip and enough leftovers that we seriously thought about donating it to a homeless person so we didn’t have to throw it out if we didn’t finish it all up the next day!

I think we all fell into a serious food coma by Night #3 and decided to kick it up a notch and wake ourselves up with some music and a few games of pool after dinner, and even some video games with the help of services as overwatch boost.

After all the eating and feasting, a breathtakingly spooky view appeared when the sun went down. We missed the Green Flash though – which apparently happens for a split second as soon as the sun goes over the horizon line and sinks into the abyss.

My favorite moment of the entire trip was basking in the glow of that big orange fireball in the sky one evening, dreaming of the day I can return to this lovely, lovely place. Until then, I’ve had my fill of tequila and Mexican feasts to last me another year. The sunsets? I never get tired of those – especially when they look like this.

California Guacamole with a Kick

Ingredients

  • 6 avocados
  • Juice from 2 limes
  • 2 cloves garlic, minced
  • 1/2 purple onion, minced
  • 4 Roma tomatoes, chopped
  • 1/4 cup cilantro leaves, chopped
  • 2 jalapeno peppers, minced fine, stems and seeds removed
  • 1 teaspoon cumin
  • Kosher Salt and fresh ground black pepper to taste
  • Dash of hot sauce

Instructions

  1. Cut avocados in half and remove the pit. Scoop out the flesh into a large mixing bowl and squeeze lime juice on immediately (to prevent the avocado from oxidation and browning). Mash avocado well with a fork until slightly smooth but still a little bit chunky.
  2. Add garlic, onion, tomatoes, jalapenos, cumin, salt and pepper, and hot sauce. Adjust seasonings to taste.
  3. Cover with plastic wrap tightly and let sit in the refrigerator for at least 30 minutes or more to let the flavors meld.
  4. Serve with tortillas, chips, veggies or crackers with fresh made salsa (tomatoes, onion, cilantro, jalapeno, salt and pepper) and plenty of margaritas to go around.

Sauteed Tequila Lime Shrimp

Prep Time: 1 hour

Cook Time: 10 minutes

Total Time: 1 hour, 10 minutes

Yield: 8

Ingredients

  • 2 pounds of shrimp, peeled and deveined
  • 1 cup tequila, divided in half
  • Juice from 2 fresh limes (about 1/2 cup)
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon red chile flakes
  • 1 tablespoon chili powder
  • 1 jalapeno pepper, deveined and seeded, minced
  • 1/4 cup olive oil for marinade, plus 1 tablespoon for cooking
  • 2 tablespoons butter
  • 1 cup fresh cilantro leaves, chopped
  • Kosher salt and freshly ground pepper to taste

Instructions

  1. Wash and drain shrimp, and place in a medium bowl.
  2. Mix together 1/2 cup of tequila, lime juice, cayenne pepper, chile flakes, chili powder, jalapeno pepper, and olive oil in a separate bowl and pour over the shrimp. Cover with plastic wrap and let marinate for at least 30 minutes to 1 hour. Drain and discard marinade off shrimp in a colander or with a slotted spoon and set shrimp aside.
  3. Heat a large saute pan over medium-high heat. Add 1 tablespoon of olive oil to the pan and heat for a minute or so. Add additional 1/2 cup of tequila to the saute pan (with pan removed off the burner to avoid flames!).
  4. Add 1/2 of the marinated shrimp to the heated saute pan and cook for about 2 minutes. Remove shrimp from the pan and set aside. Add the rest of the shrimp to the pan and cook for another 2 minutes until pink.
  5. Add two tablespoons of butter to the saute pan and return first batch of shrimp, adding it to the shrimp in the pan and saute while tossing the pan for another 2 minutes or so. Sprinkle salt and pepper into the shrimp to taste and mix through for another 30 seconds to 1 minute.
  6. Serve the shrimp on a platter with the tequila-lime-butter sauce on top with a side of tortillas and all the dressings: guacamole, cilantro, hot sauce, sour cream, rice to make tacos or burritos.

Layered Chicken Enchilada Casserole

Prep Time: 45 minutes

Cook Time: 30 minutes

Total Time: 1 hour, 15 minutes

Yield: 8-10

Ingredients

  • 1 tablespoon olive oil
  • 1/2 large sweet onion, diced
  • 1 teaspoon cayenne pepper
  • 1 tablespoon hot pepper sauce
  • 2 garlic cloves, minced
  • Kosher salt and fresh ground pepper, to taste
  • 8 boneless skinless chicken breasts (about 1 1/2 pounds), poached and shredded
  • 1 32-ounce container of chicken stock (for poaching chicken)
  • 2 cans of red enchilada sauce
  • 9 flour tortillas (large burrito size)
  • 2 cups of shredded Mexican-blend cheese
  • 1 14-ounce can of crushed tomatoes
  • Fresh cilantro, chopped for garnish
  • Sour cream, for garnish

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large saute pan, heat olive oil over medium heat. Add onion, cayenne, salt and pepper and hot sauce. Saute for about 5 minutes until onion is soft and golden. Add minced garlic and saute for another 2 minutes. Remove onion-garlic mixture from heat and set aside in a large mixing bowl.
  3. To poach chicken breasts, heat chicken stock in a large Dutch oven or high-sided saute pan and cook chicken breasts in the stock, covered, for approximately 10-15 minutes. Turn off the heat and let chicken sit in the pot (still covered) for another 10-15 minutes.
  4. Remove chicken breasts from the stock on to a platter and let cool for a few minutes. Shred the chicken with 2 forks and add to the onion-garlic mixture in to the mixing bowl.
  5. Spread 1/2 of the enchilada sauce from one can on the bottom of a rectangular glass casserole dish. Place three tortillas over the sauce, overlapping.
  6. Top the layer of tortillas with 1/4 of the chicken-onion mixture, spreading evenly over the casserole dish. Top with 1/4 of the crushed tomatoes and 1/4 cup of shredded cheese.
  7. Repeat 3 times until you have four layers and have used up all the enchilada sauce, tortillas, chicken-onion mixture, crushed tomatoes and shredded cheese. (Like making a Mexican Lasagna!)
  8. Place casserole dish in the preheated oven and bake for 30 minutes until the cheese on top is bubbly and golden brown.
  9. Remove from the oven and let cool for about 5-10 minutes. Cut into squares and serve with chopped cilantro and sour cream.

Notes

Can also make casserole with ground beef or steak, and it can be made in a circular or oval casserole baking dish rather than rectangular if preferred.

  • 2 tablespoons olive oil
  • 2 jalapeno peppers, seeded, deveined and minced
  • 3 cloves garlic, minced
  • 1/2 sweet yellow onion, diced
  • 2 cups of long grain rice
  • 1/2 cup water
  • 1/2 cup chicken stock
  • 1 15-ounce can of crushed tomatoes
  • Kosher salt and pepper, to taste
  • Cilantro, for garnish

Instructions

  1. Heat olive oil over medium-high heat and saute jalapenos, garlic and onion about 5 minutes in a large saute pan.
  2. Add the rice to the saute pan and cook, stirring often, until rice is browned slightly another 5 minutes.
  3. Pour water, chicken stock and crushed tomatoes into the pan and season with salt and pepper.
  4. Cover and cook for about 15-20 minutes until rice has absorbed all the liquid and is cooked through.
  5. Remove rice from heat, uncover and fluff with a fork. Add rice to a large serving bowl and garnish with fresh cilantro for serving.

Notes

Feel free to add some fresh cooked corn, red or green peppers or peas to the rice for additional flavors.
