Balsamic Cranberry Chicken Cauliflower Pizza

Balsamic Cranberry Chicken Cauliflower Pizza

I was recently invited to be a part of the Cape Cod Select Food #Blogger Recipe Challenge and I’m so excited to share my delicious new #pizza recipe using their frozen cranberries with you!

Balsamic Cranberry Chicken Cauliflower Pizza

This Balsamic Cranberry Chicken Cauliflower Pizza is a delicious and healthy pizza made with frozen cranberries sautéed in a lovely reduced balsamic glaze, shredded rotisserie chicken, caramelized onions, ricotta, Parmesan and mozzarella cheese, topped with fresh arugula and basil on a crispy, thin cauliflower crust. You guys..this is the most delicious pizza I’ve ever made..It’s a sweet and tangy savory delight all in one bite!

Rhodes Family Farm

For over 70 years, the Rhodes family has been harvesting cranberries in Southeastern Massachusetts, the heart of “Cranberry Country”. In 2009, Cindy Rhodes founded Cape Cod Select, the retail face for the Edgewood Bogs Cranberry Growers.

Cape Cod Select Cranberries

They select only the ripest, freshest fruit to package and are proud to provide a premium quality product. From flower to package, they strive to integrate all the latest sustainable technologies and pledge to do their share in protecting the environment.

Balsamic Cranberry Chicken Cauliflower Pizza

I used a pre-made frozen cauliflower pizza crust (Caulipowr brand is great) which is super thin, crunchy and saves a lot of time. You can also make a homemade crust with riced cauliflower, egg, mozzarella, parmesan cheese, with a dash of dried basil or italian seasoning which is included in the recipe.

First slice your onions and sauté them over low heat on the stove in a large sauté pan with a pinch of sugar or stevia for about 30-40 minutes until caramelized. Set aside.

Bake the crust

The cauliflower pizza crust is topped with all kinds of goodies: a creamy base of ricotta topped with flavorful shredded rotisserie chicken, mozzarella, and caramelized onions, then popped in the oven for 11-13 minutes to crisp it up and melt the cheese.

Roughly chop cranberries

While the crust is cooking, chop your cranberries and sauté the cranberries for a few minutes in a little bit of olive oil.

Balsamic Glazed Cranberries

Reduce the balsamic vinegar in a small saucepan over high heat on the stove to create a delicious glaze, then add the cranberries to the glaze and set aside.

Balsamic Cranberry Chicken Cauliflower Pizza

Once the pizza is done cooking, add the balsamic glazed cranberries and top it with fresh baby arugula and torn basil leaves, with a drizzle of additional olive oil and balsamic glaze for an extra hit of flavor.

Balsamic Cranberry Chicken Cauliflower Pizza

Cut it into 4-8 slices (depending on the size of your crust) and serve immediately.

Healthy, delicious and perfect for a light, gluten-free meal. Enjoy!

This Balsamic Cranberry Chicken Cauliflower Pizza is a delicious and healthy pizza made with frozen cranberries sautéed in a lovely reduced balsamic glaze, shredded rotisserie chicken, ricotta, Parmesan and mozzarella cheese, caramelized onions and fresh arugula on a crispy, cheesy cauliflower crust. Healthy, delicious and perfect for a light, gluten-free meal.

Ingredients

  • For the crust:
  • 1 medium head cauliflower (or 12 ounces/3 cups frozen pre-riced cauliflower)
  • 1 egg, beaten
  • 1/2 teaspoon garlic powder
  • 1 1/2 cups mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1 teaspoon Kosher or sea salt
  • Freshly ground black pepper
  • For the pizza:
  • 3 tablespoons extra virgin olive oil, divided
  • 1 large sweet onion, halved and sliced thin
  • Sea salt and freshly ground black pepper, to taste
  • 1 cup balsamic vinegar, plus extra for drizzling
  • 1 1/2 tablespoons stevia (or 3 tablespoons honey)
  • 3/4 cup Cape Cod Select frozen cranberries, thawed and drained
  • 2 ounces ricotta cheese
  • 1 cup shredded rotisserie chicken
  • 1 cup mozzarella, shredded
  • 1 cup baby arugula
  • Fresh torn basil, for garnish

Instructions

  1. For a homemade cauliflower pizza crust:
  2. Preheat oven to 400 degrees F.
  3. Working in batches as needed, pulse cauliflower in a food processor until rice-like consistency. If using pre-riced cauliflower, microwave according to package directions (3-5 minutes) and let cool 5-10 minutes. Drain in a large colander, squeezing out extra moisture with paper towels.
  4. In a medium mixing bowl, combine cauliflower, beaten egg, garlic powder, 1 cup mozzarella and parmesan cheese, dried basil and oregano, salt and pepper. Stir and fold until mixture holds together.
  5. Press cauliflower mixture into a 10-inch circle (1/4” thick) on the parchment lined pizza stone or baking sheet.
  6. Bake cauliflower crust for 15 minutes, then flip it over and bake another 10 minutes or until edges are golden brown and crust is crispy; remove from oven and brush with a small amount of olive oil.
  7. For the pizza:
  8. While pizza crust is baking, caramelize onions in a sauté pan over low heat with 1 1/2 tablespoons of olive oil, sea salt and pepper, for about 20-25 minutes until soft and golden brown. Remove pan from stove and set aside.
  9. Reduce the balsamic vinegar on the stove by bringing vinegar and stevia (or honey) to a boil in a small pan. Reduce heat to medium-low; let simmer for 8-10 minutes.
  10. Stir the vinegar occasionally as it simmers and let reduce by half until the consistency is thick and syrupy.
  11. Roughly chop the cranberries and add to a small pan with ½ tablespoon olive oil over medium heat. Sauté for 5 minutes, then toss them in the balsamic reduction and set aside.
  12. Remove pizza crust from oven and spread ricotta cheese in an even layer, leaving 1-inch border on the outer crust. Sprinkle with caramelized onions and shredded rotisserie chicken, top with 1/2 cup shredded mozzarella cheese.
  13. Slide pizza back into the oven and bake for another 5 minutes (or broil it at 450-500 degrees for 2 minutes) on the upper rack, until cheese is bubbly and browned. Remove pizza from oven.
  14. Sprinkle the sautéed balsamic cranberries evenly over pizza, and top with arugula and fresh basil.
  15. Drizzle pizza with additional olive oil and balsamic reduction, if desired.
  16. Slice into 4-8 pieces and serve immediately.
  17. NOTE:
  18. If using pre-made or frozen cauliflower pizza crust:
  19. Place pizza stone or baking sheet on middle rack of oven and preheat to 400 degrees F. Line pizza peel or large round baking sheet with parchment paper.
  20. Spray the crust with olive oil cooking spray and top with ricotta, mozzarella, shredded chicken and caramelized onions. Bake for 10-12 minutes and remove from oven. Top with the balsamic cranberries, fresh basil, arugula and drizzle with extra balsamic glaze for garnish.

Notes

To save time and effort, use a pre-made frozen cauliflower pizza crust and top with ricotta and mozzarella cheese, onions, chicken and bake for 11-13 minutes, then top with arugula, balsamic cranberries and basil and additional olive oil and balsamic glaze to garnish and cut into slices and serve.

You can make the crusts ahead, wrap well with plastic, and refrigerate for up to 2 days or freeze for up to 2 weeks.

My Brilliant Friend

My Brilliant Friend

This is a gorgeous mini-series on HBO that I just started watching and fell in love with instantly. Set in Naples Italy post-World War II, is a story about two best friends (Lila Ferrulo and Elena Greco) along with their struggles and friendship as they go through life together (and apart) trying to survive and get out of a poor neighborhood in the projects of Naples. It has a complex cast of characters that make up all of the Italian families that surround them and are intertwined in their lives. The story is endearing and heartwarming, yet sad and troubling all at the same time. It’s absolutely beautifully written – lovely, haunting and addicting. The books are part of a 4-part series called Neapolitan Novels written by Elena Ferrante which the HBO TV series is based upon.  Must see and read!

Cheesy Bacon Chicken

Cheesy Bacon Chicken

Cheesy Bacon Chicken

Soooo..it’s day 25? 27? 30? of #quarantinelife and I’ve been struggling a bit. Struggling to keep up with what day it is, what time it is. What the heck is going on in our world right now with this pandemic and hoping and praying for a light at the end of the tunnel…a silver lining somewhere for all of us. For this #coronavirus to just finally go away and we can all get back to living our lives as normal.

Cheesy Bacon Chicken

In the meantime, with all of us practicing #socialdistancing I’ve had plenty of time to reflect, read, learn, watch, pray, spend time with family and most of all cook. And by cook, I mean easy, comforting, stress-reducing meals such as this Cheesy Bacon Chicken. The ultimate dish for #quarantinecooking. Grab whatever is on hand or in the fridge and start cooking. Make sure it’s got plenty of protein and then add a little fruit or veg to go with it. And BACON. Lots of #bacon.

This slideshow requires JavaScript.

The recipe is quite simple and easy and done in less than 30 minutes – using boneless skinless chicken tenders, bacon and cheese, with only a few seasonings. It’s all cooked together in a big sauté pan of bacon and olive oil, with melted cheese and crispy bacon on top – and it’s seriously delish. And it’s #lowcarb, #keto, #atkins friendly too. Bonus.

Cheesy Bacon Chicken

You can substitute whole chicken breasts or thighs (instead of tenders) and adjust cooking time appropriately (about 6 mins per side for whole chicken breasts). Use any melty cheese you like too – Cheddar, Swiss, Muenster, Monterey Jack. I served the chicken with a side of sautéed zucchini with garlic and dill which was great but  you could serve over #cauliflower rice or low carb #pasta. Try it in a low carb tortilla to make tacos or a quesadilla (with some jalapeños and a dash of hot sauce!) or use it on top of a thin crust flatbread pizza with some alfredo sauce or pesto. It would also be great on top of a big green salad with ranch or green goddess dressing. The possibilities are endless with this classic comfort food.

Cheesy Bacon Chicken

I hope all of you are hanging in there and staying safe, healthy and well. We’ll get through this together eventually. And in the meantime, learn to live life a little more simply. And not take anything for granted. Especially loved ones and friends and family. And the people and things we cherish most. Enjoy and have a great day my friends.

Fresh Ingredients

Black Pepper Caramel Chicken is a traditional Vietnamese dish made with chicken thighs, shallots and red chili peppers,  jalapeños, and cilantro..

chicken and caramel sauce

tossed in a luscious caramel sauce made with brown sugar, fish sauce, vinegar,  red chili garlic sauce, fresh garlic, ginger and freshly ground black pepper,

Cooked Udon Noodles

The noodles are cooked separately, then drained and sprinkled with the packaged chicken-flavored seasoning,

Black Pepper Caramel Chicken Udon

then tossed back into the pan with the cooked chicken and sweet savory Black Pepper Caramel sauce.

Black Pepper Caramel Chicken Udon

For serving I topped the dish with a dash of Everything Bagel seasoning (you could also just use white or black sesame seeds if you like), a few sliced jalapeños and fresh cilantro for an extra kick of heat and bright flavor.

Sweet + Spicy Chicken Thighs w/ Roasted Broccolini

Sweet and Spicy Chicken + Roasted Broccolini

Sometimes you need to spice things up in life a little. Especially to brighten up those late Winter/early Spring dreary days when you’re craving #BBQ, until the gorgeous grilling weather is back in full swing!

These Sweet and Spicy Chicken Thighs are the perfect remedy – bathed in a gorgeous sticky, spicy and sweet glaze, made with Penzey’s Northwoods Fire Rub and Woodstock Everything Sauce and a little honey and white balsamic vinegar for a great BBQ flavor with the convenience of the broiler.

Sweet and Spicy Chicken + Roasted Broccolini

I made some fresh and easy Roasted Broccolini with Garlic to go with the chicken, but you could also serve them with the typical BBQ fixings: corn on the cob, baked beans, cole slaw, mac and cheese or fries. Black beans and rice would also be a great option for a Caribbean flair. Or shred the chicken and make some Spicy Sweet Chicken Tacos or BBQ Chicken Wraps or Pizza with the roasted broccolini…YUM!

Penzey's + Woodstead

Chef’s Notes: Penzey’s Northwoods Fire Rub is a lovely spicy mixture of salt, chipotle, black pepper, Hungarian paprika, garlic, rosemary, thyme, black pepper, and cayenne. If you aren’t able to find it or buy some,  you can make your own by using the following: 2 teaspoons garlic powder, 2 teaspoons chipotle or chili powder, 1 teaspoon paprika, 3/4 teaspoon salt, 1/2 teaspoon cayenne, 1/2 teaspoon black pepper, 1/2 teaspoon dried rosemary and 1/2 teaspoon dried  thyme. Get it online here.

Woodstead Hot Anything & Everything Sauce is a sweet and spicy glaze I found in Upstate New York in Naples in the Finger Lakes (it’s made there locally and sold at the farmer’s markets and you can also get it at Arbor Hill winery). It’s key ingredients are ketchup, vinegar, sugar, mustard, salt, turmeric and paprika, orange juice, cayenne pepper, crushed red pepper and brown sugar. It’s super delicious on everything as a bbq glaze or a dip for chips or fries. If you can’t find the sauce or aren’t able to get it to make my recipe then I suggest finding a Carolina-style BBQ sauce (mustard and vinegar based) and mixing it with the honey and white balsamic vinegar per my recipe instructions and it would be just as delicious! Kinda like a Honey BBQ mixed with the spicy rub for an extra kick!

Mentioned in the NY Times #Food Section! :: Chicken French Recipe

Chicken Francaise (French)

In the NY Times Food Section today!

Hey guys! Exciting news! I am mentioned in the NY Times Food Section today in an article by food writer Julia Moskin about Chicken French (Francaise).

I had the opportunity to do an interview with her (since I am originally from Rochester NY where the recipe is VERY popular and ubiquitous on every menu!) to discuss it’s origins and history, as well as discuss my Chicken French recipe and way of cooking and styling it, as well as variations on the recipe in different restaurants in Rochester and NY state.

Chicken Francaise (French)

If you have never tried Chicken French, you absolutely must – it’s made with thinly pounded chicken (cutlets) sautéed in a light flour and egg batter, then bathed in a luscious lemony butter sauce with fresh parsley and garlic, served over pasta or green vegetables. It’s simply divine. And one of my favorite dishes to make from my hometown!

Here’s a link to the article on the NY Times Food Section today as well as Julia’s recipe for Chicken French.

Sriracha Mango Grilled Chicken Wings + Spicy Micheladas

Sriracha Mango Chicken Wings + Spicy Micheladas

Summer is here and almost half way over at that! I love grilling anything and everything during the warm weather months so I’ve created a super delish recipe for Sriracha Mango Chicken Wings with a Ginger-Lime Sour Cream dipping sauce and a Spicy Michelada to pair it with.

Sriracha Mango Chicken Wings + Spicy Micheladas

Once again, I’ve used a fantastic infused balsamic vinegar from Seven Barrels, one of my favorite clients ever. The Sriracha Mango vinegar is delicious on chicken so I made a glaze with fresh mango, sriracha, vinegar, fresh lime zest and orange juice to toss the wings in after I grilled them a bit, then glazed them again for extra flavor at the end.

Sriracha Mango Chicken Wings + Spicy Micheladas

They’re spicy and sweet, and oh so good. And I made a lovely Ginger-Lime Sour Cream dipping sauce to cool off the heat a bit, along with a Spicy Michelada made with Mexican beer (Corona) and a dash of the Sriracha Mango vinegar, a dash of salt, and a fresh squeeze of lime juice.

Sriracha Mango Grilled Chicken Wings

Ingredients

  • Chicken Wings:
  • 2 pounds chicken wings (24 wing pieces)
  • 1/4 cup Seven Barrels Lime Olive Oil
  • 1 teaspoon garlic salt
  • 1 teaspoon freshly ground black pepper
  • Vegetable oil or spray, for grill
  • Sriracha Mango Lime Glaze:
  • 1 cup mango, peeled and diced
  • ¼ cup orange juice
  • ¼ cup Sriracha
  • 1 tablespoon Seven Barrels Sriracha Mango Vinegar
  • 1 tablespoon Seven Barrels Lime Olive Oil
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 tablespoon garlic, finely minced (or 1 teaspoon garlic powder)
  • 1 small red chile pepper
  • ¼ cup cilantro
  • Salt and pepper, to taste
  • Ginger Lime Sour Cream Dipping Sauce:
  • ½ cup sour cream
  • 1 tablespoon Seven Barrels Lime Olive Oil
  • 1 teaspoon garlic salt
  • 1 teaspoon fresh lime zest
  • ½ teaspoon fresh ginger, grated
  • Michelada:
  • 1 (12 ounce) Corona Beer
  • Fresh lime juice from ½ a lime
  • 1 tablespoon Seven Barrels Sriracha Mango Balsamic Vinegar
  • 1 teaspoon Kosher salt
  • Dash of hot sauce
  • Lime wedges, for garnish

Instructions

  1. Heat a grill or grill pan over medium-high heat (spray or brush pan with a light coat of cooking oil). Toss the chicken wings in 1/4 cup Seven Barrels Lime Olive Oil, and season with salt and pepper. Cook wings on the grill for about 15 minutes, flipping halfway through, until no longer pink and skin starts to get charred with grill marks.
  2. To make the glaze, add the mango, orange juice, Sriracha, Seven Barrels Sriracha Mango Vinegar, Seven Barrels Lime Olive Oil, honey, soy sauce, garlic, chile pepper and cilantro into a food processor and process until smooth. Place the sauce into a saucepan over medium-low heat and let simmer until warmed through while the wings are cooking. Season with salt and pepper to taste. Remove from the heat to a large mixing bowl.
  3. Once the wings are finished cooking, toss them gently in the Sriracha Mango Lime glaze and let them marinate for about 5 minutes or so. Return wings back to the grill for an additional 5 minutes, flipping over once. Remove wings from the grill on to a large platter and let them cool to give them a nice caramelized glaze.
  4. To make the Ginger Lime Sour Cream dipping sauce, stir together the sour cream, Seven Barrels Lime Olive Oil, garlic salt, lime zest and grated ginger in a bowl and serve with the wings with celery and carrot sticks.
  5. NOTE: Alternatively, you can bake the wings for 1 hour at 375 degrees on a large baking sheet covered with foil (and toss them in the sauce at the end).
  6. Makes approximately 24 wings, 1 cup of glaze and ½ cup sour cream sauce.
  7. To make the Michelada: stir all the ingredients into the beer and garnish with a lime wedge.

Sriracha Mango Chicken Wings + Spicy Micheladas

This really is the quintessential recipe pairing for Summer now, isn’t it?

Sriracha Mango Chicken Wings + Spicy Micheladas

You can also try the glaze on pork chops or even add some grilled shrimp – it’s absolutely delicious and you can always adjust the heat by adding or removing some of the Sriracha hot sauce. Or maybe making it even hotter by adding in a dash of habanero hot sauce to the mix – now, this recipe is on FIRE!

Perfect for a lovely evening outside with friends, watching the sun go down…that’s #howisummer 🙂

Kristen Hess is a New York City food stylist, photographer, recipe developer, and author of the food blog, The Artful Gourmet.  We recently chatted with Kristen about her favorite cuisines, cooking trends, and NYC eateries, and also asked her to share her food stylist expertise with us to help foodies take better photos of their gastronomical creations.

Tell us a bit about yourself. Why did you decide to dive headfirst into learning about cooking and food photography?

I’ve always loved food and cooking but never considered it as a full-time career until I moved to NYC and started taking a series of cooking classes at The Institute of Culinary Education. I was working in advertising at the time and thought it was a fun hobby, but then that hobby became more serious as I discovered food media as a blossoming career path and started taking more classes in food styling, photography, and food writing and then started my blog.
Out of all of the different styles of cuisine and cooking in your repertoire, which one was the most fun to learn about?

My all-time favorite is Italian food because I love the simplicity of the gorgeous ingredients, rustic flavors, and cooking techniques. Whether it’s homemade pasta and sauce, homemade pizza, a gorgeous salad, an antipasti dish, or a roasted chicken with vegetables, I love it all!

Name a cooking trend, tool, or category that you’re currently excited about.

Alternative flours and coconut everything! I try to live a healthy lifestyle, but sometimes it’s hard when you work in the food industry (esp. in NYC!) surrounded by delicious temptations every day. Alternative flours made out of chickpeas, coconut, almond, bananas, brown rice, farro, buckwheat, chia, and arrowroot are great for low-carb and paleo/gluten-free cooking – and they’re healthier, too. You can make pizza crust, bread, pasta, pancakes, tortillas, pastry, crepes, socca, and all kinds of dishes with it. And I love coconut oil, cream, and milk as an alternative to full-fat regular dairy sometimes because it has a nice subtle coconut flavor and is great to cook with at high heat. I’ve made curries, smoothies, baked goods, and more with it. Great stuff.

Many people have a basic idea of what a food stylist does – but could you tell us about some types of food photography that you’ve done that people may not associate with the craft?

I do some interesting gigs with agencies for their food clients who are doing on-site media tours promoting food products and recipes to food editors for all the major food magazines. For example, The Jackfruit Company launched their new products and I toured around with the owner and PR agency making tacos, salads, burgers, and sandwiches on-site in the editors’ board rooms while they pitched the product to the editors and writers (to gain press and brand affection, of course!).

Another new type of job that is getting popular is styling food for Facebook Live segments for cookbook authors and chefs, health experts, and bloggers. I did quite a few of these for Keri Glassman and Andy Boy Broccoli Rabe, making recipes for them which were demoed live on Facebook at PureWow Magazine and Cosmo.com. I also did this for Halloween making super fun recipes by blogger Elise Strachan at People Food and Food and Wine.

When you see people posting pictures of food on their social media pages, what are some of the “mistakes” you see that make the dish look really unappetizing?

I always say lighting is a huge factor for any good food photo. If it’s too yellow or too blue, you need to fix the hue or it looks unappetizing. Also, never use flash or take photos with overhead lights as they give harsh shadows and blow out the food. Try to shoot food with natural light as much as possible. Bad angles are a no-no too. Don’t shoot burgers or sandwiches overhead. You can’t see what’s inside. Pizza is great for overhead shots because you want to see what’s on it. Don’t be afraid to crop into the shot too for some detail. Finally, consider your composition; what’s the hero in the shot? Focus on that dish. Not the glass behind it. Let the hero shine!

Finish this sentence: “If you’re a true foodie, the next time you visit New York City, you definitely need to stop by…”

For pizza, you need to check out DiFara on Ave J in Brooklyn. The wait is kinda long, but it’s soooo good and super worth the trip and the wait. I also love RubiRosa pizza in Soho.

Pearl Oyster Bar in the West Village is amazing for fresh oysters, seafood, wine, etc.

My favorite taco joint is La Esquina in Nolita. They make authentic Mexican style tacos on small corn tortillas with fresh cilantro, pork, steak, chicken, and homemade salsa. Plus, the grilled street corn is to die for!

You can’t go to NYC without getting a delicious burger, fries, and milkshake from the Shake Shack in Madison Square Park. Again, the line is long, but so worth the wait!!!

And lastly, go to Katz’s Deli in the Lower East Side for a pastrami on rye New York City style. Delish.

What types of desserts do you enjoy making for friends and family?

I’m definitely more of a savory cook than a pastry cook, but I absolutely love making pies and tarts. I always make lovely fruit-based pies or tarts in the summer around the 4th of July using berries, peaches, and mascarpone on a puff pastry sheet. Thanksgiving is always fun; I love experimenting with new pie recipes (something different than pumpkin or apple pie) like Christina Tosi’s Crack Pie or my Bourbon Buttermilk Pecan Pie.

Finally, could you share with us one recipe that’s always a hit when you prepare it?

I have so many recipes that I love but one of my absolute favorites is my “Rochester-Style Chicken French with Broccolini.” It’s actually not a French recipe; it’s an Italian recipe similar to a piccata dish, but with a light coating of egg batter, butter, white wine, lemon, and parsley on thinly-pounded chicken, sautéed in a pan and then coated in the luscious buttery lemon sauce. It’s easy to make, tastes amazing, and everyone loves it. I serve it with sautéed broccolini, but you could also serve it with green beans or sautéed spinach, over pasta or rice, or alongside some crusty french bread to mop up the sauce. Goes great with a tangy white wine like Pinot Grigio and a simple green salad with shaved Parmesan cheese and a tangy wine vinaigrette.

Chicken French

Rochester-Style Chicken w/ Broccolini

Prep Time: 20 minutes

Cook Time: 20 minutes

Yield: Serves 4.

This delicious Italian dish originated in Rochester, NY and is a great meal for a special occasion or any night of the week. Thin chicken cutlets are coated in a light egg and parmesan batter then sautéed until crispy and brown. They are coated in a luscious lemon butter and wine sauce and served with a side of fresh broccolini. Goes great with a crisp white wine such as Pinot Grigio and a green salad with shaved Parmesan and a tangy vinaigrette.

Ingredients

  • CHICKEN FRENCH:
  • 1/4 cup olive oil/canola oil blend for sauteing (I used Colavita Garlic Oil Blend)
  • 1 1/2 pounds boneless, skinless chicken breast cutlets
  • 2-3 eggs
  • 1/4 cup shredded Parmigiano-Reggiano cheese
  • Kosher salt and fresh ground black pepper

  • 1-2 garlic cloves, minced
  • 1/2 cup white wine or sherry
  • 1 cup chicken broth
  • Juice from 1 1/2 lemons (about 1/4 cup)

  • 2 tablespoons cold butter, cut into pieces
  • Lemon wedges, for garnish
  • 1-2 tablespoons fresh chopped parsley, for garnish
  • BROCCOLINI:
  • 1 bunch broccolini, trimmed
  • Lemon Butter sauce (see above)
  • lemon, S&P for garnish

Instructions

  1. CHICKEN FRENCH:
  2. Heat oil in a large non-stick saute pan over medium heat.
  3. Meanwhile, whisk together eggs, cheese, salt and pepper, cayenne, and fresh parsley in a large mixing bowl.
  4. Place flour in another flat bowl and season with salt and pepper to taste.
  5. Rinse and pat dry chicken breasts, then dredge each one in flour first (left hand), then egg mixture (right hand).
  6. Place chicken into the heated saute pan and cook for 6 minutes on one side. Flip chicken over and saute for another 6 minutes until golden brown.
  7. Remove from pan and set aside, covered with a foil tent.
  8. LEMON BUTTER SAUCE:
  9. In the same skillet, saute the minced garlic for 1-2 minutes, being careful not to burn.
  10. Add the wine and bring liquid to a boil over high heat, scraping up the brown bits in the pan.
  11. Pour in the chicken broth, lemon juice, and red pepper flakes (if using) and let reduce by half, another 5-7 minutes.
  12. Stir in the butter and whisk until it melts.
  13. Add chicken back into the pan with the sauce and let simmer another 5-10 minutes.
  14. Place chicken on serving plate with the steamed broccolini and spoon lemon butter sauce over the top of both.
  15. Garnish with lemon wedges and additional chopped parsley if desired.
  16. BROCCOLINI:
  17. Steam broccolini for about 5 minutes, covered. Remove lid and steam for another 5 minutes until fork tender but still bright green.
  18. Top broccolini with Lemon Butter sauce, additional lemon, salt, and pepper to taste.

Notes

You can also substitute veal for the chicken or artichokes for a vegetarian option.
